Welcome to our Autumn issue and what a better way to celebrate than with a new look. This issue is special in more ways than one. First up we have some new team members on board for this landmark issue and they have done an amazing job and without them it would be impossible to get the magazine up and running. This issue is packed full of exciting things for Easter and we also take a special look back on the 100 Year Anniversary of the ANZAC’s and it’s impact on our small rural community. The Local Magazine is something I’m very passionate about and I think showcasing our beautiful town is really important, not just for our visitors but also for ourselves. Sometimes we forget what amazing things we have in our own

Our philosophy is to keep things as simple as possible, there isnt one particular diet that is going to suit everyone, just as our tastes vary so does what our body requires from our food and this can change from day to day. As seasons merge from one into another so does the nutrients our body needs. We go from wanting fresh salads and fruit to more heartier richer meals to keep our body warm in the colder months and protect us from illness. By selecting whole foods to eat you have already cut down on sugar, preservatives and rancid fats that invade our packaged foods that line the shelves of supermarkets. Eating whole foods needn’t be expensive if you choose cheaper cuts of meat to stew or braise and select produce that is in season. You’ll be surprised the amount of money you actually save.

Now you’ve got your food sorted what about keeping active? We have so many beautiful walking tracks around Tenterfield, grab a few friends or the family and rug up and head outdoors. Scientists are now finding that a shorter but a more

When it comes to layering there are no set rules but it’s always best to start off with a simple, form fitting neutral top. After that, it’s a lot like a recipe to getting the perfect look.Try adding a soft

THE BUSH HEART OF ANZAC
With the 100 year Anniversary of our Anzacs coming up, what a better way to remember our local sons and daughters who fought and supported our country and way of life, than with a tribute through Australian poetry. Nicole Brown rough and tumble games of tug o war, and other physical feats.
Recently I had the pleasure of meeting a wonderful man named Dennis Scanlon and interviewed him about his newly released CD that is a collection of poetry called “The Bush Heart of Anzac” recorded here in Tenterfield with local musician Peter Harris. Tenterfield was the perfect place to launch Dennis’ new CD as its a town he holds close to his heart from fourteen happy years at “Burrendoon” at Sunnyside, a place that got him back to the bush to raise his family. I heard Dennis arrive before I saw him, a chirpy whistle approached and a likeable fellow followed. Feeling immediately at ease we sat down and started chatting about his new CD and the obvious passion he has for bush poetry and the people he writes about. Dennis’ latest project is a CD with 15 of his original Poems. Nine tracks honour men from the bush who left farms and families to serve Australia in conflicts in many countries over many years. From the Boer War, through both World Wars and Vietnam, the ‘Spirit of the Anzac’ flows strong and brave. Six final tracks then offer the best of the ‘Bush’ heart – caring, sharing and giving, in everyday life. Dennis was asked to write a poem for the yearly get together of The Tyalgum Diggers, a tradition that started back in 1918. It was called the Stump Club back then and was held in a paddock on a Saturday where the returned servicemen gathered to share drinks, stories, 2up and continued their camaraderie with
This poem started Dennis’ journey to creating a series of poetry based around the Anzacs and the impact the war had on them, their families, as well as the many different animals which have ‘served’ in so many ways over the years Dennis’ focus is not so much on the war itself but of a way to honour the men and women that sacrificed so much. His love of the bush spirit and the bush heart is a major theme in his poetry and it’s something that is present in the way he speaks about his own life and the people he has met along the way.

Dennis described himself as a “crusty old bushman” who loves the straight talking no nonsense style of rural Australia but underneath the crustiness is the soul of a poet and someone with a lifetime of wisdom who is generous enough share his thoughts through his well crafted words. As someone who was really only exposed to poetry in my high school english class in between passing notes to each other and dodging spit balls from the boys up the back, it wasn’t something that I was all that interested in and to be honest I thought bush poetry was a bit daggy, but after having the privilege of Dennis personally read to me a few verses of his poem and describe the heart and soul that goes into them I have discovered a new found appreciation for the bush poet and the words and wisdom that they share. The red poppy that we are more familiar with on Rememberance Day In November also flowers in Turkey in early spring - as it did in April 1915 when the ANZACs landed at Gallipoli. According to Australia’s official war historian C.E.W.Bean, a valley south of ANZAC beach got its name Poppy Valley “from the field of brilliant red poppies near its mouth”.

HERBILICIOUS Herbs are the easiest way to elevate a dish from okay to amazing. Instead of buying expensive plastic packets from the supermarket grab a seedling of a hardy herb and put them in a pot or straight in the garden. With the weather cooling and we start to gravitate toward soups, roasts and braises. The best way to take a meal to the next level is with the addition of herbs. Hardy varieties such as rosemary thyme & bay are the pick for the season. Rosemary is the perfect partner to roast chicken or lamb. A pot with a bay tree near the back door is a great way to quickly add a savoury note to a slow cooked casserole. Braising is one of the best ways to get the benefits of meat and vegetables because it is cooked at a low temperature for a long time, not only that but you can use the cheaper cuts of meat and feed a large family with plenty leftover to make into pies or toasted up in the jaffle the next day. A perfect way to cook for camping as well. An interesting way to use thyme is to add it to a root vegetable gratin, kicking the humble potato bake up a gear. Use parsnips, potatoes, and butternut pumpkin sliced thinly and layered into a greased baking dish rubbed with a cut garlic clove. Season each layer with salt and pepper, sprinkle thyme and rosemary and a small handful of grated Gruyere and Pecorino cheese on each layer. Pour over cream and remaining cheese and bake in the oven until cooked through, browned and bubbling. A perfect accompaniment to a roast. 14

Taking bedding from lightweight sheets and cotton blankets to layers of fluffy doonas, softly textured blankets and chunky knit throws. BAVARIAN MUSIC FESTIVAL & BEERFEST Tenterfield is the only town in Australia which hosts a large Brass Band from Germany biannually. 4th March - 8th March Excellent entertainment and fantastic music, plus overflowing beer—those are the things that everyone in Tenterfield is looking forward to in another spectacular celebration of the Bavarian Music Festival and Beerfest this year. Being the only town in the country which hosts a large brass band from Germany biannually, Tenterfield is all set for another festive and delightful celebration of this extraordinary and fun event. To be held on 7th March at Tenterfield Memorial Hall, Tenterfield’s 9th Biennial Bavarian Beerfest will feature 30 musicians from the “Original Bavarian Brass Band” who will be giving you excellent performances throughout the day. The entire Tenterfield community as well visitors can enjoy Tenterfield’s very own Beerfest, which is
a rare opportunity to delight in a taste of genuine German beer and bask in the amazing German culture. Not only will beer lovers enjoy this event, but those with a love of brass bands will also be guaranteed a fun and exciting moment at the festival.

IT'S ON IN TENTERFIELD Towards the end of March (26-29th) renowned bush poets Marco Gliori, Murray Hartin and Peter Mace, as well as Balladeer Bec Hance are in town for Oracles of the Bush. Celebrating bush poetry, music and art, this is always a great event. With a packed schedule, events include the Induction of the 2015 Oracles Legend (Perry Condrick), Children’s Concert, breakfasts and lunches at a variety of venues, poetry competition heats and finals, Old time Dance and the Poets’ Brawl Breakfast, there’s also markets, an arts and crafts display and the Centenary Cottage Museum display. And don’t forget about the Markets around the region (Tenterfield Railway Museum, Drake, Urbenville & Wallangarra – just to name a few), and art exhibitions which are happening all the time.
