from the editors Welcome to the new look Nor th Coast Weddings magazine! We are so excited to bring you this issue and for all of the changes that are taking place here. We have a new look cover which is fresh and eye catching; a beautiful new layout; a new website complete with blog and probably the biggest news of all is the fact that we are now an online magazine. The print version will still be available so you can sit with your girlfriends over a cuppa and pour over the pages together, however if you are the techy type, then we have now joined the rest of the world and gone digital. This is an exciting new phase in the life of our magazine and can only bring good things for all. Make sure you go online and check it out. Two thousand and thir teen is shaping up to be a huge year for us and it seems everyone has star ted the year with a bang. Florists, fashion houses, stylists, photographers - you name it - they are all set for a big year in weddings. Someone that definitely has another huge year ahead is Samantha Wills. This busy Por t Macquarie gal will be fur ther expanding her jewellery empire to world-domination status. Dividing her time between New York and Sydney, Samantha took time out of her crazy schedule to talk to us and tell us what inspires her. See her interview on page 14. legant, whimsical, romantic and bold: these are all words that can be used to describe the gorgeous designs of Samantha Wills. Raised in Por t Macquarie, Samantha is an excellent example of the way hard work and a driving passion can bring amazing success. Spending her time between Sydney and New York, designing and running her jewellery empire, she is the epitome of the modern creative. With her love of all things beautiful and the keen suppor t of clients from the everyday bride to international celebrities, Samantha’s business is thriving. With her collections expanding to include an e-magazine, homeware and stationary

“My biggest inspiration,” she says, “are our SW fans and I always strive to deliver according to their wants”. there seems to be no limit to her creativity. And, like many successful entrepreneurs before her, Samantha chose a less traditional path to get where she is today going from Bondi Beach market stall holder to international star. “I’m a completely self-taught jewellery designer,” she says, “but I can credit my mum for starting me off by enrolling me in a bead making course when I was in primary school”. It’s an early talent and a belief in her ability that paid off immediately. From making jewellery for friends and family Samantha showed her first collection at Fashion Week in 2004. “Fashion Week in 2004 was where I placed my first big order. I quit my job the next day and star ted designing full time,” she says. Yet it’s not just about having financial success. “Jewellery making was always a hobby and a passion, so I can definitely say I’d still be making jewellery even if I wasn’t getting paid for it”. While her designs initially focused on elegance and difference in both evening and daywear, Samantha extended her collection in November 2012 to include designs specifically for bride’s

offering modern and romantic pieces. The inclusion of this category in her collection s t e m m e d from increasing customer feedback for a dedicated bridal line. These designs draw their inspiration from Art Deco chandeliers and incorporate back necklaces, turquoise stones and truly divine, drop earrings. It’s a style that is affordable, unique and completely elegant and continues the effor tless style she is famous for. Yet this isn’t all Samantha offers with this collection. “My biggest inspiration,” she says, “are our SW fans and I always strive to deliver according to their wants”. As such, Samantha also offers style advice through her website www.samanthawills.com and e-magazine SW Brides. The bridal section of the site - including the magazine, ‘Visual Feast’ and shop - invites clients into an “…inspiration room that applies the SAMANTHA WILLS style to different themes of weddings, covering everything from invites to décor.” It’s a concept that Samantha is justifiably proud of and one that gives brides-to-be a tangible and complete style guide no matter what their taste or budget. From her website to her own look, it is clear that Samantha’s passion is gorgeous styling. To look through her work is to discover page after page of beautifully styled bodies and interiors, photographs that call you in with wishful longing. It’s the perfect place for any bride to start to look for inspiration. While Samantha is all for a woman staying true to their own personal style she does suggest thinking outside the square: “Choosing turquoise jewels can double up as ‘something blue,’ and cocktail rings for bridesmaids are beautiful bridal gifts,” she suggests.

And to help you along even fur ther, her style pages have ideas enough to enchant any bride-tobe. It’s the ideal tool for a bride who wants to style herself without the dramas of trying to coordinate pieces from a variety of outlets. It’s the kind of service that pushes Samantha’s brand ahead of all the others. “Our customers have been the most influential in deciding the direction of the brand,” says Samantha. “The opinion of our customers is very impor tant to us, and we always take feedback on board and incorporate it in future designs”. And it is this communication with clients that gives SAMANTHA WILLS the edge. “Developing a relationship with our customers is our highest priority, which works seamlessly with social media. Our customers are able to talk to us, and I love that we can talk back and have a two-way interaction,” she says. It’s a value and way of doing business that has enabled Samantha to go from strength to strength in the 8 years she has had her brand. “Staying true to the brand’s values and vision has been a big factor in keeping the business alive over the years,” she says. “It has also been a credit to the amazing team at SAMANTHA WILLS that the business has grown the way it has”. So who is the SAMANTHA WILLS client? “I don’t have a par ticular age or personality in mind when describing the SW woman,” Samantha says. “SAMANTHA WILLS is for anyone who wants to create a bohemian luxe style with statement jewels that take them from day to night”.

she says. “It allowed me to take a step back and view the brand’s growth from when I star ted, to where I am now. It’s exciting times here at SAMANTHA WILLS!” It’s a wonderful and well deserved life that Samantha has created for herself, reflecting her passion certainly but also the commitment of hard work. She is at pains though, to make sure to give credit where credit is due. “The team that I work with is truly amazing,” she says. While business acumen is one thing it’s the nuts and bolts of design that hold a fascination for many. “Creativity and ideas can come at any time,” explains Samantha. “For me it’ll be at random, like sitting on a plane, or in the shower. I’m inspired by many things which contribute to my creativity”. Travel and design movements of the past seem to be the main inspirations for Samantha in her quest to create beautiful pieces of jewellery. Indeed she often names collections or pieces with the places she has been – Notre Dame, Morocco and San Francisco to name a few. So while Samantha loves to see the world and take inspiration from its beauty she is currently

“You can wear a cocktail ring during the day, and layered bracelet sets at night with an evening dress. It’s about accessorising how you feel,” she says. And this follows through whatever the occasion - from a day out shopping to your wedding day – being true to who you are is key. “Choosing one statement piece of jewellery, while keeping the rest of the jewels simple and understated is a tip that never fails!” Her style cer tainly has broad appeal with fashion magazines regularly carrying photographs of celebrities wearing her jewels. From Drew Barrymore to Rhianna, Taylor Swift

to Kate Hudson, her work is seen everywhere. “Having your jewellery worn by a celebrity is flattering, because they have an endless list of designers to choose from,” she says. “It’s always exciting to spot a celebrity spor ting SW on the red carpet!” But it’s not just celebrities who have noticed Samantha’s brand, with those in the ‘know’ in the world of design and business acknowledging her talent and success as well. Named the ‘Break Out Star’ in 2011 by the New York Times has been an amazing moment for Samantha. “Reading that about myself in the New York Times was absolutely surreal,”

based in the US in New York, living and working within this thriving and creative city. “As the business is now starting to establish itself in the US, it’s beneficial for me to be based in America to attend events and work closely with our American agencies to grow our presence,” she explains. “And also - I love NYC!” The inspiration the city provides is certainly paying dividends with Samantha and her team planning to expand the business even fur ther. “There are many exciting things in the pipeline for SW in 2013! We have a clutch range in production, and of course we hope to extend our offering in our home wares category”. Having come so far and with so much still to look forward to, did Samantha always know such success would be hers? “I always knew I would do something creative! But I didn’t even know jobs like this existed. I led a very sheltered life in a good way,” she explains. “It wasn’t until I moved to Sydney that I really got a scope of what the creative possibilities are. I am still learning and discovering possibilities and that is the exciting par t!”

P lanning a wedding can be an expensive and often stressful experience, yet it needn’t be either. There are any number of experts you can tap into for advice and practical help that can make the lead up to your wedding enjoyable rather than fraught. By Nikki Williamson

Catering

U

sually the biggest expense in any wedding budget it is important to get the catering right. Many wedding guests remember the food more than anything else from a wedding so it’s important to get your choices and quantities properly organised. Again, research is vital so that you are making informed choices about food style and how much you’re going to need. Ask around and check out the websites of local catering companies, collect menus and taste. Because the catering is the biggest expense of any wedding you need to make the best use of your money while giving your guests a meal to remember fondly. Taking into consideration where the reception is located, how many guests you’re going to have, the style of your wedding and whether or not any of your guests have special dietary requirements is key to getting it all right. Happily, a good caterer will help with all of these issues but what should you be looking for? Jeremy, from The Larder in Byron Bay (thelarder. com.au), believes there are a number of factors you need to consider when choosing a caterer for your wedding day. “Quality, consistency, reputation and length of time in business are crucial,” he says. “You also want a caterer that keeps your needs in mind including budget, style of food, specific theme and level of service.” Communication is of course, key, so you need to make sure that you are comfortable with the caterer you choose. It’s no good having the best around if you can’t get them to listen to what you want and manage any changes. Make sure you meet with a few possible caterers and that you consider the rapport you have with each of them as well as cost and style before you commit. Once you have a caterer it’s time to get down to the nitty gritty of choosing what to serve. “Keeping food along the same lines and feel as the reception is important,” points out Jeremy. “So if you’re having a casual beachfront wedding you probably wouldn’t then sit down to a formal three

course dinner”. Instead, you might opt for cocktail food, a buffet or even share plates. The timing of your wedding and what guests may or may not have eaten before is also worth keeping in mind. “If a wedding ceremony starts at 2pm, most people would have skipped or at least only have had a light lunch,” says Jeremy. “Having sufficient food over the course of the afternoon/ evening is paramount to getting the balance of food (and alcohol) right”. While you might imagine that food options are pretty standard – cocktail food, sit down meal or buffet, if you’re the kind of bride that likes to do it differently, veering away from tradition to something more suited to you is an option. Jeremy suggests considering cocktail receptions with lots of well-presented interesting foods, flavours & textures such as mini degustation menu’s, miniature desserts, and locally sourced produce, or individual food stations with the chefs working in front of all the guests. Whatever your choices its paramount that guests have enough to eat and that you have made sure that anyone with food allergies is being taken care of. It’s also important to consider what your guests will be doing/eating the day after especially those who have had to travel long distances to get there. “My thoughts are normally for planning the day after the wedding also,” says Jeremy. “With all of the family and friends still around it’s a good idea to keep it casual, but have the caterer deliver platters of foods, interesting salads and a selection of things that can be cooked on the barbecue”.

The Cake But it’s not just the meal you need to organise for the reception. The wedding cake is a huge choice for any couple and can be lavish or simple depending on taste and budget. Just like choosing a caterer, you need to do some homework to make sure you’re going to get what you want. “When choosing a cake designer you should

have a good look through their portfolio to see what their style is like, says Bree of The Cake That Ate Paris (www.thecakethatateparis.com.au. “If you like what they’ve done then good chances are they can create something beautiful for you. If not, keep searching!” Another point is to not only consider the look of the cake but the taste as well.“Ask what flavours they can do,” suggests Bree. “Most cake makers should be able to bake pretty much any flavour. Also, make sure you understand what price range they cater for and the delivery options. You also need to consider whether or not you’re going to provide dessert as well as cake”. Before going to your chosen cake maker, says Bree there are a few things you should have thought about. “You should have a rough idea of the type of design you would like and the colours you want used. From there the designer can help fine tune what you want, but any photos of designs you like are always a good idea”. When it comes to the style of the cake, Bree says there are many different trends to look at. “At the moment there are a lot of bright pastels which I love. Traditional sugar flowers, cakes patterned with intricate stencils, and simple exposed butter cream cakes with fresh flowers are also gorgeous”. Remember to keep in mind the overall look and feel of your wedding as you plan your menu and cake. Styling should run through every area of the wedding ceremony and reception to create and reinforce an atmosphere that represents you and your groom. • Match the style of your wedding and the food for a harmonious transition from ceremony to reception. • Make sure both you and your caterer know exactly what is being served and when. • Do your homework and choose a reputable caterer.

Styling T

he colours, theme or style of your wedding is crucial and often the most stressful element of planning for brides because the look of your wedding sets the tone and mood for the entire day. Fun or funky, whimsically romantic or formally elegant the mood you set for your guests provides expectations of what is to come. The look of a wedding should reflect the personalities of the bride and groom and reflect their overall style as a couple. Narrowing down the kind of style that you want can be tricky, as can sourcing the elements you need to bring your vision to life. A stylist can save you a lot of time, energy and money when it comes to getting your look perfect. Finding a stylist can be as easy as asking your wedding venue for their recommendations, doing a Google search or word-of-mouth, says Trudy from Noosa based, Love Bird Weddings (lovebirdweddings.com.au). The important thing is in understanding what you’re getting. “When hiring a stylist, as opposed to a decorator,

you need to first understand the difference between the two,” explains Trudy. “A decorator typically sends out a decor list with prices and asks the bride what decor they are interested in. A stylist, I believe, works quite differently. They start with the end in mind, asking the bride and groom what they want to achieve from their wedding styling before going away to create a specific styling concept to fulfil the brief ”. The brief, says Trudy, should provide a holistic design covering all elements of your day, from ceremony, through to a canapé design, and then a sit down or cocktail dinner design. “As stylists, we will also recommend a floral concept, and we work very closely with our floral partners to achieve an integrated decor and floral design for our brides”. When deciding what kind of style you want for your wedding, Trudy suggests that looking for a theme is less important than the overall feel you want to create. “We focus on ambience and emotional impact,” she explains. “The reason for this is because we want our clients and their guests to have an emotional response to the weddings

we design...to walk away with the warm fuzzies!” In this way, you also maintain the authenticity of who you and your partner are. “The most common mistake we see as wedding stylists is when couples are trying to achieve a style that is someone-else’s,” says Trudy, “meaning they have lost sight of what really reflects them, and their chosen venue”. It might be useful to think of something that you and your partner love to do together or the place you met. Having a starting point that is emotional – a remembered feeling of being together or meeting – can help to simplify a process that is often too busy with choice. • Think about the feel you want for the day and base your theme/style around that. • Stay true to you and your partner’s sense of style rather than trying to emulate someone else’s. • Shop around for the trinkets you need to style your day – don’t be afraid to borrow from friends or rent items if you need to.

aving beautiful photographs of your wedding day is a must for any bride and careful planning well help to make sure that this is exactly what you get. “Choosing a photographer is a big thing,” says Kristy from Figtree Pictures (www.figtreepictures. com.au), “and with so many photographers and photographic styles out there, it is sometimes hard for a couple to know which way to go”. To start off with she suggests couples should first do their research. “Flick through magazines, trawl the internet or start a pinterest page to really work out which photos you are drawn to,” says Kristy, “and then start looking at local photographers that suit this style”. She also suggests looking at the many great wedding blogs out there, to give you some other photography ideas. “Once a couple knows what style they are drawn to, narrowing the field to two or three photographers that fit their styleguide short list would be ideal,” she says. Then it comes down to three different things. “Rapport, resonation and rate: “Do the couple have a good relationship with, and a good feeling about, the photographer? After all, they are going to be spending all day with them so it is crucial they get along and feel comfortable,” says Kristy. Laura from Captured With Love Photography (www.capturedwithlove.com.au) agrees: “Your chosen photographer should be someone you connect with,” she says. “You will spend the majority of your wedding day with them so it’s important you feel relaxed and that you can have fun together”. She also suggests it’s important to find a photographer who is a natural storyteller and can capture all those little moments that join together to make up your wedding day.

As with all choices for a wedding, budget is something all couples have foremost in their minds. “While money should not be the deciding factor, a couple still needs to stay true to their budget,” says Kristy. “On the flip side though, couples also need to think about whether paying a little bit extra is an important investment in something that they are going to love”. Part of recognising that your photographs are an investment is making sure that you know what you’re going to get for the money that you are going to pay. “Finding out what is included in the price on the day is really important”, says Kristy. As is making sure you own dual copyright on the images after the day. “It’s also important for couples to completely read their contracts from back to front and ask any questions you many have from that before signing on the dotted line”. “Find out whether your photographer has professional grade equipment that is regularly maintained and updated,” suggests Laura, “whether they have back-up equipment with them in case of damage or malfunction and whether or not they have insurance coverage”. While selecting a photographer is a major decision in itself, choosing where to have your photographs taken can also be a difficult decision. “When picking locations couples need to think about what the place means to them,” says Kristy. “It makes sense for couples to select areas that they will look back on fondly”. Other factors to consider are how far away the locations are and how that will impact on getting to the reception on time. Kristy suggests that you also need to keep in mind what you’ll do if the weather is less than ideal, how easy access to the area is especially for brides and their wedding gowns – and what the lighting is like at the time of the day the photos

are scheduled to happen. Once you’ve chosen your photographer and a location you need to decide what you really want from your photographs. “I think a good wedding photograph is one that tells a story within a story,” says Laura. “There are so many amazing little moments that join together to make up your wedding day. A good photograph captures the intimacy of these moments whether it’s the look a groom gives his bride as she walks down the aisle or the way a brides parents squeeze their hands a little tighter together as they watch their daughter say her vows”. And this is part of the trends currently occurring in photography says Laura. “Capturing detailed shots of all these little elements the couple have chosen to help tell their story is something that bride and grooms continue to look for,” she explains. “First looks are also gaining popularity and are always so sweet and fun to photograph”. Another great idea, she says, are photo booths at receptions, so all your guests can join in on the photo fun. “One of my favourite local wedding companies are In A Snap Photobooth www. inasnapphotobooth.com.au”. • Do some research to decide what kind of style you want for your photographs. Check the web, wedding blogs, magazines and photographers websites. • Make sure the location you want for your photographs is practical, easily accessible and not too far away from the reception site. • Make sure you understand your contract, costs and what you will receive from the photographer.

aving your wedding ceremony and reception at the one location can save on many planning issues and allows guests to be easily entertained while the photographs are being taken before the reception proper starts. It also means that you’ll have someone overseeing all of the details of the day for you. One of the benefits of using a resort, golf club or retreat is that the natural surroundings mean that little is required in styling your day. “Bonville Golf Resort has won many awards especially relating to the beauty of the property because of its stunning gardens, tranquil settings (such as our rainforest ceremony area) and lush fairways,” says Stephanie, “therefore there is no need to go over the top with decorating and styling”. She suggests you keep it simple. “But don’t be afraid to use colour, the natural and neutral tones of our venues allow couples to truly reflect their personal style”. She suggests that personal touches and handmade items are perfect for reflecting the bride and groom as a couple. “Ensure there is a theme that runs through the entire wedding,” she says. “Try to not ‘match’ it as such but rather ‘compliment’ the colour or design - from the

invites and menus to the cake and bridesmaid dresses”. Something unique and different is always a winner too. “We love seeing new ideas when it comes to styling a wedding”. For brides’ with little time on their hands this kind of assistance is invaluable. Doing your homework early on in the planning stage can save time and money in the long run and can offer up surprising and delightful ideas. Making the most of wedding experts needn’t put a big strain on your wedding budget if you shop around and can be well wor th any costs. Whether it’s the catering or styling, photos or setting you don’t need to do it all on your own.

the proposal Ross and I were totally in love from the star t. He was my one. He knew that I wanted to be married under a great big old tree, like one I had grown up alongside on my family proper ty. For a week before he proposed, he spoilt me with a bunch of flowers every day. It was Monday morning and he said we had to go for a walk. We ended up at the bottom of Mount Warning walking on a narrow track at the base of the mountain. He led me to a big old tree. Later on I found out he had asked a few people including my Dad, as to where he could find an old tree, he said it was one of the biggest in the area. He was on one knee and asked, “ Will you make me so happy and marry me?�

What a perfect day! The ceremony was so touching as Ross and I wrote our own vows and added some personal touches to the ceremony. We both love the country and the rolling hills so we wanted an outdoor wedding reception under the stars. Guests were treated to a beautiful afternoon gourmet picnic in the sunshine while listening to a band. We arrived shor tly after the picnic and star ted to enjoy everything with our closest friends. Then as the par ty began, a wood fired pizza oven was put into full swing serving guests with hundreds of gourmet pizzas under the night sky.

The world of cakes is a beautiful and sophisticated one, it’s artisans skilled at creating something visually fabulous and tasty too. Every bride must enter this world in organising her reception so knowing your fondant from your marzipan, and the difference between coffee and dessert sizes can help you to fine tune your dream cake or dessert table. With a clear vision and a handle on the lingo organising the details with your cake maker will ensure the perfect cake on the day. Cake Talk GANACHE Popular cake covering made from dark, white or milk chocolate and cream. It’s used as both a filling and a coating. It’s rich and fudgy and also gluten-free! BUTTERCREAM A creamy, smooth icing made from butter and icing sugar. In Swiss meringue buttercream, egg whites, sugar and butter are used which results in a silkier texture than straight buttercream. MOUSSELINE Another name for Italian meringue buttercream; a lush, buttery smooth cake filling that can be flavoured. MACAROONS These chewy and crisp delicate almond meringue biscuits are generally sandwiched together with flavoured ganache, jam or buttercream. They make a great addition to dessert tables and can be attached to tall cones to make a macaroon tower. TIER One level of a layered cake. Typical wedding cakes are one, two, three or more tiers. FONDANT The smooth finish icing that can be coloured easily. This pliable dough is made from sugar, glucose and vegetable fats. Cakes iced with fondant sweat when placed in a refrigerator and must be kept cool and dry. MARZIPAN Made with ground almonds, sugar and egg whites; this sweet pliable almond paste is not

as popular as it once was and is mainly used on Christmas cakes and decorations.

DOUBLE HEIGHT Standard tier height is 4”. A double height cake is an extended height i.e. taller than 4”

Hummingbird A moist mixture of banana & pineapple, lightly spiced with cinnamon. Similar in texture to carrot cake.

FONDANT FANCIES Squares of cake iced and decorated with coloured fondant, often displayed on a square cake board. They look similar to square, flat cupcakes and can have wording piped on.

Red Velvet A smooth soft deep red cake made using buttermilk, cocoa and red food colour. Partners well with white chocolate ganache or cream cheese icing.

CAKE POPS Delicious bite-sized globes of cake on a stick are dipped in milk, dark or coloured chocolate and then decorated. Perfect for lolly bars or dessert tables.

Coconut Becoming more popular a rich coconut cake is perfect for summer weddings. Generally buttery and containing real coconut and coconut milk, it pairs well with passionfruit and mango.

BOMBONIERE Also known as wedding favours, these are small gifts given by hosts to their guests. Traditionally consisting of a few sugared almonds in an organza bag, they now encompass any kind of sweet or symbolic item.They could be small rustic jars of homemade jams, cookies, lollies on ribboned sticks, miniature potted succulents or gourmet chocolates or fudge in tiny boxes. They are whatever fun or creative thing your heart desires to show gratitude and provide a memory to the people there on your special day.

Vanilla Chai This flavour started off in cupcake form and is now gaining popularity as a big cake flavour. It pairs particularly well with cream cheese icing mimicking the chai lattes so beloved these days.

CHOCOLATE BOXES Cute individual chocolate boxes or towers containing your cake flavour choice encased in chocolate ganache and shards of dark or white chocolate. Topped with chocolate curls or seasonal berries. The boxes are arranged on tiered stands for a dramatic and deliciously different look.

Cheese Yes, a wedding cake made entirely of cheese! There are alternatives to “Sweet Tooth” and one of them is cheese served with fresh fruit and biscuits; varied size wheels of your favourite cheese stacked into a wedding cake shape and laden with dark grapes, figs and berries.

Allergies? No problem Whether it’s the canapés, main or dessert, it is important to alert caterers and cake makers to any guests with allergies. These days there are many delicious alternatives to the traditional cake, and these can be served to everyone or


simply to those with an allergy. Bringing any issues up early in discussions will ensure that everyone enjoys the day. The most common allergy we come across is that associated with gluten. Such is the popularity of gluten-free now that most cake makers are offering a variety of gluten-free flavours. If you or any of your guests are gluten intolerant or coeliac it is important to advise your cake maker that the cake and the icing needs to be gluten-free. Some gluten-free icing options include the rich creamy chocolate ganaches and meringue buttercreams including the pure white buttercream made with copha. The icing sugar mixture used in standard buttercream sometimes contains wheat flour so this needs to be avoided and pure icing sugar used instead. The traditional and popular fondant icing also contains gluten. Another option to cater for your gluten-free guests is to have some gluten-free cupcakes made up separately from the main cake to serve at the same time. If any of your guests have any anaphylaxis to egg or nuts then it is important to clarify this with your cake maker. Egg-free cakes are completely possible and taste just as good as regular cakes!

Size Matters The size of cake that you will need depends on how many guests you have coming to your wedding. The standard portion sizes are coffee (approx 2.5 x 2.5 x 10cm) or dessert (approx 5 x 2.5 x 10cm). However, if you’re having a super rich mud cake for example, you may feel its fine to have smaller servings than if your choice is an airy vanilla sponge.

What’s the Budget? As couples are becoming increasingly conscious of ‘the spend’ when planning their weddings, especially when there’s a sizeable guest list, it’s comforting to know you can still have a gorgeous cake without breaking the bank. Here are a few tips on having maximum sweet oomph with minimum spend: • Buy a simple iced cake. Cake makers are usually happy to provide well priced, ready iced cakes that you can decorate simply and effectively. Buy two or three different sized tall cylinder cakes with plain white icing or buttercream and use hired footed cake stands to present them. Each cake can be a different flavour. And they can be decorated with vintage bunting, wooden dolls, large wooden letters or fresh/sugar flowers. Be aware that if you provide your own favourite cake stand it must be sturdy enough to hold a heavy cake! • Decorate with fresh flowers. When ordering your flowers, order a few large blooms to grace your cake. Buying cake flowers as part of your florist order will be cheaper than your cake maker supplying sugar flowers or elaborate piping work. • Fake It! While a cake to serve 35 guests will be big enough to feed your guests, it may not be the jaw-dropper you’d like your guests to wow over. It makes perfectly good sense to have one or two fake iced cake layers to increase the size of your wedding cake without significantly increasing the cost. • Cake for dessert. If your budget won’t run to a dessert and a cake and you’re having a sit down meal, just serve the cake as your

dessert. It doesn’t have to be a traditional cake; anything sweet that you like - lamingtons, brownies, macaroons or pannacotta - can be displayed on stands or platters at the reception. Why not consider giving your guests mini ice-cream cones with several lush flavours on offer? • Cakeage. This can make it or break it with some venues. It can seriously pile up costs so make sure you know what your caterer or venue charges to do this as sometimes it can equal the cost of the actual cake per guest.

The Wrap The more informed you are, the better the decisions you will make. Brides who have a clear idea of what they like, what pushes up or brings down costs and how the cake will fit in with the whole day usually finish up with an end product they will remember for years to come. The perfect place to celebrate one couples wedding day at Ballina Riverside function centre

Married on October 6 last year on a glorious spring day, Ashleigh and Andrew Colnan were determined to find the perfect reception venue to follow their Ballina Lighthouse wedding ceremony. The couple, originally from Ballina and now living and working on the Gold Coast, wanted somewhere to match their relaxed personalities and lifestyle, and if possible, at a location near the water. “It took us a long time to pick,” says Ashleigh, a nurse. “We just knew we wanted it in Ballina.” After looking at numerous venues, Ashleigh says they stumbled across Ballina RSL Club’s Riverside Function Centre which is located on the banks of the Richmond River. “It was just perfect,” she says. “It ticked all the right boxes for us.” In terms of food, and with 100 guests to cater for, Ashleigh says they wanted a nice modern Australian meal without breaking their budget. “Theirs was the best,” she says referring to the Centre’s menu. “They had a really big variety and you could choose alternate meals for each person. We had a vegetarian and a lamb option for entree, and chicken breast or steak for main. It was all absolutely beautiful”. It wasn’t just about the taste and value for money that made Ashleigh happy either. “The food came out hot and fresh, the service was really good – waitresses just came rolling out and had the food placed on the tables really quickly”. The guests, it seems, were very pleased too. “Usually you’ll find a couple of people will complain about some dish but everyone just raved about how good all the food was.” On the beverage front, Ashleigh was equally pleased. “I just told them what alcohol we wanted and we were able to put however much we wanted over the bar for guests to have,” she explains. It was easy”. Ashleigh is also highly complimentary of the Club’s staff, who, she says went out of their way to help make their night so memorable. “They were amazing from day dot,” she says. “I just can’t fault nor thank them enough. From booking it to the day after packing up, they were incredible and went above and beyond our expectations.” In addition to the incredible service, another bonus Ashleigh and Andrew found in using the Riverside Function Centre was the availability of

time offered to them to arrange guest seating and decorations. “Our colour theme was that of the bridesmaids – white, purple and white,” she says. “We had white tablecloths and chair covers with purple satin ribbons around chairs, a light purple sash table runner and the centerpiece was a cylinder vase with white and purple fake roses that we twisted into the shape we wanted – it was gorgeous and simple.” This kind of decorating certainly takes time but thankfully for Ashleigh and her helpers, the Centre’s staff, were more than accommodating. “They let us have the venue the day before to

set up and the day after to pack up - they really were cruisey,” she says. “They made everything fall into place and run super smooth. Even when setting up on the day prior, staff kept coming in to ask if they could help - they were so nice.” And once formalities were over Ashleigh says it was just one big party. “We just let our hair down and danced the night away,” she says. “Everyone had such a good time. the wedding We had a lovely champagne breakfast with my family and the bridesmaids then got ready at the farm house. Our hair and makeup ladies came to us so it was very relaxed and lots of champagne! I kept peeking through the cur tains I was so nervous! It was lovely walking out and seeing all your friends and family smiling at you- the ceremony was very personal and beautiful. We both had our grandmothers sign as witnesses and we had written our vows in special little books to keep. Our photos were fun and relaxed and it was nice to spend that time unwinding after the ceremony with our bridal party. the reception we had Savouries with a twist cater our cocktail style reception. The food was amazing! There wasn’t space for a sit down but I liked having a cocktail style as it gave our guests a chance to move about and mingle.

the wedding We each had a lovely relaxing day with close friends and family leading up to the ceremony. Both of us were a little nervous but those nerves melted away the minute we locked eyes. It was just the two of us in our own cloud during the ceremony. Our reception was a sit down dinner which was to die for! We made sure there were a few things to do to ensure a fun and lively atmosphere. A fantastic band kicked things off to set the mood, a photobooth for plenty of giggles and flowing wine. It was the best day of our lives and we wish we could do it all again!

Fare with Flair Traditionally around 40-50% of any wedding budget will go on the reception and the majority of that spend is the catering, so it’s essential that you get it right. Making decisions about the kind of food that you’d like to serve, the quantity and the timing of service is crucial for an easy flowing reception where guests are left neither hungry nor thirsty. “Your wedding day is such a long day for all involved. Making sure you have enough food for people is critical”, says Stefano, Head Chef and owner of Fiasco Catering. Quantity, quality and timing are all key to a memorable food experience for your wedding guests. For them, the celebrations start as soon as the bride and groom say “I do” so you need to get things going straight away.

The proposal Simon proposed in New York City on our last day of holidaying in the USA. We had just spent the morning in Central Park and Simon suggested we go for a walk a few blocks down to the diamond district. We spent the afternoon looking through many shops. The next day we went for a bike ride stopping for a hot dog and milkshake when out of Simon’s pocket came the ring! It was an amazing day. We celebrated with my parents that night with dinner and dancing at the Cotton Club in Harlem.

The Wedding I was much more relaxed than I anticipated. Simon spent the morning with his family in town while my family

did a few finishing touches on the shed. We were married under two trees (a red cedar and fig) that had grown together to become one. We wanted to be married outside but also wanted an Anglican service so we had to get permission to have the local priest marry us out of the church. It was special for us and we are very thankful for it!

The reception After the ceremony our guests walked up the paddock to the shed. We had cricket, ping pong and golf to entertain our guests. We fed them samosas and curries from Oberois Indian Resturant, Coffs Harbour. Our desser ts where all homemade cakes and slices from aunts, both our mums’, friends and family! They were a hit! Our cake was a giant stack of my Nan’s lamingtons. The day was full of family touches all my aunties and cousins rocked up with their cars full of baskets, vases and plants to help decorate the shed.

the proposal We were on a holiday at Treasure Island, Fiji. On the second last day we were talking about how fun it would be to do a treasure hunt on Treasure Island . That night Mattie handed me a treasure map! The last part of the treasure hunt led me down onto the beach I found the spot and dug up a box. Mattie came out of nowhere, took the box from my hand, got down on one knee and proposed.

the wedding It was a very emotional ceremony with lots of tears and smiles from everyone. We had a cocktail reception in a marquee which had fairy lights and candles. It was a classic spring wedding with a fresh colour theme of peach, gold and white, my favourite colour combination. Our flowers were gorgeous and included white avalanche roses, soft peach roses and white spray roses with gold back magnolia around the edge. There was a video booth set up so guests could record a special message for us and instead of wedding favours we had a table set up where our guests would choose a charity to support.
