OUIS Lassen and Charles Nagreen have won places in the culinary annals but most people will have no idea who they are. Both lay claim, along with at least six other Americans, to be the inventor of the hamburger. Hamburgers are simple patties of ground meat which are now available in virtually every town on the planet and make billions of dollars for the global companies that purvey them. They are the icon of the term “fast food” and tens of thousands of tons of pork, beef and chicken are pulverised daily to satisfy the human race’s insatiable appetite for them. But there is a more sinister side to the humble burger, from moral question over land uses to animal welfare and the link between fast food and obesity. In the 1980’s, McDonalds opened a branch next to the Spanish Steps in Rome and it so annoyed a man called Carlo Petrini that he and a few like-minded people decided to do something about it. So was born the organisation, Slow Food. Its aim was to champion good food produced ethically, while promoting regional traditions, gastronomic pleasure and fair treatment of customers, producers, animals and the environment. Slow Food is now a global movement involving millions of people in over 150 countries, including the UK. When Slow Food UK became established, an alliance with the Rare Breed Survival Trust (RBST) was only a matter of time. In recent years the two organisations have worked closely under the Slow Meat banner to promote high quality animal welfare and produce, and support small-scale producers. The RBST’s Tom Beeston is excited about this developing alliance. He said: “The fact that we can now promote rare breeds to a much wider audience bodes well for our members and, of course, the breeds themselves.” Hopefully it will also bode well for those enlightened people for whom fat and marbling are not dirty words.
