The home decor industry is very much influenced by the fashion world and as this is our Fall Home Fashion issue, we have a few stylish features to share with you. History Comes to Life in Victoria’s Very Own

SECRET GARDEN

Sooke based artist Bev Petow sculptured metal art into her life slowly, starting with graphic design, her masseuse career, becoming a nutritionist and creating projects with ceramics, macramé, painting and sewing. Combining her skill set with her creative side, Petow picked up some of her father’s metal mechanic tools and then her first welding torch at the age of 37.

With a newfound love for metal manipulation and the juxtaposition of a tough material with feminine structure, Petow’s sculptures and creations began popping up across North America, in numerous galleries and exhibits. In 2009, Petow’s best friend was diagnosed with leukemia and Petow spent her final days by her side. After her passing, Petow fell into depression until hearing her friend’s voice in her head telling her to “go to the studio”. Her very first metal gown was in tribute to her friend, with whom she has sewn dresses with.

Petow continues to pay tribute to her friend through the expression of her art. Now well-known for her metal ball gowns, her creations inspired by the Abkhazi love story are installed throughout the Abkhazi Garden until the end of September. This exhibit entitled Haute Couture showcases Petow’s exquisite, delicately created metal works and features life-size steel gowns with plasma and hand cut shapes. The collection was inspired by the story of Prince Nicholas Abkhazi and Princess Peggy Abkhazi, and the magical garden they planted more than 50 years ago.

Inspired by Shanghai born Princess Peggy Abkhazi’s ball gowns, Petow created 4 one-of-a-kind whimsical dress sculpture installations, which will be sold after the exhibit. Petow felt a connection to Peggy as she was inspired by her biography and they had both moved to Canada midlife. After viewing Peggy Abkhazi’s gowns in person from a box discovered by The Land Conservancy, Petow combined her fascination and artistic skill set with royal essence the


couple radiated. Contrasting against “the garden that love built” Petow handmade and welded each of these incredible creations from metal in her Sooke studio. “My process is a balance of construction and deconstruction as I focus on the forces of integration and decay that are constantly co-creating the world.”

The exhibit is a stunning example of the juxtaposition of industrial masculinity and delicate femininity - qualities that have made Bev Petow an instant success with displayed artwork across North America. This fantastical art installation was suggested and curated by Celia Duthie, who runs Salt Spring Island’s Duthie Gallery.

U

rbanity has become a trending phrase and living in converted factories and warehouses has become a trendy way to live in the city. However, there is a clear shift happening - away from dark, quirky lofts, towards wide-open conversion spaces that may not be huge, but have the advantages of height and light -and lots of it.

Is the shift because of the chic interior design possibilities in re-purposed commercial spaces? Or, is it due to the spiraling cost of real estate and our need, especially in British Columbia, to learn to live large in fewer square feet? Happily, it doesn’t really matter because the elements work together in harmony – trendy space options, inner-city locale and relative affordability.

The big question then becomes: How do you fashion a home that has more vertical square footage than floor space? Or how do you define a space that has no interior walls or borders? Soaring ceilings and wide-open floor plans are a feast for the eye but can be a decorator’s nightmare – trying to find an aesthetically pleasing balance between scale and stunning décor.

Once a shoe factory, the re-imagined hipster studio (previous page and on our cover) works magic with furniture placement. This is a relatively small space where living and sleeping quarters exist in perfect harmony because of massive windows, high ceilings, copious amounts of natural light and cool, crumbling walls - all of which were left in their original state. The nautically inspired custom chair is oversized and comfy and plays nicely with the eclectic assortment of wall art, found objects and coffee table styling. The chandelier pendant hangs from the painted steel beam above and does double duty as a focal point to draw the eye up. Boasting modern chevron wood floors and rough, exposed concrete, it is a little like living in a work of art. Character conversions with lots of windows and exposed brick are quite common in Victoria and Vancouver. Formerly a warehouse, in this charming home (left). the single room was defined with the clever use of an over-sized sofa, floor-to-ceiling bookcases and unobtrusive window treatments in natural wood. True to West Coast sensibility, it’s a warm mix of functional pieces and artistic splurges.

New York City certainly has their fair share of commercial conversions. This duplexed rehab in Chelsea was once a running track and basketball court for a gymnasium. A previous conversion had covered much of the building’s magnificent structural elements which Selldorf Architects uncovered and left them for all to see. To further enhance the industrial aesthetic, the architects used casement windows, blackened steel railings, and concrete floor tiles. The upper level houses the large open living spaces including great room, dining area and kitchen. A double-height atrium opens to the more private lower level that contains the master retreat, two additional bedrooms and a family room.

The interior design styling is perfectly suited to its bones. The colourful La Michetta by Meritalia modular tufted sofa and ottoman (close-up on previous page) in the lower family room works exceptionally well to visually anchor the space. The warm wood and low slung furniture in the upper lounge and dining space make the ceilings appear to soar even higher. Each piece was carefully chosen for this space, and as eclectic as the mix is, none competes with the oversized windows and all pay tribute to the original character of the building.

tom DUQUETTE A FUSION OF ANCIENT AND MODERN

A

few weeks ago I made a trip to Salt Spring to show my brother - who was visiting from Montreal - around the island. We stopped by Steffich Fine Arts, one of the main art galleries in Ganges. Gallery owner Matt Steffich has curated the gallery beautifully. There is a cross section of established and emerging artists on display, including several Norval Morrisseaus as well as some intricately carved and painted wooden sculptures. I was surprised to learn that these carvings were done by a non indigenous carver named Tom Duquette.

Tom loved living in Huna during the sixties because he was the only white person in the community. The art form that he was working with was living - people were actively creating.

When I spoke to Tom, he told me how he felt that North American art is greatly under appreciated. He wanted to study Primitivism, since ancient art forms are the foundation of Western Modern Art. A prime example of the influence of ancient forms on Modern art is the use of Tahitian folk motifs in Paul Gauguin’s paintings.

Tom encourages artists to avoid art school and instead discover their own creative language. He feels as though he has learned a lot more and come into his own as an artist by immersing himself in these communities. He learned primarily through observation and wasn’t taught in the traditional sense. He learned to trust and rely on his artistic instincts.

Tom Duquette has dedicated his career to studying indigenous art forms around North America. Originally from Northern Ontario, he studied classical drawing, sculpture and painting. After graduating, he travelled to several indigenous art centres on the Pacific Coast, as well as the north and southwest corners of North America to expand his understanding and knowledge of ancient art forms.

Tom’s fondest memories are of living in the remote community of Huna Alaska in 1962. He befriended the chiefs and observed the well known carvers in action and started to teach himself how to carve. Eventually, he became recognized as the top carver in the community and his carvings were sold at some of the biggest Potlachs in Alert Bay that were attended by thousands of people.

Tom became such a highly respected carver in the community, that in October of 2001 he was bestowed the name “Ghaiaanook” by Chief Frank Baker. The name means “great carver”. This is a tremendous honour for a non-native carver.

Duquette, who is primarily self taught, works in many mediums including stone, precious metals and bronze. His favourite mediums to work with are the most challenging ones - such as jade. He enjoys working with wood and bone as well. He is also an accomplished abstract expressionist painter. Tom is inspired by highly challenging projects and works from his studio on Saturna Island, which he considers a peaceful hideaway, conducive to creating.

His work has evolved into a distinct and highly personal blend of ancient art forms and modern principles of North American art, with jade carvings that were featured in National Geographic, Tom Duquette has been travelling, painting and carving for over forty years.

owichan Valley wine country is a treat on any day. The area has seen such a boast in tourism, especially with the many quality wineries that are reinventing the wine industry on Vancouver Island. One of those vineyards is Blue Grouse Estate Winery, which was purchased in 2012 by wine lovers Paul and Cristina Brunner. With a vision to recreate the winery, the work at its very foundation. In May 2015, Paul Brunner, along with winemaker Bailey Williamson and the Blue Grouse team unveiled The Manor House, home to the Blue Grouse Winery and Tasting Room. It is truly a stunning piece of West Coast architecture. Now, more than a year later, atHOME

THE VIEW DESIGNED THE HOME Formerly a cedar sided farmhouse, the original structure was redesigned, from a three level modest dwelling to a two level showpiece. The plan was always to create a modern home in which every room was connected to the views and had multiple outdoor areas; a structure that looked at home on the vineyard but didn’t compete with the magnificence of The Manor House.

Builder Tom Humber (Humber Custom Cabinetry) worked together with architect Joe Chauncey (Boxwood Design) and interior design team Jodi Foster and Carly Neal (Jodi Foster Interior Design+Planning). By removing the third storey of the original home, the team was able to realize Brunner’s dream of soaring ceilings that cleverly drew the eye to the views beyond. The interior exposed beams are a subtle yet powerful historical reference to the importance of barn structures in the Cowichan Valley. The home takes it architectural style in part from the clean lines and warm modern style of the winery, but looks and feels like a rustic farmhouse.

The interior of Grouse House was created with a deft hand – the restraint to not over design or decorate must have been difficult and the end result is brilliant. Jodi Foster Interior Design+Planning designed and Cowichan Woodworks fabricated the built-in cabinetry throughout the home. Foster and Neal selected lighting from Rejuvenation Hardware and Restoration Hardware that beautifully complements the soaring ceilings, exposed beams and rustic French furnishings. All of the custom window coverings were also designed by Jodi Foster Interior Design+Planning and fabricated by Design District Studio. Grouse House features a mix of modern and antiques; some pieces that has been in the Brunner family for many years. Canadian made furniture, iconic Montauk sofas and select pieces from Farmhouse Collections makes the design vision of laid-back elegance a stunning reality.

L

et’s start with this

- quite simply I love summer. I love when the sun sets well after 9pm and the pink fills the horizon late late late. I love warm nights where you are still in a t-shirt because in Victoria we don’t have to worry about horseflies and mosquitoes! (Yep gloating again to the rest of the country!) Vacations are amazing. I don’t tend to leave the coast much in the summer. Who needs to? It’s awesome here. Beaches, barbecues and a huge dose of Vitamin D!

Then September rolls into our fair city. Sometimes it’s cooler and foggy but it’s still mostly summer. There is something calming and relaxing about it, but then the first chilly night hits and you are struck with the thought that the season of sun is almost over (oh the horror!) Yes, it makes me sad, but I have always been a glass half full kind of girl, so I try and suck it up and make the best out of it. There are some things I do enjoy or at least ways I have figured out how to cope with the first signs of fall. The good things:

1) The return of routine. There is something comforting about

getting back in the swing of things and getting back on track. Summer is fun, but it can be exhausting (so many patios, so little time!) It’s a bit of a relief when the weather cools off; when the kids go back to school. I’ll admit it, I like structure. I like knowing my days are organized and I like pre-planning. It’s not that I’m a creature of habit and conversely, it’s not that I can’t be spontaneous, it’s just I’m better with routine.

2) Fall colours. William Cullen Bryant described it well,

““Autumn...the year’s last, loveliest smile.” The colours are vibrant and everywhere. You just have to wander through Beacon Hill Park to see them. Japanese maples on full display. Falling leaves in every hue. At Goldstream Provincial Park, it’s the circle of life - and yes, I’m singing that a-la Elton John while visualizing holding up a lion cub! The salmon run is a fall right-of-passage for all in Victoria.

3) Those sweaters! There is a coziness to the change. There is

comfort in having to slip on a warm wool sweater. The falling leaves signalling it’s okay to hibernate a little. We can’t forget about the ease of dressing in autumn. Packing away the beach towels and bathing suits and unpacking those boxes filled with our winter uniform: skinny jeans, knee high boots and sweaters!

4) Thanksgiving. Gobble gobble! Fun, family, drama. What could go wrong? At my house that means my dad starting the dinner by asking a controversial question to dinner guests. Nothing says gratitude like weighing in on the American Presidential candidates! But seriously, if it can’t be summer on a patio, then an autumn evening with family, friends and turkey with all the trimmings is the next best thing.

5) Winter and Christmas are right around the corner.

Preparing for, and I’ll say it for all of you Game of Thrones fans, ‘Winter is coming!’ Yep, it’s true. By now you know that though, because one of your neighbours has likely put up their Christmas lights already! While my shopping has started, it isn’t everyone’s way. Don’t worry you have lots of time, even if you stall until December 24th!

Finally the best thing about Autumn? (Drumroll please!) One more hour of sleep! Yes, Spring ahead, fall back. We will need it with all that darkness in the months ahead. But it’s a good chance to relax and dream about the sounds of the first birds chirping in March, signalling that it will be time to do it all over again. Family time out on Vancouver Island’s wild coast BY TODD TALBOT

A

s a kid, I remember visiting Tofino a few times, staying in a little A-frame cabin on the beach and playing football right outside our door with my brothers. It feels like a lifetime and a world away but with my wife and two kids of my own in tow we rekindled that spirit of laid-back adventure on our recent getaway to Chesterman Beach.

Located on Vancouver Island’s wild west coast, on the edge of Clayoquote Sound, Tofino is an absolute gem of a town that can be accessed by Orca Air, float plane, or as we did, take a ride on a BC ferry and then travel the ‘Highway 4’ roller coaster route. Be prepared to hear a chorus of “Weeeeeeee!”s from the passenger seats.

Anyone vacationing with kids knows, adults are happy when the children are happy. The good folk at the Wickaninnish Inn are wise to that idea. After check-in, our kids were welcomed with a basket of goodies to enjoy during their stay which included sand toys, frisbees, and a storybook, amongst other things. Their favourite was a Wickanninish scavenger hunt that led us on a journey of the property that we otherwise would have missed. The kids loved building an inuksuk and spotting the eagles’ favourite perch.

The parents’ favourite was receiving complimentary babysitting during our reservation at the Point Restaurant. A meal at the Point is a no-brainer when staying at the Wick. The room is as breathtaking as the endless sandy beach right outside its 240 degree windows. The copper fireplace, centrally located, anchors the restaurant through the stormiest of weather and every seat around it has a view of the ever-changing tides. And yes, the food was scrumptious, especially the clam chowder, but truly, my heart is in the architecture. When we were done playing soccer, building sand castles and examining the sea life in tide pools, we took on one last delightful pastime provided by the inn - a bike ride on the beach. Each member of the family was outfitted with an appropriately sized bike before taking to the sand. If you’ve never had a chance to race the waves on two wheels, this Wickaninnish offering, like all the others, is not to be missed.

I have to say, growing up on the West Coast, one has a tendency to take our rugged shoreline for granted but that all changes when you stand on the stunning beaches and watch the tides come and go, bringing such dramatic and romantic views, it makes you consider why you haven’t come here more often. At the risk of sounding dramatic, the experience on the beach is spiritual and life altering. Be inspired and enjoy the view.

COCKTAILS AT HOME BY: STEVE DRAKE

WHAT IS A COCKTAIL ANYWAYS? A cocktail is any beverage that contains three or more ingredients, if at least one of those ingredients is alcohol. Traditionally cocktails are a mixture of spirits, sugar, water, and bitters.

S

hows like Mad Men have sparked a renewed interest in the classic cocktails. As an avid craft beer fan it was only a matter of time before the craft cocktail bug bit me. The Gin Fizz, the Cosmopolitan, the Whiskey Sour - what was it that made these drinks so enduringly popular, then and now. Thus began my journey to learn about great cocktails of the past and how they are being reinvented today. I start this journey wanting to learn about the spirits that form the base for classic cocktails. Up first is a visit to Victoria Distilleries for a tour and tasting. As luck would have it, a new batch of gin was being prepared

so we were able to get a good look at the process. Phil Lecours, the Victoria Gin distiller, started the tour with a close-up look at their beautiful German still. He explained the distilling steps in detail and went on to list the most interesting mix of ingredients, juniper being the most dominant. This mix of botanicals, spirit and water sits overnight to completely infuse the flavours, giving us a stellar Victoria Gin. We finished the tour in the bottling and packing section of the plant. It was easy to see the care that goes in to making these small batch production runs.

GIN

One of today’s most popular spirits, Gin dates back to the early 17th Century. Although first production was confirmed in Holland, there are also claims that it was being distilled in Italy. The Dutch were using it for medicinal purposes, with Gin being sold by chemists to treat stomach ailments, gout and gallstones. Because of its unpleasant taste, the Dutch began flavouring it with juniper berry, which had its own medicinal properties.

THE PERFECT ILLUMINATION FOR EVERY ROOM IN YOUR HOME how much wattage do I really need? 1. 2. 3.

Multiply the dimensions of your room to find total square footage. For example, a room that is 12 feet by 16 feet is 192 square feet (12x16). Multiply the square footage by 1.5 to find the total illumination (or bulb wattage) required. For a space that is 192 square feet, you would require 288 watts (192x1.5). For task lighting - a desk or kitchen island for example - multiply the square footage of the work surface by 2.5.

LED measurements: Many homes today now have LED lighting, which use lumens instead of watts. As a quick guide, remember that one 60 watt bulb is the equivalent of about 900 lumens, and one 100-watt bulb is approximately 1,600 lumens.

THE ROLE OF A PROFESSIONAL PROPERTY MANAGER | SO MUCH MORE THAN RENT COLLECTION BY: CLAIRE FLEWELLING-WYATT

P

roperty management has changed drastically over the past ten years and continues to evolve as many Canadians opt out of home ownership and instead rent their primary residence.

Much of the general public believes that property management is the requirement to collect rent, take care of minor maintenance and oversee the rental property as a whole, but the reality is the role of a property manager is much more complex. The number one requirement that many people are not aware of is, in order to work as a property manager in British Columbia, you must be licensed through the BC Real Estate Association. The course is available through The Sauder School of Business and the applicant, once licensed, must complete ongoing education. All licences must belong to a Brokerage and must work under the guidance of a Managing Broker. Anyone providing services third party to the public, who is not licensed, is in contravention and could face legal implications.

Another myth that many of the public believe is that if they sell their property, the tenant must move out. This is a dangerous misconception. All tenancy agreements, whether month-to-month or fixed term, belong to the land, not the owner of the property. It is very important to understand the implications of selling a tenanted property and the responsibility and duty of care the owner owes to the tenant. Tenants are not allowed to make any alterations to the property... right? Actually that is not true, tenants can make alterations to the property provided that they seek permission in advance from the landlord in writing. Should a tenant make an alteration without permission, the Landlord can request

that the property be returned to its original condition at time of move-out, or they can keep the alteration, but are under no obligation to compensate the tenant for the improvement.

One of the most common questions we deal with is with respect to evictions. The process has improved over the past 10 years with the introduction of the 10-day eviction notice and direct request, but the actual process is still very onerous and can be expensive. Should a landlord have to go through the eviction process, and are successful at obtaining the Order of Possession from the Residential Tenancy branch, this still may not be enough to get the tenant on his way. If the tenant refuses to vacate, there are particular steps that must be taken in order to enforce the order. The first step is to make arrangements with the Court Bailiff. The second step is to file at the court house for a writ of possession. This is necessary as by law, the Residential Tenancy Branch can issue the order, but unfortunately they lack the powers to enforce it. Once the order has been filed, the Writ obtained and the arrangements made with the Court Bailiff, the tenants along with their property can be physically removed. As you can see there are many facets to managing a property and many things to consider. If you are thinking of renting your home, talk to a professional first and get a good understanding of the market and the process. Even if you decide not to hire a professional manager, consider getting a membership with Landlord BC, they too are available to help Landlords navigate through the complicated system of the Residential Tenancy Act.

Relocating can be stressful for you, your family and your pets. Drastic changes in the environment can be shocking to an animal’s system, so be prepared by educating yourself about transporting and settling your pet during a move.

For moves via vehicle (car, truck or recreational vehicle), make sure your pets have a secure crate or carrier for the duration of the move. Always have well-ventilated carriers and never transport them in an open truck or moving van. Prior moving day, expose your pet to the carrier or crate by leaving it in a common area of the house and encouraging them to incorporate the carrier into their life. Leave a water dish, food, blanket or favourite toy inside, and they will soon recognize the carrier as a safe place and gain familiarity. If you are staying overnight along the way, choose pet friendly hotels that offer outdoor space for your pet to play and have a little fun. Prepare a travel kit with enough food for the move, a toy, familiar piece of human clothing and grooming tools. It is important that you create a quiet atmosphere to minimize stress and anxiety.

FOR THE LOVE OF FALL

D

oes your choice in wine change with the time of year? Do you prefer lighter, crisp and mineral styles in the

summer and bigger and beefier styles in the winter?

And if you do change your preferences of wines with each flip of the calendar, do you change to the same

wines each year, or do you explore new regions and producers?

Of course, your answer is going to be as personal and unique as your passport picture. Our choices are our own, and how we

choose is our business. For me, I definitely see trends in styles of

wines that I purchase and drink during different times of the year. Winter in Victoria, though not as cold as most places in Canada,

can be darker and rainier than in the other seasons. The produce available tends to be more along the lines of root vegetables

and mushrooms, and the meals I cook are more in the realm of

braised meats, vegetables and soups. As a result of the produce

available and my cooking, I tend to pair wines that are more full bodied and weighty.

As spring turns to summer, I have a powerful thirst for fresher,

lighter wines and it is also reflective in the fresher, lighter styles

of produce available at that time. Of course these are not hard rules and, even if they were, all hard rules are made to be broken; especially within the world of food and wine. And as the fall season comes, some of us stay in summer mode for a little bit longer, hoping to prolong the sunnier and warmer season with weekend barbecues that are held in the cold and dark of 7pm. We start barbecuing marinated root vegetables and serving it with a choice of cold whites, roses and reds – cold because that’s the temperature in the air and not because they came from the fridge. It seems sometime in October is when I just give up and realize it is time for stock pots and Dutch ovens to replace my outdoor cooking apparatus. Of course, I never stop pairing with whites and roses, they just get a little more intense and serious, but I do start pondering the red wines I can find in both my local liquor store and my humble cellar. My personal favourite for this time of year is Pinot Noir. Expressions of dried leaves and “sous bois” are a few notes that Pinot Noir exhibits that stir my fall culinary soul. Beef bourguignon and red burgundy (pinot noir) will warm you up on any cold, autumn evening. It’s time to embrace seasonal change.

t’s always hard to bid summer goodbye and make the transition to fall but don’t forget that here on the West Coast, September and October can often bring us glorious days too! So before you pack up the patio furniture and nestle indoors, think about fall entertaining options that are both easy and fun. Warm, sunny days aren’t unusual in this season, so take advantage of them when they arrive. While it may not be as warm as during the summer months, there are plenty of ways to keep outdoor entertaining cozy and enjoyable. Consider the following checklist to help facilitate successful outdoor entertaining in the fall. • • • • • • •

MY FAVOURITE FALL THINGS If you are planning on evening gatherings, just make sure to have your outdoor heaters or fire pit ready to keep guests warm. Keep your menu simple; hot dogs, chili, warm soups and fresh bread are great options for easy outdoor entertaining. And don’t fuss over dessert! No one will object to the traditional Smores, especially if you have a fire going (a barbecue works well too). And since fall is traditionally apple season, here’s a fabulous treat for kids and adults alike. Slice up some apples and serve them to your guests with this amazing Caramel Dip:

Caramel Dip

1 – 8 oz. pkg. cream cheese (room temperature) 1 – 12 oz. container of Cool Whip (slightly thawed) 1 jar caramel sauce (16-20 oz.) *I use Bernard Callebaut Karamel Sauce 1 ½ cups Skor bits ½ cup grated dark chocolate Apples – sliced

Mix together cream cheese and Cool Whip until blended. Spread the mixture evenly in a glass 9 x 13 dish (or any dish of choice). Pour the caramel sauce over the cream cheese mixture and spread evenly. Sprinkle the Skor bits over the caramel sauce and top with grated chocolate. Refrigerate until ready to serve. Slice up apples to dip in this amazing sauce. Enjoy!


I adore coffee parties and fall seems the perfect season to gather friends in your backyard or on the deck to sip on a steaming latte or cappuccino. There are so many wonderful fruits still available in fall and this translates into tasty baking opportunities: apple pies, peach crumble, blueberry scones, blackberry muffins, etc. One of my all-time favourites is this plum tart, a scrumptious treat served warm or cold.

Plum Tart Filling: 2 cups (500 ml) pitted halved prune plums (about 1 lb.) 1/3 cup sugar 1/3 cup whipping cream 2 eggs yolks 1 tsp. vanilla ¼ tsp. cinnamon

Plum Tart Base: 1 ¼ cups flour ½ cup butter 4 tsp. cornstarch 2 Tbsp. sugar

Mix the dry ingredients for the tart base together in a large bowl. Using a pastry blender, cut in the butter until the mixture clumps together. Press evenly into a 9-inch tart pan making sure to create a ½-3/4 inch border at the edges. Arrange plums, cut side up and slightly overlapping, in circular pattern over pastry. Sprinkle with all but 1 tbsp of the sugar. Bake tart in centre of a 400°F (200°C) oven for 15 to 20 minutes or until plums are softened. Meanwhile, in bowl, whisk together cream, egg yolks, vanilla, cinnamon and remaining sugar; pour over fruit. Bake for another 2530 minutes until set.

MADNESS behind the MAGIC Dîner en Blanc Victoria 2016 On Thursday June 23, 2016, seventeen hundred enthusiastic diners dressed entirely in radiant white, gathered at pre-determined rendezvous locations for Victoria’s fourth annual Dîner en Blanc. With white chairs, tables, napkins and picnic baskets at the ready, attendees waited anxiously for the reveal of another spectacular and iconic secret location in our incredible city. Now that the city is familiar with the event, and appreciate the uniqueness of DEB and the magical essence of the evening, I wanted to show readers the other side of Dîner en Blanc – the madness behind the magic. In collaboration with Tyson Villeneuve of The Social Concierge, Aidan Henry, founder of Victoria based Brink Events, brought Dîner en Blanc to Victoria four years ago with a vision of raising the calibre of events in this city. Creating an enchanting evening of bubbles, sparklers and smiles with effortless ease involves months of planning for Henry and his small team. There is more than meets the eye when it comes to putting together a large-scale, highly secretive event; there is simply no room for hiccups. When seventeen hundred people converge into one space within a thirtyminute time frame, every detail must be planned to perfection.

Henry works alongside the City of Victoria to gain permits for the event, as it must be a large location that reflects the beauty of our city while hosting a massive, eager sea of guests. This year, Dîner en Blanc was hosted in Victoria’s harbour in front of the Delta Victoria Ocean Pointe Hotel and Spa. The first thirty minutes of Dîner en Blanc are critical. Aidan Henry tells us why. “It all has to effortlessly come together as nothing can bottleneck. A smooth ingress is hugely important, especially from the guest’s perspective. As for music, food, décor and itinerary –it all has to feel cohesive with nothing out of place. We have to ensure the tone is set.”

When it comes to Henry and his expertise for organizing events like Dîner en Blanc Victoria, his passion is infectious and immediately apparent. “The reason I enjoy event design so much is that when we look back in life, we don’t remember the day-to-day or weekto-week. We remember special moments and many of these come from special events. My job is to create these memories and experiences.” For guests, the priority is finding the perfect outfit, the hunt for white chairs and tables and testing how you will be carrying your supplies efficiently to the secret location. For event staff and volunteers it’s preparation. Everything comes down to the details.

With a secured venue and fifty pairs of helping hands, the key for effortless set-up is a structured plan starting three to four months prior to the event. One of the most important tasks is creating cohesiveness and consistency in all elements of the event. Eight hours prior to the arrival of guests – the Dîner en Blanc team begins setup.

For 2016, giant white balloons were inflated, light-up signs installed (LOVE was my favourite!), event hashtags were playfully chalked into the walkways, musicians tested their instruments, and signs designating group leader names were posted for quick table assignment. As for beverages, an astonishing 800 bottles of wine are uncrated, and once again Evian providing water in signature designed keepsake bottles. As for food, whom better to partner with Dîner en Blanc for delectable bites than Victoria’s popular The London Chef. A true dynamic duo – Chef Dan Hayes and wife, Micayla Hayes spend three months in advance planning culinary perfection that coincides with the palette and atmosphere of the event. 400 hundred meals (1,200 boxes) were prepared fresh for guests who chose to purchase a meal, instead of bring their own picnic dinner. In addition, The London Chef provided delicious canapés and dessert for the atHOME Victoria Media Lounge.

FRESH SALMON CEVICHE INGREDIENTS: • 1 pound of very fresh local salmon • 1/4 each of red, green and yellow peppers, diced • 2 roma tomatoes, seeds removed and diced • 2 tbsp good quality Tequila • pinch of crushed dry chilli • 1/2 fresh jalapeño, sliced • 1/4 cucumber, seeded and diced • 1/2 bunch cilantro leaves and some stalk • 8 mint leaves • 1/4 red onion, sliced and rinsed in cold water • juice from 1 lemon • juice from 2 limes • 1 tsp toasted and ground cumin • 1 tbsp canola oil • pinch of salt • pinch of salt • pinch of sugar METHOD: • Cut fish into 1/2 inch dice and ensure there are no remaining bones in the fish (using your fingertips). • Place all other ingredients into large bowl and mix well. Add fish and adjust seasoning if needed with salt, chilli and sugar. Serve within five minutes.

METHOD: • Heat large saute pan over medium heat. Add oil and sweat onions garlic, fennel and chili flakes. • Season with salt. • Add tomato puree and wine. ARCHITECTURAL wonders THE SINGING RINGING TREE A wind powered sound sculpture resembling a tree, The Singing Ringing Tree is set in the landscape of the Pennine hills in Lancashire, England. Completed in 2006 and designed by architects Mike Tonkin and Anna Liu, the sculpture measures 3-metre tall and is made of galvanised steel pipe which harnesses wind energy to produce choral sound covering a range of several octaves. In 2007, this unique architectural sculpture won the National Award of the Royal Institute of British Architects for architectural excellence.
