DOS Addicted to Fishing’s Nicky Sinden was telling me a yarn about the flack she and some girls received from a bunch of guys before setting off on a fishing tournament in Houhora. No doubt they were pooh-poohing their ability. Oh to have been a fly on the bow when that boat load of chicks returned for weigh-in with Marlin onboard. That reminded me of an experience I had last year when having to sell my late father’s beloved boat. The new owners – a couple of guys around my age – arrived from Auckland super-enthused to pick it up and I told them that, with the Johnson 90HP, you had to push the key in for several seconds as you turn it and have the throttle pushed forward and it would start every time. They nodded and made all the right noises as though they were listening, so I left them to it and went inside. Forty-five minutes of them unsuccessfully starting the motor later, I returned to see them looking noticeably less excited and rather dejected. One of them asked if we’d ever had this trouble before. “Yes, we did once at the boat ramp,” I replied. “Until another boatie with an identical Johnson came over and asked if we’d tried pushing the key in as we turned it while pushing the throttle forward. Just as I said to do before,” I added. He immediately reached for the key and throttle to try said tactic. The Johnson roared to life. Above the satisfying racket, they both gave me sheepish smiles. I looked at them and smiled patiently back, then turned and walked back inside. Nicky is gaining respect in an industry more commonly associated with men – check out her story on pages 4 and 5. In keeping with our water theme, we feature several boaties down at the Town Basin. Read why they’ve chosen Whangarei to dock and how they are planning to spend Christmas. DOS Addicted to Fishing host Nicky Sinden always knew Auckland wouldn’t be her forever home. Besides she had a big new boat and nowhere to park it and, when your life revolves around ﬁshing, that won’t do. Mangawhai was calling. “I’ve always been in love with Northland,” says the 33-yearold. “I’ve got a lot of friends who live in Mangawhai and I’ve always got the best vibe there. People there are so warm and welcoming.” She purchased her ﬁrst house there last year and subsequently adopted Northland as her new home ‘100 per cent for life’. Mangawhai reminds her a lot of her childhood backdrop. Despite growing up in Auckland, Nicky spent a great deal of time ‘running amok’ on the family farm on Motiti Island, off the Bay of Plenty coast. “You could only get to the island by chartering a small plane or by boat. I come from a huge family - dad is one of

ten children and all of us kids would run amok playing spot light, snorkelling, casting lines in the ocean. One of my best childhood memories was a lolly scramble that one of my aunties had organised when she had 20kgs of lollies dropped out of a plane.” Nicky cast her first line, aged three, and, one of three girls, the self-confessed tom boy spent many hours fishing with her father and other family members. It was in 2010 Nicky auditioned for the role of Matt Watson’s ITM Fishing Show apprentice, seeing it as the perfect opportunity to up-skill her fishing prowess and knowledge by learning from one of the best. She came third out of 2,000 entries in the televised quest and was the last girl standing. Instead, she was invited on a trip around Queensland with the ITM Fishing Show where they filmed another five episodes and she received subsequent requests from parents to teach their girls to fish before it was suggested to Nicky that she make her own show.

A couple of years later, she got over the self-doubt and took the plunge. She left her sales and marketing job, sold her car and boat to put the money into the business and went about seeking sponsorship, calling upon some of her former contacts and cold-calling more than 500 businesses. She sought a film crew, set up her own company and website and has never looked back. However, it has not been easy. “It is one of the best things I have done but I often think ‘Gosh, if only the world knew what happened just before we shot that’. Over the years we’ve really refined it down and we’re in a good place now.” Now filming its fifth series, Prime TV’s ADOS Addicted to Fishing follows Nicky in her Game King Extreme 795 boat Game On in her fishing adventures with kiwi locals, sharing tips, tricks and techniques while show casing stunning New Zealand scenery.

Here’s to a great summer on the water! By Coastguard education manager Darren Arthur

e’re on the uphill slope towards summer - days are getting longer and, for those able to escape the backyard chores, eyes are going towards ﬁshing rods and tackle boxes with thoughts of getting back amongst the ﬁsh. Coastguard volunteers are also busy gearing up for another full-on boating season. In fact, over October alone, the Coastguard Operations Centre handled over 7,700 VHF radio calls (including trip reports, bar crossing reports and calls for assistance) and assisted at 164 incidents – and that’s before the best of the summer weather! This time of year is when preparation can make all the difference; after all, many of those requests for assistance were for simple mechanical or electrical issues. Has the boat been serviced with extra attention being paid to batteries, the electrics and ensuring the fuel isn’t stale or contaminated? Is all your safety gear in good nick? Because it’s often the simple things that get missed, before you head out for the boat ramp, make sure you tick off these key things from our simple checklist:

Your boat You’ve got the bait and the ﬁshing gear sorted – but what about the boat itself?

• Are the bungs in and secure? • Have you got enough fuel? (Remember the ‘thirds’ rule: 1/3 fuel to get there, 1/3 to get back, 1/3 in reserve) • Have you done a walk around to make sure no damage has occurred since you last used your boat? • Batteries charged and ready to go? (Check your batteries are in good nick too, so they charge properly) • Make sure your engine is in neutral, ignition key is in position, and that the engine starts • Lights, radio and pumps all working as they should?

Your safety

• Make a Trip Report to Coastguard on your local VHF channel, or a Bar Crossing Report if you’re planning to go over one of the region’s bars. The information you give us can help us ﬁnd you if you’re reported overdue. By getting your boat and your skills sorted now, you can enjoy stress-free boating as we come into summer – and you can concentrate on landing a big fish and enjoying the best this country has to offer! I was born and bred here but, in 1998, left Whangarei to circumnavigate around the Northern Pacific rim. We returned in November last year and I was just blown away by the changes here. “When we left, we were driving over that bridge over there (Canopy Bridge) – and now there’s an umbrella over it! “I’ve built and owned quite a number of buildings around this town but, for example, the Town Basin, has seen an enormous change. I’ve gotta say, this marina is one of the best in the world. I’m just so darn proud of this place. “We moved onto the boat in 1996 but are selling it now. We’ve bought a house and that will be my next project. I recon I’ve got one last house left in me. I’m looking forward to having a garden and living in suburbia but I’ve taken up kite surfing so I can still get my water fix. “If we haven’t sold the boat, it will be our last Christmas on board. We will probably go up to the Bay of Islands and sail around.”

ierre-Andre: “We arrived in Opua in December 2016 and have mostly been based in Whangarei but we are leaving for Chile this month. “I’ve been to New Zealand several times since I was 16-years-old. We come to Whangarei for the boat maintenance. It’s a nice, easy city for shopping and has everything we want.” Joëlle: “We have made good friends here at the restaurant. We particularly like The Quay. New Zealand seems to be very secure but, in fact, it’s like any other country; we have had our two bikes stolen from the front of our boat but that’s life.” Pierre-Andre: “It should take us about six-weeks to reach Chile so we will be spending Christmas somewhere on the water.”

onty: “In 2015 we bought a boat so flew here where it was moored. It was a Canadianmade boat and rare – it’s one of only around 50 in the world. So it was this boat which brought us to (Whangarei) New Zealand. “We took it to Fiji before returning and left it on the moorings while we flew back to Canada for the winter skiing season. We’re planning on doing the same again. We just got in from Opua last night and we’ve noticed the marine industry is busier here this year. We will stay here for about a week and then haul the boat out for repairs while we fly home.” Margy: “Next year we might stay for the cruising season. We like it here for the proximity of the super market and restaurants. During our week here we will probably have a few dinner dates with friends. We like Tumeric and The Quay.” Monty: “In the end we managed to name our boat Whistler, which is the name of the place we live back home.”

I purchased the Pacifico in 2010 and had one year to improve my sailing. Then I went off and said ‘Ok, now the water’s mine’. I left Germany six years ago and sailed alone. I prefer that because it’s peaceful. But I have flown back when it gets colder here to see my kids. “I return to Whangarei because it is safe and a good boating place. It has good shopping and haul-out/boat repair facilities, like the stainless steel guys, the electronics and Burnsco. “I am aiming to spend Christmas in the South Island but it depends on the weather. New Zealand is a difficult, windy place so you could have good luck and go or bad luck and wait four weeks.” 8 | SAVVY

Let your creativity shine at the Quarry Arts Centre open day Sunday December 10, 2017, 11am-3pm

he Quarry Arts Centre in Selwyn Avenue, Whangarei are opening their doors to the public on Sunday December 10 to offer the wider community the chance to have a go at carving in Oamaru stone, making mosaics or T-shirt printing, at the annual Quarry Arts Centre open day. This free event enables you to indulge your creative side through workshops and ‘taster’ sessions in a wide range of arts and crafts. Quarry Arts Centre manager Ali Goodman says the open day allows anyone in the community to have a go at making art. “Whatever ability or age you can come along and try something. Or just watch the artists at work. It’s a true celebration of the creative process.” This year’s open day marks the Quarry’s 35th anniversary. The date will also be marked with a seven day community firing in the wood fired kiln built earlier this year and a new gallery space in the main office. Both the Supporters Show and the Member’s Exhibition will also be open during the Open day. The Quarry Arts centre is a community art and craft space which supports the development of visual arts. The centre has studios for artists in residence and is home to Te Kowhai Print Trust and the Northland Woodturners and Woodworkers. Throughout the year the Quarry runs a versatile and exciting workshop programme, and the Yvonne Rust Gallery showcases some of Whangarei’s best

arts and crafts with regular exhibitions.. The Open day is really about celebrating the great array of artistic diversity at the centre: throwing on the potter’s wheel, wood turning and lathe working, T-shirt and bag printing, traditional weaving, painting workshops, craft workshops, watercolours, stone carving and much

more. During the day, working artists, including potters, carvers and weavers will be doing live and interactive demonstrations. There will be food and drink, and the newly refurbished café will be open for business. Make a day of it and let the creativity shine.

Can you spot the average Northlander in a crowd? Superrecogniser column By Michael Botur

andals, dreadlocks, rasta colours and brown skin: it’s time to myth-bust some of the stereotypes around how Northlanders look. Not long ago I went out for some beers with a guy from high school (note I don’t use the word ‘friend’) who’d just got out of prison after a decade of thug life. As he walked into the pub, he and the bouncer, both 6’1 and 110kgs, sized each other up and gave an upward tilt of the chin. It’s because big males love to acknowledge each other in a crowd so they can emit pheromones and prepare for battle. I’m six feet tall, which puts me in the 78th percentile of height for Kiwis. I enjoy recognising people in crowds – hence the name of this column. While big people are the easiest to spot in a crowd like the mob of 3000 at Whangarei’s

The first average Northlander, from about 1200-1800CE, had an average life expectancy of 30 years and was about the same height as non-Maori (even though Abel Tasman at first thought the locals in some parts of the coast were giants because his telescope misled him). That’s all changed, though. At the end of the 18th century, Europeans, Asians, Australians and even African-Americans sailed in. After that, the genetics, food, disease and economic factors which influence growth and health made the population much more diverse, up north and everywhere else. Our health board acknowledges that Northland does have a population which is older, more rural, and poorer than the rest of the country, so that skews the appearance of the average Northlander.

We do have a few insights into averageness: • Nationally, the average height for men is 175.5cm (5’ 9”) for women it’s 162.5cm (5’ 4”) • The most likely eye colour, according to my six year old’s highly unscientiﬁc classroom survey of 22 kids, is brown. • While 47 per cent of Maori and Polynesian have tattoos, only 15 per cent of the rest of the population is tatted up, bringing the broader average down to about 20 per cent of the population. So your average person in a crowd won’t have any tats. • Until we get more rail and port business up this way, the median gross income for a Northlander is just $23,400 ... so maybe you won’t see the average Northlander buying gourmet food at all (Winston, if you’re reading this: send money now)

he silly season is upon us. Unbelievable. The rumble over the ‘where and when’ of the Christmas work party is gaining momentum, along with the ‘in-law versus family’ Christmas negotiations and the ‘tested with time’ organisation for the annual neighbourhood get together. Table reservations are being secured, in advance, by savvy PA’s at popular restaurants, supermarket shelves are being scrutinized for slashed price ‘giggle juice’ suitable for stock piling and hire places are accumulating trays of glasses, resin chairs and trestle tables in preparation for the festive gatherings at home or the beach. It’s all about socialising and fun!!!

So what to wear?? Does the wardrobe bulge with ‘same style different colour’ looks that are safe, or is it time to challenge the comfort zone? Absolutely!! Why be predictable? If you’re a pants person, look for a dress – just for a change. Nothing is more exciting than finding something fabulous that you thought you could never wear. If you love wearing black – look for a bold exciting red, lime, cerise pink or a striped white, ‘wow” piece in a jacket, singlet or cover up that gives life to black and makes you stand out – you’re worth it!! If you’re a tunic and leggings person, it’s time to aim for a dramatic make over in complete contrast to what you’re used to. Those stomach muscles haven’t seen the light of day for some time and your waist line is probably bordering complacent. Try wide leg culottes teamed with a cropped top, nonchalantly half nipped into the waist band to show that flat finish, or a tucked in and bloused top over relaxed trousers tapering to the ankle. Just for fun throw on a maxi dress with a serious side split to suit your stride for the next barbecue or casual dinner out. t’s that time of the year again folks when the social calendar notiﬁcations start popping like popcorn for some! Wherever you are in the social scene, whether it’s just kicking off or you’ve already enjoyed a full social life throughout the year, here are some of my favourite tips to manage your health and wellness. • Strategy – be diary organised and choose toward the events that contribute to your life and personal values. Who and what will contribute to your targets now and in the future?

• Health – it may be the end of the year but that’s no excuse to slack off when it comes to your health. Did you know that eating a high GI carbohydrate meal together with sugary cocktails or beer can lead to blackouts? Change out pasta, pizza and processed meats for grilled ﬁsh, poached chicken plus quinoa, mixed veges and salads and avoid the carb and alcohol hangover!

• Alcohol + hydration – drink correctly and remember to hydrate well before, during and after your social events. As much as it pains me to say, champagne, white wines, beer and cocktails are not your best friend as they are high GI drinks that encourage hangovers. Instead try lower forms of GI drinks like red wine, clear spirits and mixers like soda or mineral water, wine spritzers with rose, wine with soda.

• Move – keep moving your body in ways that are fun for you even if you’ve been a bit lazy lately, take it to the next level. Being consistent, even if just a 30 minute walk daily can make a huge difference. • Rest and recovery – allow yourself plenty of space for rest and recovery. Your body needs it. • Health supplements – even with a healthy life, most of us are deﬁcient in some minerals. “Old massage programmes are expiring this year and being replaced by brilliant new programmes which include relaxation, infant and child, sports and onsite chair massage, plus nutrition and other great stuff,” she explains. “This new one-year programme leads to the NZ Diploma in Wellness and Relaxation Massage and gives students such an amazing start to their new massage career. Graduates can work anywhere in the world, on superyachts or cruise ships, or start their own businesses. The earning potential is great. Attendance is only Monday, Tuesday and Wednesday with some home study and only in school term time. Evolution School is the only massage education provider in Northland and is an NZQA Category ONE provider, which means NZQA agree we are very high quality educators.” In addition, a new NZ Certiﬁcate in Spa Therapy is starting

in February 2018. Lorna says it is a lovely programme for anyone with some experience in massage or beauty and covers treatments, such as wraps and scrubs, hot stones, aromatherapy, reﬂexology, hydrotherapy and Indian head massage, to name a few.

“Graduates will be able to offer these treatments in their own business or for their employer but they can also work in luxury spas worldwide or on cruise ships. Pioneering physician Dr Peter Chapman-Smith, retires from his successful career “I started the ﬁrst appearance medicine clinic in Northland. People said: ‘Goodness me, in Northland?!’ Now it’s quite common”.

hen Dr Peter Chapman-Smith came to Whangarei in 1977, it was for his love of the ocean and diving. But then he got busy catching babies and building from scratch a successful medical clinic which brought appearance medicine to Northland among many other feats. Fast-forward 40 years and he’s ﬁnally returning to the passion which led him here in the ﬁrst place. “I’ve had a long and varied career,” he muses. “I was absolutely passionate about medicine and still am but it’s time to slow down while I’ve still got my health.” Dr Chapman-Smith has been practicing medicine since 1976 and, in addition to working as an anaesthetist at Whangarei Hospital, was a family doctor for 24 years. This was back in the day when the role included obstetrics and he delivered around 150 babies per year for 20 years. Dr Chapman-Smith was the last GP to give up obstetrics in Whangarei. During this time, he also carried out aviation, diving and sports medicine. Dr Chapman-Smith feels privileged to have practiced in the days when general

practice involved treating patients from start to ﬁnish. “I delivered babies and provided end of life care. I was involved with the family very closely. It was hugely satisfying and I felt privileged to be delivering this care.” Based at the Maunu Medical Centre since 1982, Dr Chapman-Smith purchased the house next door and renovated it to become the Skin and Vein Clinic in 1997. Branching out from general practice, he began treating varicose veins, pioneering nonsurgical treatment using laser technology. With Northland having the highest rate of melanoma in the world, he developed an interest in treating skin cancer, and brought the Mole Map franchise to Northland. Then came appearance medicine – a term Dr ChapmanSmith himself coined. “I started the ﬁrst appearance medicine clinic in Northland. People said: ‘Goodness me, in Northland?!’ Now it’s quite common. We don’t over-treat people – we’re very successful at maintaining a natural refreshed look, something we’re very proud of.”

Treatment for dry eyes

What is the function of your tears? Tears are the moisture layer that covers your eyes. They protect your eyes against microbial, allergic and traumatic aggression, and help to preserve your vision. They are essential for both comfort and health.. Your tears are composed of three layers which protect your eyes: 1. A superﬁcial thin oily layer which is composed of lipids produced by Meibomian glands (located along the edge of the eyelids). These lipids delay the evaporation of tears. They behave like a thin oily layer on water: oil prevents water evaporation. 2. A middle thick aqueous layer which is composed of water produced mainly by lacrimal glands that are situated in the upper eyelids. This layer carries essential nutriments and oxygen to the cornea. 3. An innermost mucous layer that helps the ﬁlm to both adhere to the eye and assure its correct distribution.

Meibomian Glands Healthy Meibomian glands secrete oil with each blink of your eyes to keep your tears, and with them your eyes, from drying out. If these glands stop working properly, your eyes will dry out very quickly, and can become red, painful and inﬂamed. Common symptoms of Meibomian Gland Dysfunction (MGD) include: • Dry eyes • Red, inﬂamed and burning eyes • Itchy eyes and eye lids • Sticky eyes with mucous secretions, sometimes eyelids may be stuck together. • Excessive eye watering • Eyes that are sensitive to light • The feeling that there is something in your eye, even if nothing is there.

• Frequent or recurring Styes I Chalazions • Blurry vision that comes and goes Because many of these symptoms are the same as other common eye diseases, an examination of your eyelids and meibomian glands, by a qualiﬁed Optometrist/ Ophthalmologist is necessary to determine if you suffer from MGD.

Treatment In the past, treatments have included artiﬁcial tears, eyelid warming, eyelid massage, lid margin cleaning, Blephasteam – hot moist goggles. Now added to available treatments is Intense Pulse Light Therapy, IPL. The IPL machine uses sequenced light pulses to stimulate the meibomian glands to return to normal function.

Hottest kitchen trends The key point in planning and choosing a new kitchen lies in ﬁnding a design and materials that won’t date, ﬁnds Louise Richardson

nstalling or building a kitchen - even a very simple one - is never exactly a cheap undertaking so it’s important to look to the future - and that’s where professional kitchen designers come into their own. They’re experts at helping create the most functional zone possible and will offer well-researched advice on work-flow and ideal placement of appliances. They know what’s in vogue, what looks good and works best, and they can locate products and materials on your behalf. Right now, the buzzwords on the kitchen scene are ‘organic’ and ‘texture’ wherein sustainable, earthy materials are used to smart effect, and ‘functionality’, which basically means that in this reality-TV-cooking-show era, we’re demanding more of our kitchens in terms of what we can do there. Hayley Dryland from August and Co. Design has noticed recently that homeowners are preparing to stay in their homes long-term rather than moving as they wait for the property market to find its new level. “Once they’ve made that decision, they tend to ask themselves what they can do to enhance the property and often that means a new kitchen,” she says. “They’re looking for classic style with longevity and want the very best-quality materials, even if that means sourcing them from overseas and waiting a while.” Dryland says the marble look is very popular right now and that the new generation of composites is stronger and more versatile than ever before. “Porcelain benchtops are another hot look and black sinks and tapware are still requested by many of our clients but other metallic finishes such as brass, antique bronze and brushed gold are trending too.”

One of the most timeless materials are horizontal bricks, first seen in art deco decor in New York in the 1930s. “They still look just as striking today,” she says. When it comes to colour, Dryland says that she does a lot of black kitchens, which were revolutionary when they first appeared. “Today black kitchens are a lot more common and they always look really great.” Other trends that have emerged recently include the use of grey, which coordinates beautifully with marble, and Dryland says that she recently ■ Photos by designed her first- ever Getty Images blue kitchen. One of the most exciting new developments Dryland has noticed is the arrival of tiles with pressed-tin patterns. “In the past I’ve had clients who wanted pressed tin as a splashback and we would paint it but after a few years the paint wears off so having the option of tiles now is a great step forward. She also notes that it’s becoming increasingly common for home-builders or renovators to go one step further and add an adjoining butler’s kitchen or scullery to further stretch their kitchen’s capabilities. Meanwhile, new and exciting appliances are appearing on the scene and retailers are scrambling to keep up with the new technology, in order to inform and advise their customers. Fridges are getting far more sophisticated. Some have almost as many features as a small car - and are priced similarly too! Samsung’s new Family Hub refrigerator ($9999) is nothing short of amazing in terms of its capabilities, not least of all its remarkable

connectivity. A touchscreen display syncs family members’ calendars, displays favourite photographs and a camera inside allows the owner to check what’s needed via phone from the supermarket. Temperatures throughout the fridge can be customised and this feature, combined with precise humidity control, helps keep food fresher. Induction hobs are increasingly popular as cooks discover how easy and effective this style of cooking can be. Self-cleaning ovens and automatic range hoods that turn on and off when required are also a feature in many new kitchens. In the past few years, steam ovens have become a feature of many new kitchens; some of these ovens come in a combination model that dry roasts as well as steams.

Amazing avocados

Choose a warm, frost-free position for these tasty trees, remembering that many avocados can reach a height of 5 – 10m at maturity, so leave room for these gorgeous trees. Over the hot summers you may find your avocado looking a bit average, especially in its first few years. Avocados aren’t known for their vigorous root systems, and this can cause them to dry out much quicker than many other plants, so keep the water up to them when it’s really hot. The other thing to remember about avocados is that each variety has a different flowering “habit”, which sees avo’s categorized into two groups, A and B. Now, avocados are partially self-fertile, which means they may produce a bit of fruit on their own, but their yields will be increased if you can put in one tree of each group.

You see, as fantastic as avocados are, they can also be a bit fussy but, with a bit of love and attention, they will fruit just ﬁne. Avocados despise “wet feet”, so improve drainage of your heavy clay soil with gypsum and compost well before planting, and consider planting your avo’s on a slope, or a mound.

Avocado – Bacon (B Flowering Variety): The best cold tolerant avocado, Bacon will grow to a manageable height of 4m in cooler climes. Avocado – Reed (A Flowering Variety): Large, round, thick-skinned variety with a smooth, green skin and a rich ﬂavour. Reed avocados store well in the fridge once cut. This variety grows to a manageable 4m x 2m, and will bear fruit after three years or so. Fruit matures between November and March. A word of warning regarding all avocado types – many parts of the plant can be highly poisonous to some animals, mainly horses, cattle, goats and birds.

COOKERY (ADVANCED) GRADUATE – Karan Randhawa “I’m working as Commis Chef at The Quay in the Town Basin. It is in Cuisine Magazine’s top 100 New Zealand restaurants and one of only two in Northland on that list. It is number one in desserts – and I love making desserts. My tutor told me about this place and I started as a kitchen hand for a month when I was still studying. In that time I was also helping the chefs with prep work, and then I was offered full-time work as Commis Chef once I finished my study. “The NorthTec training was exactly what I needed for my work here. I am familiar with the processes and now my confidence has grown a lot. I’ve already created a new dessert that has been added to The Quay’s menu. I love the work here and I’m now starting to explore other areas of the kitchen including making entrees.”

Practical skills count a lot here so in a working trial we watch for skills in food prep and food handling and it was clear Karan knew what she was doing. The theoretical training from her NorthTec course meant Karan had an understanding of the processes behind cooking and why we do what we do, so it means I am confident to leave her to get on with her work without having to check over her shoulder. When Karan finished her training we offered her a job full time as Commis Chef. “We are now starting to move Karan to different sections in the kitchen so she can expand her skills and experience. We haven’t employed someone from NorthTec before but in the future it will be a good port of call for us. Pine Nut, Curd and Almond Tartlets Makes 30

Pastry 200g plain ﬂour 100g cold butter, cut into cubes ¼ cup icing sugar 1 egg

Filling 100g butter, softened ½ cup caster sugar 1 egg ¼ tsp almond essence 1 Tbsp ﬂour 1 ½ cup ground almonds

½-¾ cup lemon curd ½ cup lightly toasted pine nuts

Method 1. Preheat oven to 180C. 2. Into a kitchen processor place the flour, butter and icing sugar. Blend until it resembles fine breadcrumbs. Add the egg and blitz until the dough sticks together. If need be, add a tablespoon of cold water. 3. Place the dough onto a lightly floured bench. Roll, then cut circles to fit mini muffin tins. Set aside. 4. For the filling, beat the butter and sugar until light and creamy. Add the egg and almond essence and beat

again. Stir through the ﬂour and ground almonds. 5. Into the base of each tart case place the pastry and a small dollop of lemon curd. Fill the tart almost to the top with the almond mixture then sprinkle over a few pine nuts. Place the tarts into the oven for 20 minutes until the middle is just set. Remove and let them sit in the tin for 5 minutes, then remove. 6. Cool on a rack and store in an airtight container.

first went into Bob Café around 15 years ago and, back then, it didn’t really appeal to me. Since then, I’ve often sat at the lights and noticed people flocking through the doors and wondered what the draw was. This week, I finally gave it another try and – wow – it totally wasn’t what I remembered! First of all, it is more spacious than it looks from the outside, with diners having the option of either sitting near the door, absorbing the hustle and bustle of city life outside, or, they can choose somewhere near the back, with comfy booth-type seating in a more chilled-out space. The owners were ultra-friendly and chatty, adding to the light and breezy atmosphere, and the menus – both breakfast and lunch - were extensive. As well as mouth-watering cabinet food, a menu offered the likes of B.L.A.Ts and C.L.A.Ts, fish n chips, corn fritters, halloumi cheese salads, and much more. From the cabinet, I opted for the Cajun chicken panini and my dining partner ordered a creamy mushroom and bacon filo pastry. For sweets, we ordered the citrus tart and the pecan pie. We couldn’t believe how well-priced everything was! We seated towards the back of the café and soon had our coffees delivered, followed by the first course. Sometimes meals and drinks are not very well-timed but these were staggered just right. My panini was delicious with Cajun chicken, brie cheese, avocado and spinach, accompanied with a fresh salad, and the filo pastry, also with salad, was scrumptious and very filling. We halved the slices and they were both divine. The pecan pie was lovely and warm but the citrus tart was my favourite. I’m glad I gave Bob a second shot, albeit all these years later, and will certainly be calling in more regularly. We couldn’t believe how cheap, yet delicious, the food was and were so full for the rest of the day that we skipped dinner!

little snacks Beetroot, Sour Cream and Walnut Blinis with Microgreens

Makes 24 blinis INGREDIENTS 1 packet Marcel’s Fancy Blinis (in your supermarket freezer section) 1 packet precooked beetroot (or you can roast or boil your own) 125g sour cream 1 cup balsamic vinegar ¼ cup honey Microgreens 24 walnut halves METHOD

METHOD Make balsamic reduction by heating vinegar and honey in small pot over high heat. Bring to boil, reduce heat to low, and simmer until vinegar has reduced to 1/3 cup (about 10 minutes). Leave to cool. Heat blinis according to packet directions. Top blinis with slice of mozzarella, half a cherry tomato and a basil leaf, then drizzle with balsamic reduction to serve. Remaining balsamic reduction can be stored in fridge.

Caprese Christmas Blinis Makes 24 blinis

INGREDIENTS 1 packet Marcel’s Fancy Blinis (in your supermarket freezer section) 24 slices fresh mozzarella (around 8 small sized balls) 12 large cherry tomatoes 24 basil leaves 1 cup balsamic vinegar ¼ cup honey

Makes 24 blinis INGREDIENTS

1 packet Marcel’s Fancy Blinis (in your supermarket freezer section) 160g crème fraiche 1 red chilli, ﬁnely diced Zest and juice of one lime 24 prawns cutlets (you can use frozen, raw prawns) 1-2 Tbsp butter 1 large mango Coriander to garnish Salt and pepper to taste METHOD Mix together crème fraiche, ﬁnely diced chilli, lime juice and zest. Season with salt and pepper to taste. Pan fry prawns in butter over a medium-high heat until cooked through and golden. Cook in two batches if required and season with salt and pepper. Dice mango into 1cm x 1cm cubes. Warm blinis as per packet instructions. Top blinis with a teaspoon of crème fraiche mixture, a cooked prawn, a mango slice and a coriander leaf.

Festive food & wine beef up BBQs Silver Fern Farms Beef Medallions with Grain Salad and Lemon Vinaigrette

*This salad works equally as well with freekeh, brown or wild rice, quinoa, barley, or any other grain of choice. 4Serves 2 INGREDIENTS 1 pack of Silver Fern Farms Beef Medallions 1 Tbsp oil 200g fresh or frozen green beans 1 cup fresh or frozen peas 150g sugar snap peas, trimmed 1 cup farro, washed, drained* Juice and zest of 2 lemons 1-2 garlic cloves, crushed ½ cup ﬁnely chopped fresh mint 2 tsp Dijon mustard 100ml olive oil To serve, 150g goats’ cheese, halloumi or feta cheese, fresh herbs like mint, chives, lemon wedges METHOD Remove the Silver Fern Farms Beef Medallions from the fridge and packaging. Season with freshly cracked pepper and 1 teaspoon olive oil. Allow to rest at room temperature for 10 minutes. Salt the meat just prior to cooking. Bring a saucepan of water to the boil. Blanch beans and peas for 2-3 minutes, then refresh in icy cold water. Repeat with sugar snap peas. Bring the water back to the boil and add the farro, stir and then simmer for 30 minutes. Drain, rinse and allow to cool slightly. Mix together lemon juice, garlic, mint, and mustard in a small jug or jar, whisk until well

combined. Season to taste. Drizzle in the olive oil to make a thick vinaigrette. Toss half the vinaigrette with the farro, peas and beans. Set aside. Heat a non-stick frying pan on a medium heat. Cook the Silver Fern Farms Beef Medallions for 3-4 minutes each side. Rest them for 5 minutes before serving. Arrange the grain salad and sliced Silver Fern Farm Beef Medallions on a plate and serve with extra lemon vinaigrette. Sprinkle with fresh herbs.

Silver Fern Farms Beef Tenderloins with Mediterranean Salsa

Serves 2 INGREDIENTS 1 pack Silver Fern Farms Beef Tenderloins 1 tsp olive oil ½ cup fresh basil leaves, plus extra to serve ½ cup extra virgin olive oil 1-3 cloves garlic, crushed Mediterranean Salsa: 20 green olives, pitted 2-3 flat anchovy fillets, optional 2 Tbsp capers, drained 2 Tbsp chopped flat leaf parsley 1 lemon, juice of 200g vine ripened cherry tomatoes 1 cos lettuce, cut into quarters To serve, baby potatoes METHOD Remove the Silver Fern Farms Beef Tenderloins from the fridge and packaging. Season with freshly cracked pepper and

hangarei Art Museum is delighted to announce the launch of the Drummond Photographic Collection Digitisation and Archival Project - now ONLINE. The foundling families of European settlement in Whangarei left many legacies which remain in the peripheral vision of our daily lives – street names, parks and reserves, but few left such a resounding visual heritage as the Drummond family. Thomas Louden Drummond (1850 – 1926) was a pioneer painter and photographer in early Whangarei. The art museum holds eight of his oil paintings in the collection. Other public institutions which house his works include the Alexander Turnbull Library and the Auckland Art Gallery. His son Robert (Roy) Louden Drummond, like his father, was also a keen amateur photographer; both were founding members of the Whangarei Camera Club which celebrated its Centenary in 2010. The descendants of Roy Drummond left a signiﬁcant collection of historical photography to the city. This amazing pictorial legacy has now been repatriated to the public art museum and a wider audience thanks to the generosity of The Northern Advocate newspaper, its previous custodians for more than forty years. For nearly half a century the Northern Advocate have cared for, published and also added to this collection by acquiring contact prints and glass-plate negatives from Ben Te Wake. Over this time the collection grew to over 2000 historic images of daily life in Northland. Together with the Drummond painting collection, the art museum now holds one of the most remarkable pictorial collections of our times from one family. They capture events such as the royal and vice-regal visits, funerals and tangi, regattas and fate days, troops heading to the Boer War and the Dardanelles, and the seemingly ‘lost worlds’ of the War, epidemic, Empire, kainga and kauri. The photographers in the collection include many of the most renowned of their day; Joseph Cowdell, Frederick Radcliffe, Ernest de Touret, George Woolley and the Drummonds, father and son, among many others yet to be identiﬁed. T.L. Drummond was a keen amateur photographer. Depicting landscapes across the breadth of the North Island, he was an entirely self-taught painter and photographer. Since 2014, WAM staff and volunteers have been working towards completing a fourpart process to honour these wonderful images and develop the platform upon which this collection can be enjoyed and accessed by the public just as Roy Drummond had intended. Recently requested for use next month, a Drummond image depicting Lifeboats on the Hokianga Harbour will be used in a presentation in China by an Otago University History Lecturer- showing early Northland to the world. High resolution image requests can be made by educators, researchers and for publications (see website for reproduction rights). As kaitiaki, WAM puts great value in collection projects such as this where commitment to conservation of these precious works leads to new ways to enjoy the collection in the future.

nce again, the Quarry Summer Do is upon us, maintaining its tradition as New Zealand’s oldest multi-media summer

school with plenty of hype and excitement leading up to the event.

Held from January 8-12 at the Quarry, the school is an intensive five-day workshop with six different courses. This summer, they include: woodwork, printing on clay, printmaking, fine art, bone carving, mould making and silver, and 3D Metal work/sculpture. All courses are led by exceptional tutors who are a mix of both locals and nationals, with one coming from as far afield as Oklahoma, USA. The Summer Do was first held 31 years ago and Quarry Arts Centre Manager Ali Goodman says every year it has been well-received by both participants and tutors. “The Summer Do is the longest-running mixed media summer school in New Zealand and a massive success every year with a huge variety of tutors and workshop content.” Ali says courses encourage a supportive, social and stimulating environment, providing the opportunity to learn from and with experienced artists and peers. “Once again, Creative New Zealand have seen the value of

the school and provided sponsorship to ensure the quality of tutors on offer too.” This includes importing a printmaking tutor from America. “Marwin Begaye is particularly excited to be coming as Whangarei is a whole new experience for him. He is an extremely talented, internationally-known tutor and artist who we are very lucky to have.” In addition, two acclaimed wood-workers – Granville Haworth and Don Coutts - provide a comprehensive overview of wood-working techniques. This course will lead to the creation of beautifully-formed and ﬁnished items. Using lathe, carving and embellishment techniques, including texturing, pyrography, resin in-lay and colouring, students will be exposed to both the structural and aesthetical possibilities of wood. A new concept this year with the bone carving and silver fusion workshops involves combining the talents of wellknown artist and tutors Dave Taylor and Jenny Crundwell. Students will have the opportunity to, not only, carve their own intricate designs in bone, but make a mould and cast a silver replica of their design. Award-winning artist and experienced tutor Kate McLean is coming to Whangarei to share her talent for printing on

clay. Utilising various forms of printing onto clay, students will have the opportunity to experiment with several different techniques and explore tessellations, pattern and colour on clay forms. Internationally-acclaimed tutor Linda Sabbage leads a journey, and practice through art history. Students will take inspiration from classical masters, modernist movements and contemporary artists as they use traditional, alternative and contemporary painting and drawing skills. The week will include some motivating, fun exercises and insightful ideas to spark off own visual vocabularies. Students can also join local and superstar metal artist Pete Brammer in a ﬁve-day workshop to create their own piece of 3D sculpture from metal while learning blacksmithing, hammering, cutting and welding. Set in the heart of Whangarei city and surrounded by bush, the Quarry Arts Centre provides a tranquil oasis for artists to focus on their work without distractions from outside bustle. BMW X3: Ready for the Rough “The third-generation BMW X3 is slightly larger than the model it replaces, has sharper styling and is loaded with the latest driver-assist technology features.”

MW’s new mid-sized X3 models have recently gone on sale and, given that SUVs account for almost half of New Zealand’s total sales, the range is vital to the German marque’s continued success. The three-model range starts with entry-level X3 20d, priced from $92,850. The top-of-the-range X3 M40i costs from $119,850. The biggest-selling model is expected to be the mid-range X3 30i, selling from $99,850. BMW New Zealand recently launched the new models with a drive from Auckland to the Jack Nicklaus-designed Kinloch golf course near Taupo, and a day-long off-roading session at Poronui Station, near the Taupo to Napier highway. BMW says the X3 was the ﬁrst premium mid-sized SUV on the market when it was introduced in 2004. It was the model that launched the mid-sized SAV (sports activity vehicle) market segment, and more than 1.5 million X3s have been registered worldwide since. With the popularity of SUVs continuing to rise, BMW has decided to give its X model ranges a more distinct look. The new models look sharper and more contemporary than the previous

generation. The X3 M40i model has a six-cylinder petrol engine that puts out 265kW of power and 500Nm of torque. It is the ﬁrst M model available in the X3 range, and the company says it takes 4.8 seconds to go from 0 to 100km/h. The mid-range X3 30i is powered by a second petrol engine that puts out 195kW, and 400Nm of torque, and is said to reach 0-100km/h in 6.3 seconds. The X3 20d model’s diesel engine puts out 149kW of power and 400Nm of torque, covering 0-100km/h in eight seconds. All models have an eight-speed Steptronic transmission. They also have the latest generation of Active Cruise Control and the Driving Assistant Plus safety package, which includes steering and lane control assistant, Lane Change Assistant and Lane Keeping Assistant with side collision protection. The optional Voice Assistant lets the driver use everyday language to turn requests into the appropriate actions. While the optional Head-Up Display is larger, it doesn’t intrude or impede vision and displays important driving-related information onto the windscreen, in front of the drive and BMW says it’s unrivalled

in its segment for graphics, resolution and display options. Inside the X3 there is more head, leg and shoulder room than in previous X3 models. There is new, softer “Vernasca” leather upholstery, and the option of a full-length of the cabin sunroof. There is wireless charging of Samsung smartphones and BMW offers a cover to allow i-Phone smartphones to be recharged wirelessly. The entry-level model sits on 19-inch alloy wheels, although 20-inch and 21-inch alloy wheels are also available. BMW’s X model SUVs have earned a reputation for robust performance. This was revealed off-roading on the higher reaches of the sprawling 6575ha Poronui Station handling rough tracks and steep banks with ease. The brake assist function holds the X3 steady, quickly building conﬁdence in the technology. They are extremely comfortable and practical luxury SUVs that can cope easily, whether negotiating rough or smooth roads or rough tracks.
