Are you ready to party with nature? I know I am. We survived another winter and spring is our reward! While I have always loved spring and the new that comes with it, I didn’t truly appreciate the beauty of the season until a few years ago. After having LASIK eye surgery, I remember driving to my doctor’s appointment the next morning. Because of my vision, the trees were always just a blurry glob of green in the distance, even while wearing contacts. But, thanks to my corrected vision, I saw the many shades of green for the very first time. To say it took my breath away is putting it mildly. And, ever

since that day, I have taken the time to appreciate the shades of green in my life. Spring is also a great time for change! And, you may notice a few changes inside Southern Holiday Life. We kept everything you have come to love about Southern Holiday Life like the Funky Junk Trail, Southern Brand Favorites and Strong Southern Women. This issue we are introducing a new component to Southern Holiday Life —Weddings. Because, seriously, there isn’t a much better party in the South than a wedding! We also gave ourselves a little bit of a makeover and we hope you find the changes to be as pleasing as we do!

Most people remember basic camping, but now glamping — glamorous camping — gives your holiday a whole new level of fun and enjoyment.

In Alabama and Georgia

It’s a Camping & Glamping Craze! There has been resurgence in recreational camping in the past few years as many baby boomers have retired and are looking to get back to the simpler days of outdoor recreation. And it’s not just the retirees any more who are getting in on the camping craze. In an age of everything “tech” even the “hipsters” are unplugging from the world to de-stress and find a certain calm and stillness that only nature can bring. Families are also hitting the camping trails to show their kids fun in the outdoors and to make memories that last a lifetime. Along with the resurgence has come a rebirth 10

in the campers of yesteryear and camping groups such as Sisters On The Fly or Tin Can Tourists. There are also many Face Book pages dedicated to the pursuit of camping and, the more upscale glamorous camping, known as glamping.

Old is New Again And it’s not just the mega, bigboxed campers you see anymore — although there are plenty of RVs still cruising the highways. Many people have scoured Craigslist, Ebay, and vintage camper websites looking for the perfect “canned ham” or vintage trailer to restore. One can also look at Pinterest

and see many pins on vintage campers and glamping ideas. Even the camping industry is getting in on the vintage camper craze by creating new models that bring back the look and feel of the campers of the past and also include the conveniences of today such as air conditioners, microwaves, and bathrooms. Riverside RV has several Amish-made Retro Models out that have the feel and look of those that our parents or we may have owned in the 50s and 60s. Shasta has also just released a reissue of their 1961 Airflyte model in both 16-foot and 19-foot versions which

also adds the modern conveniences. And the silver Airstream models which originated in 1931 are still being made and going strong.

Tents Are Cool, Too If you’re not ready to commit to a camper, there are plenty of recreational tents out there for sale and many campers have gotten into “glamping” them up. I have even seen a tent with a full-size bed and chandelier — a big change from my military days of the old cot and sleeping bag for sure. As both a Sister On The Fly and a member of the Tin Can Tourists, I have also gotten in on the fun of camping in my vintage 1964 “canned ham” Gypsy, as well as my 2014 Riverside Retro 177 affectionately referred to as Retro Ruby. Because of this I am always

Southern Quilts & Their Story Just hearing the word quilt conjures up visions of the past, familiar places and people, mostly women, who were important to us and who live in our memories forever.

Instinctively we reach out to touch timeworn fabrics and feel the silky textures of times remembered. Multicolor pieced quilts are treasured American icons but the appearance of quilts has changed dramatically, as has fashion, since the first quilts were made in the early days of the United States.

Fabric manufacturing dictated quilt making from the beginning. Although the cotton gin was invented in 1793, machine carding or aligning fiber strands was not available until 1801 in America at about the same time that large scale spinning of thread became possible. Even then, the thread came back into the home for weaving. The

A Leisure Pastime Prior to the availability and convenience of machine-made fabrics, most women were too overwhelmed with homemaking, child-rearing, gardening, doing farm chores and making family clothing to devote time to quilting.

Baskets Quilts. These quilts were made at the same time period but colors in one faded badly.

Most people used imported woolen blankets or “rugs” of wool that resembled chenille. Only the very wealthy could afford the brightly colored chintz and calico fabrics made in India and the Far East. Sewing and embroidery lessons occupied daughters who enjoyed enough leisure time to practice while they waited to be married. In the mid-Atlantic region of Maryland, Virginia and South Carolina, plantation owners, merchants and cotton factors had easy access to luxury silk and cotton fabrics and raw cotton for

Quilts Had Special Uses Probably the most spectacular of the early quilts from the Atlantic coast region were made from cutting out separate design elements from expensive imported chintz then sewing it down onto a plain background creating a whole new design that made the expensive fabric go much further. This applied technique was called “broderie perse” which is French for Persian embroidery. Persia was about as far to the east as most people could imagine, so they used a pair of sharp scissors, advanced needlework skills and very sharp eyesight to recreate the look. The finished product was usually for a guest room, a wedding or to commemorate a special occasion. Because they were so often created for special occasions,

Low wages and the local cotton supply eventually promoted the founding of cotton mills along southern rivers. These southern mills produced plaids and ginghams from yarn dyed thread. The quality of cotton fabrics produced in the north declined and the dyes became so unreliable that reds, greens and purples faded to a dull tan or pink. Partial circles called “Baptist Fan” quilting became a hallmark of southern quilts. The popularity of designs at the Japanese Pavilion at the 1875 Centennial Exposition, prompted a new fashion trend that involved using throws to

decorate parlors. Random silk and velvet scraps were combined with ribbon and embroidery to create decorative pieces. A similar method of constructing a bed quilt from discarded clothing was an adaptation of the “crazy” quilt. After the turn of the century, changes in business made it more difficult to recognize where or when a quilt was made. Newspapers and magazines started regularly printing quilt patterns with re-invented names. Storebought fabrics were sold over large geographic areas. Standard machine piecing techniques were widespread. As a result, the appearance and workmanship of quilts were no longer recognizable as the product of specific areas. •

walking around your home with a paint brush looking for other things to paint. Really! First thing you need to do is clean your piece. This, honestly, is my least favorite part, but only because I just want to get to the painting part, however it is necessary. We’re not talking an elaborate cleaning, simply some warm soapy water will do to remove dirt and dust. FYI, kitchen/bath cabinets are a different story and need more of a cleaning, so we aren’t talking about those. OK, so you’ve got your piece all clean ready to go, now what?! Simple, just stick your brush in the paint and start painting! Here are some tips to get you going.

Brush Preferences I’m not a big fan of the typical brushes that are used in latex paint. Dixie Belle Paint is very thick and dries quickly. With a standard paintbrush, people tend to use too much paint, therefore, paint will work its way up the

bristles, get dry and clump. If that happens you could be using more paint then necessary and by the end of the project your brush could be a big clumpy mess. I prefer the round brushes made for this type of paint and chip brushes. The round brushes hold a lot of paint but the bristles are shorter therefore holding less paint overall. The chip brushes have thin, short bristles and don’t hold much paint either. That’s really what

you want because a little goes a long way with chalk paint. The biggest tip I have here is to keep your brush damp. Note, not wet but damp. I’ll have a small bowl of water and paper towels next to me so when the paint starts drying on the brush I simply dip it in the water, wipe it off with the paper towels. I won’t even need to put it back in the paint because there’s still enough paint on the brush to keep going! One of the biggest issues I see is people loading their brushes with too much paint and fighting with their brush practically the whole time. Remember water is your friend!!

Distress or Not to Distress Now you have a decision to make. To distress or not distress, that is the question! If you choose to distress, simply grab yourself a piece of

Remember we don’t want it looking perfect, so sand away. Then stand back and take a look, if you like it, stop there, if not, keep going! When finished simply wipe it down. However, if you’re going for a more modern look and don’t want to distress, then all you would do is grab 220 grit sandpaper or a higher and give it a really quick sand to knock down

My home décor isn’t what anyone would ever call “Pintresting.” Let’s just safely assume that my house will never be featured in Better Homes and Gardens, and I am okay with that. I feel like my decorating, or often lack of, is more of a reflection of our family motto: “simple, homemade, filled with love.”

Gallery Walls, Filled with Love

One area of my home that fits this description in particular is our gallery wall. When we bought our house there was a huge chunk of blank wall right by our front door beckoning to be decorated. It was a gaping hole of aesthetically displeasing horror. I have long been obsessed with gallery walls. I have spent countless hours gazing at gallery walls on Pinterest and perusing the aisles of Hobby Lobby trying to find the perfect items for my gallery wall. But our family, like many of you, is on a budget. I just couldn’t justify spending a lot of money on photo frames and kitschy items to hang on the wall. That is when I fell back on my family motto “simple, homemade, filled with love.” I began to look for things we already had, treasures stowed away in boxes, craft projects long abandoned in the hopes that I 34

floor arranging it in the same way I would on the wall, just to see what would go where and how it could all fit together. I had an eclectic collection of things, with a general theme “this family loves each other.” could pull together a gallery wall that was a reflection of our home’s priorities.

has received lots of compliments from visitors and I feel really good when I look at it. When creating a gallery wall, don’t be intimated or afraid to experiment. It’s your wall. Who is going to judge? Feel free to mix different colors or textures. Monochromatic gallery walls are all the rage on Pinterest, but I don’t live in a monochromatic world. Our wall has lots of black frames, but I highlighted it by adding muted blues and greens. Find pieces that represent your family. We have an adorable photograph of our youngest son sitting on a tractor and another of our oldest being held upside down by his daddy. These are such great snapshots of our boy’s personalities.

Organize by Shape Also, create visual groupings. Our wall has a section of tall items paired together and then a section of items that are smaller and shorter. This way the eye sweeps across them, but nothing steals focus or gets lost in the mix. Just because your decorating budget is limited or you’re a design novice, this doesn’t mean you cannot make the house you own your own, special home. •

Looking Forward & Reaching Back Search the words “strong,” “southern” and “women” on Pinterest and hundreds of pins pop up. Images of our real life heroes like Rosa Parks and inspiring fictional characters like Scout Finch are mixed with movie and television marquees for “Steel Magnolias” and “Designing Women.” Quotations of all kinds from literature to Facebook fill the page. One of my favorites is this one:

“Here’s to good women: May we know them, may we be them, may we raise them.” In fact, these words are displayed in my kitchen on a tea towel (of course!) given to me by one such “good woman,” a friend of 27 years who is two decades older than me. We have watched each other navigate many important events in our lives. I believe those crucial turning points and crossroads highlight our need for friendships. I remember having my first child and thinking how useless all those books I read seemed now that I was dealing with a living, breathing human, totally dependent on me for her every need.

But there is a secret, I think. A way to come through those times

like the good, strong women we want to know and be and raise. We. Need. Other. Women. But not necessarily those who are in the same season of life. Those same-season friendships are crucial. But they are not enough. One of greatest blessings in my life has been a group of friends spanning from 20-something to 90 plus years old, and literally every decade in between. Because of our work with the American Legion Auxiliary’s Alabama Girls State program, I have seen strong and beneficial friendships develop across many generations. We all would benefit more from relationships with remarkably strong women who are ahead of us on life’s journey and also with those to whom we can reach back and help along the road we are all traveling.

Betty Zoller, Mama Lucy l and Dr. Mary Lee Caldwel Stephanie Ortel After an extremely successful and high powered career on Capitol Hill working for congressmen and senators and then as a lobbyist, Stephanie Ortel and her husband moved their family back to her home of Huntsville, Alabama, after their twin girls were born. Due to the initially fragile health of their twins, she decided to take “the longest maternity leave on record” and not return to work for now. Stephanie had been an accomplished participant in the Alabama Girls State program and had served on its staff. Once she returned to Alabama, she quickly took her place back on the program’s staff. In her 40s, Stephanie is in the middle age-wise of this multi-generational group. Her influence on the younger women is tremendous as she has much wisdom and advice pertaining to a lucrative career in Washington DC. Many of those younger staff members rely on her experience and knowledge. But she also gains tremendously from those staff women older than her. She shares common ground with both those who have raised their children and those who are caring for elderly and aging parents.

Jane Shelton One particularly influential friendship from this group is Jane Shelton Dale of Camden. Stephanie shares, “I view Jane Shelton as a

strong southern woman because she has a great value system, and would never compromise or waiver on what she feels is right. But she also is careful not to force those values on others. In that way, it is a quiet strength. I love her sense of humor and her great gift of storytelling. She’s the kind of person you would want to sit on the porch with and listen to for hours. I admire her love of God and country. Again, she’s not boastful about these things, but if you ever need to know anything about how to show proper respect for our flag, our veterans, or our country, Jane Shelton Dale is the person to see.” Jane Shelton, who is in her 60s, is one of those women who reach back to those behind her, to help influence them in positive ways. Called by friends the “original community organizer” she stays busy in her communities of Camden and Bon Clarken in Flat Rock, NC. Organizing historical homes tours, writing and taking photographs for local papers, planning presentations for community groups, serving as an officer for the Associate Reformed Presbyterian church, and having teenagers up to stay in her home in North Carolina are but a drop in the bucket of what takes up her schedule. In a world where involvement in such valuable community activities seems to be waning, she has doubled-down her commitment to furthering the work accomplished by these types

of local groups. When asked why she continues volunteering in these areas, she says she thinks about all the people who did these kinds of things for her when she was growing up and wonders “who is going to do it now?” Who is going to do it for all the young people coming along who need a sense of history and connection to their communities? So, she reaches back.

“Mama” Lucy Jordan But Jane Shelton has had a remarkable example in this area. “Mama” Lucy Jordan is a legend in the Tuscaloosa area for many things, one of which is her tireless, decades-long work with Druid City Hospital and its foundation. (The foundation named their annual fundraising ball “The Lucy Jordan Ball” in her honor.) What is extraordinary about Lucy though, is that at 90 plus years old, she continues to cultivate intentional relationships with women in the Girls State program in their 30s, 20s, and even their teens. She is not intimidated by a perceived generation gap and inspires them with her wisdom, humor, and dignity. She turns around and reaches back, as far back as necessary, to inspire those coming behind her. She is a true force of nature in her community and among the women who are blessed enough to travel in her wake. About Mama Lucy, Jane Shelton says, “She has held important positions at work and in the community (including Department President of the American Legion Auxiliary) but loves being a “girl” and knows how to always work that feminine side. I don’t think she really likes staying home and being quiet!” These are three extraordinary women among a group of women whose names we could use interchangeably as having affected and been effected by one another. What we desperately need in the “big” (and small) moments of life are women who are ahead of us on the journey. Women willing to reach back to us and say “This is how you do it. This is how it’s done.” Women who are not just mentors but also friends. Those who can speak to us with the invaluable wisdom experience brings.

Finding, developing, and maintaining these relationships can be challenging. Being grouped according to age almost all our lives can make forming friendships outside our particular season of life hard. Yet, those are the essential connections we need. Let’s determine to be intentional about putting ourselves in places where they are and pursuing them, asking how they did it, how they met the challenges of being a woman and what the costs were. The book of Proverbs calls it “acquiring wisdom” and it is an active, worthwhile pursuit. Just think about the strong southern women we could know, be, and raise if we simply seek out those who have been there and ask them to help us along. Think about the joy that could come from those connections. And then think about how we can

reach back to those coming behind us. How we can pour into their cup everything we have in ours because it has been filled from those ahead. Imagine finding that kind of place. I want to live there. Even more so, I want my daughters to live there. Where they know the truth of another quotation I read:

“You can tell who the strong women are. Confidence is Your Fun, New Fashion Friend! Are fashion trends even trendy anymore? Do we even have fashion trends or have they all died out? It’s a question we all ask these days with so many fashion seasons overlapping and the lines between the trends blurring. It appears that the latest “trend” is not a real fashion trend at all — it is simply knowing what style and color looks best on you and what makes you feel good about yourself.

Feel Good, Look Good All women know if you FEEL like great, then you will radiate with beauty and confidence. It doesn’t matter if all five friends tell you how great you look in that new short fitted red dress, if that is not a style or color you are comfortable wearing, your confidence level will be low and it will show. I had a friend in my younger years who loved to wear yellow, even though the ever-popular color charts of the time said based on her skin tones and hair color she could not wear yellow. She said she did not care because it was her favorite color, and I must say her brunette hair and olive skin tones rocked her some yellow every time!

The Changing World For years, the fashion houses published huge books depicting their predictions for fabrics and styles. These would then be used as the holy book for designers and brands who would work diligently for years using these as rigid guidelines. Those days are over. People now see the idea of a group of “fashion specialists” sitting around and choosing the colors and fabrics for the next two to three years as pure nonsense. Today, it’s social media that dictates which 42

trends come and which ones go. Social media gives birth to and kills trends almost without care, without even allowing it a decent amount of time to live! In today’s world where a single Instagram photo can go viral in a matter of minutes, creating a whole new trend in a matter of hours, how do we keep up and how do know when it is over?

2015 Surprises So what are the 2015 spring and summer trends? I am so glad you asked. Yes, there are some to consider! The lavender, sky blue, and pale yellow shades are going to be popular. Pinks and mints will be making a return as well. Feminine floral prints are here again, as will be anything with white lace, sequins, or fringe. The Boho look is larger than ever. Flare leg pants and jeans are enjoying another turn and denim/chambray skirts, dresses, and shirts are trying to make a show. You will also be happy to hear that loose and flowing is making a popular return for all ages and sizes.

But I repeat — anything goes, ladies. We have watched this happen with fashion as well as weddings. There are so few traditional weddings anymore. Today’s bride knows that it is HER wedding and it can reflect her style, no apologies necessary. Bridesmaids in cowboy boots and hats and all of the eclectic out-of-theordinary locations works if that is what the couple wants. This new “trend” of doing your own thing has spilled over into many aspects of our lives as we all strive for an easy-going lifestyle. Just let your choices truly reflect your inner self and existence is the trendiest trend of all. Love who you are, do what you love, wear what makes you happy and, if it doesn’t feel right then it probably isn’t. That can be applied to just about anything, don’t you think? The Kentucky Derby Makes for a Fun Party! The Kentucky Derby is an annual horse race held in Louisville, Kentucky, on the first Saturday in May, at the conclusion of the two-week-long Kentucky Derby Festival. The stakes race for three-year-old thoroughbreds is held at Churchill Downs on a one and a quarter miles {2 km} track. This year the race will be held on May 2. Known as “The Most Exciting Two Minutes In Sports” and also “The Run for the Roses,” it was first raced in 1875. Recently celebrating its 140th anniversary, the Kentucky Derby is the first leg of the American Triple Crown, which includes the Preakness Stakes, then the Belmont Stakes. A horse must win all three races to win the Triple Crown.

Fried Summer Squash Parmesan Sliders 2 tbsp olive oil 2 garlic cloves, minced (or 1 tbsp granulated garlic) 1 28 oz can crushed tomatoes 1 16 oz can tomato sauce 1 1/2 tbsp oregano, dried 1 tsp onion powder 1 tbsp basil, dried, plus I added some fresh 1 tbsp freshly ground black pepper 1 1/2 tbsp seasoned salt (like Lawry’s) 1 tbsp Worcestershire sauce

1/2 cup red wine (or 2 tbsp red wine vinegar) 1 lb summer squash, washed and thinly sliced (try to get the bigger ones) Plenty of kosher salt 2 eggs, whisked 2 cups bread crumbs, Italian seasoned 2 cups canola oil 1 lb Italian blend shredded cheese 1 bag frozen yeast rolls (I used Sister Schubert’s 10-count)

Heat the olive oil over medium heat – add the garlic and saute until fragrant. Add the tomatoes through Worcestershire sauce. Bring to a boil, reduce heat to low and cover. Simmer for at least 3 hours; but stir every now and then to keep from scorching. I know this is longer than I said in the past to simmer this sauce – but I’ve found lately that the longer I keep it on a low simmer the deeper the flavor is. Preheat oven to 350°. Arrange the yeast rolls on a baking sheet and heat for about 5 minutes – or until warm – NOT golden brown and all crispy. Cover with a towel and set aside. Increase the oven temp to 400°. On your workspace, lay out a good bit of of paper towels, then lay the squash discs out in a single layer. Sprinkle with kosher salt and let them “sweat” for about 15-20 minutes. When they look like they are dying under a blanket of sweat, flip them over

and salt the other sides. When that side is good and dehydrated – paper towel them all off and get them ready for their bath. Now, dip each squash disc into the milk, then dredge in bread crumbs; set aside. Heat the oil in a large frying pan (or use a fryer if you have one) to about 375°. Fry the squash until golden brown and drain on a plate lined with paper towels. Line a baking pan with aluminum foil and spray with cooking spray. Slice the rolls in half and spread butter on each piece, arranging them on the pan. To each bottom half, add enough squash slices to cover, ladle on some of the sauce, add one more squash piece on top, a little more sauce, then the cheese. Do not put the tops on the bottoms. Bake for about 10 minutes, or until the cheese is melted thoroughly and the bread is golden-y buttery brown.

Chicken Sliders With Fried Green Tomatoes 1 batch Barbecue Sauce, recipe below 3 cups chicken, cooked (or grilled – better option), and shredded 3 cups canola oil 2-3 green tomatoes, sliced 1 cup corn meal 1 cup all-purpose flour 1 tbsp sea salt 1 tbsp coarse black pepper 2 eggs, beaten 6 slider buns (I used yeast rolls; they made these so good) 1 stick salted butter, melted

Barbecue Sauce

Over medium heat, saute the onion until translucent. Combine everything else in a medium size sauce pan. Turn heat to medium high and whisk until incorporated; bring to a boil. Turn heat down to low, cover and simmer for 45 minutes, stirring occasionally. Store in a tight container and set aside. If not using now, store in fridge. Preheat oven to 425°. After making the sauce (if you choose to use bottled sauce that will work just fine), get prepared to make the tomatoes.

Mix the corn meal, flour, salt and pepper in a bowl, and heat canola oil over medium high heat. Dip tomato slices in egg, then dip in flour mixture until coated. Fry until golden brown and drain on a paper towel lined plate. Spread butter on bun halves and put them in the oven for about 2-5 minutes, until lightly browned. To make sliders, stack chicken on bottom followed by fried green tomato, then barbecue sauce. If you like this as much as I do, you’ll want at least two tomato slices.

Make sliders by layering the mayo and brisket on a bottom bun top with jalapenos, followed by another bottom bun, more mayo, a burger, tomato and a top bun. Indulge.

2 kiwis, peeled and diced 1 16 oz can petite diced tomatoes, drained and rinsed 1 jalapeno, diced 1/2 white onion, diced Handful fresh Cilantro, chopped 2 tbsp lime juice Drizzle of olive oil Salt, to taste

12 oz lump crabmeat 1 1/2 cups mayo 1/2 sleeve Ritz crackers, crushed 2 eggs 3/4 cup scallions 1 tsp hot sauce 1/2 tsp Old Bay seasoning 1 tbsp lemon juice 1 tsp salt 1 tsp pepper Canola oil, for frying 1 package of 12 slider buns

Guacamole 1 avocado 3/4 cup Kiwi Salsa, give or take depending on your taste 1 tsp lime juice

To make the salsa, combine all ingredients and toss. Same for guacamole. Store separately in airtight containers in refrigerator until ready to use. For the crabcakes, mix crabmeat through lemon juice. Form into 12 (roughly) slider size patties, and put them in fridge while you prepare the pan. Heat a big drizzle of canola oil over medium high heat until hot. Add the sliders a few at a time, with plenty of room between them, and fry about 2-3 minutes on each side, until browned. Add the crabcakes to bottoms of the buns, top with guacamole and salsa.

Summer & Fresh Produce: As Southern As Cooking Gets! I get my love of cooking from all sides of my family, from my grandmother, also known as Nanny, to my first cousin once removed, Shiela. My Nanny, who was a nurse by trade, opened a tearoom with one of her best friends. It was THE place to lunch for the ladies of Dothan, but sadly has closed.

BRIE EN CROUTE 1 wheel of Brie (large or small) light brown sugar pecans (chopped) 1 or 2 rolls of crescent dough 2 pears (sliced) Preheat oven to 350°. Pack brown sugar and pecans on top of the Brie. Cover in crescent roll dough and place in a well-greased baking dish. Bake for 20-25 minutes, or until golden brown on top and cheese is melted. Serve with pear slices or crackers. 70

As an adult, who thoroughly enjoys and appreciates food, I wish I could go back in time to the tearoom’s kitchen and help Nanny cook. She encouraged a love for food and cooking in her three boys, who then, instilled that same love in my cousins and myself. For years my mother has told me that she didn’t know how to cook when she got married. She said that no matter what, my dad would always eat whatever she made and would never complain, and never compare

it to his mother’s cooking. For someone who “didn’t know how to cook” at my age, she has made countless fabulous meals throughout my life. Mom has a pound cake recipe that everyone asks for, but they just end up getting her to make it for them because no one makes it quite like she does. She has lovingly and tirelessly perfected a cinnamon roll recipe that our family has gotten to enjoy at Christmas time for years. This is a task that she has now happily passed on to me. I like to believe my affinity for dark chocolate, red wines and new, interesting foods comes from my father. If a dish intrigues me, I know Dad will be willing to try it out with me. RATATOUILLE 2 â&#x20AC;&#x201C; 6 oz. cans tomato paste 2 garlic cloves (minced) 1/2 onion (finely chopped)

2 T olive oil (divided) 1 small eggplant 1 small zucchini 1 small yellow squash

Preheat oven to 375Â°. Mix tomato paste with garlic cloves, onion, 1 T of olive oil, salt and pepper. Spread in an oval baking dish. Trim the ends off all the vegetables and carefully core the bell pepper. Cut the vegetables into thin slices. (About 1/16 in. thick) Arrange the slices on top of the sauce, concentrically from the outer

1 longish red bell pepper 2 t dried thyme TT salt and pepper Parmesan cheese (for serving) edge to the inside of the baking dish, overlapping so just a little bit of each surface is visible, alternating vegetables. Drizzle with remaining olive oil and season with salt, pepper, and thyme. Bake for 35-45 minutes. Top with freshly grated Parmesan and serve with cooked angel hair pasta or spaghetti squash.

I chose these three recipes because I think spring and summer time should be filled with produce, even if it’s baked in a cake or served in lieu of a cracker. I can’t get enough of the Brie en Croute. I love the combination of the buttery and flaky pastry, with the warm gooeyness of the mild Brie, and the sweet crunch of the brown sugar and pecans. All of this goes perfectly with the crispness of a fresh pear. I’m not ashamed to say, I fell in love with Ratatouille after I saw the Pixar movie. I swear I could smell and taste all of the alluring dishes that cute rat cooked up. This is a light dish, but it fills you up just enough so that you are satisfied, but not miserably full.

My Pride and Joy The peach poundcake recipe is kind of my pride and joy. A few years ago, my mother’s friend let us try her peach poundcake and it was divine. I went to make it last year and her friend wasn’t able to find the recipe. So, I had to get creative and come up with my own. I knew that my mother’s poundcake was great so I just basically added peaches to it. As long as you have a stand mixer, this recipe is not that hard and is completely phenomenal. Come peach season, you will definitely want to add this to your baking list. •

PEACH POUNDCAKE 3 sticks butter (softened) 1 package cream cheese (softened) 3 cups sugar (sifted) 3 cups cake flour (sifted)

7 extra large eggs 1 t vanilla extract 1 t butter flavor 1 t almond extract (optional) 2-3 cups fresh peaches (chopped)

Cream together butter and cream cheese until fluffy. Sift sugar and gradually add while continuing to beat until light and fluffy. Sift and add flour then scrape the sides of the bowl. Add one egg at a time, while continuously beating until mixed. Add extracts and

flavorings and mix well. Pour in a cup of fruit and beat. Then, fold in the rest. Pour batter into an extremely well greased Bundt pan and smooth the top. Starting in a cold oven, bake at 300º for 1 hour and 25 minutes. Cool 10-15 minutes before removing from the pan.

ICING 1.5 cups powdered sugar 5 T peach juice (divided) 1/2 stick cream cheese (melted)

While continuously whisking, pour in 4 T peach juice. Mix thoroughly, then add in cream cheese and combine completely. Add in last T of peach juice and mix. Once cake is completely cool, pour icing until it is covered all over.

1 fennel bulb 6-7 radishes, sliced 1/2 red onion, sliced 1 large red grapefruit 2 tablespoons olive oil 1 tablespoon honey 1/2 teaspoon kosher salt 1/2 teaspoon fresh ground pepper Remove tall leafy greens from the top of fennel bulb and save for later. Slice Fennel in quarters, remove the dense center, then slice in thin {1/4 inch} slices. Place in a large salad bowl. Add sliced radishes and red onion and mix together. In a smaller separate bowl place olive oil, honey, salt, pepper and the juice of half the grapefruit. Combine ingredients until the honey is thoroughly mixed in. Slice the remaining grapefruit half and slice into small sections, chill until ready to serve. Remove small pieces of the green fennel tops and chop to bite size pieces, 1/4 cup to 1/2 cup. Chill until ready to serve. In the large bowl, pour dressing mixture and combine. Chill.

Iâ&#x20AC;&#x2122;m not sure when I first fell in love with fennel or red onions but radishes are a completely different story. I clearly remember eating radishes as a young kid when my mom prepped them for salads.

I would grab a whole one and savor the crisp cool peppery-ness of those little red beauties. This Fennel Citrus Salad combines three of my favorite flavors into one dish, it is a favorite of mine to pair with grilled tuna on a summer night, or heaped on top of a bed of arugula for a refreshing lunch.

Good Food, Happy Life The warmer temperatures lately have allowed me to spend a bit more time on the deck. As I sit here looking out across the rolling fields down to the glassy lake I can almost see the grass turning greener right before my eyes. If you could just see the view from my deck in person throughout the different seasons you would understand why God is my favorite artist. He paints a different picture everyday and every night. Though the summer days can get pretty hot on the deck the nights bring a muchwelcomed breeze that makes it perfect for stargazing. Before we had the deck, during the summer nights, when the boys were in grade school, we would lay on the trampoline and stargaze. It was always easy to find the big and little dipper. I can still hear the gasp of excitement in their little voices when we would on occasion luck up and see a shooting star. On one side of the house we have a utility light that comes on automatically at dusk. Obviously the light attracts all sorts of bugs. We would often find frogs and other insect predators hanging around, taking advantage of the easy pickings. One of those predators was a bat. The boys named it Batman. As Batman swooped back and forth catching insects in midair, the boys would yell out, “Hey Batman! Where’s Robin?” A couple of times Batman would swoop down really close to us but would never actually touch us. I told the boys he was saying it is time for bed. It was then we would call it a night and head inside. Today the trampoline is gone and the boys are grown but that doesn’t keep me from enjoying one of my favorite pastimes. Now when my niece Tanner comes for a visit, we take a blowup mattress out on the deck and watch for shooting stars while catching up on each other’s lives. …con’t to Page 78.

Strawberry Shortcake 1 pre-baked angel food cake or pound cake 1 quart heavy whipping cream 1 box instant white chocolate pudding 1 to 2 lb. fresh strawberries 1/3 cup sugar Blueberries (optional) As you will see from the pictures, I had to buy mini angel food cakes because the grocery store did not have a full size angel food cake available. This is a good example of improvising. Just look how cute they turned out. Makes serving them a snap too! On low speed in a stand mixer whip the heavy whipping cream and pudding mix until soft peaks form. I have found that whipping the cream on low speed opposed to a high speed will create a smoother more pleasing texture. Plus thereâ&#x20AC;&#x2122;s less of a mess to clean up afterwards. While the cream mixture is whipping, start finely dice the strawberries and place in a bowl. Add the sugar and mix well. Since I did not plan ahead, I mixed the strawberries and sugar with my hand so I could squeeze the strawberries and make them juicy and to help

completely dissolve the sugar. Doing this a day ahead of time and letting them sit in the fridge over night will also do the trick. Slice the cake so that you have two layers. If you have a full size cake you can slice it into three layers if you want. Keep in mind, you will need twice as much cream mixture and strawberries if you choose to do so. You will also have twice the goodness! Spread or pipe a layer of the cream mixture on the bottom layer of cake. Top with the diced strawberries. Place the top layer over the strawberries and gently press it down. Spread or pipe another layer of the cream on the top layer and garnish with whole, sliced or diced strawberries and blueberries. I spooned the excess juice from the strawberries down the sides of the cake to add more flavor and moisture. Keep in the refrigerator until ready to serve.

Italian Pasta Salad 2-16 oz. Fettuccine, linguine, bow tie or egg noodles 1-1/2 cup diced green pepper 1 can sliced black olives 4 medium carrots thinly sliced 2 to 2-1/2 cups broccoli florets 1 16oz bottle zesty Italian salad dressing 1 teaspoon garlic powder or garlic salt 1 teaspoon dried oregano 1 teaspoon Italian seasoning Boil pasta according to the directions on the box or bag. Drain well and pour pasta in a large bowl. While the pasta is cooking dice the peppers and carrots and set aside. Cut the broccoli florets and add to the peppers and carrots. Drain and rinse the olives. Add the veggies and olives to the cooked pasta and mix. In a separate bowl combine the Italian dressing, garlic powder, oregano and Italian seasoning and mix well. Pour over pasta and toss until evenly covered. This is great by itself or with grilled chicken added to it.

Italian Honey Grilled Chicken 2-3 lbs chicken tenders 1 24oz bottle zesty Italian dressing 1/2 cup honey

1/2 cup apple cider vinegar 2 teaspoons dried basil 1 teaspoon black pepper 2 teaspoons dried oregano

Rinse the chicken tenders and place in a large Ziploc bag. Put the bagged tenders in a bowl that will help hold the bag open. Mix dressing, honey, vinegar, and seasonings in a bowl. Pour over chicken tenders. Seal the bag pressing out as much air as possible. Once securely sealed, pick the bag up and press around and make sure the chicken is totally immersed and covered in the marinade. Place the bag back in the bowl and let it marinate over night in the fridge. You can marinate the chicken for at least two-three hours if you want but the longer you marinate the chicken the tastier it will be. After well oiling the grill grate of a gas or charcoal grill, place chicken over direct heat. Grill until the chicken turns

from a pink color to white along the edge (about 5 minutes). You will see the white moving up the sides. Flip and grill another approximate 4-5 minutes until internal temperature is 165 degrees and the juice runs clear. Time will vary with size and thickness of the tender and your exact grill temperature. Be careful not to overcook the chicken. Using a charcoal grill just adds more flavor to this dish. I also like to spray each side of the tenders with nonstick cooking spray to help prevent them from sticking to the grill. Serve the strips whole or cut them into pieces and mix with the Italian pasta salad. Let the cooked chicken sit for at least ten minutes before cutting into pieces.

Corn Salad 2 cans shoe peg corn 5-6 green onions, thinly sliced, chives and all 2 cucumbers, peeled, seeded & diced 1/3 cup mayo Well drain the corn. Add the cucumbers, onions , chives and mayo. Mix well and let sit in refrigerator over night. The longer it sits the better the flavor. …con’t from Page 76.

Preheat oven to 400 degrees. Saute shallots, garlic, poblano & jalapeno in 1 tablespoon of olive oil until tender , 3-5 minutes. Set aside. Place pastry shell in a 9-inch pie dish. Layer in half of the tomatoes, and season with salt & pepper, spread shallot mixture over top. Crumble goat cheese and half of basil on top. Layer on remaining tomatoes. Salt & pepper, top with remaining basil. Pour 1 tbsp. vinegar & olive oil over top of all. In a small bowl, combine bread crumbs, 2 tbsp. olive oil, mustard and Parmesan cheese. Sprinkle over tomato filling. Bake 30 minutes, or until crust and topping are golden brown. Let stand to cool slightly before cutting. Inspired by the bounty of produce found in the farmers markets during the summer months this Savory Tomato Pie recipe is kicked up just a touch with a little heat added by Poblanos and optional jalapeno peppers. This Tomato Pie is the perfect use of the abundant tomatoes in New Jersey gardens with a nod to my new-found appreciation of southern cooking. I hope you enjoy it as much as we did! 80

Doc Hollywood I’m always fascinated by the answer people give me when asked where they are from and how and why they have ended up in my small southern town. Some come for their jobs, others for family, and then there are some that by chance pass through and fall in love with everything the town has to offer. For Dr. Benjamin Stone (Michael J. Fox), his answer as to why he landed in the small rural town of Grady, South Carolina, makes for quite a funny story. As an up-and-coming star surgeon from Washington, D.C., Ben has taken a job in Hollywood, California for better pay. While on his cross country trip, he crashes into a local judge’s fence and is sentenced to community service at the

local hospital. Not making friends and sticking out like a sore thumb, Ben slowly starts to slow down his life and see all the potential small town living can offer. One of the greatest comedies of the 90s, and on the eve of its 25th anniversary, this film shouldn’t be missed. Sometimes accidents can be life changing.

Shooting Stars & Stripes Wreath One of my favorite Fourth of July traditions is firecrackers and sparklers. Pretty colors, sparkles and all that glittery goodness! I thought this year I would add some sparkle to our front door with a firecracker inspired wreath. When I make a wreath using one of these stars forms, I like to leave the plastic wrapping on. This keeps the stars from going everywhere and making a very large mess. Start with the blue ribbon and wrap a little less than a quarter of the wreath, gluing as

you go. To make the stripes, alternate wrapping the red and white ribbon around the remainder of the wreath.

stick the stars along the wire pieces one on the front and one on the back, sandwich style. Make sure you stagger the stars and sizes so that when you go to put them on the wreath, they will have a fuller effect. Take all of the wire pieces and glue them to the back of the wreath in the blue section. This is not the pretty side so don't worry how it looks. Glue a piece of blue

ribbon over the top of all the wire once you're finished. Then tie some extra ribbon in a loop for a hanger and you're ready to hang! Here's to a Happy Independence Day full of good food, friends, and fun!
