The SAVVY team are excited to bring you a foodie issue this month, highlighting some of the best places to eat and visit, here in our hometown Whangarei. There’s been many changes in our city lately and even though the weather’s chilly, there seems to be a buzz from place to place, as locals and visitors alike enjoy dining out again, taking delight in city life. It’s refreshing to see. Over the past year, I have been lucky enough to review many of the restaurants in town and each time I walk away thinking, how far Whangarei has come. We have amazing talent here in Northland and local pride brightly shining through our top quality dishes and improved wait service. If you haven’t dined out in a while, I suggest you browse though the pages and see what stands out to you. Maybe you are a dine-in type and would consider trying something new this month? t was during the wee hours of the morning when, once again, holding their daughter, Olivia, down to administrate medicines, that Nectar Cafe owners Nigel and Debbie Stowe decided enough was enough.

They were soon consumed with this new found possibility and educated themselves as much as possible over the coming months. While on holiday for twelve days, the pair decided to take the plunge and go cold turkey on a plant based diet, cutting out anything processed, dairy and gluten. After three years of sleepless nights, by day five Olivia was sleeping through the night and her allergies had calmed down. As a bi-product of this new-found way of life, both Nigel and Debbie shed their excess weight and found themselves transformed through a healthy lifestyle and careful eating habits. The couple experienced an increase of energy, clarity and health benefits. Their daughter was thriving and the whole family were on board creating their new everyday normal. Over three months Nigel lost 10kgs from cutting out dairy, gluten and meat and Debbie wasn’t far behind him. They focused on a plant based diet, low fat and high carbs

After numerous doctors appointments and specialist advice over the years that had failed to see long lasting results, the concerned parents starting looking into alternative answers for their daughter’s excruciating gut reactions and allergies. The lifestyle changes over the next four years, uncovered breathtaking results for the family. From the age of six months, Olivia would buckle over with pain. She experienced eczema so bad that she couldn’t sleep though the night until she was three years old. That same memorable night, Nigel sat at his computer and

- lots of beans, dahl and chickpeas. The juicer made a daily appearance and they focused on organic as well as reading all labels. The journey wasn’t over completely for their daughter, but the positive evidence was so clear that these were habits that were going to stick. The road also led on to thinking about what was in their wine, their toothpaste and the soaps they used. Slowly, they eliminated and replaced these items, especially shampoo that creates skin barrier issues and had all added to Nigel’s extreme hayfever symptoms that would take him out for a few days at a time. The effects on this family have been breathtaking and without pressuring their lifestyle on others, the couple are passionate about sharing their experiences for all those who are interested, offering many of these real food choices to the public in their popular cafe. “I want to believe in the food I’m putting up,” says Debbie, the head chef at the couple’s second home.

bad tummy aches and problems my whole life but hadn’t really connected that to the food that I was eating. About five years ago now I went to Thailand for four weeks and only ate Thai food, which is mostly made up of fresh meats, seafood, veggies and fruit. After four weeks I felt really amazing, full of energy, balanced, lighter and my tummy aches were gone! It all just clicked for me that the processed food that I ate at home was not doing me any favours and that I should not eat it. But of course when I came home I slipped back to my normal way of eating and I felt the same old way I always had which was not good. I decided that I needed to break up with processed food and commit to real food so I started what I called my ‘real food pledge’ I started the blog as a way to keep myself on track with my real food pledge but it grew and grew because people were interested in following my real food journey.

I was one of those girls who was always on a diet, you name it I have tried it!

What is your main focus, your motivation? I love to experiment with recipes and make healthy versions of my old favourites, I am passionate about creating yummy food from real ingredients. I really enjoy helping other people see how easy and tasty it is to be healthy and that we don’t have to over complicate the way that we view food. Just eat real food and love it.

What is your most popular recipe?

aralee’s Real Food Pledge blog was created in 2013, initially to keep her new-found way of eating on track but it grew into something a lot bigger than expected. Suffering from a negative relationship with food, numerous diets and a food intolerance that couldn’t be pin-pointed, Caralee found that by eating only real food there are so many positive benefits. She’s achieved a much happier, healthier lifestyle and is now passionate about inspiring others to find that balance.

Caralee, you are from Whangarei, a local girl. Tell us a bit about where you grew up, your history here? I was born and raised in Whangarei and spent the majority of my childhood growing up in Morningside

Road where I have loads of very fond memories. We had a huge back yard and my parents had loads of fruit trees, a veggie garden and chickens. My dad is a keen sailor so we spent lots of time on the boat in the Whangarei Harbour and in the Bay of Islands, we were always diving for fresh seafood and fishing from the boat. Food was a huge part of my upbringing, this is probably where my love of food came from. I went to Whangarei Girls’ High and worked at various places around town once I left school and then moved to Auckland and then finally the Gold Coast.

What got you started on the real food journey? I was one of those girls who was always on a diet, you name it I have tried it! They all worked but when you stop, they stop working and it is a bit of a vicious cycle. I also suffered really

As with all of my recipes it is gluten, dairy and refined sugar free. It is also nut free so it’s perfect for lunch boxes and is so easy to make and really delicious.

What is the main thing that you would like readers to come away with? I love inspiring people to cook simple meals using a handful of everyday real ingredients. I am focused of it being easy and full of flavour, if it isn’t these two things then why would you want to do it? I want people to know keeping it simple is the key, you don’t have to be on the diet roller coaster and that you can can enjoy amazing food, guilt free.

Venison Larb By Tom Hishon

Tom Hishon is the head chef and owner of popular Auckland restaurant Orphans Kitchen. He is an advocate of New Zealand farm-raised venison.

INGREDIENTS 500g farm raised venison mince; 2 garlic cloves, - sliced 1 red onion - peeled and quartered 2 baby cos lettuce, rinsed well 4 fresh plums - halved 2 tbsp mustard seeds 3 Tbsp Worcester sauce 1 fresh rosemary sprig - chopped 1/4 tsp chilli flakes 1/2 cup Pinot Gris 1 cup water 1/4 cup olive oil - plus dash for onions and cos 1/4 cup tarragon - chopped 1/4 cup parsley - chopped cracked pepper, salt 1 lime

DIRECTIONS

Heat a fry pan on the stove to a medium heat. Rub the flesh side of the onions with olive oil and a pinch of salt, place on the pan flesh side down until a good char is established. Turn the onions to the other flesh side and repeat. Remove the onions and set aside. Return the pan to the stove on

a low heat and burn off the Pinot Gris wine. Set aside. Heat a heavybased pot to a medium to high heat. Add half the olive oil, the venison mince, sliced garlic, chopped rosemary and chilli flakes. Slice the cooked red onions into further segments and add to the mince mixture with a healthy pinch of salt, then break up the mince with a wooden spoon, continuing to stir and cook over a high heat for 8-10 minutes to establish a deep dark roasted colour on the meat. This rich colour is crucial to the end result of the dish. To the pot, add the burnt-off Pinot Gris, then the mustard seeds, Worcester sauce and water. Simmer the pot over a low heat, stirring every minute or so until the liquid has reduced by half and the consistency of the mince is loose. While the mince is simmering, preheat your oven grill to high. Place the plum halves skin side up on a tray in the oven to caramelise the flesh, then turn to blister the skin. This should take 8-10 minutes. The plums are ready when soft. Take out of the oven, and remove the

blistered skins. Return the fry plan to the stove over a medium heat. Cut the baby cos in half lengthways, rub with a dash of olive oil, a pinch of salt and place face down in the pan. Once the leaf is crisp take out of the pan. Fold the remaining olive oil and four skinless plum halves through the mince mixture. Then add in the chopped tarragon and parsley, and season with pepper and salt. To serve, place half a cos head on a plate with the charred side facing up. Squeeze some lime juice inside,

DIRECTIONS

To make the base, place the dates and almonds into a blender or food processor and blitz until it resembles a fine crumble. Add the desiccated coconut and raw cacao powder, and blitz until the ingredients are combined. Add the coconut oil and vanilla extract and mix through. Press the mixture into the base of a spring form cake tin that has been

lined with baking paper and place in the fridge. To make the two top layers, soak the cashew nuts for a minimum of three hours by covering the cashews with water and setting aside. Drain once soaked. Place 2 cups soaked cashew nuts into a food processor or blender and whizz until smooth. Add the coconut milk, coconut oil, maple syrup, vanilla extract and peppermint extract. Blend until the mixture is very smooth. Depending on your food processor this could take quite some time. Remove the base from the fridge and pour one third of the white mixture onto the base. Place back in the fridge to set for 10 minutes. In the meantime place the cacao powder into the food processor along with the rest of the topping and blend until combined. Remove the cake from the fridge and pour the chocolate topping onto the white layer. Place back in the fridge and allow to set for 1 – 2 hours. Preparation time 20 minutes Serves 10

METHOD Savoury Wafers Put the egg whites in a medium

bowl. Whisk it lightly with a fork, then whisk in the sugar to a froth. Sift in the flour, and mix in the melted butter. Put 4 tablespoons of the mixture spaced apart on the silicon mat. Spread it a little using the back of teh spoon, then bake for 9-10 mins at 200c. Take off with a palette knife and lay them over a thin rolling pin to set into a curl. Cook the rest of the

mixture in batches. Fill with herbed quark ready to serve.

Stuffed Chicken Breasts

Sear chicken breasts with butter until golden brown, then roast in oven for 12-15 mins. Stuffing mix – puree one chicken breast with egg whites and cream until smooth. Season with salt. Add quark and piri spice and mix until combined. Place into a piping bag.

Using the two cooked chicken breasts pierce the fattest part of the breast with a knife to make a pocket. Using the piping bag, pipe in about 5g of the stuffing mix.

Locals will remember when Tonic Restaurant opened in December 1998. Brad and his longtime friend and fellow Chef Neil Smith had a vision of bringing a new standard of dining to the area. Their plans were to open a small intimate restaurant with an emphasis on creating a more personal dining experience. This is where it all began. The old butcher’s shop in a small Whangarei suburb was transformed. New owner Logan Wang touched down in New Zealand in 2009 to further his love of cooking Western food. Working for a few top restaurants around New Zealand to gain experience, he decided he would branch out on his own. This led him to venture out more and finally decide to buy Tonic Restaurant in July 2015. When Logan first took over the business the locals thought the quality of his food would possibly drop, however, he is glad to say that customers are telling him that the food is as good as before. His style of

Q:What is the biggest factor to your success? A: Consistency in any restaurant is imperative, especially the quality and the standard of food and the service. Do not try to fool your customers, you need to make sure what you put on their plate is responsible.

Your guide to being photogenic – dos & don’ts to show off your good points

I

f you have been following our guide to being photogenic series, you’ll know that we’ve been talking about how to stand, smile and act in front of the camera. These tips and tricks are designed to give you confidence when being photographed and take away some of the anxiety that happens when you’re in front of the camera. This month I’m going to cover some simple steps on how to bring out your best points, and minimise the ones you would rather people didn’t notice.

1. The hands have it; When we look at a photo we subconsciously look to see what people are doing with their hands. What this means is that wherever you put your hands, this is where people will look. If you put your hands on our waist, people will look at your waist and this can emphasise how small your waist is.

2.Avoid this; If you want to minimise something don’t put your hands over it. Sometimes we can want to hide some parts of ourselves, and instinctively this means we often place our hands over our body to hide it from the camera. This actually does the opposite, as mentioned above if our hands are there, then people will look there.

3.All arms and legs; Moving your arms and legs strategically can actually increase the hourglass shape you have. Whether you’re sitting or standing, crossing your arms and legs will create a curvier silhouette and therefore the illusion of a slimmer waist. All of this will stop the ‘boxy’ look that can happen if our arms are down by our sides. An example of this is shown in the images here.

4. Think about where the camera is; ‘Camera Angle’ is a term that refers to the angle the camera views you. The important part to know about this is that what ever is furthest away from the camera looks the smallest. If you want to minimise your hips, lean slightly forward, which means your hips are further away and thus smaller. Q: I do a lot of work at my computer and have developed

repetitive strain injury in my elbow and wrist with pain all down my arm and into my hand. I am strapped up, but would like to know if there is anything else I can do to help with healing it. Common symptoms of RSI include: swelling in the hand, wrist or forearm; tingling, numbness or loss of sensation in the hand; muscle spasms or muscle weakness (including loss of strength in a grip); stabbing, dull, aching and intermittent pain in your fingers, hands, wrists, elbows or arms. Strapping the affected area is ideal, as this will limit swelling. Obviously, you will need to limit any heavy lifting or repetitive tasks that are aggravating the areas, and it is definitely worth talking to a physiotherapist about stretching exercises that can help. It is thought that correct posture can help prevent the development of RSI - this is especially true for individuals who spend much of the day at a computer keyboard but do work in conjunction with your physio so that you are helping rather than aggravating the injury. One nutrient that often seems to be effective in the treatment of RSI is vitamin B6. B6 reduces inflammatory reactions in soft tissues and some doctors believe that deficiency of this nutrient is a major factor in the development of RSI. Fish oil supplements rich in the omega-3 fats EPA and DHA may help to reduce inflammation and thereby control the symptoms of RSI. I suggest you take 1- 2 g of a concentrated fish oil supplement each day. Turmeric and ginger are brilliant, both in reducing inflammation and providing effective natural pain relief and these can both be taken in supplement form. Diet can play a major part in treating this condition. Caffeine is not a good idea, since this inhibits our natural endorphin response and promotes further inflammation. Cut back your intake of known inflammatory and acid-forming foods — particularly junk and processed foods. Heat packs applied to the area will also bring relief.

id you know that if exercise were a drug it would be the most widely prescribed drug in the world? I kid you not. Exercise, and its fellow counterparts of movement and physical activity, can prevent, manage, reduce, or cure just about every disease known to man. Yes, exercise is that powerful. Movement is as crucial to our survival as medication and therapy, yet which is the most often prescribed? We are habitual chasers of the quick fix; our generation longs for convenience – and so often (too often) being an ambulance at the bottom of the cliff, or slapping on a band aid, overrides the more intelligent option of sourcing and fixing the actual problem. Drugs are prescribed for just about every symptom under the sun, when the real solution is to simply reinstate some restorative act of health – such as getting up and moving more. Oh just how many benefits and roll-on effects that would have! We seem to have forgotten the lost art of movement, the liberating sensations of movement, the age-defying values of movement, the critical life force that is movement. We need to move more, our health and the quality of our life depends on it. Did you know that research now shows that a 60 minute exercise session doesn’t undo a sedentary occupation – no matter how regularly it’s done. The new discovery has outlined that it isn’t just about

how much we are not moving anymore, but that too much sitting down and being sedentary is very bad for our health too. Even moderate activity i.e. standing work stations, or moving about at regular intervals can counteract the effects of too much time being sedentary. Movement is therapy. It produces a medicinal cascade of physiological, biological and chemicals reactions in the body that is almost beyond our comprehension, and this complex and critical process is side-stepped every time we choose docile behaviours over active ones. And taking our movement into the outdoors is even more therapeutic. We are almost always more active outside than we are inside. There is a world outside our doors (and our screens) that is truly magnificent. We live in a sphere of magic; one which provides a gigantic platform for us to discover a bounty of healthful opportunities. The tingling feeling of vitamin D on our skin, the tickle of fresh air on our faces, the vigour of nature infecting our bodies, and the warmth and relaxation that comes with natural, invigorating movement – these are all sensations that are becoming more and more foreign to us. Yes, as our world becomes more technologically advanced, we are unbecoming the masterpieces of physicality that we once were. It’s time to move it, before we entirely lose it.

hese two fitness babes have been supporting one another’s business growth via a networking platform for ‘Mumtrepreneurs’ for a while now.

But as of a few weeks ago, Miranda (ACTIV8 NORTHLAND) and Corinne Austin (Fit Fix Specialists) are joining forces to do something new and challenging. “We’ve been confirmed as ‘fighters’ in the Contractors for Charity - Northland ‘Sock it to em’ event due to be held on Saturday 3rd September,” Corinne says. “Neither of us have been in a fighting environment before, and we are slightly anxious about what lies before us,” she says. As trainers themselves, they know it’s essential to step outside their comfort zone to reach new heights and to experience the thrill and satisfaction that comes from setting goals and undertaking the gruelling training necessary to see them ‘fighting fit’ for the event. “We want to show our clients and followers that we don’t just talk the talk, but we walk the walk too. Even if we are feeling slightly nauseous about the whole idea at present!” Miranda’s motivation when saying ‘yes’ to the Charity Boxing match was to step out of her comfort zone. “I think as mums, business women and having a family, life gets busy doing what we do best and enjoying that. I put aside time to train everyday to keep myself mentally and physically fit but I had to ask myself what am I training for?” “I feel that putting this challenge before me gives me an

insight into what my clients must go through for the first time stepping into a gym, the first time taking on a health challenge themselves, no matter how big or small and the first time they say ‘yes’ to committing to a goal. Now I feel the excitement, nervousness and determination that comes from taking on a new challenge and it feels great,” she says. “My inspirational person to face my fear of this challenge would have to be my late grandfather – Papa Jock. Whatever sport we chose to pursue as a kid he would be helping us train and giving us inspirational words and wisdom as to how to get there,” says Miranda. The motivation behind the fight is a hard one to narrow down for Corinne. “First and foremost, I want my girls to grow up being inspired by a mother who is endlessly optimistic, ambitious, and brave. Secondly, I have this inner need to lead others towards lives of improved health and wellness, and will do almost anything to achieve that. And finally, nothing compares with the feeling of being healthy and fit, and it’s a sensation I never want to lose.” “Anybody who defies the normal inspires me, or who achieves the extraordinary. If you want to use a dark hue in a shared space, but you’ve got an expansive open-plan kitchen, dining and living area, pick a single dark shade for a feature wall and paint the remaining walls in a complementary neutral with cool or warm tones depending on whether your feature colour has cool or warm tones.

How to plant a tree BY DEBBIE OLDFIELD

t can be as easy or complicated as you want to make it. Lets face it we’ve all done it, planted a tree at a difficult time of year with little or no preparation. Just because we’ve found a plant in the garden centre that we have fallen in love with, taken home and thought, hmmmmm, now where do I put it? The best thing you can do is find out what conditions your plant likes. Does it prefer full sun, part shade, is it frost hardy, wind hardy, will it cope with damp soil or does it prefer it dry? Once you have found the perfect spot for it (preferably somewhere you can admire it from the house) then set about planting it. Dig a hole approx twice the size of the root system. Mix some compost (store bought or homemade) with some of the soil removed from the hole, 50/50 is good. Add a few slow release fertiliser tablets to the bottom of the hole, just under where the roots will be. Place your plant into the hole ensuring that it is standing straight and that the surface level will be at the same depth as it was in the pot. Water well. Then mulch your plant to help prevent

weeds competing with the plant and also to conserve water in the soil over the summer months – maybe not so critical this time of year when it is so wet! You can use bark, old carpet, or the Wool Bio-mats we have recently got into the shop. These are made from 100% recycled NZ wool, and are an easy to use option. Staking your plant is a good idea if there’s any chance of the plant/tree getting blown about. The last thing you want is your new plant to lose all its newly developed roots because it is rocking about in the wind and they are snapping off. If it’s a good size tree you are planting or a windy site I would recommend using hardwood stakes. These come in varying lengths so there’s a suitable size there for your plant and conditions. Attaching the tree to the stakes you can use jute, elastic tree tie, anything that is natural and will eventually break down, I find a lot of the hard plastic ties tend to get forgotten about and can grow into the trunk of your tree rather than breaking. You can also use bamboo stakes for the smaller plants that don’t need such robust support. We have these available in lengths starting at 60cm right upto 2.4m tall.

ibouchina ‘Carol Lyn’ has a stunning display of vivid purple flowers throughout the year. The smaller cultivar ‘Carol Lyn’ grows to about 1.5m tall by 1m wide and is great as a small specimen plant in the garden or even containers. The occasional prune, especially after flowering, will ensure a nice and compact shape and encourage new growth. It can tolerate full sun to part shade and prefers a well- drained soil. The pink delicate flowers of the thryptomene cover the slender branches from late autumn to spring. It’s a pretty tough little plant growing about 1m high with a weeping habit, but needs well drained soil to thrive. It can tolerate dry soils and would look great in a rock garden or on top of a retaining wall! Furthermore, it provides some food for the bees to get them through the winter.

What’s on at Whangarei Art Museum

ince its inception Whangarei Art Museum (WAM) has dedicated itself to not only being the kaitiaki – guardian of the city’s art collection it has continually shown a commitment to opening up the world of ideas, art practice, image-making, and social and cultural history; firmly establishing it as one of Whangarei’s foremost institutions of excellence and diversity. Continuing this legacy Whangarei Art Museum – Te Manawa Toi has dedicated all three gallery spaces to showcasing contemporary Maori art, more specifically contemporary Maori art by Maori women. In bringing together three entirely independent shows viewers are given the opportunity to witness first hand a contemporary Maori art history that is rich, diverse, and multi-faceted. In the exhibition Pura Te Manihera McGregor – Whenua ki te Whenua the artist Alexis Neal who although known as an artist who primarily engages in print has broadened her practice and created a body of work featuring woven and carved pieces that blend traditional forms and processes with contemporary materials. Her work is a response to the life and legacy of Pura Te Manihera McGregor (1855-1920, Nga Poutama, Ngati Ruaka, Ngati Rangi), a mana wahine and prominent figure in the Whanganui community. Taking the form of a ‘whata’ a store house for chiefly Taonga the exhibit includes an important part of Pura’s legacy; her personal taonga, now housed by the Whanganui Regional Museum which are on loan to WAM for the duration of the exhibit WAMs second exhibition Waitangi Wahine curated by Chriss Doherty-McGregor in 2015 to commemorate the 175th anniversary of the signing of Te Tiriti o Waitangi/ The Treaty brings together five Mana Wahine artists with reputations for pushing boundaries; showcasing

work that uses a variety of media from well known artists Robyn Kahukiwa, Linda Munn, Suzanne Tamaki, Tracey Tawhiao and Andrea Hopkins. Doherty-McGregor explains the exhibition is very provocative and showcases some of the most reputable Maori woman artists in New Zealand. “Essentially this group of work is in response to the impact of the Treaty and its effect on Maori today.”

The third exhibition Hine / Noa / Tapu the artists Tia Ranginui and Vanessa Wairata Edwards explore the significance of tikanga and its place in modern society through a series of print and digital photographs. Tapu have historically served a functional purpose, by protecting Maori from real dangers however in this exhibition the artists question how relevant is the notions of Tapu and Noa in contemporary society.

I’m on my third coffee and it hasn’t touched the sides

es, those are my tampons in the fridge. I swore recently that I would greet the day with yoga, fill my body with the goodness of water and breathe deeply, gliding my way through each week. The reality is, today I smell like BO. My hair is frizzled from the drizzly rain and I burnt my porridge. I have snot down my arm from a sick toddler and the two big ones won’t stop fighting. Washing piles decorate my home and the smell of dog is getting a bit too much. The washing line is broken and lawns are overgrown. These are the days of our lives… Dishes line the bench and cupboards overflow with towels that haven’t been put away properly. I dream of a manicure. In what seems like planned unison, every person in the family calls out my name. At the exact same time, the phone rings and the dog barks at the door knocking salesman. My doctor said to keep stress levels low, who else rolls their eyes when they say this to you? Deadlines are looming and kids demand playdates with grandparents, parents and friends. I start to wonder if playdates are meant to go both ways? I’m calling it. For those of you who have just been through school holidays, can I get an amen? These ones where

hard! I have panda eyes, re-growth, hairy legs and am running on caffeine. Attractive? No. Determined? Yes. Give me one day to myself and I hope to be in one piece again. It just takes the bottom of the barrel (wine barrel at times) to motivate ourselves to the top. We all have these weeks, they seem to last forever but if we can pick ourselves up, a hot shower and deep night sleep can make up for the mess we sometimes feel stuck in. And the tampons in the fridge? Our re-visit to the toddler years continues! At times, all you can do is laugh. Pip x
