Greece's 'Golden Age' was an era of peace and cultural prosperity. Incredible achievements in art, philosophy, and science advanced Western civilization and still impact our world today. Many aspects of our modern society can be traced back to ideas that were first imagined by ancient Greeks over 2,500 years ago.
Philosophy. Socrates, Plato, and Aristotle: these Greek thinkers first developed systems of thought and reason which became the basis for the study of Philosophy and still influence the way we think today.

Democracy. One of Ancient Greece's most radical ideas was the idea that ordinary citizens should have an equal say in who governs them, as well as how how they govern. In Athens, the concept of democracy was born with a new belief in government of the people, by the people, and for the people. Thousands of years later, American colonists used these same principles as the basis of their Declaration of Independence from Great Britain, and later, as the foundation for the United States Constitution.

If you've been looking for a recipe that can authentically capture the taste of the Greek islands, you can stop your search here. Both colorful and delicious, traditional Horiatiki (which means 'village' in Greek), is a healthy, flavorful dish that can be found in almost every cafe, taverna, and home kitchen in Greece.
It's important to note some guidelines to ensure this dish is served as authentically as possible: avoid adding any lettuce or leafy vegetables; don't mix the salad before it is served; serve the feta in large pieces (not small cubes); and finally, make sure to eat this dish with with fresh bread (not pita). With those ground rules set, kalí órexi (enjoy your meal)!
2 to 3 mixed ripe tomatoes, cut into large slices
– 1 medium cucumber, peeled and cut into large slices
– 5-6 pitted Greek Kalamata black olives
– ½ small red onion, sliced
½ small green bell pepper, sliced
1 large chunk of feta cheese (approximately 2 to 3 ounces)
6 tbsp extra-virgin olive oil (and more for drizzling)
1 tsp dried Greek or Mediterranean oregano
3 tbsp red wine vinegar
– Kosher or sea salt
– Capers (optional)
Makes a single serving. Total time to prepare: 10 minutes.
– Slice the tomato into wedges (don't cut it in cubes). If the tomato is large, simply cut the wedges in half.
– Peel the cucumber and cut it in slices that are approximately ½ inch thick; if you'd like, you can cut the rounds in half for smaller pieces.
Cut the red onion and green bell pepper into thin slices.
Plate the tomatoes and cucumbers; then stack the onions and peppers on top.
Add the olives. If you'd also like to add capers, you can include them as well.
Place the feta cheese on the side or on top of the salad- whatever works best for your presentation.
– Sprinkle oregano over the entire dish.
– Generously drizzle olive oil and splash a bit of red wine vinegar over the salad. Add salt to taste. Be sure not to skimp on the olive oil; while you don’t want it to overwhelm the salad, all of the ingredients should be thoroughly coated in oil.
Serve the salad, and soak up all the juices with bread while eating. Enjoy!

On the island of Crete, Dakos normally refers to a full-sized salad, but it can also be served as an appetizer or a mezze dish, depending on how it's prepared. It is widely served in almost every establishment in Greece, and usually eaten at lunchtime. However, during the Spring and Summer months, this dish can also be a great option for dinner.
So, what exactly is Dakos? It’s toasted bread or soaked barley crumbs, topped with olive oil and ripe tomatoes, feta cheese, chopped olives, and oregano spice.
This salad is an absolute must-try dish. Its simplicity is what makes it so wonderful. This simple recipe is so easy to follow, that you may find yourself making it day, after day, after day, after day...

30-50 grams of feta cheese
1 large slice of country bread (½" - 1" thick, with crispy crust)
2 tbsp extra virgin olive oil
4-6 pitted Greek Kalamata black olives
a pinch of dried oregano
– ½ shallot (or any other type of sweet onion)
– Salt and ground black pepper (to taste)
Makes a single serving. Total time to prepare: 15 minutes or less.
– Brush the bread on both sides with olive oil and fry in a pan until crispy on both sides (approximately 2-5 minutes, depending on your stove).
Cut the tomato in half, then dice half of the tomato into medium-sized cubes; grate the rest on a coarse grater. Discard the skin.
Thinly cut half of the shallots and separate them with your hands.
Ensure olives have been pitted; if they haven't, remove all of the pits.

Assemble the salad by placing the toasted bread on a plate. Then, generously soak it with olive oil. Place the tomatoes on top of the bread and add a pinch of salt to taste.
Crumble feta cheese and sprinkle with a pinch of oregano. Drizzle the salad again with olive oil.
Add the olives and sliced shallots. If you'd like, add capers for extra taste.
