Joanna Radford is the Commercial and Consumer Horticulture Agent for the NC Cooperative Extension in Surry County with expertise in entomology, gardening, and pesticide education. She began her career with NC Cooperative Ex tension in Stokes County in 1995 as a 4-H Agent, later switching to Field Crops and Pesticide Educa tion in Surry County. In 2012, she assumed the role of Horticulture Agent for Surry County. She lives on a farm with her husband and two teenage daughters.

Carmen Long Carmen is an NC Cooperative Extension Agent for Family and Consumer Sciences. Making quick, easy, healthy food that tastes great on a budget is a challenge. Carmen and her husband have two grown children, both of whom were involved in sports from grade school thru college. With busy careers and lots of time at sporting events, coming up with quick, healthy meals was a necessity. Carmen shares ideas and recipes to make this tough job a bit easier.

Sarah Southard Sarah grew up at Crooked Oak in the Pine Ridge community of Surry County. Raised in the agriculture world, she went on to earn degrees in animal science and veterinary medicine from North Carolina State University. She and her husband, Adam, currently live in Statesville with Oliver the house rabbit, a few cats, Blossom the donkey, and a flock of Katahdin hair sheep.

Gloria Brown Gloria is co-owner of The Nest & Hive Shoppe, a home décor business in Fancy Gap, VA, as well as the former host of The Vintage Southern Homemaker television show. Her musings on life growing up and living in the South have appeared in publications and on TV throughout the region. She is an expert antiques collector who grew up in the business and worked many years as a dealer in the Yadkin Valley area, where she currently resides.

Rynn is a writer and designer based in the Yadkin Valley region of North Carolina. She loves to share her ideas for adding simple beauty into hectic lifestyles. Martha Bassett Martha is a singer/songwriter/guitarist living and working in the Piedmont. She hosts The Martha Bassett Show, a twicemonthly musical variety show at Elkin’s Reeves Theater. On Wednesday nights she leads music at Roots Revival, an Americana worship service at Winston’s Centenary UMC that explores the intersection of faith and secular music. Old is relative. When I was a small boy, I thought teenagers were old and all grown up and I wanted to be like them. Then as a teenager, I dreamed of the day when I was old enough to do whatever I wanted, no restrictions! That day came and went, and pretty soon I started to look forward to the day when I was older, wiser, and maybe wouldn’t do stupid stuff so frequently. Now I am at that longed-for age, and I still do stupid stuff pretty regularly. When is old enough really old enough? And when does that promised wisdom from old age kick in? Do things really get better with age? Maybe the answer to that question is relative also. Certainly, some things appear to get better with age: classic cars, fine wine, famous autographs, trading cards, cheddar cheese, cast iron skillets, leather, fishing stories, and maybe technology. But what about us? I do think we can get better as we age, but often it will take strong effort, a few good choices, and something else I’ll touch on later. There are traits we can work hard to develop that allow us to age more gracefully. Character and relationship items like selfconfidence, anxiety, happiness, empathy, friendships, family relationships, communication, and even decision-making skills can improve as we get older just to name a few. And who doesn’t want those things to improve? For my church, I recently underwent a well-known marriage counseling training program. One of the key questions the facilitator-to-be (me) was asked, “What communication skills would you like to improve?” I was given a list of ten possible answers to prioritize and then my top three were shown back to me. I chose these three: 1) Reserving opinion until the right time; 2) Coming across as personally warm; and 3) expressing more genuine interest. All good things and to be desired certainly, but changes like that don’t just happen because we desire them – changing ourselves is hard!

Max Lucado states, when referring to a person’s advancing age in his book, He Still Moves Stones, that “You can take the safe route, or you can hear the voice of God’s adventure. Follow God’s impulses. Adopt the child. Move overseas. Teach the class. Change careers. Make a difference. Your last chapters can be your best chapters. God’s oldest have always been among his choicest.”

I believe those words, “God’s oldest…” from the last sentence in that quote hold the key to transformation. Maybe even the one word, “God’s.” To age well as a person, we must start there. Are you God’s own? Does he own your heart? If not, it’s never too late. My aging father was a stubborn old man, and he was determined to do nearly everything on his own, seldom asking for help and almost always refusing charity (at our family’s expense). As a man with a physical handicap, he didn’t want to appear needy. He swore he had things under control and when it was obvious he didn’t, well he swore some then too. He finally realized though, as we lay my sister in her grave at only forty-three years old, that we folks really have little control over our circumstances and the storms that life throws at us. The best that we can do is trust God which he came to do that very day. He gave his heart to the Lord at the ripe old age of 72. See, you’re never too old to age better. But that best first step is to stop going it alone and let the one who’s always been there set your feet in the right direction on the right path. Then the next step you take can be the first step towards a new, better life. Trust in the new King of your life and then, old age be #$%*!

An example of monoculture would be the Irish Potato Famine in 1845. This occurred because there was one potato variety grown, the Irish Lumper. It became infected with a fungus, Phytophthora infestans, aka potato blight, which destroyed all the potatoes in Ireland. One million people died from starvation and another one million people fled the country. One of the biggest advantages of saved seed is that it saves money. Heirloom seed, which are open-pollinated, are good for saving. Some of these are available in stores or catalogs and are labeled as Heirloom. However, many more are available from generations who have saved the seed throughout the years. Not all seed can be saved. There are numerous hybrid seed available on the market. These are not reliable for saving. They are bred for specific characteristics by crossing two varieties. They germinate but they do not produce offspring true to the parents. The results of these saved seed may not have desirable characteristics in taste, color, size, etc. This time of year is an ideal time to begin saving seed.

Fast forward to 1784. David Landreth started the first seed company in none other than Philadelphia. Thirty-six years later he introduced the tomato to America. By 1820 local seed companies were booming. In 1854, the US Patent and Trade Office (PTO), Agriculture Division, collected, propagated, and distributed seed varieties for free to farmers. How we wish we could go back to this! 2.4 million packets were distributed in 1861. Abraham Lincoln then created the United States Department of Agriculture (USDA) in 1862. By 1897, the USDA distributed 1.1 billion free seed packets Seedannually.were valuable then and they are valuable now. A renewed interest in gardening has occurred over the past several years. With this interest, has come the desire to save seed. So, what is seed saving? Seed saving is the practice of saving seed or other reproductive material from vegetables, grain, herbs, and flowers for use from year to year for annuals and nuts, tree fruits, and berries for perennials and trees. Did you know there is a national and global seed preserve? The National Center for Genetic Resources Preservation, USDA, located in Fort Collins, Colorado, maintains United States seed collections. And Norway is home of the largest seed collection in the world. The Svalbard Global Seed Vault holds 880,000. There are advantages of saving seed. Saved seed preserves heirloom varieties. The Moon and Stars watermelon variety was introduced in 1926 and almost lost throughout the years. Through saved seed methods, it was re-released in 1981. Other heirloom varieties saved over time have included Martynia (common in Cajun cooking), Burr Gherkins (a wacky cucumber relative), Cherokee Popcorn and Abraham Lincoln Tomato. Saving seed encourages genetic diversity. More variation means greater adaptability and selective breeding lends to monoculture.

Saving seed is no new idea. Let’s look at seed saving history. During the colonial era, there were no seed saving companies around and people had to find ways to feed themselves. Immigrants coming to American were encouraged to bring seed from their old countries. This was not only for their own gardens but also for exchange with Native Americans.

Wait until the petals fall off and the seed head or pod is exposed to collect the seed. The seed will need to dry and may take several weeks depending on the seed and weather conditions. Other seed may be intolerant of drying or desiccation. These seed include large-seeded plants such as mango and avocado. The best time to collect vegetable seed varies from plant to plant. Some seed, like melons, are ready to harvest when the fruit is ready to eat. Other vegetable seed, like squash and cucumbers, should be left on the vine after you would normally eat them. Seed must be cleaned and must ferment before saving to remove germinationinhibiting substances (tomato and Malabar spinach). Seed storage is important. Cool, dark, and dry locations such as closet and cupboards are good while storing in airtight containers in the refrigerator is better. The best storage is at a temperature several degrees below freezing, which can be challenging. It is also bests to dry the seed to 5-7 percent moisture content by weight. The length of time seed can be stored varies between seed and storage environment. Corn, lettuce, onion, parsley, and parsnip seed are noted for a shorter shelf life of 1-2 years. Whereas the longevity of vegetable seed such as Brussel sprouts, cabbage, cauliflower, celery, cucumber, melon, spinach., squash, and turnips can be five or more years. There is definitely an art to saving seed. If you would like to learn more about saving seed, contact NC Cooperative Extension. What’s an antique? It really depends on what category of things we’re talking about. The Antique Automobile Club of America considers a car that is 25 or more years old an antique. When discussing paintings, glassware, furniture, farm tools, or veterinary instruments it's likely that a much longer lifespan is required to be classified as a true antique. But if we’re talking about animals, the age for “antique,” or more diplomatically geriatric, designation varies depending on both the species and breed considered. Many species of birds, particularly large breed birds, routinely outlive their owners with average lifespans of 70-100 years. When I purchased Blossom my donkey when she was a 6-week old foal and I a 16-year-old high school kid, I knew that I was making a 30-40 year commitment to her if she lived an average donkey life. Similarly horses tend to live 20-30 years on average. Dogs and cats have quite varying average lifespans from about 7 years for some giant breed dogs up to about 20 years for small breed dogs and cats. So how do we determine an animal is in its geriatric years? How do their husbandry and medical needs change in this late stage of life? Generally we consider animals to be geriatric when they have lived 75-80% of the expected lifespan for their species and breed. With this in mind, a giant breed dog less than 6 years old would be considered geriatric even though 6 years sounds young by our human standard. Conversely some birds may be 60-80 years old before they are considered “old.” At 21 years old this past May, Blossom is very nearly a geriatric donkey. Older animals can experience many of the same age-related changes and increased disease risks that older people do. Hearing and vision deficits develop. Animals have more difficulty with mobility as joints deteriorate and arthritis develops. Various internal organs can become less efficient in their functions. Issues like cancer and heart, liver, or kidney disease are more common. Cognitive impairments may develop as well.

Joe was raised in Winston-Salem by a father who built pipe organs and a mother who was an organist and choir director. He taught himself to play fiddle in the early 1970s and soon developed an interest in building instruments. He apprenticed with local luthier David Sturgill before attending the Newark School of Violin Making in Newark-On-Trent, England, where he studied from 1976-79. After graduating, he returned to Winston-Salem and opened a violin shop – making, repairing, and restoring violins, violas, and cellos.

In the meantime, Joe Thrift was playing with all the greats of North Carolina old-time music, including the legendary fiddler Tommy Jarrell from just outside Mount Airy. He’s played with many bands, including Too Wet to Plow (with Rich Hartness), the Red Hots (with Hartness, Tom Riccio, and Riley Baugus), Man Alive (with Bill and Nancy Sluys, and David Long), and jimmyjohnnyjoe (with Mark Olitsky, Jason Sypher, and Debra Clifford). He even spent time in 1990s playing keyboards for the nationally-touring jam band Donna the Buffalo. Joe eventually moved his shop to Elkin and continues to build instruments, teach violin making, and play music with a wide array of players. Now that you know these things about Joe, I invite you to listen to his brand new record called Joe Thrift - One More. All 16 tracks were written or co-written by Joe and every track stays true to his aesthetic of hard driving fiddling and simple accompaniment of guitar, banjo, and bass. When fiddler Gina Dilg locks in with Joe, the groove is so strong, I dare you to sit still. The record features world class talent. Gina and Jason Dilg (on fiddle and banjo) made their way to Southwest Virginia by way of Colorado and have graced our stage with Joe before as part of the Yeehaw Ramblers. A cameo from local upright bassist Tammy Sawyer and guitarist David Sawyer brightens a lively fiddle tune called “Tiv’s Tune.” The rest of the record is filled out by some fine picking friends of Joe’s, including Mark Olitsky on banjo, bassist and engineer Joe DeJarnette on guitar, and two-time IBMA Bassist of the Year Mark Schatz. In the liner notes, Joe thanks his partner of 39 years, folk artist Tory Casey, for supporting his music habit.

One of the best craftsmen around is Jeff Boles of Jeff’s Paint and Body in Pilot Mountain. Jeff took time out of his busy day to tell me about his passion for “turning junk into something beautiful.”

Back when he was a fifteen-year-old kid who loved a “shiny exterior” on a vehicle, Jeff bought a 1969 Camaro in need of bodywork. That early project led to a job in his uncle Tom Boles’ body shop for six years until Jeff went out on his own with his uncle’s blessing, working out of a basement shop part-time.

For twenty-six years, he taught in the auto body program at Surry Community College while restoring cars in the evenings. Jeff spoke with satisfaction of the legacy he has left by teaching the skills needed for auto repair and restoration, and thus helping the next generation of shop owners begin a rewarding career.

The same is true of his crew, whom he credits with doing beautiful work. Let’s take a look at a few of his projects and the awards those automobiles have won. He had the privilege of restoring a dream car for a client: a very rare 1934 Ford three-window coupe. In addition, Jeff’s personal dream car is a 1933 three-window Ford which earned a Top 25 Shades of the Past slot. He has won a Top 10 Builder’s Choice Award at the Charlotte Motor Speedway, as well as the Run for the Son car show and Hottest Hot Rod in OneCharlotte.ofhis restorations, a pretty, red 1967 Camaro owned by a woman in Raleigh, is a three-time Top Ten winner of the Goodguys Rod & Custom Association, as well as Ladies in Sport winner at the 2016 North Carolina Goodguys Nationals. The Camaro has also been featured in magazines.

When you think about antiques, what comes to mind? Whether it’s furniture, tools, dolls, toys, signs, glassware, memorabilia, or firearms, all are worthy of our curiosity and interest. If you enjoy rambling through dusty shops in search of your perfect “find,” then you are, no doubt, better informed on antiques than I am. May I tell you what fascinates me? Vintage automobiles. Yep, old cars and the craftsmen who make them shiny.

In fact, Jeff’s office walls hang full of framed magazine layouts featuring automobiles he has restored. The list is long: Classic Trucks Magazine, Street Scene, Goodguys Gazette, Street Rodder, All Chevy Magazine, Hemmings Classic Car—and more I’m sure I Possiblymissed.the

With a grin, Jeff told me that his wife says he “bleeds car oil” because he thinks and dreams automobiles. He sees his work as a necessary occupation and feels honored when a client trusts him with a treasured project. He described the process as sometimes taking recycled junk and “rubbing it until it’s pretty.” By the time a beautifully restored vehicle goes out the door, he’s “put his heart into it.”

With only seventeen ever built and only a few still known to exist, it “may be the most collectible American car of its time,” according to the May 2020 issue of Hemmings Classic Car. I love to modernize antique and vintage recipes from old recipe books. For a recipe to be considered antique, it must be at least 100 years old, while vintage recipes must be at least 20 years old. Take the case of the Texas Sheet Cake. No one knows where this chocolate sheet cake originated or how it got its name. Similar recipes have been published in Texas newspapers dating back to 1936 but have also appeared in newspapers outside of Texas. According to Southern Living, a cake recipe published in 1957 in a Dallas newspaper might have given the cake its name. The recipe included chocolate, buttermilk, and pecans, and was popular, spreading across Texas and the South, becoming a staple at funerals because it could feed a crowd.

There is also speculation that this cake got its name because, just like the state of Texas, it is extra-large, therefore a Texassized cake. Or did it get its name because of the pecans in the frosting, which are so plentiful in Texas? There are plenty of guesses, but no one seems to know the true origins of this cake.

TEXAS SHEET CAKE 4-inch squares Time: 15 minutes Time: 22 minutes 18 x 13-inch jelly roll (2 cup buttermilk teaspoon baking teaspoon vanilla large eggs, lightly beaten cup (2 sticks) unsweetened pinch salt tablespoons half and half (or whole milk) teaspoon vanilla cups powdered sugar cup pecans, chopped Preheat the oven to 325 degrees F. Spray the pan with cooking spray. Add the flour, granulated sugar, and salt to a large mixing bowl; set aside. Use a medium-sized saucepan to heat the butter, water, and cocoa until it boils. Then remove it from the heat and pour it over the dry ingredients in the bowl. Stir until the mixture is well-mixed. Add the buttermilk, baking soda, vanilla, and eggs. Stir until blended well. Pour the mixture into the prepared pan.

If you asked my children their favorite things about my career with Cooperative Extension, embryology would likely top the list. Each year, our 4-H hatched eggs in an incubator for children to experience a chicken’s life cycle. It was exciting to watch the baby chicks peck their way out of a shell and go from a skinny, damp, little bird to a fluffy ball of soft yellow feathers. For children who did not grow up on a farm, this was such a valuable experience. My kids had the added benefit of visiting the office after hours to see and hold the new baby chicks while making sure they had plenty of food and water. Hearing the sweet chirps of a box of chicks brings back found memories.

• Never choose meat or poultry in packaging that is torn or leaking.

• Freeze uncooked chicken if it is not to be used before the expiration date.

• If properly packaged, frozen chicken will maintain top quality in a home freezer for up to 1 year.

• Chicken may be safely thawed in cold water. Place chicken in its original wrap or water-tight plastic bag in cold water. Change water often. It takes about 2 hours to thaw a whole chicken. Cook immediately after thawing.

• Packaged fresh chicken may be refrigerated in original wrappings on a plate or pan on the bottom shelf of the refrigerator. You don’t want any juices to drip down on other foods in your refrigerator.

• Do not buy food past "Sell-By," "Use-By," or other expiration dates.

• Sanitize cutting boards by using a solution of 1 tablespoon of unscented, liquid chlorine bleach in 1 gallon of water.

• Select your nonperishables before placing refrigerated or frozen items in your grocery cart.

• Thaw chicken in the refrigerator – not on the countertop. It takes about 24 hours to thaw a 4-pound chicken in the refrigerator. Cut-up parts, 3 to 9 hours.

• Always wash hands, counter tops, cutting boards, knives and other utensils used in preparing raw chicken with hot, soapy water before they come in contact with other raw or cooked foods.
