Editor’s Note

H

There is a festive whisper drifting through the air, and I love it!

In this Christmas edition, we talk to a few Northland locals celebrating Christmas in a unique way.

From the relaxed beach getaways to expats partying with friends when families live afar to the traditional backyard Christmas days with family en masse. It’s an exciting time to unwind with loved ones and catch our breath from the year that’s whizzed past. Personally, when the time comes, I’m looking forward to lying in the hammock under a tree, cold beverage in hand and surrounded by loved ones. What is Christmas without the company of others? Better still, a selfless gift from a stranger? Remember, it’s easy to get caught up in the commercial hurricane and loose sight of what really matters. The Salvation Army have been inundated this year with people offering to sponsor another families Christmas - what an amazing opportunity to change lives. This Christmas season, look outside your world as you know it. Maybe you could reach out to one neighbour, one stranger, one person worse off than you? Wherever you are and whoever you are with, let’s look after each other. It’s a great thing to teach our kids too. Merry Christmas SAVVY readers!

OUR PEOPLE Michelle Morpeth - Outdoorsy NZ

How do you spend Christmas?

the months ahead – I’m such a water baby! I always feel very lucky to be a New Zealander on Christmas Day.

What traditions do you still carry on from when you were young? Leaving out a drink and a snack for Father Christmas on Christmas Eve, Christmas stockings for the kids, and last but definitely not least: eating too much. Oh – and the prospect of a summer holiday spent on, in, and around the sea!

What has been the best present you have ever received?

My family is made up of: my husband Brenton and three year old son Nate – and our 6 month old ‘bump’, due Waitangi weekend! Both Brenton and I have a pretty big extended family, too – we’re very lucky.

What does Christmas mean to you? I think it’s a day to take stock of how fortunate you are. I always end up feeling a bit overwhelmed on Christmas Day, enjoying being surrounded by the most important people in my life and feeling the love in return (and no, it’s not just the champagne)! To me, it also really signals that summer has arrived with so much fun outdoorsy stuff to look forward to in

My maternal grandparents lived in England, and every two or three years they would come out to visit us for Christmas and to go sailing. Those times in my childhood when they managed to make it over for Christmas seemed like the best present ever, even if all seven of us ended up crammed into a small yacht for three weeks…

What do you do for others at Christmas time? I think it’s a good idea to donate some children’s gifts and food to a charity that distributes them to families who would otherwise miss out – it’s pretty heart-breaking to think of children seeing and hearing all about Father Christmas and presents and a lovely meal (in the media and from their friends), and then it doesn’t happen for them…

Come and see us at Tutukaka Marina to choose your swimwear this summer! Tutukaka Surf Beach Shop has swimwear to fit most Body types this season and has increased its range to suit young to the young at heart. Labels include Piha, Roxy, All About Eve, Togs Australia and Moontide. Moontide Swimwear is stylish, offering fitted cup sizes for fantastic support.

Tell us how you will be spending Christmas this year: I’ve always been the outdoorsy type, and now I have an online community for outdoorsy mums. It’s totally true that everything just tastes better outside - so, of course we have a Christmas picnic on the beach on the Tutukaka Coast planned! Some of the most special Mums in my life will be there – my Mum, my sister, my mother-in-law, my sister-inlaw, and all of our kids. Hopefully the weather will co-operate and we’ll spend a relaxing day watching the kids play, tree climbing, rope-swinging, taking a dip, eating far too many treats, and letting it settle with a stroll along the sand. Then it’s back to the picnic for round two ;)

Jane Frazerhurst - The Motherhood

We don’t all get together every year these days but we

OUR PEOPLE

still try to do it as often as we can.

What has been the best present you have ever received? A trampoline when I was seven! I still remember the magic of coming out and seeing it on Christmas morning.

What do you do for others at Christmas time? I like to support local so contribute to local charity collections. In the past I have been involved with toy collections and making up food parcels for local families.

Tell us how you will spending the day this year:

My family is made up of: I come from a pretty big family – even though my own family was originally a family of four (now my sister and I have had children the family has of course now grown), my dad is one of seven so I have numerous aunties, uncles and cousins. There are many occasions that you need to shout to be heard!

What does Christmas mean to you? Christmas is about family. I feel that it’s important that we gather with friends and family and spend it together. I lived in London for many years and I was always the one organizing Christmas and making sure that we did

I imagine it will be an early start with a 3 year old and a 4 year old. This is the first year that they will both really understand what Christmas is all about – and the excitement is building already. Once we have calmed down the girls after the excitement of Santa visiting and opened a few presents, we will head off to join the rest of the family at my parents place for a family champagne breakfast (because Christmas day is about the only day you can have bubbles at breakfast), followed by a big traditional family lunch. The kids will probably be bouncing off the walls by then so running them around in the garden, playing hide and seek with their cousins, and maybe a game of backyard cricket will burn off some of the lunch. If the weather is nice there is always time to squeeze in a swim! And anyone who can might try and sneak off for a little sleep!

Jo Rogan-Gibson - Mad Hatters Pottery My family is made up of: Me, hubby, Niamh and the cat

What does Christmas mean to you? An opportunity to spend time with people who matter the most to us. Old friends and new... About having fun and

something special. We used to have “Orphan’s Christmas Parties” as it can be hard to be a long way from home at Christmas and getting together and celebrating with friends always makes it easier.

seeing the magic of Christmas for the young ones. Our Christmas “family” make up is very different now that we live overseas. Our family is the rich tapestry of friends we have met since being in NZ. Funnily the majority of them are ex-pats...

What traditions do you still carry on from when you were young?

What traditions do you still carry on from when you were young? My dad is one of seven. So Christmas in our family is usually a pretty big occasion. Last year we had 30+ for a traditional sit down family dinner. We move all the furniture from the living room and hire tables and chairs so that there is room for everyone. Christmas dinner is pretty traditional – baked ham, roast vegetables and occasionally a turkey. We all pitch in and help – dividing courses up between different members of the family.

Spending time with family, all being together at the same time. Even though my family as an adult living overseas is different from what “family” was as a child. Grandparents, aunty, uncles, cousins etc.....

What has been the best present you have ever received?

would have to say that other significant days like mothers day and birthdays are more important. The present I have chosen for myself for my birthday and Christmas is my Doterra oil essentials kit. I love to give presents rather than receive them. The magic of Christmas is saved for my daughter and I think as an adult it is great to relive all of that magic and sparkle through our children.

What do you do for others at Christmas time? This year we will be participating in the Salvation Army adopt a family. As we are fortunate to be able to have a traditional Christmas we know that this is not the case for others so its important for us to give to others, donations to the foodbank and the Christmas tree at K-Mart. I think by doing this its shows our children what the traditional view of Christmas is about sharing and caring....

Tell us how you will spending the day this year: We will be smoking salmon first thing. Some will be for breakfast to have with our neighbours. About 11 we will be travelling down to friends in auckland for Christmas dinner with the salmon, we have done this for the last 5 years. In the evening we gather at another house for a Christmas supper and an evening filled with games – which we are in charge of this year...., awards ceremony, pass the parcel and secret Santa and of course an inordinate amount of alcohol washed down with more food..... This is our NZ family Christmas. Boxing day will be spent with other friends and young children and we will head back home later that day....

As a child is would have to be a rocking horse. As an adult the giving of presents doesn’t matter to me anymore but I

Summer dresses for every occasion Nothing says ‘summer’ like a gorgeous light summer dress! This season there are so many styles to choose from.

Casual dresses for easy summer chic This season it’s all about the shift dress, with it’s easy to wear relaxed shape. Shift dresses are perfect for summer because their loose fit flatters all body shapes while creating a cooling effect. They’re also easy to dress up or down, and can be worn with cute heeled sandals or flats, so whatever your style, the shift dress is a must-have!

Printed dresses for bold summer colour If you love colourful, bold prints, then you’re in luck, as prints are right on trend this summer! In every fashion magazine and on catwalks everywhere, prints are bursting out into bloom, creating a riot of colours and shapes. This season there are prints of all colours and patterns to suit your unique style. They are so versatile – wear them any way you want! Denim jackets look great over a printed dress, with a pair of cute sandals to complete the look. To dress them up, pop on a higher heel and some chunky jewellery – the choice is yours!

Summer dresses for every occasion

Lace dresses are fast becoming a wardrobe staple this summer, and no wonder. Lace is so feminine and easy to wear – dress it up with heels, a cute jacket and chunky necklace for a night out, or dress down with a denim jacket and heeled sandals for work or a lunch out with the girls.

To the max – maxi dresses for effortless summer style For the ultimate in summer clothing, you can’t go past a gorgeous maxi dress. There’s something about the feel of the long skirt floating about on the summer breeze that makes you feel instantly feminine. They’re not just a stalwart of the boho chic trend, they’re a practical, must-have item for your summer wardrobe. Their long skirt is great for covering up those not-quite-summer-ready legs, or for hiding a self-tanning project that went wrong! They’re also lovely and cool to wear to the beach as a fashionable cover-up from the scorching sun.

I

t was time. I had been through a few pregnancies, breast feeding and the ups and downs of finding my body again after kids. My wardrobe would fall through the doors upon opening and the various sizes confused me each day as I tried to decide what to wear. From stay at home mum to working professional, I had everything under the sun in my closet. Most of all however, I had black. Black pants, jerseys, t-shirts, jeans… After having my colours done by Stacey Speedy from Truly You a few weeks ago, I booked her in to also raid my cupboard and unearth the unsavoury pieces that I was holding onto for no reason. She did this with encouragement, love and options. Not once telling what I should or should not be doing, at the end of the day it was professional guidance and it was up to me to make the change. It was clear that my body shape suited certain cuts, colours and lengths. Before hand, she had taken the time to measure me up and do her research into what my ideal style was and where I wanted to head with this. Her findings were spot on and Stacey had obviously taken a lot of time thinking about it. My clothes were all evicted from my messy wardrobe and sorted into groups on the hanger. I was reminded to respect my clothes, how to wash them and hang them in an organised way. We worked on the importance of the pop of colour, less black around the face and working with what I’ve got. Every morning now, I am motivated about dressing myself up, something I would dread before. After my time with Stacey, I felt like I was more in control again. I felt confident in the way I dressed and the comments came thick and fast. Every morning it’s exciting to get dressed again and even when I have a blank, I have a few go-to’s that I can count on feeling good in.

There are over 30 brands available in store,” says Vikki. Where they are located now, will be the fourth shop Vikki has opened in the Strand over the last 16 years, adding to their humble success as every move has come with growth and excitement. “I opened the shop because the retail side of hairdressing is essential, you need to be using the correct products to care for your hair,’ she says. “My goal is to educate people in hair care.” New services have been added along the way; the team are proud to offer a pay by credit card over the phone option as well as products couriered across town on the same day and free of charge for orders over $100! The men, in particular, love this service when shopping for their loved one. The GHD gifts seem to fly out the door, paid for over the phone, gift wrapped and shipped across town. How easy is that? The only thing constant is change BY CORINNE AUSTIN

You know what they say - the only thing constant in life is ‘change’

L

ife is like a roller coaster ride or the unpredictable oceans that surround us. They have their ups and downs and storms and calms. Every ride, every wave, every swell, every splash, every wind, every day is different. And it’ll always be like that. And life is very similar. No one day is the same as another. No one person is exactly the same as another. No one situation is a complete replica of another. There is always difference, there is always variability, and there is always change. This is the unwavering pattern of life. So it makes sense that health and fitness is no different either; health and fitness, after all, is just another element of our ever-changing rollercoaster of day-to-day life. Yet, we seem to constantly chase this notion of ‘balance’, this ideal of health and fitness perfection (which, in itself, is uniquely subjective to each and every one of us) as if it exists, and as if one day we’ll find this destination that we’ll happily settle for, and that we’ll be happy to settle with for life.

It’s important to both realise and respect that we each have our own individual ideals about strength or fitness, eating regimes, movement patterns, daily health rituals, body aesthetics, flexibility, and all manner of all things wellness-related. And as such, our personalised ideas of what our unique point of ‘balance’ is are going to differ from one person to the next. Regardless of our differences, and despite how goaloriented or health-savvy we are, there is quite possibly not ever going to be an end destination with your

health and fitness, nor is there likely to ever be. Why? Because we are destined, as creatures of forever seeking greener pastures, to always be on the search for the next best thing. It is most certainly in our best interests, then, to simply try to keep improving upon what we already do or what we already know, and make peace with the fact that there is no one destination, but just an endless channel of adventures, discoveries, challenges, and triumphs! We are also destined to fall off the wagon, because, let’s be frank, none of us can be perfect ALL of the time! And how boring would life be if that was the case! I’m a great example! I (clearly) love the health and fitness stuff I both practice and preach daily. But I too can stumble and trip! Throughout the winter I worked my butt off, both nutritionally and physically, to become fighting fit for a charity boxing match (that never eventuated, but we won’t revisit that!). Since then though, I have relaxed, unwound, implemented some restorative practices (in exercise and food contexts!) and ‘undone’ some of the great stuff I had achieved. And I recently had a weekend away with my fambam and I over-indulged more than I have in a very long time.

The place for

REAL

Thai Massage is a unique and powerful healing art that has been an important part of traditional Thai medicine for thousands of years. Ancient Thai people believed that “the absence of illness is a blessing” and they believed illnesses can be avoided by maintaining health, balance and well-being.

Traditional Thai Massage

Koy’s Traditional Thai Massage is the original therapeutic clinic in Whangarei previously located on Northfolk Street and recently moved to the current premises - 50 Kamo Rd, Kensington, Whangarei.

Our professional team of four fully qualified therapists have many years of experience and have been trained to the highest standards in Thailand. We provide personal, friendly and courteous services for both men and women with our signature massage being the Traditional Thai massage which, through a fusion of rhythmic acupressure, body rocking and deep assisted stretches,

loosens joints and balances major muscle groups within the body. Our clients can choose from our professional treatments to unwind from the stress of a modern day lifestyle, or just relieve those aches and strains associated with hard work. You will find it a truly positive experience, beneficial for both mind and body. We have consistently heard the same message from our clients – We help them experience less pain, less inflammation and help our clients enjoy moving their bodies more. We are open 6 days a week (Sunday’s by special appointment) from 9.00am to 7.00pm for your convenience and it is recommended that you make an appointment to avoid any disappointment.

Looking forward to see you!

GIFT VOUCHERS AVAILABLE FOR CHRISTMAS MEET OUR PROFESSIONAL TEAM CHULARNEE

She has worked in very popular Thai clinics in Auckland and decided to move to Whangarei for a change in lifestyle. Chularnee bought Koy’s Massage two years ago and she is looking forward to bring this business to a new level.

PROMJIT

Specializing in all aspects of Traditional Thai massage, Promjit graduated from a top massage school then worked in a hospital in Thailand for many years. She is very passionate about the many health benefits Thai massage can offer and will offer her skills and expertise that make for a most rewarding health-improving experience.

PENNY

If you would like to experience hard deep tissue treatments, Penny is the person to see. The youngest in the team, Penny has a wealth of experience. Penny is new to Whangarei, she trained at medical school in Thailand and worked at top Thai clinics. See Penny, you will feel difference!

PENWUN

Becoming your own Best Friend is one of the best gifts you can give yourself… BY CAROLYN HANSEN

… and makes life so much easier yet we can spend a lifetime taking care of others, throwing ourselves into their needs, happiness and their well-being.We “rise to the occasion” for him, her, them and it ... and yet, somehow, fail to do this for ourselves. How is it that we can be a good friend to everyone but ourselves? If you can be solid as a rock for others, then course (of course!) you can be that for yourself too. In fact, you MUST be Sometimes we have to take a look deep inside ourselves and flush out feelings, thoughts and self-beliefs that can have us standing in our own way, in the way of “our own Success”. Are you “your own worst enemy”…or “your own best friend”? Do you sabotage “your own actions” or are you firmly committed to “your own health and fitness goals? Do you stay Positive, Focused, are good to your body AND yourself? Do you “OWN IT”? No matter what age you are, you can be your own best friend. You are in very capable hands. It means you like yourself. It means you look after your body and treat yourself like you would treat your own best friend. You don’t keep beating yourself up and continue on doing things that self-sabotage yourself in the areas of healthy eating and exercise. Celebrating Northland Barista Championship 2016 PROUDLY PRESENTED BY ALTURA COFFEE AND NORTHLAND HOSPITALITY

JENN TAMATI FROM QUAIL CAFÉ, NORTHLAND’S BARISTA CHAMP OF 2016.

L

ast month marked the 15th year of the Northland Barista Championships and saw 14 of the region’s top shot pullers go head to head over two gruelling days of intense competition. In the end, only one prevailed. CONGRATULATIONS Jenn Tamati from Quail Café, who nudged out the rest of the pack to become northlands Barista Champ of 2016. The competition was extremely close with positions changing over the course of both days, resulting in a four person showdown going through to the finals round late on day two. With representatives from three local cafes and one boutique shot bar from Waipu, they battled it out with drinks

and performances of such a high calibre that all the finalists were encouraged to consider the national event next year. Competitors prepared 12 beverages in a 15 minute time frame to be scrutinised by four taste judges determining flavour, tactile feel and appearance while two technical judges surveyed all aspects of the baristas movements, procedures and consistency. Head judge for the event, Northland Hospitality’s Robert Tadman said, “The event follows almost exactly the international platform and puts the highest scrutiny upon competitors, even entering such a competition shows a lot of courage and determination. And that the net gain from such an event are the improved standards and skills of baristas

Chris was here to lend expert advice to the judging panel and was very impressed with the local talent. HOSPITALITY

NorthTec caters for great hospitality

I

f you’re thinking of a career in the hospitality industry, NorthTec can help you get there with a professional qualification and the confidence to go with it. We have a reputation for turning out great graduates with all the skills and techniques to work in the fast-paced world of restaurants, cafés and bars, whether it’s as part of the front of house team or in food preparation. Our students train in our on-site restaurant and café, under the watchful eye of NorthTec’s experienced and passionate tutors, who have a wealth of knowledge of the industry. The New Zealand Certificate in Food and Beverage Service (Level 3) is an excellent introductory programme, giving you barista skills and experience in customer service, health and safety and food preparation and service. When you’ve completed this programme you can choose to enrol in the New Zealand Certificate in Food and Beverage Service (Level 4), which will equip you to work as a café manager, restaurant or bar supervisor, or to supervise general food and beverage service.

Stay close

GO FAR

Noho tata, haere tawhiti

The level 4 programme teaches you about operational systems, procedures and guidelines in the industry, and you’ll also learn supervisory skills, along with liquor control and human resource requirements. After either or both of these programmes you’ll be able to go straight into work in a café or restaurant. For those who dream of becoming a chef, NorthTec also offers a level 5 New Zealand Diploma in Cookery (Advanced). This programme will prepare you to work as a senior chef – you’ll be ready to prepare advanced dishes in a professional kitchen. You’ll learn to plan and produce a broad range of dishes, and you’ll be able to develop and design advanced menus. The diploma programme will also enable you to plan and monitor workflow and supplies in a commercial kitchen, manage operational staff requirements and relationships, and manage operating procedures and compliance requirements. To enrol or find out more about NorthTec’s hospitality programmes, call 0800 162 100 or visit www.northtec.ac.nz.

Andrew Thompson – Hospitality student “My brother studied cheffing here and he’s gone on to do really well. This training has a good reputation and it’s local. The best part of the course is the good vibe of the people and the environment. You’re made to feel welcome and the tutors treat you as an equal or a colleague rather than as a student. They get better outcomes by doing that so it works well both ways. “Baking is a challenging part of the course for me because I’m too rough and knock too much air out of cake mixes, but it’s also the area I want to get involved in. “This qualification will enable me to have the freedom to travel and work. My first priority is to get full time work and save. I’m new to the industry so I’ll have to start at the bottom but if you show you’re keen and you’re onto your work, you can progress fast. I’d love a baker’s job and eventually want to have my own baking business.”

ENROL NOW FOR 2017 If studying and gaining skills are on your to-do list for 2017, take a look at what NorthTec has to offer. As the region’s leading tertiary education provider, we deliver high-quality education with a strong career focus and a practical, hands-on approach. Elbows Off the Table, Please, by Jo Seagar, published by Random House NZ, RRP $50. Photography by Jae Frew.

Chop Chop, by Brett McGregor, published by Random House NZ, RRP $45. Photography by Jae Frew.

Pork involtini is an Italianinspired dish of thin pork loin slices that are beaten flat, stuffed, rolled into logs and tied. Makes: 8 Prep time: 30 minutes Cooking time: 30 minutes

INGREDIENTS 8 slices pork loin, schnitzel thickness 1 cup fresh breadcrumbs 3⁄4 cup grated Parmesan or pecorino grated rind of 1 lemon 1⁄4 cup chopped Italian flatleaf parsley 1 Tbsp fresh thyme leaves, no stalks 2 Tbsp chopped chives (chive flower petals can be included, too) salt & freshly ground pepper to taste 1 egg 8 slices shaved streaky bacon 8 thin lemon slices, no pips

8 sage leaves 125g butter 1 ⁄4 cup flour to dust Grainy Mustard Sour Cream Sauce: 2 cups white wine or chicken stock 3 Tbsp grainy mustard 250g sour cream 1 tsp salt 1 tsp freshly ground black pepper

METHOD One at a time, place the slices of pork between two sheets of plastic wrap and, using a meat pounder or hammer, pound out to as thin as possible. In a bowl, mix the breadcrumbs, Parmesan or pecorino, lemon rind, chopped herbs, salt and pepper with the egg. Mix well. Lay a rasher of shaved bacon on the bench. Place a pork slice on top. Divide the crumb mixture into 8 sausage shapes and place one on the pork slice. Fold in the ends and roll up like wrapping fish and chips. Place a lemon slice and sage leaf on top and wrap the

bacon round like a bandage. Secure the roll with silicon baking bands or kitchen string. Repeat for all the pork slices. In a large frying pan that can fit all 8 involtini, melt the butter over a mediumhigh heat. Place the flour in a shallow plate and roll the involtini in the flour to lightly coat. This helps them to brown nicely. Add the floured rolls to the pan and cook on all sides for 10-12 minutes depending on thickness. They should feel quite firm when pressed. Transfer to a roasting dish and keep warm in a medium oven as you prepare the sauce. Add the wine or stock to the frying pan and place over a medium-high heat, scraping all the cooked brown bits up from the surface. Simmer until reduced by half, then stir in the mustard, sour cream, salt and pepper. This just needs to be warmed, not boiled. Transfer the involtini to a serving plate. Snip off the bands or string. Serve with the sauce on the side. ■ From Elbows Off the Table, Please, by Jo Seagar.

MUSSELS withwith THAI MUSSELS DIPPING SAUCE & THAI DIPPING CRISPY SAUCESHALLOTS &

CRISPY SHALLOTS

IMPRESS GUESTS WITH A SPECIAL STARTER

5 coriander roots, scraped clean 1-2 small bird’s-eye chillies to taste 80 g palm sugar, grated juice of 2-3 limes fish sauce to taste Mussels: 1kg green-lipped mussels, cleaned and debearded 2 lemongrass stalks, finely sliced small bunch of fresh coriander 4 Tbsp crispy shallots (see below)

METHOD Place the garlic, ginger, coriander roots and chillies into your mortar and pestle and pound into a paste. Place the paste and the remaining dipping sauce ingredients in a jar and shake to combine. Set aside. Bring a large saucepan of water to a boil. Arrange the mussels in your steamer, place over the pan and cover with a lid. Steam until just opened. Remove the mussels as they open and discard any that do not open, cover and set aside. Place a little salt on a

platter or board to create a nest for the mussels. Top with an opened mussel in its shell. Drizzle a teaspoon of the dressing over each one and scatter over the sliced lemongrass, coriander and crispy shallots. TOP TIP When the mussels have just opened and are plump, remove from the steamer straight away for best results.

CRISPY SHALLOTS & GARLIC These are easy to make and I love the earthiness of flavour and the amazing texture they add to salads, stir-fries and a good old laksa. To make your own, slice some shallots the night before, toss them in a little cornflour and leave them to dry overnight. Then heat a good few glugs of vegetable oil and simply fry them slowly. I keep the temperature at 150ºC. As soon as they start to become crisp and golden, remove and drain on paper towels. When cool, put them straight into an airtight container. The garlic can be done in the same oil, at the same temperature, but watch it closely — you don’t want to let it get too dark as it will become bitter. ■ From Chop Chop, by Brett McGregor.

You can do most of the hard work before your guests arrive then simply throw it together and serve. Serves 8 as a starter Prep time: 15 minutes Cook time: 5 minutes

MAKE THE MAIN COURSE ONE TO REMEMBER STUFFED CHICKEN with EGGPLANT SALAD

The stuffing used in this chicken is a good option for gluten-intolerant eaters. We like to serve the eggplant salad warm but it is just as delicious served at room temperature. Serves 4-6

INGREDIENTS Stuffed chicken: 2 1⁄2 cups jasmine rice 1⁄2 cup golden sultanas 1 red onion, sliced 5 cups chicken stock 50g butter salt and freshly ground black pepper 1 size 18 free-range chicken, skin on, boneless (ask your butcher to debone) 100g pine nuts zest of 2 lemons 1 ⁄2 cup roughly chopped Italian parsley cooking string, for trussing 2 Tbsp olive oil for rubbing chicken skin Eggplant salad: 4 eggplants, sliced into 2cm rounds 1 Tbsp dried oregano 50ml good-quality olive oil seeds of 1 pomegranate salt and freshly ground black pepper 2 punnets cherry tomatoes 2 Tbsp fresh basil leaves Salad dressing: 3 Tbsp sherry vinegar 1 Tbsp pomegranate molasses 1 Tbsp good-quality olive oil

METHOD Preheat oven to 180C. Place rice, sultanas, onion, stock, butter, salt and freshly ground black pepper in an oven dish. Cover with tinfoil. Bake for approximately 45 minutes,

until rice is cooked, then stir with a fork and allow to cool. Lay chicken out on a board lengthways so that the breast is on the left and the thigh is on the right. Open tenderloins up so that chicken is flat. Overlap one thigh over the other thigh so there are no gaps in the chicken. Season with salt and freshly ground black pepper. Lightly toast pine nuts by dry-roasting them in a frying pan for a few minutes, stirring regularly to avoid burning. Allow to cool slightly. Once stuffing is cool, mix in lemon zest, parsley and cooled pine nuts. Check seasoning and adjust if necessary. Spread stuffing in a horizontal log across the chicken, leaving enough space on either side to roll up. Roll up away from yourself, making sure you keep the thighs of the chicken overlapped while rolling. When complete, the seam should be on the bottom. Using cooking string, tie up each end of the chicken and then tie in the middle. Rub skin with olive oil and season with salt. Put chicken in a roasting tray and cook for 40-45 minutes until golden and the juices run clear. Allow to rest, covered, for 10 minutes before slicing. To make the salad, toss together eggplant, oregano, oil, pomegranate seeds, salt and freshly ground black pepper in a bowl. Transfer to an oven tray and roast at 180C for 15-20 minutes until golden. For the dressing, lightly whisk vinegar, pomegranate molasses and oil together. When eggplant is cooked, toss with cherry tomatoes, basil and dressing. Serve straight away with the sliced chicken. ■ From Little & Friday Every Meal, by Kim Evans and Sophie Beck.

FRESH BAY, ROSEMARY & LEMON SQUASHED POTATOES This is an impressive side dish that looks inviting and tastes great, too. Serves 6 Prep time: 25 minutes Roasting time: 40 minutes

INGREDIENTS 36 small new season potatoes (Jersey Bennies or Perlas are good) 4 small stems fresh bay (about 20 leaves) 4-6 stalks fresh rosemary grated rind & juice of 2 lemons 1 ⁄4 cup extra virgin olive oil sea salt flakes & freshly ground black pepper

METHOD

GRAPE, AVOCADO, WALNUT & FETA SALAD

A great combination of some of my favourite foods. This is a pretty salad, and looks great on a platter as part of a buffet or when you are taking a side or salad dish to a party. Serves 6 Prep time: 10 minutes

INGREDIENTS 100g packet (about 3 handfuls) fresh baby rocket handful of Italian flat-leaf parsley 2 cups seedless grapes, halved 2 firm but ripe avocados, peeled, stoned & chopped 1 cup cubed feta cheese 1 cup toasted fresh walnut halves 3 spring onions, finely sliced Dressing: 1⁄3 cup extra virgin olive oil

3 Tbsp white wine vinegar 1 Tbsp liquid honey or agave syrup sea salt & freshly ground black pepper

METHOD Rinse the rocket and parsley and spin in a salad spinner to get all the excess water off the leaves. Place the greens in a salad bowl. Add the grapes, avocado, feta, walnuts and spring onions. Whisk the dressing ingredients together in a small bowl and, just before serving, drizzle over the salad and toss to mix. The secret to a great green salad is crispness, with dressing added just before serving. To toast nuts: Heat the walnuts in a dry frying pan over a medium-high heat, stirring, for 3-5 minutes until lightly coloured, smelling really fragrant and heated through. Cool before storing in a zip-lock bag or airtight container for up to 1 week, or freeze for up to 3 months. ■ From Elbows Off the Table, Please, by Jo Seagar.

Preheat oven to 200C. Scrub the potatoes and boil them in their skins until just tender, about 15-18 minutes. Drain and cool so that they can be easily handled. Place the bay stems and rosemary stalks in a roasting pan and squash or flatten the potatoes into the leaves. Press them down so their skins split and they squish open. Whisk together the lemon rind and juice with the olive oil and drizzle over the squashed potatoes. Sprinkle generously with sea salt and freshly ground black pepper. Roast for 30-40 minutes until the leaves are scorched and the potatoes crispy golden brown. You don’t eat the leaves but their lovely flavour has been imparted to the potatoes. I often serve the potatoes on fresh cuttings of bay and rosemary for great presentation. ■ From Elbows Off the Table, Please, by Jo Seagar.

Have you heard the

rumours lately?

The Christmas trees are up and the fairy lights have been carefully placed. Two giant toy soldiers proudly guard the front of house as the talented florist works her magic in the foyer. As a visitor today, there is a peacefulness in amongst what should be a chaotic time of the year behind closed doors. The friendly staff all man their stations and confidently know what needs to be done. A’Fare is managed by these gourmet caterers who create unique menus for any event, be it a small business meeting or a lavish wedding. Owner Mandy speaks highly of her hand-selected team and makes it clear that she can’t do it alone, saying you are only as good as the staff around you. The venue stands tall over the harbour in all her picturesque glory. The dainty lady of the loop, luring locals in with her high standards, capable service and delicious meals individualised to each event over the last 33 years. People sound surprised at the news when they hear the rumours around town. Have you heard them yet? Apparently, Afare is for sale! The reality, Mandy explains, is that everything is for sale at some point and if the right offer came along she would consider it. “We have been ‘for sale’ for the last five years,” she laughs. Inside, the tables are now fully booked for the year except for two surprise spaces that have become available on December 3rd and December 9th due to cancellations but get in quick! Afare is open to out-catering bookings for the holiday period and catering treats of all sorts including hams, Christmas puddings and cheesecakes for your Christmas feast. Imagine crossing that off your to- do list this year and surprising your guests at your special family dinner. Weddings are Afare’s speciality and bookings are already filling up for 2017. Dare to be bold If you’re after living spaces that are

up to date, but don’t want to drown in a sea of Scandi-inspired white, there are plenty of other ways to go. It doesn’t necessarily mean you’ll be painting your walls in savage red or goodness-me purple.

W

e’re not knocking white. It’s an amazingly versatile colour that runs the gamut from edgy icy whites and cool alabasters to aged ivories and rich creams. If that sea of Scandi still appeals, then check out the Resene Whites & Neutrals collection of paint colours to see just how many ‘whites’ there are. White can also be the anchor colour to a bold scheme. In fact, if you have a bold or brightly coloured feature wall, for example, painting the other walls in offwhite will help accentuate the drama of the feature wall. Which leads us to one of the simpler and less anxious ways of giving a boring living area a bolder look. Feature walls. These decorative devises have been popular for many years and have become a mainstay of our interiors. Feature walls are amazingly versatile, can be used in many rooms, and are particularly good at providing some visual relief in open-plan living spaces. The move towards more open-plan living spaces has led to a colour calamity – where do you end one colour and start another? Unfortunately the answer for many has just been to paint everything the same colour. Which can be awfully boring. But a feature wall allows you to overcome this issue and add interest at the same time. Feature walls are great for defining specific areas within an open-plan space, for example, behind the dining area to frame the table and chairs. Try them also on a fireplace wall, in the kitchen, or at the back of a living space. A feature wall can be painted a bold colour, or you can use a striking wallpaper – check out the wallpaper options available at your local Resene ColorShop. Or if you’re artistically inclined you can create your own mural or geometric masterpiece with a few Resene testpots and some masking tape. Don’t limit yourself to using just a plain wall as a feature wall. You might choose a wall that’s punctuated with windows or doors instead. In many modern homes or renovations, large windows and sliding doors are a feature of the living spaces. If you’re keen on a bold colour for all of your walls but feel a bit nervous, remind yourself that you often won’t end up with four full-on walls of colour. Once you take away the glazed areas, and the kitchen cabinets, and know that curtains, furniture and art will hide more walls space, you

may find there’s not that much walls space left, and that it will be nicely broken up and interspersed with other elements. If you’re unsure of diving into a bold colour for your walls, add accessories like rugs, cushions and lamps, in the colour instead. These are more easily changed if and when you tire of the colour. Opt for over-sized accessories to add drama – a large

mirror or artwork leant against a wall, a big squishy statement sofa, striking light fittings or a heavily textured rug. If your home has high ceilings, a full wall of a dark or bold colour may be overpowering. Instead, use the visual trick of bringing the pale ceiling colour down the walls for about 50cm.

Top tips for bolder living rooms:

• Use the opposite of white – black, or a deep charcoal or an inky blue, such as Resene Indian Ink. These colours are as restful and versatile as white but will instantly transform your room into a more dramatic space. Contrary to popular belief, dark walls don’t necessarily make a space look smaller, especially if they are a cooltoned colour. They will recede from the eye instead. • A bold look isn’t necessarily about wall colour. If you’re sticking with a fairly neutral scheme, use over-sized furniture and lots of texture (worn leather, a knobbly rug, lambs-wool cushions or gleaming copper accessories) to enliven the space. • If you’re opting for a feature wallpaper, choose it first, then pull colours from within it to paint your other walls. Staff at your local Resene ColorShop can help with this. Paint colour is infinitely flexible whereas elements like wallpaper and upholstery or curtaining fabric isn’t. • If you’re using a strong bright colour for the walls, make sure you carefully consider the paint colour that you’ll use on the skirting, architraves, ceiling and doors. A bright white will make the bright colour look garish, whereas a cooler or warmer white may make the brighter colour feel more integrated. Try out the scheme by using Resene testpots of both the wall colour and the trim colour. • Know that ‘muddied’colours are easier to live than clear, bright colours. So try a duck egg blue, such as Resene Duck Egg Blue, instead of a true blue, or a gentle greygreen instead of grass green.

GARDENING

Your own slice of paradise! BY ISABEL KRAUSS

W

ere you as inspired by the beautiful gardens at the Whangarei Garden Discovery last weekend as I was? I was amazed by the variety and beauty of the gardens displayed – and in awe of those people who created their own little paradise! Of course, many of these gardens have slowly evolved over years and no doubt required a lot of work and effort from their passionate owners! However, you can save yourself some precious time if you think about the layout and plant selection before going ahead and planting out your garden.

It’s getting to the tail end of the planting season now, but it’s never too late to think about the next steps! Clever planting design doesn’t only require knowledge about your section or piece of land, plant knowledge will help you determine which plants will thrive in your place – and if you want a low maintenance garden it’s much better to work with the conditions rather than against them. Mix that with a bit of creativity regarding the layout of your planting and you have got a good recipe for a great garden. A damp patch in your garden can be turned into a beautiful wetland oasis and a shady spot could be the perfect place for a lush subtropical garden! Be inspired by what you can do rather than dwelling on the things you can’t. At Alter-Natives, we can help you to get started, from a quick site visit to discuss your site and plant options, right through to drawing up a detailed landscape plan. That does not only have to include plants – it can also include details of decks and pathways and will be made to suit your requirements and vision.

recently completed a number of projects including concept plans, implementing landscape plantings and advising clients on plants for their section. Whether it is a small or a large section – he will help you create the outdoor space you want.

he Mazda 3 is one of New Zealand’s most popular compact models. Unpredictable spring weather can throw up unusual opportunities to test new cars in unexpectedly extreme conditions. The latest version of the Mazda 3 proved up to the challenge. As one of the country’s most popular compact models, the current Mazda 3 is well established, and a frequent sight on our roads. The latest updates involve exterior refinements, with definite improvements at the front of the car, and similarly minor enhancements inside. But the most noticeable and significant improvements are underneath, delivering much better ride and handling. Mazda has developed a new way of integrating the powertrain and chassis, aiming to improve the driving dynamics. Like its competitors, Mazda has felt compelled to give it a name, GVC, which is G (for g-force) Vectoring Control. Not that the Mazda 3 was any slouch before, but the new set-up provides an assured, agile and confidence-inducing ride – even in extreme wet, windy and stormy conditions. A peak-hour journey across the Auckland Harbour Bridge and on to the Northern Motorway during weather-warning-level cross-winds and driving rain, could have become a harrowing experience in some cars. But the Mazda ploughed on through with confidence and assurance. The steering is firm with enough feel to reassure the driver he

is in control no matter the weather. The cockpit wraps around the driver and the front of the cabin feels much roomier than many other popular compact competitors. This is partly because the traditional hand brake has been replaced by an electronic button between the two front seats. We tested the top-of-the-range SP 25 Limited model, which retails at $47,495. For that you get leather seats, an electronic sun roof, and a raft of other driver assistance and safety technology. There is a small screen that pops up on the dashboard immediately in front of the driver, which in turn projects a headsup display of the speed limit on to the windscreen. Whereas most companies call these systems heads-up displays, Mazda describes its system as Active Drive Display. The Limited also has Blind Spot Monitoring and a raft of other driver assist and safety features such as lane keep assist, traffic sign recognition and driver attention alerts. Apart from the improved handling, probably the most useful innovation is the easy-to-use adaptive cruise control, which can maintain a set distance between you and the vehicle in front, no matter how fast or slow it travels. It is simple to engage by buttons on the steering wheel and quickly gains driver confidence. The Mazda 3 continues to be powered by either a 2-litre or a 2.5 litre engine. The SP 25 Limited tested is fitted with the latter engine, which delivers 138 kW of power and 250Nm of torque.

“It is hard to credit the current shape of the Mazda 3 has been in our market for years, and yet it remains one of the best looking of the compact models on the market.”

It has a distinct sound but delivers satisfyingly brisk acceleration. It is hard to credit the current shape of the Mazda 3 has been in our market for years, and yet it remains one of the bestlooking of the compact models on the market. Car spotters will have to look closely at the latest version to identify the various models in the range, because Mazda has adopted a minimal badging regime – the SP25 Limited has larger wheels and smarter alloys than cheaper models, as well as different badging on the grille to house some of the technical wizardry on board. Little else distinguishes it from the three lesser models in the range — but new owners will appreciate the raft of features they get for paying the $14,700 over and above the base model as soon as they drive their car. If your wheels are under review right now, this is perfect for your Christmas wish list.

Welcome To Cosy Cosmos SUZA SCHIELE 12 December 2016 – 19 Feburary 2017 Whangarei Art Museum – Te Manawa Toi is pleased to present ‘Welcome to Cosy

nspired by idiosyncratic microbiological research and the “pagan, colourful optimism” of Modern Art, her paintings and mixed media sculptures evolved from spontaneous chance creation. Exhibited together, they form a wunderkammer with a collection of subjective images and objects hovering between microbiology, science fiction and art history. “Looking at life in a drop of pond water I saw something - a fleeting glimpse, a transient clue - then it was gone. Ever since I have been attempting to make this encounter palpable…It’s those first glances that entice to take a closer look, those first moments of ‘seeing’, when reality and imagination have not yet separated and everything is possible, that are most magic and motivating ...” ‘Welcome to Cosy Cosmos’ might be regarded as a microcosmic memory theatre, evoking internal seeing and unexpected feeling, a sensual space inviting discovery, reflection and creation, ultimately embarking on a playful journey delving into one’s own imaginative spaces. Suza Schiele was born in Germany and grew up in Turkey where her parents

where employed by the German Institute of Archaeology. She lived and worked in Europe as an Interior Designer before she came to New Zealand in 1992. After raising a family, Suza enrolled at Elam School of Fine Arts, The University of Auckland, studying under artists such as Derrick Cherrie and Michael Parekowhai. During her studies she received ‘The University of Auckland Masters/Honours Scholarship (2001)’ and the ‘Scott Ellery Medal’. She graduated with a BFA in 2001 and a Master of Fine Arts in 2003. The exhibition includes a community collaborative project in which viewers are invited to contribute to the expansion of a large mural. Participants will contribute by creating spontaneous drawings and incorporate them onto a large black Velcro canvas which will develop throughout the duration of the exhibition. The work aims to engage a diverse range of people including those who seldom visit a museum to come in an express themselves creatively. Whangarei Art Museum will be closed Christmas Day and Boxing day and will reopen on the 27th December 10am – 4pm.

Kids vs Carpet

DIANNE HARRIS is a budget advisor for the Anglican Centre

I

t’s incredibly easy to overspend at Christmas. This time of year we start to plan what and who we are buying for (or do we?). The decisions we make are often made because we get caught up in the hype of Christmas and don’t really think about the long term effect this will have on our budget for the rest of the year. Once again, I encourage you to not find yourself getting into more debt, when you don’t actually have to. Give yourself the chance to relax and enjoy Christmas for what it really is all about! Enjoy spending time with your family and friends. Thanks again for the opportunity to share with you over this year, from us all at the Anglican Care Centre we wish you all a blessed Christmas.

If you’ve had a child, you’re probably ruined in some way. Maybe you’re financially ruined because daycare is costing you triple digits

Carpet stains suck, and trying to get your kids to clean their own carpet stains is basically and invitation for them to ruin the carpet even

more. Here are a few tips about how to protect that most irreplaceable, valuable, beloved asset in

which you feel compelled to eat because every box costs $7 and each time your child leaves a half-eaten bowl they’re wasting $1.50. Maybe what’s ruined is your chance of ever having sex with anyone but your wife again. Something that’s undoubtedly ruined is your carpet. Perhaps your children have tracked a trail of mud inside because they’ve spent their entire lives barefoot. Perhaps your carpet has coffee stains from where you’ve spilled your coffee at 6.01am, tripping over McDonald’s Happy Meal toy that wasn’t even worth bringing home in the first place, all so you could get to your crying child and coddle them and assure them there are no monsters in the closet (although to be honest, you’re afraid to check ‘cause you saw some M. She may be partial to a frilly dress

L

ooking at this picture, I vividly remember her older sister at this age. Christmas is just around the corner and so are the present orders. No longer can we get away with a frilly dress or a sack full of dollies and puzzles, the bar has been raised. Not ones to be sucked in by high ticket items nor iPad’s for our tween generation, we try to keep the focus on giving and of course Santa for the younger two, he is the one who delivers the smaller gifts these days. One from Saint Nicholas, one from the parents, usually a sack full of things they need for the new year at the end of their bed and the rest are from various family members and friends.

Miss Two will know not much better this year. Dazzled by the shiny lights, I imagine, open platters of food and a late nap time. I’m sure that unwrapping the paper will be the highlight of her day as well as being around family. She may be partial to a frilly dress. Santa may or may not make his annual snowy foot presence throughout the house and this year, we had better remember to leave him a cookie and milk (or a beer, as he wasn’t too impressed to have missed this last year. Mornings are made up of the pitter patter of different sized feet, some not so little now but still as excited. Squeals of delight and “I told you sos”, before the squabbling begins.

C

Squishy hugs in the bed and a late breakfast, followed by pleas to open presents arranged under the tree the night before. Our eldest is Santa savvy this year, so she steps up to the role of his little helper. Her role is to keep the magic alive for the others as she knowingly smiles as she enjoys planning the surprises with the adults. My bet is that we have one more year of magic with Mister middle child and then the focus will be shifted to Miss Two, with years of excitement ahead to share and re-live the magic through her eyes. Thank goodness we still have years of young magic to sweep through the house, it will be a sad day when it’s all gone. www.likedmedia.co.nz
