Plus,
Welcome to February – the month of love! Of course, one of the most popular ways to spend an evening with your loved one is to go for a romantic meal. We have no less than five fantastic restaurants featured in this issue – The Savvy Fox in Wrexham, The Peppermill in Conwy, Catch 22 on Anglesey, Foxglove in Barmouth and Number 25 Bar & Bistro in Rhos-on-Sea – that have been picked to provide you with some delicious dining inspiration, whatever day of the year it is.
Another way to celebrate Valentines Day is to have a cosy night in at home. Also in our food and drink section you’ll find a fabulous recipe, some great wine recommendations and a step-by-step guide on how to make a magnificent Margarita (the cocktail, not the pizza!) – all of which are the essential ingredients to the ultimate romantic night in.
February is also half term, meaning that you need to entertain the kids in what is likely to be disappointing weather. We
have some great ideas for family days out on page 31 and, as always, our What’s On? section is full of the best events taking place throughout North Wales this month.
However you spend your month I wish you all the very best – especially knowing that spring is now just around the corner…

Swallow Falls is among the most visited of Snowdonia’s tourist attractions and is easily accessed for a small fee via a turnstile. It is located two miles west of Betws-y-Coed on the river Llugwy and, although it is in reality a series of cascades, it is still classed as the longest continuous waterfall in Wales. Steps lead steeply down to viewing platforms and there are safety rails in place. It is possible to get right below the lower end of the falls and, if there is a lot of water running, the noise can be deafening – in a most impressive way…

Chirk Castle and Garden, Wrexham
The award-winning garden at Chirk Castle is home to one of the finest snowdrop displays in Wales. Find the most spectacular show in the Pleasure Ground Wood where two acres of snowdrops create a dazzling display in February. Follow the peaceful paths that weave through a vast sea of nodding white petals and vibrant green leaves. In the castle’s gardens, catch glimpses of the delicate blooms scattered between the clipped yew hedges, herbaceous borders, shrub and rock gardens.
Bodnant Garden, Conwy
The first welcome sight of snowdrops can be seen in the Winter Garden from the beginning of January. By the end of February, a carpet of thousands of snowdrops has spread across the Old Park.
Thanks to an annual tradition where visitors, volunteers and
gardeners plant thousands of new bulbs, this snowdrop display grows more spectacular each year. Join in with the annual event during February half-term on special days between 15th February and 2nd March.
From the gate by the Winter Garden and into the Old Park, follow the popular snowdrop trail to spot many different native varieties and see the best of the displays from Old Park down to the Yew Dell, and along to the Far End area of the garden.
Erddig, Wrexham

Other clusters of the little pearl-white flowers can be seen popping up in the tea garden, along the Moss Walk, in the Rose Garden and woodlands. Don’t forget to look carefully for the special double-headed variety which is a rare and beautiful treat.
Plas yn Rhiw, Pwllheli, Gwynedd
On the 8th & 9th February, Plas yn Rhiw opens for a special snowdrop weekend. These delicate white blooms, tucked among the ancient woodland and spilling across the garden, create a magical spectacle this time of year. No need to book for this event just turn up!

The Rocky Horror Show is coming to Venue Cymru next month – grab your tickets now as this is a show that’s not to be missed.
An exceptional cast – who in Llandudno will be led by Joe McFadden – will be bringing their biggest party yet to audiences on the North Wales coast.
Joe‘s set to bring his star power to the show, stepping into the spotlight as The Narrator. He’ll bring his charisma, charm and witty repartee. Brad will be played by Connor Carson, Janet by Lauren Chia, Riff Raff by Job Greuter and Magenta / Usherette by Natasha Hoeberigs. Columbia will be played by Jayme-Lee Zanoncelli, Rocky by Morgan Jackson and Eddie / Dr Scott by Edward Bullingham.
Completing the cast are Phantoms Ryan Carter-Wilson, Arthur Janes, Hollie Nelson, Erica Wild with on-stage swing Alex Hetherington and on-stage swing/dance captain Stacey Monahan.
The Rocky Horror Show defies space and time as it continues to captivate audiences around the world featuring all the outrageous characters and infectious energy that has made the show a global phenomenon for over five decades. Directed by Christopher Luscombe, the smash hit show features all the famous musical numbers which have made the Rocky Horror Show such a huge hit for 50 years and counting, including “Sweet Transvestite”, “Science Fiction/ Double Feature”, “Dammit Janet” and, of course, the timeless floor-filler, “Time Warp”.
The show tells the story of Brad and his fiancée Janet, two squeaky clean college kids who meet Dr Frank’n’Furter by chance when their car breaks down outside his house whilst on their way to visit their favourite college professor. It’s an adventure they’ll never forget, with fun, frolics, frocks and frivolity, bursting with timeless songs and outrageous outfits. The Rocky Horror Show is a guaranteed party, which famously combines science-fiction, horror, comedy and music while encouraging audience participation – meaning, of course, getting dressed-up in the most outrageous fancy dress.
The Rocky Horror Show first began life in 1973 before an audience of just 63 people in the Royal Court’s Theatre Upstairs. It was an immediate success and transferred to the Chelsea Classic Cinema, before going on to run at the Kings Road Theatre, 1973-79 and the Comedy Theatre in the West End, 1979-80. Since it first opened, the Rocky Horror Show has become the longest continuous run of a contemporary musical anywhere in the world. The show has been seen by over 30 million people worldwide in more than 30 countries and translated into 20 languages as it continues to delight audiences on its sell-out tour.
In 1975 it was transformed into a film called ‘The Rocky Horror Picture Show’. This film adaptation took over $135 million at the Box Office and is still shown in cinemas around the world more than 40 years after its premiere, making it the longest running theatrical release in cinema history. Many stars including Russell Crowe, Tim Curry, Susan Sarandon, Jerry Springer, Jason Donovan and Meatloaf have appeared in the Rocky Horror Show over the past 50 years.
Ready to thrill you with fun and naughty moments, the Rocky Horror Show is the boldest bash of them all. But be warned, this show has rude parts! n
The Rocky Horror Show is on at Venue Cymru, Llandudno from 3rd – 8th March. Tickets start from just £15
Bethany Birch visits Caernarfon, and discovers a historic castle town with a story to tell…
Caernarfon is a town of breathtaking contrasts, where mighty medieval walls meet the wild beauty of the Welsh landscape. With the mountains of Snowdonia rising dramatically in the background and sweeping views across the Menai Strait to Anglesey, this royal town offers an enviable setting that’s as inspiring as its rich history. Strolling through its narrow streets or along its waterfront, it’s easy to see why Caernarfon continues to captivate visitors from near and far.
Conveniently located just over 15 minutes from Bangor and half an hour from Conwy, Caernarfon is perfectly placed for exploring the wonders of North Wales. Its central position along the A487 makes it an ideal base for those looking to discover the region’s natural and cultural highlights, from the peaks of Snowdonia to the picturesque island of Anglesey. At the heart of the town lies its crown jewel – Caernarfon Castle. This UNESCO World Heritage Site is one of Europe’s most iconic medieval fortresses, built in the 13th Century by Edward I as both a royal palace and a military stronghold.

Its sheer scale and formidable design set it apart from other castles in Wales, while its remarkably preserved walls offer visitors a chance to walk in the footsteps of history. Inside, the Museum of the Royal Welsh Fusiliers brings the castle’s military legacy to life with engaging exhibits, chronicling the bravery and history of the regiment through the centuries.
Caernarfon’s history stretches back even further than its medieval past. On the hill above the town lie the remains of Segontium, a Roman fort built nearly 2,000 years ago. These ancient foundations tell a story of Caernarfon’s enduring significance, from its role in the Roman Empire to its prominence during Edwardian times and beyond. For history lovers, this archaeological site is a treasure trove of fascinating insights into the lives of the people who once inhabited this strategic outpost.
The town itself is a vibrant blend of old and new, with its narrow streets lined with independent shops, cosy cafés and a thriving arts scene. Doc Fictoria, the redeveloped waterside area, is home to Galeri, a contemporary arts hub that hosts everything from theatre performances to art exhibitions and film screenings. This creative spirit adds a modern energy to Caernarfon’s timeless charm. Whether you’re

waterfront, or catching a show at Galeri, the town offers something for everyone.
Families will find plenty to keep little ones entertained, from the magical Gypsy Wood Park to the Hwylfan Fun Centre. Meanwhile, the Ffestiniog and Welsh Highland Railways offer a nostalgic journey through the stunning landscapes of Snowdonia. It’s a journey that appeals to train enthusiasts, nature lovers, and families alike, offering a fresh perspective of North Wales.
views stretching toward the Llŷn Peninsula and Anglesey, and occasional sightings of dolphins and porpoises.
Caernarfon is also a fantastic base for venturing further into Eryri National Park (Snowdonia). Whether you’re an experienced hiker eager to scale peaks like Yr Wyddfa (Snowdon) or someone looking to enjoy a scenic drive or leisurely walk through the rugged terrain, the park offers endless opportunities to connect with nature.
From races and wild swimming events to tribute nights and food festivals Caernarfon’s sense of community shines through with its flourishing annual schedule. This year’s calendar begins with Gŵyl Ddewi Arall (Another St David’s Festival) from 28th February to 2nd March, celebrating Welsh culture with music, art, and literature. This is followed by the Wales Harp Festival in April, the food-filled Gŵyl Fwyd Caernarfon (Caernarfon Food Festival) in May, and Gŵyl Arall (Another Festival) in July, blending music, art and storytelling. Autumn brings Gŵyl Cynhaeaf Arall (Another Harvest Festival), focusing on sustainability and nature, making Caernarfon a hub of creativity and tradition throughout the year.
For outdoor enthusiasts, Caernarfon’s location is ideal. The scenic Lôn Eifion recreational cycle route offers a gentle way to soak in the surrounding countryside, perfect for cyclists and walkers alike. Just six miles southwest of the town lies Dinas Dinlle beach – with its mix of sand and pebble shores,

In the heart of North Wales, the village of Rhosllannerchrugog, a place with a deep history of male voice choirs, has become home to Johns’ Boys, a male choir that is capturing the hearts of audiences worldwide. The choir’s story is a testament to the power of community, dedication, and a willingness to push the boundaries of tradition. Named in honour of two influential Welsh choir conductors, John Tudor Davies and John Glyn Williams, both of whom hailed from the village of Rhos, the choir has evolved from a one-off performance into one of the most exciting musical acts in the UK.
The journey began in 2016 when Aled Phillips, the choir’s Artistic Director, gathered a group of local men for a Noson Lawen – a traditional Welsh celebration of music and culture. The event, held at the Stiwt Theatre, was a nod to the legacy of Davies and Williams, both of whom had dedicated their lives to male choral music in the region. When asked to name the group, Phillips jokingly suggested “Johns’ Boys.” Little did they know, that playful name would become synonymous with musical excellence.
By the end of that same year, Johns’ Boys had made an indelible mark on the choral world, reaching the finals of BBC’s Choir of the Year competition. Their early focus on harmonising individual voices and expanding their repertoire to include opera, pop, and avant-garde styles set them apart from traditional male choirs.
Their breakthrough came in 2019 when they triumphed at major competitions, including Côr Cymru (Choir of Wales) and the National Eisteddfod of Wales. But it was their historic win at the Llangollen International Musical Eisteddfod – where they became the first British male voice choir to be crowned Choir of the World – that solidified their place in musical history.
The choir’s moment in the spotlight came once again with their appearance on Britain’s Got Talent in 2022.
With a performance of Aled Phillips’ arrangement of “Biblical,” they left both judges and the audience in tears and garnered over 25 million views.
In January 2024, Johns’ Boys released their debut album, Simply Biblical, which debuted at number one on the classical iTunes charts. The album quickly became a sensation, selling out twice and attracting millions of downloads worldwide. In addition to their own success, the choir also returned to the recording studio in 2024 to contribute to the chart-topping album Together at Home by Michael Ball and Alfie Boe.
A particularly exciting aspect of their upcoming schedule is their continued presence across North Wales. Johns’ Boys will be performing in some of the region’s most iconic venues, but the demand has been so overwhelming that double nights are being added to their already-packed itinerary. This expansion is a reflection of the choir’s growing popularity, not only across the UK but particularly within their community, where their roots run deep.
Looking ahead, Johns’ Boys shows no signs of slowing down. Their musical journey is a celebration of both tradition and innovation, combining the rich heritage of Welsh choral music with contemporary sounds. As they continue to perform to sold-out crowds, with double nights added to accommodate the demand, the future looks bright for Johns’ Boys – a choir that, with its unique sound and passion, is redefining what it means to be a male voice choir in the 21st Century. n

Conwy Valley and North Wales Coast Community Rail Partnership, in collaboration with Flintshire County Council’s Croes Atti Day Centre and Transport for Wales, is proud to unveil the Memories of Flint exhibition in the waiting room at Flint railway station.
The exhibition was officially opened at Flint railway station by the Mayor of Flint Town Council, Melly Buckley, who commended the project for its role in unlocking the creativity of its participants. The launch was further enriched by the presence of British Olympic champion Jade Jones OBE, who had previously visited the project participants to inspire artwork based on her remarkable Olympic journey.
The beautiful artwork has been created by attendees of the Croes Atti Day Centre who, over 12 weeks, participated in weekly art sessions led by local artist Sharon Wagstaff. Designed as an engaging outlet for individuals living with dementia, the project utilised art to evoke cherished memories, encourage social interaction and spark creativity.
Participants, aged between 59 and 97, created stunning paintings and drawings of Flint’s historic landmarks, helping them reconnected with their personal histories. These pieces of art are now being shared with the community in a creative display at Flint railway station waiting room.
“Flint station is at the heart of the community and is currently undergoing transformation with Access for All, a new community facility, a community garden and the addition of artwork into the waiting room that connects the railway to the community,” said Melanie Lawton, Community Rail Strategic Lead for Transport for Wales. “It’s wonderful to see
a celebration of our vibrant history, heritage and culture. Congratulations to the participants who have really brought the station to life with their artwork.”
Sarah Dilworth, Senior Care for Croes Atti Day Centre Flintshire County Council, added: “It was lovely to be part of this art project to see the way the art week by week brought not only joy but stimulation to the service users minds, it brought back memories of Flint in such a way the services users was able to have the freedom to create and express themselves without using words. I am so proud of all the service users it was privilege to share this fantastic project with them, we look forward to working with Karen and TfW again in the future.”
The project has had a profound impact, improving fine motor skills, concentration, and speech among participants. Many rediscovered dormant abilities, finding joy in the creative process while forming meaningful connections with others.
“It was an honour and delight to be asked along to the unveiling of the art project at Flint train station, in collaboration with TfW and Croes Atti Day centre,” said Melly Buckley, Flint Town Mayor. “The artwork adorns the wall of the waiting area for all to see and memorialises such an important project that the service users put their all into with some pretty amazing results. Community cohesion events such as this is very important and welcomed in our town of Flint. Diolch to all those involved in the project, and I hope it brings a smile to many faces of the many travellers for the many years to come.”
Participants’ original artworks are now displayed in the ‘Off Flint’ community archive at Flint Library. n

Cheese wedding cakes have really taken off in the last few years, with many couples now preferring one instead of a traditional tiered iced fruit cake. Of course it’s perfectly feasible to have both, with the cheese cake providing a delicious course of the wedding breakfast. Other couples prefer to serve the cheese wedding cake at the evening reception, where a real wow factor can be created. Apart from delighting guests with a visually stunning centrepiece cheese wedding cakes are very cost effective with prices from less than £2.00 per person. Finding the right combination of cheeses for your special day is easy; Porters always recommend that clients visit the shop for a private tasting. In this way the best cheese can be selected to meet particular tastes and budget. Many of their clients prefer to dress their cake themselves, maybe with the florist’s assistance, with themed colour ways, seasonal fruits or flowers – or Porters can provide decoration too.

Winter might well be a time of cold, darkness and stratospherically high heating bills, but I optimistically prefer to think of it as the game season. It can be a slightly divisive food genre, but I for one absolutely love it. Partridge, pheasant, venison, grouse – you name it, I’m eating it.
I think I developed my love for game when I was a young boy living on a farm near Ruthin. Because of all the shoots around us, all this essentially free food used to show up, and mum became an expert in transforming it into delicious family feeding fare.
I know a few people who run shoots, and they all tell me that they struggle to sell things like pheasants; they literally can’t give them away. The idea that delicious meat in plentiful supply is going to waste at a time when some people are still using food banks, strikes me as a perfect example of our extraordinary inability to problemsolve and is, frankly, insane.
I completely understand that some people have strong feelings against shooting game birds, but if you’re not averse and fancy an incredibly easy meal for all the family – which might well cost you absolutely nothing – try this recipe, which always takes me straight back to the kitchen table in the old farm house, looking out of the window at the snow-caked hills outside. (It was 1982, so it was probably a Birds Eye Arctic Roll for pud.) Anyway…
6 breasts of pheasant 12 rashers smoked streaky bacon
Dijon mustard
2 tins chopped tomatoes
225g sliced button mushrooms
1 medium sliced onion or a few chopped shallots
1 glass dry white wine
1 tbs Parsley
1 tbs Chervil
1 tbs fresh tarragon
Sea salt and freshly ground pepper 85g butter
Check the breasts carefully for shot, rub them all over with the mustard and wrap them in the bacon. It is important that you use bacon with plenty of fat as there is none on the meat. Pan fry the breasts for about five minutes to give them a bit of colour.
Cook the onions/ shallots in about half the butter until soft. Add the mushrooms, white wine and tomatoes and simmer for five minutes or so, add the tarragon, chervil and parsley at the end and check the seasoning.
Pour the sauce into a shallow roasting dish and arrange the pheasant breasts in it, so that the tops of them are exposed, and cook in the oven at about 180˚C (FAN) for around 25 minutes, by which time the bacon should be crisp. Remove the breasts and keep them warm, stir in the rest of the butter for the right glaze, check the seasoning and serve. n

Welcome to Number 25, where every drink tells a story, and this month, it’s all about the margarita! In honour of Margarita Day on 22nd February, we’re thrilled to feature this timeless classic as our Cocktail of the Month. Whether you’re a margarita aficionado or a curious newcomer, there’s never been a better time to raise a glass and celebrate with us.
The origin of the margarita is shrouded in legend, with several stories vying for the title of its birthplace. One popular tale credits its invention to the 1930s or early 1940s, where it was said to have been crafted for a socialite named Margarita in Mexico. Another theory connects it to the “Daisy” cocktail, an American favourite that swapped out brandy for tequila and adopted the Spanish name for daisy, “margarita.” Whichever story you believe, the margarita’s rise to fame is undeniable, becoming a symbol of sophistication and fun in equal measure.
The perfect margarita balances simplicity with bold flavours. At Number 25, we craft ours with tequila, triple sec, lime juice, and a touch of sugar syrup. The ingredients are shaken with ice and served either in a rocks glass over fresh ice or a coupe or martini glass if you prefer it neat. Garnished with a lime wheel, the option of a salt rim is always yours. While we bartenders at Number 25 enjoy ours on the rocks, we’d love to hear how you like yours!
Margarita, Your Way
While the traditional margarita is hard to beat, its versatility is part of its charm. For the purist, a salted rim complements
the cocktail’s tart and citrusy notes. But if salt isn’t your style, go without or experiment with a sugar rim for a sweeter touch. Glass choice is another personal preference. A rocks glass offers a casual vibe, while a coupe or martini glass elevates the drink for a more elegant occasion. For a twist, try adding fruity flavours like mango or strawberry, or spice things up with our signature scotch bonnet infusion. Herbal notes, such as a hint of basil, can also transform the classic recipe into something truly unique.
Join us at Number 25 throughout February to enjoy the margarita in all its glory. Whether you’re toasting Margarita Day or simply indulging in our Cocktail of the Month, we can’t wait to welcome you. Cheers! n

When the weather is cold, wet and windy, the prospect of another rugby union Six Nations tournament is a shining light in the darkness. It’s a time to get together with friends, over a number of weekends, and share tales of great victories, dismal losses, and good times watching matches from all around Europe. In other words, a good time to crack open some quality wine and whisky. Luckily, the six countries involved in the competition all produce incredible drinks. Wine is strongly represented by France and Italy, joined by England producing world-class sparkling wines. Scotland has its incredible whisky making heritage, keenly disputed by Ireland, claiming they started making whiskey well before the Scots, and Wales bringing up the rear, now making superb whisky right across the country. Here are my choices to celebrate a last-minute win, or to drown your sorrows after victory has been snatched away – I may well need something fairly strong to watch Wales in the tournament after a winless 2024!
Penderyn Madeira Finish, Single Malt Welsh Whisky, 46% vol, £42
There are many excellent distilleries across Wales now, but Penderyn were the first. The original, classic Madeira finish is easy to drink and has honeyed, floral notes with a touch of sweetness on the finish. Perfect to celebrate a (long-awaited!) Welsh win.
Collioure, Réserve des Peintres, Abbé Rous 2019, 14.5% vol, £17.50
Made just south of one of the heartlands of French rugby, Perpignan, this blend of 80% Grenache, with Mourvèdre and Syrah is warming, soft and packed full of juicy strawberry fruit.
Ashling Park Estate, Brut English
Quality Sparkling Wine, 12% vol, £36
Rich, biscuity, complex fizz from West Sussex, made by sparkling wine maestro Dermot Sugrue. This is one for fans of weightier styles of champagne, like Bollinger.
Tanners Peaty Creag, 8-year-old
Blended Scotch Whisky, 40% vol, £23
Made for Tanners by Iain Macleod Distillers, Peaty Creag whisky is hugely popular and has a big following with our customers. Lightly peaty, it has a large proportion of single malt in the blend and is often mistaken for a single malt!
Teeling Single Malt Irish Whiskey, 46% vol, £56
Opened in 2015, this was the first new distillery in Dublin for 125 years. The single malt is citrusy, spicy and very well balanced, with the classic lightness of touch you get with Irish whiskey.
Fabio Ceschin Prosecco Superiore, Conegliano Valdobbiadene, 11% vol, £14.80
Italian rugby has come on leaps and bounds in the last couple of years, and a huge number of clubs play in the north east. It just so happens that this is also where Prosecco is made, and this dry, appley, high-quality Prosecco is ideal for celebrations.
Mathew Evans is the North Wales, Area Sales Manager for Tanners Wines, creating wine lists for some of the best restaurants and bars in the area. He has worked for Tanners for over 13 years and is also a Certified Educator for the Wine & Spirit Education Trust. He is originally from Llandudno Junction and still lives in the area. When he’s not talking about wine, he can be found watching football at Wrexham AFC, rugby league at North Wales Crusaders RLFC or playing Masters Rugby League for North Wales Buccaneers.
Barti Rum has announced its certification as a B Corporation (or B Corp), joining a growing movement of companies that are reinventing business for the benefit of all people and our shared planet. Verified by B Lab, the notfor-profit behind the B Corp movement, the achievement demonstrates that Barti Rum meets high standards of social and environmental performance, transparency, and accountability alongside a commitment to goals beyond shareholder value.
The news comes as the ongoing climate crisis and widening social inequality continue to pose urgent challenges to our economy. B Corp Certification assesses the entirety of a business’ operations and currently covers five main impact areas: Governance, Workers, Community, Environment and Customers. The certification process is rigorous, with companies required to reach a score of 80 points in the B Impact Assessment while providing evidence of responsible practices relating to energy supplies, waste and water use, worker compensation, diversity, and corporate transparency. A business must also legally embedded their commitment to purpose as well as profit in their company articles.
Barti Rum is now part of a growing community of over 9,000 businesses globally that have certified as B Corps. The B Corp community in the UK is one of the largest and fastest-growing in the world, with over 2,300 companies spanning a range of different industries and sizes. Names include The Guardian, Innocent Drinks, Patagonia, Tony’s Chocolonely, The Big Issue, Finisterre, Elemis, and Sipsmith Gin.
“We are pleased to have B Corps of all shapes and sizes as part of our community — from startups to multinationals and across many different industries,” commented Chris Turner, executive director of B Lab UK. “Business is a powerful force and B Corps demonstrate that positive impact is possible in any

sector. Welcoming Barti Rum is an exciting moment for the company. B Lab UK and the rest of the B Corp community are really pleased that Barti Rum is paving the way for a new way of doing things.”
Managing director Fran Barnikel at Barti Rum added: “We have always tried to make business choices which feel right in terms of protecting the planet and looking after the people who work with us, supply and buy from us. It would be alien to do otherwise. We aren’t perfect, sometimes it doesn’t work out how we would have liked, and often when it does, we don’t make the most money that way. Don’t get me wrong profit is great and obviously integral to running a successful business, but there will always be other equally important things to consider. After all, what’s it really all about?”
She goes on: “Getting B Corp certification is a great way to let people know that that’s the type of business we are. Our values go beyond making money for the top.”
Barti Rum joins a growing community of companies who will need to keep up their promises and keep providing evidence to B Lab as the years go on in order to maintain their B Corp status. n

Under new ownership, the venue has been completely transformed into a relaxed, rustic and welcoming country pub, complete with stylish décor, cosy nooks and a stunning dining space with views out over the grounds.
The welcoming gastropub also has an all-new Britishinfluenced menu made up of tasty pub classics, exciting The Savvy Fox signature dishes, Sunday roasts and fabulous desserts, coupled with an extensive selection of beers, wines, spirits and cocktails.
New owners, Steven Hesketh and Dan Gillon hope to put the venue on the map with local residents, the business community and those staying at Hotel Wrexham, which is also at the beginning of a full programme of refurbishments.
“It’s been a fantastic few months since we opened our doors,” says Steven. “We’re getting brilliant feedback from local residents on the updates that we’ve made. We want The Savvy Fox to be known as a fun, lively, friendly and down to earth place to meet. We’ve worked really hard, not just to make the space feel warm, cosy and welcoming, but also to ensure that our team delivers first-class hospitality and service that goes above and beyond expectations. The Savvy Fox is a venue that is perfect for celebrations and special occasions, but equally where you can call in after work for a quick drink and a chat with friends.”
“Whatever your reason to visit us, our aim is to surprise and delight our customers and by that we mean to go that extra
mile to give them a memorable experience.”
Chef/consultant Lee Adams and The Savvy Fox team have worked together to design an exciting and captivating launch menu with broad appeal encompassing breakfast, lunch, dinner and lighter bites.
A mix of pub classics reimagined with a ‘Savvy’ twist, coupled with hearty comfort foods and stunning signature dishes, ensure that there really is something for everyone. Stand out moments from the menu include the shepherd’s pie made with a whole lamb shank, a delicious seabass and sundried tomato risotto, and ‘Savvy’ fish and chips, with herby batter that takes it to the next level.

Located in the beautiful town of Barmouth, on the Cambrian coast at the southern edge of Eryri National Park, Foxglove is a 12-cover vegan restaurant that is owned and run by partners Luke and Antonella Crittenden.
Luke began his culinary journey at The Marquis at Alkham in Kent, a restaurant that earned a Michelin Rising Star during his time there. He later honed his skills in London, working with celebrated chefs like Gary Rhodes and Chris and Jeff Galvin. Luke became sous chef at the popular Polpetto in Soho under Florence Knight before taking on the role of Head Chef. While at Polpetto – part of Russell Norman’s Polpo group – he maintained the restaurant’s Michelin Bib Gourmand rating and contributed to Norman’s cookbook, Venice: Four Seasons of Home Cooking. He also oversaw the kitchen at Polpo’s flagship restaurant on Beak Street.
In 2018, Luke opened his first restaurant, Arya, in his hometown of Ramsgate. Within a year, Arya was awarded a Michelin Bib Gourmand, which it maintained until Luke and Antonella relocated to Wales in 2021. Today his passion can be found at Foxglove – a local restaurant that offers a five-course set menu crafted from locally sourced, seasonal ingredients.
“We proudly support local growers and producers, with organic vegetables from small-scale farms in Ceredigion and Gwynedd,” explains Luke. “Our vegan cheeses are supplied by The Vegan Cheesemonger in Blaenau Ffestiniog, renowned for their incredible flavors.”
As a wild food restaurant, much of the inspiration at Foxglove comes from the diverse habitats surrounding them. The

nearby Mawddach Estuary has coastal succulents like samphire and sea aster, while the Cambrian coastline offers sea radish and sea leek. In woodlands nearby, you can find wild mushrooms, lichens, and aromatic conifers. The hedgerows are abundant with wild fruits, nuts, berries, and the ever-popular wild garlic.
“Due to the fleeting seasons of many wild ingredients, our menu changes frequently – often weekly – so there’s always something fresh and exciting to try. To preserve and enhance these ingredients, we use techniques like pickling and fermenting, which not only extend their shelf life but also elevate their flavors.”
Antonella brings a warm and welcoming atmosphere to Foxglove, making every visit feel like an entertaining evening among friends., and the couple describe their restaurant as ‘fine dining without the pretension.’
Throughout the year, they host special menus and events. For example, drawing inspiration from their travels in Japan, they offer seasonal Japanese kaiseki menus and this summer, they will hold a Japanese workshop and sensory dining experience, bringing a fusion of meditation sounds and different natural landscapes.
As animal lovers with four rescue dogs, it was essential for Luke and Antonella to make Foxglove a dog-friendly restaurant. Your furry companions are welcome to enjoy their own bed, snacks, and plenty of fuss during your visit. n
Tucked away just inside Conwy’s castle walls, The Peppermill is something of a hidden gem that is worth seeking out…
Head chef and owner Simon Franklin opened The Peppermill at the end of May 2024 with his partner Lucy Woodhall. This lovely little restaurant has already gained over 80 fivestar reviews in that small space of time, with the general consensus being that this bistro is worth going out of your way for.
Away from the hustle and bustle of the high street, up the driveway, The Peppermill is beautifully tucked away just inside the castle walls of Conwy, on Chapel Street. In a lovely old brick building with a lantern, a stained glass window on the porch and a beautiful big bay tree welcoming guests up the steps and into the restaurant.
Once inside, through the terracotta tiled porch, the A-frame ceiling and beams give a roomy feel to such a small place. The floor is laid with rustic old reclaimed wood.
The décor is bright and colourful, projecting a fun and creative twist, balancing the old with a splash of feel good energy. The mustard and deep teal work with the wood and brick, and the walls are adorned with original artwork, injecting personality and curiosity.
But despite the pleasant décor, it is the warm welcome and exceptional food that diners are coming for. Head chef Simon has almost 30 years of experience in the industry. He gained valuable skills and experience throughout his career working in restaurants all over the country before moving to Wales, including the Lake District, the Cotswolds, Bournemouth, Cheshire, Edinburgh and Cornwall. Working all around the UK has given multiple inspirations into his cooking and recipes, with a spotlight on fish and seafood from his time in Cornwall, and meat and game from the Cotswolds.
Simon originally trained in pastry and his love for this still shines through in his desserts. He has a wealth of experience and passion for food, and enjoys sharing his skills and passion both with the team through the process, from preparing to plating the food, and the customers in the finished dish.
“Food brings people together,” he says. “Food should be joyful. I love the kitchen camaraderie too – we have strong bonds being such a small team at The Peppermill. I also enjoy passing on my knowledge to the next generation.”
The next generation being sous chef Sam Jones, who trained at Llandrillo College, and already has five years of kitchen experience under his belt. He has always been interested in cooking from a young age and wanted to further his knowledge and experience by turning it into a career.
“Watching chefs like Simon cook, has taught me a lot,” he explains. “It allows me to better understand how certain dishes are prepared, and giving me new ways to improve on what I already know.’”
Simon and Sam discuss ideas for new dishes together when it’s time for a menu change, with Sam’s time at an Indian restaurant influencing the combination of flavours on the current Seabass dish. Despite being early on in his career, Sam has great suggestions for dishes and recipes, finding inspiration and influence from his training, previous kitchens he has worked in, and chefs he has worked alongside.
And thanks to their local, quality suppliers, Simon and Sam are able to produce outstanding food that allows for seasonal changes. Their home cooked, locally sourced menu may be simple, but it is extremely well executed, satisfying and tasty. n

This popular Anglesey restaurant has been named among the 100 best food venues in the country…
Catch 22 Brasserie in Valley, near Holyhead, Anglesey, is one of the most respected eateries in North West Wales, combining high-quality local produce with culinary expertise to create contemporary, classic British dishes.
Those ingredients combined to secure a place in the Good Food Guide’s prestigious 100 Best Local Restaurants list for 2024, with particular praise heaped on their famous Snickers Trifle, labelled “the best pudding in the world” by loyal local patrons.
Named in reference to Joseph Heller’s multi-million selling satirical novel, chef co-owner Neil Harley-Davies says Catch 22 – launched in 2017 – has gone from strength to strength while navigating the challenges of the pandemic and economic pressure facing the sector.
In partnership with wife Melissa and sister-in-law Ellie, they are putting the finishing touches to a new first-floor cocktail bar and lounge area, due to open in the spring, and have their sights set on further growth in the coming 12 months.
“To be named in the Good Food Guide having won the Small Business prize at the recent Anglesey Business Awards is a huge privilege and fills us with confidence going into the busy spring period,” said Neil. “We are a family-owned restaurant which has been on the island for seven years with fantastic, supportive customers, but we are still something of a hidden gem.
“The name Catch 22 is a reference to the book and how we took the decision to leave the security and comfort of our previous roles – mine as a head chef at one of the region’s top venues
– to launch our own venture,” he continued. “Since opening our name has caused some confusion as many believe we are exclusively a seafood restaurant, which is definitely not the case – there is plenty of choice for all appetites.
“There have been ups and downs, it’s the nature of the industry, but we are in a fortunate position in a beautiful part of the world and able to do what we love while using the very best ingredients from some of the finest producers anywhere in Wales.”
Among the dozens of companies supplying Catch 22 are Halen Môn, Mermaid Seafoods, Bragdy Cybi, Menai Oysters, Heartland Coffee, Blas ar Fwyd, Llefrith Cybi, Anglesey Fine Foods, and Damara Môn.
Employing more than 30 staff, the restaurant can cater for up to 120 covers and is now making its name as a high-quality venue for weddings, corporate functions and family celebrations. “Holding events and wedding parties is going to be a big part of our offering going forward,” added Neil. “The extended bar lounge area provides more space for customers who want to visit for a drink and to socialise, separately from the dining areas, and allows us to bring something a little different to the island.
“That said, we are first and foremost a restaurant, and our vision has always been to give people a unique experience with no gimmicks, just good, honest food and drink using local ingredients for delicious dishes created and cooked in our kitchens. Being among the top 100 in the UK demonstrates our passion and commitment and gives us the belief to build on that ethos for the future.”

Ellesmere based Princes LHS are MCS approved installers of renewable energy systems, including Solar PV, Battery storage, Solar Thermal, Air Source and Ground Source Heat Pumps. As well as Renewable energy installers they are also NICEIC electrical contractors, Gas Safe & OFTEC accredited heating contractors.
Over the last few months energy prices have become very unpredictable, with significant rises in energy prices compared to previous years. This has made solar PV and battery storage even more attractive and means payback can be achieved in anywhere between 5 and 10 years which is a bonus when considering you are also helping to reduce your carbon footprint. As well as storing solar energy generated by the solar panels a battery can also be charged from the grid using cheap off peak electricity tariffs, making payback even quicker. Some of the battery systems can even provide back up power in the event of a power cut, meaning your solar system is still operational, helping power your home and stay off grid even longer.
Princes LHS are approved installers of the market leading Tesla Powerwall battery storage system, (www.TeslaPowerwall.co.uk) which they have on display in their renewable energy showroom in Ellesmere “Low Carbon Home Systems” as well as being installers of other battery systems such as GivEnergy, SAJ, and Pylontech amongst others. There are incentives available for anyone who exports the electricity they produce, with some of the larger energy providers now offering in excess of 15 pence per kWh for any electricity sold back to the grid using the “smart Export Guarantee” (SEG), which is currently only available when having your system installed by an MCS accredited company such as Princes LHS.
A sensible option to fit alongside a Solar PV system due to it being powered by electricity is a heat pump which heats your home replacing your fossil fuel boiler and connecting to your wet central heating system. There is a £7,500 grant to go towards the installation of an air source or ground source heat pump. If you have gas, oil, LPG, or electric heating you are eligible for the BUS (Boiler Upgrade Scheme) Grant which as MCS accredited contractors, Princes LHS can apply for on your behalf.
An air source heat pump works by extracting heat from the outside air. This heat can then be used to heat the home via radiators or underfloor heating and also provides all of the hot water required in the home. Equally important is the fact that it is able to operate when outside temperatures drop as low as -20°C. Typically a heat pump can achieve efficiencies of 400% meaning for every 1kw of electricity consumed it will produce 4kw of heat, compared to a fossil fuel boiler being somewhere between 75% and 90% efficient. Alternatively, a ground source heat pump is like a traditional central heating boiler, but, instead of using oil or gas, it uses heat extracted from the earth. Rather than buying fossil fuels from a supplier, you would be using renewable energy for your heating and hot water meaning you will not only be doing your bit to help the environment, you will also save money on your heating bills.
The Low Carbon Home Systems Renewable Energy showroom in Ellesmere has been open for three years and displays a number of the latest innovative products including working examples of solar PV and Air Source Heat Pumps. There are Eco Forest and CTC ground source heat pumps, various models of Air Source Heat Pumps including Mitsubishi, Samsung and Midea. There are Solar PV panels on display – both integrated and above the roof, and solar thermal hot water panels. There is nothing like seeing the products in person so that you can get a feel for their look and size.
If you are considering changing your car to electric, you will need to consider a home charger. Installing a purpose-made charging point will reduce your charge time and manage your energy usage. Princes LHS are able to supply and install your charger which can also be integrated with electricity produced by solar energy to help “squeeze out” every last drop of energy being produced by the solar panels.
Princes LHS are able to offer a full home solution and have helped many customers on their “self-build home” journey. From below the ground to above the roof and everything in between Princes LHS can offer the full package, including electrical installation, LED Lighting, plumbing & heating, bathroom installation, underfloor heating, MVHR (mechanical ventilation heat recovery), radiators, Solar PV, Battery storage, Solar thermal and Heat pumps. n
For more information please give Princes LHS a call on 01691 624336, or drop by the Ellesmere showroom for an informal chat to see what they can offer and how they can assist you on your low carbon home journey. www.lowcarbonhomesystems.co.uk

The prospect of unearthing buried treasure is a longstanding fascination for many of us, and metal detecting has never been more popular as a hobby.
Thousands of people regularly head onto the beach or into the countryside with their metal detectors, hoping to find an interesting artefact – or even something of national significance which could end up in a museum.
But there are rules you need to follow in order to avoid any disputes over who owns the items you discover – with a large fine or even a prison sentence possible for not reporting a find of ‘treasure’.
Claire Vale is an associate solicitor at Lanyon Bowdler who specialises in helping people solve financial disputes. She also has a keen interest in metal detecting, so is the perfect person to advise on the correct procedure for safe and happy hunting.
“The first thing you need to do is contact the owner of the land for their written permission to search with your metal detector on their land,” she explains. “It is illegal to search on public or private land without permission, or to search on a designated area, such as a site of Special Scientific Interest. The National Council of Metal Detecting website has a model agreement which can be downloaded from their website which is a good place to start, and the National Farmers’ Union’s website has its own model clause for the use of NFU members. These agreements can help determine issues such as the area to be searched, and how any income received from a find will be split between the metal detectorist and the landowner (a potentially important consideration).
“Secondly, you need to follow the Code of Practice for Responsible Metal Detecting which states that all finds should be recorded with the Portable Antiquities Scheme.
“Thirdly, how do we define what qualifies as ‘treasure’? Well, the Treasure Act 1996 redefined the meaning of treasure for England, Wales and Northern Ireland. In broad terms, treasure now includes all objects containing precious metal that were buried for any reason and are at least 300 years old.
“Failure to record a find of treasure could result in a fine and/ or up to three months in prison. Finds must be reported to the coroner in the district in which it was found within 14 days.
“The local Finds Liaison Officer at your local county council can do this for you. If the coroner declares the find to be treasure, museums will have the opportunity to purchase it after being valued by the Treasure Valuation Committee. A reward equal to the full market value of the treasure is usually paid to the finder and/or the land owner.
“Finally, non-treasure finds are governed by the British Museum’s Portable Antiquities Scheme, where finders are encouraged to voluntarily record their archaeological finds.
“In the last 20 years the number of recorded finds – both treasure and non-treasure – has increased exponentially with about 95% of finds discovered by members of the public. Again, a prior written agreement with the landowner will be helpful in determining what is to happen to any object found.
“It is thought that there is a huge amount of treasure just waiting to be discovered – why not get yourself a metal detector and start searching?” n

Knitters creating Special VE Day installation for Wonderwool Wales 2025
A special installation to mark the 80th anniversary of VE (Victory in Europe) Day in 2025, which is being created by a group of knitters in France, will be a centrepiece at next year’s Wonderwool Wales event in the heart of Mid Wales. Tansy Forster and her fellow knitters have agreed to create the new installation especially for the 19th Wonderwool Wales, the premier wool and natural fibre festival in Wales which will be held at the Royal Welsh Showground, Builth Wells on 26th & 27th April. The new work follows the great success of The Longest Yarn, which is an 80 metre, 3D wool art depiction of the D-Day landings in France on June 6, 1944, and is currently touring the UK. The Longest Yarn installation features 80, one-metre long panels, each depicting scenes of the build-up to D-Day in England, the horrors on the landing beaches and the bloody inland battles. More than 1,000 knitters from across the world contributed to the project which snowballed from Tansy’s initial idea of a display for her garden wall. An award-winning two-day event, Wonderwool Wales celebrates all that’s great about Welsh wool and natural fibres, attracting around 6,000 visitors from across the UK and as far away as America, Canada and Australia. www.wonderwoolwales.co.uk

Corneal dystrophy is a group of inherited eye disorders affecting the cornea, the clear, dome-shaped surface at the front of the eye that focuses light on the retina. It often leads to the accumulation of abnormal material in the cornea, causing vision problems. The condition typically develops gradually and may initially have no symptoms. As it progresses, individuals may experience blurry vision, sensitivity to light, or discomfort, especially if the cornea becomes irritated. In advanced stages, the cornea can become cloudy or scarred, further impairing vision. Corneal dystrophy often appears in adulthood and varies in severity depending on the type. Early stages may be managed with glasses or contact lenses, while advanced cases might require corneal transplantation. Though it cannot be prevented, regular eye exams and early diagnosis are crucial for effective management and to minimize vision loss. Consult an eye care professional, such as the specialists at the North Wales Eye Specialist Centre, if you notice vision changes. www.northwaleseyespecialist.co.uk

1. Tŷ Hyll has been restored by the Snowdonia Society and includes a honey bee exhibition as well as the fine tea rooms. The garden is designed for pollinators and well worth a visit after your refreshments! Start the main walk up the steep minor road from Tŷ Hyll past ‘The Towers’ Outdoor Education Centre and turn right onto the forest track.
2. Follow the track until it forks, taking the marked footpath left up steps into the trees. Wind up through oak, holly and conifer woodland which is great for fungi in autumn. At the waymarker post, carry straight on.
3. Cross the forest track and continue up the path. In spring and summer, listen for willow warbler and chiffchaff and look for redstart and foliose lichens. At the junction, carry straight ahead, ignoring the cycle routes. Follow the path up left through a break in the wall and zig-zag up the hill. Continue through the conifer woodland to the Ty’n Llwyn car park and picnic site.
4. Enjoy the view over the Llugwy valley to Arenig Fawr. The slope is a haze of bluebells in spring and there are flowers such as tormentil, bird’s-foot trefoil and violets on the lefthand bank. Look for speckled wood and meadow brown butterflies. Turn right out of the car park and continue walking along the road.
5. After approximately 100 metres, turn sharp left onto a path which leads uphill through the woodland.
6. Cross the wide Gwydir Mawr trail track, and follow the willow- and birch-fringed track straight on until it descends on a narrow path to Llyn Bodgynydd. Look on the lake for great crested grebe and red-breasted merganser.
7. Turn right and follow the lakeside path which leads to Cors Bodgynydd Nature Reserve, looking out for butterwort and sundew. Go through the gate and carry straight on, passing the old Cyffty lead and zinc mines on your right and a smaller lake to your left.
8. Take a short diversion from the main path on to a rocky outcrop where you can enjoy extensive views across the nature reserve. Here, look for emperor dragonfly, black-tailed skimmer and variable damselfly – and other related species!
At dusk in early summer, this is a good spot to see nightjar and hear them churring as they feed on insects over the bog. Return to the path, looking out for devil’s-bit scabious and bog asphodel.
9. At the reserve gate, turn right on to the road which runs parallel to the nature reserve. Look out for fungi in autumn and roding woodcock on summer evenings, and listen for the tinkling of goldcrest in the trees.
10. At the road junction, turn right, noting meadowsweet alongside the road.
11. After approximately 250 metres, turn right onto the forest track and Gwydir Mawr trail, passing ragwort, willowherb and heather and looking for crossbill and summer butterflies. Continue straight on at the crossroads and, after 400 metres, bear left along the track. You can enjoy fine views of Moel Siabod as the track descends. Where the main track bends right, take the track to the left.
12. Continue on this track until you re-join the road and turn right. Continue steeply downhill to complete your walk at Tŷ Hyll. Time for tea and cakes! n

to hold their own service or celebration at a time and place that suits them.
One of the most important responsibilities as a funeral director is ensuring that every single funeral service reflects the unique life and personality of the person that has died. A key part of that process is selecting the right funeral celebrant for the right family – one size does not fit all!
Here is how we choose, from our carefully chosen pool of trusted funeral celebrants that we work with, the ideal partnership for each family we look after.
The role of a funeral celebrant
A funeral celebrant is a professional that leads and personalises a funeral ceremony. Their role is to craft a service and often tell a story that reflects the personality of the person that has died while offering comfort to a grieving family and friends. Unlike religious leaders, funeral celebrants are not bound by a specific faith, making them a versatile option. A celebrant serves as both a guide and storyteller, ensuring the ceremony is a fitting tribute to the individual’s life.
“The whole process from first contact to the actual service, is carried out sympathetically with care, tact and awareness of the family’s grief.” John Spicer
Understanding the life of the person that has died
Our process begins with a conversation. We take the time to ask thoughtful questions about the person that has died, their life, values and beliefs. To help us build a complete picture of them, we’ll ask questions about specific elements you’d like to include such as music, readings or rituals, their spiritual or cultural preferences and about their personality.
“It’s the greatest compliment when people tell me their loved one would have loved the ceremony, or ask if I knew them –because it means I’ve captured who they really were.” Kate Rostance
Every family is unique, and so is every funeral. Some families may prefer a structured, traditional ceremony, while others might want something that is more casual and personal. We will consider the tone you want for the service (solemn, celebratory or a mix), how much involvement as a family you want to have in shaping the ceremony and whether there are any cultural or personal requirements to consider.
“To create the heartfelt ceremony that pays tribute to both the life and death of someone you love, I will listen as you share treasured memories, hopes and wishes, and together we can create the service that feels right for you.”
Paula Byrom
the right celebrant to you
We carefully match a funeral celebrant to you, based on how they align with the values and personality of the person that has died, that understands your family dynamics and
preferences and who will understand the story of their life and re-tell it perfectly, weaving the details they uncover into a heartfelt and meaningful service.
“I am fluent in Welsh and therefore able to deliver a service that is sensitive to the language, culture and background of the individual and the family / Rwyf yn rhugl yn y gymraeg ac felly yn gallu cyflwyno gwasanaeth sydd yn sensitif i iaith, diwylliant a chefndir yr unigolyn a’r teulu.” Bethan Wyn Roberts
We work closely with a trusted network of celebrants, who bring a variety of styles and experiences. Over time, we’ve learned how individual celebrants like to work and how they will fit each service. We don’t believe that the same celebrant will work for every family and this process is really important for us to get right. n
