FROM THE EDITORS Welcome back! Yes we made it to our second edition of The LOCAL Mag! As predicted last time, we are back with a bigger issue jam packed with lots of events and features on some known and not so well known locals. This month we feature a much loved local legend Aub Gillespie who arrived in style at his gala 94th birthday bash at the recently re-opened ‘Tenterfield Saddler’. Aub was in fine form at his birthday bash, reminiscing, and even having a dance with the ladies. In our ‘The People you meet’ we caught up with business woman, accountant and mother, Kristen Lovett who talks about life, work and juggling motherhood and career. I feel was a turning point in the current phase I am in in life. She represents power, strength, health and individuality. She is an amazingly strong and influential women and again another that has built a life from nothing to become a world wide success. Although she has been known to fly into situations somewhat uninformed like when she protested for PETA against sheep Mulsing, she usually gets things right and is able to get her point across. Emma Isaacs is my third but equally influential person. She is an extremely successful, young, female entrepreneur and has achieved allot in her 34 years. She has a young family and I often relate to what she is experiencing in life but I also admire her ability to identify a market and take a hold of it. She is the CEO of the largest Women’s network in Australia and a passionate philanthropist. I adore everything about Emma. LM: WHAT’S ONE THING YOU HAVE NOT YET DONE IN YOUR LIFE THAT YOU REALLY WANT TO DO? KL: just one? My Bucket list could fill your whole page. I would like to do the Tour De Cure. I have watched this event over the last few years and feel really compelled to be involved. With the recent inclusion of Lyn and Dick Atkinson, our great friends who recently moved to Tenterfield and who also lost their grandson Conner to cancer, I suspect it won’t be too far off before I am pedalling next to Dick and dancing on tables with Lyn. I just have a bit of conditioning to do first, particularly on the tail region!

138TH TENTERFIELD SHOW
Show Pavilion 100 years on - February 6 and 7 2015 marks the 138th Annual Tenterfield Show. March 3rd 1915 the historical Tenterfield Showground pavilion was officially opened. 100 years on the Tenterfield Show Society Committee are preparing to honour this signifigant milestone for Tenterfield. Each section of the pavilion will include classes marking the WW1 era and all Tenterfield and district residents are urged to get behind the hard working Show Committee and enter an item in the show. First time entrants are especially encouraged as the Tenterfield Show is one of the highlights of the Tenterfield calendar and with support from all of Tenterfield we can guarantee the future of the show. The main pavilion feature planned is a display which will have a background of Red Poppies currently being knitted and crocheted by our wonderful ladies around the district. Memorabilia and antiquities from the 1915-1918 era will be on display including Light Horse photographs, farming, household and handcraft items. Donations of suitable items are still being sought by the committee. The Tenterfield Historical Society and Tenterfield Railway Museum have generously made available items from their wonderful collections.

Saddlery puts on a birthday bash for town icon – Aub Pictured left, Aub Gillespie and his son at his birthday bash
said Aub was as well-loved in the town as the saddlery he still visited almost every week.
Aub Gillespie, 94 years young, is as much a part of Tenterfield’s history as the famous saddlery that put the town on the map. So it was only natural that the Tenterfield Saddlery and the local townsfolk got together recently in the famous and iconic old building to help Aub celebrate his milestone birthday. Friends and locals gathered around the famous veranda to wish the retiree many happy returns, listen to some of his yarns and enjoy an afternoon of music and dance. Rebecca Carpenter, who hosted the party on behalf of the Tenterfield Saddlery,
“He is such a lovely man and gives his time freely to talk to visitors and give a bit of background about the saddlery and Tenterfield. We thought it would be a nice gesture to throw him a birthday party,” she said. “People love to hear his stories about the saddlery and town from the old days; and he has hundreds. “He met his late wife Noreen at a dance and they eventually married. She passed away a while ago but he never remarried. He still talks about her as if she was here. It is quite touching.” Aub was born in Maclean in the Clarence Valley in 1920, moving to Tenterfield with his family when he was 20 years old. He

soon got a job as a butcher at the old Tenterfield meatworks. He knew singer Peter Allen when he was a boy, as well as Allen’s grandfather George Woolnough. George was the town’s saddler and the subject of Peter Allen’s famous song, Tenterfield Saddler. It was through this song that the Tenterfield saddlery legend was born. Aub told guests at the party that, despite having family scattered around the state, he considered Tenterfield his true home and would never consider leaving. “This is the greatest place on earth,” he said. Stop in to the saddlery for a look at the memorabilia and it is quite possible you’ll meet Aub on the veranda and he’ll be ready, willing and able to spin you a yarn.

Forget making it months ahead, this recipe my mum uses is so quick and easy and it has a depth of flavour like its been whipped up in well advance by an organised domestic goddess 2¼ cups (375g) sultanas 2 cups (340g) coarsely chopped raisins 1½ cups (250g) currants 125g slivered almonds 250g butter, chopped 1 cup (200g) firmly packed brown sugar ½ cup (125ml) rum ½ cup (125ml) water 5 eggs, beaten lightly 2 tablespoons apricot jam 2 teaspoons finely grated orange rind 1 teaspoon finely grated lemon rind 1¾ cups (260g) plain flour 1/3 cup (50g) self-raising flour 1 teaspoon ground cinnamon ½ teaspoon ground allspice ½ teaspoon bicarbonate of soda ½ cup (80g) blanched almonds, ¼ cup (60ml) rum, extra
Combine fruit, butter, sugar, rum and water in a large saucepan. Stir constantly over heat, without boiling, until the sugar is dissolved. Bring to the boil; reduce heat, simmer, covered, for 10 minutes. Transfer mixture to a large bowl; cool to room temperature. Preheat oven to slow (150°C). Grease a deep 19cm square cake pan or a deep 22cm round cake pan; line the base and sides with 2 layers of brown paper and 2 layers of baking paper, bringing paper 5cm above the edge of the pan. Add the eggs, jam, rinds & almond slivers to fruit mixture; stir until combined. Stir in sifted dry ingredients. Spread mixture evenly into prepared pan; arrange almonds on top. Bake in a slow oven for about 2 to 2½ hours depending on your oven. (Cover the cake loosely with foil during cooking if it is over-browning). Brush the extra rum over the top of the hot cake; cover tightly with foil, cool cake in pan.

Christmas isn’t Christmas without bowls full of the queen of the stonefruit. Tenterfield and the Granite Belt is the perfect place to grow cherries and when the season has been good to the growers you can’t find a better fruit to grace your christmas table. If ever there was a fruit that typified christmas and the
summertime the cherry would be it. I remember as kids spitting mouthfuls of seeds at siblings and dangling perfect sets of cherries off our ears imagining them to be ruby red drop earrings.

Wine and dine in 1940s elegance The mystery of Tenterfield’s abandoned Commercial Hotel may never be fully resolved, but locals and visitors alike can once again enjoy the comforts of the 70-year-old building’s original style.
complete with bathrooms and in some cases baths. It is the perfect place for weary travellers to rest after enjoying a cold drink, meal and coffee downstairs in the dining room.
The ‘new’ Commercial Boutique Hotel has re-opened its doors as a wine and tapas bar following a full renovation to revert the building to its original grandeur of the 1940s. The many ‘modernisations’ of the 60s, 70s and 80s have been removed, rediscovering the pub’s original polished wooden floors, vaulted ceilings and decorative cornices.
The hotel, abandoned and empty since 2006, was taken over in August last year by a partnership of the Sibley family – twins Justin and Jodie Sibley, their younger sister Cassandra Dillon and her husband Tim, and the Sibley parents Robert and Colleen. Cassandra and Tim Dillon live on the premises and manage the bar, restaurant and accommodation.
Taking pride and place at the front of the building is the long, stylish bar specialising in the best available wines and a large assortment of craft beers on tap and in the bottle. The kitchen caters for either a la carte dining, or a sumptuous Spanish tapas menu to be shared among friends.
The first thing that struck them was the massive task that lay ahead to get the once glorious building back into shape.
The 19 pokey hotel rooms have also been demolished and replaced with eight stylish and modern suites,
“It was just as it had been when it was abandoned in 2006,” Jodie, the Commercial’s marketing director, said. “There were beer kegs in the cellar still tapped and ready to pour and beds were still made up with folded towels and bars of soap on the ends. We even found an old soup container with soup still in it.”

What was even more daunting was the extent of the renovations that would be needed. The ‘improvements’ over the years had concealed some of the best attributes of the building, such as silky-oak doors with original lead lights, fireplaces, ornate cornices and charming balustrades. In particular, the suspended ceiling throughout the building simply had to go. Today the charm has returned, with locals and visitors once again able to stop in for a meal or a night’s accommodation in a style the architects no doubt envisaged during the original construction in 1942. The Commercial Boutique Hotel is open for lunch and dinner from 10am, Wednesday to Sunday and for weekend breakfasts on Saturday and Sunday.

spiced quince glazed ham
A sweet and spicy glaze to compliment a warm and smoky cooked ham, perfect for Christmas Day or just to feed hungry hordes over summer.You can even do this recipe outside in a covered barbeque. TIP: Use a disposable baking tray for easy cleanup Preheat oven to 180C. Stir 120gm quince paste, 80ml dry white wine, 3 tbsp apple juice, 2 tbsp vinegar and ½ tsp each ground chilli, ground cumin and ground allspice in a small saucepan over mediumhigh heat until melted and smooth. Add 150ml maple syrup and stir until combined. Peel back skin from the ham, make sure not to tear the fat. Use a sharp knife to score around the shank, then detach the skin and reserve (use it to cover leftover ham to help prevent it from drying out). Score the fat (not the flesh) evenly with a small sharp knife, maintaining an even depth all over. You can either score in a crisscross pattern to form diamonds or in parallel lines. Place ham in a roasting pan, brush with half the quince glaze and roast, brushing occasionally with remaining quince glaze, until sticky, golden and warmed through (1-1½ hours). Rest for 30 minutes before carving. 17

A day of outdoor entertainment, food and refreshing drink could be the order of the day to wind up the holiday season. Kraze Maze and Café is hosting its inaugural outdoor music event on January 10, and it is already proving popular with locals and visitors alike. The event would feature Johnny Cash tribute band Cashville, backed by audience favourite Little Phoenix. Cashville pays tribute to the legendary Johnny Cash covering his lengthy career across various styles and periods
of music, including the many duets he performed with wife and love of his life June Carter. They have been invited to perform in Nashville, Tennessee (USA) next year and have featured at Woodstock-style festivals and Cooly Rocks on the Gold Coast to name a few. Die-hard Johnny Cash fans claim that the Johnny Cash Carter Tribute Show presented by Cashville is the best show of its kind and they say they’ve seen them all. You won’t want to miss them, whether you’re a Johnny Cash fan or not. But if you are a fan, you certainly won’t be disappointed. Playing as a support act to Cashville is Little Phoenix, the little lady with the big voice. Little Phoenix will perform a blend of 60’s, 70’s and rock & roll favourites, including a special tribute to the music of Patsy Cline.

The entertainment kicks off at 10.30am, with a wide variety of food and sumptuous tempters on offer throughout the day until close. School of Arts
Since 1876 the Tenterfield School of Arts has operated from this site where its buildings have evolved to meet changing needs. For over a century it has been the focus of Tenterfield’s community life, serving as a town reading room and library, public hall, performances and events, recreational venue, cinema, skating rink and now a museum. The Tenterfield School of Arts also played an influential role in the development of the Commonwealth of Australia. For it was here on 24 October 1889 that former NSW Premier, Sir Henry Parkes, made his provocative Tenterfield speech which set in motion the popular movement resulting in the Federation of Australia. This nationally historic site now conserved houses the Sir Henry Parkes Collection, a museum devoted to Federation and the history of the School of Arts. Summer is the perfect time to get back to nature and enjoy bushwalking, camping, swimming, mountain biking, bird watching and fishing.
