RECIPES SLOW-COOKED LAMB SHOULDER Serves 6 J 2.5kg of Welsh lamb shoulder J 300ml chicken stock J Lemon, juiced and zested J 1 leek, finely chopped J 300ml red wine J 2 bay leaves J 10 peeled garlic cloves J 400g tin chopped tomatoes J 2 onions, finely chopped J 3 carrots, finely chopped J 3 400g tins butter beans J 3 sprigs thyme J 3 sprigs rosemary J 1 bunch parsley, finely chopped

EGGS “EN COCOTTE” Serves 6 J 6 free-range eggs J 150g good quality sliced ham J 100 mls double cream J Sea salt J Rapeseed oil J Black pepper First things first: you’ll need a large, deep roasting dish for this recipe, deep enough to half fill with boiled water. You have to place the six ramekins into the water or the mixture will catch and burn. Turn the oven up to 180˚C and make sure there’s space in there. Place six ramekins into the roasting dish and grease them with a little butter. Chop up the sliced ham and place some in each ramekin. Crack an egg into each one, then sprinkle in some salt. Pour in the cream

Pre-heat the oven to 150˚C. Rub the lamb shoulder all over with the lemon juice then season with salt and pepper. Slice three garlic cloves into slices, make about 12 incisions in the lamb and press the garlic into each cut. Place a large roasting tin on the hob and heat up some olive oil. Put the lamb in skin-side down and brown it for about seven minutes each side. Then take the lamb out and keep on a board. Add the leeks, onions, garlic, carrots and bay leaves in to the roasting tin with the rosemary and thyme. Cook them in the oil for about five minutes or until the onions become golden brown. Stir in the tomatoes, red wine and chicken stock. Bring that to a simmer and cook away for about five minutes. Place the lamb on top, skin-side down. Cover everything securely with tin foil so that it’s air-tight, then put it in the oven for two hours. Once you’ve got back from your Easter egg hunt, take out the roasting dish. Drain the butter beans and stir them in. Turn the lamb over so that it’s now skin side up. Add a little boiling water at this stage if the mix is looking a little dry. Wrap the foil back over the lamb and put it back in the oven for another two hours.

Behind the scenes in the search for new wines A large number of the conversations we have with customers is how difficult they find it to choose wines from those on offer on the shelves. I thought I would put a little bit of insight into those we have, and how we choose new wines for you. At any given point in time we have approximately 500 different wines on display in the shop (at Christmas this can be more as we utilise lots of space that we don’t usually use to display). That’s a lot right? Well our stocklist is currently sitting at around 1,500 wines. So, to choose that 500, we choose from that 1,500 – that in itself is a difficult choice. But that 1,500 is always growing. Often our suppliers will drop by, either alone or with a producer and bring wines to taste. Somewhere between eight and 12 is fairly average. If we like them, they get added to the list. If not, they pass us by. But another method is more intensive, that is trade tastings. The whole team (minus Blu) attended one recently in Manchester. Rydal Penrhos announces improvement plans

Rydal Penrhos has announced exciting plans to significantly develop all areas of the school with substantial investment. The school’s Governing Body announced proposals which include A high-profile Crime Scene Day learning simulation has been held for the second time at Wrexham Glyndwr University – drawing together students and lecturers from across the institution. This year’s day followed a successful similar event in 2019 and saw a team of Theatre, Television and Performance students simulate an altercation at a badminton game played by Sports students in the university’s sports hall. The altercation, witnessed by Psychology and Criminology students, quickly progressed in seriousness, with an onlooker apparently attacked with a mystery liquid – and a person abducted. “The idea behind our annual Crime Scene Day is that it gives students across a range of our courses the chance to test their skills in a fast-paced, realistic environment – with many getting the chance to collaborate with professionals in the careers corresponding to their degree,” said policing lecturer Andrew Crawford. “We are very grateful to North Wales Police and the Welsh Ambulance Service for helping us. One of my favourite beasties flies in April, showing off the patterned wings that provide its name: Dark-edged Bee Fly. It’s a plump, yellow-haired insect that looks like a bumblebee that uses it long straight proboscis to suck nectar from spring flowers. It even produces a high-pitched buzzing sound, but it’s completely harmless with no sting or bite. The female uses her spindly legs to flick her eggs into the entrance hole of the nests of solitary bees, where they will develop as parasites, feeding on the grubs of the bees.
