When we went in search of a recipe that would inspire you to get grilling we knew exactly who to turn to. Rockin’ Ronnie Shewchuck — barbecue champion and author of Barbecue Secrets Deluxe! — shares a tasty twist on cedar-planked salmon. One of the best ways to prepare papadums — delicious Indian crackers — is to grill it. All it takes is 10 or 20 seconds per side on a hot grill to crisp them up.
INGREDIENTS 1 alder or cedar plank, soaked overnight or at least one hour one 2½ lb (1.2 kg) salmon fillet, deboned, skin on RUB 2/3 cup extra virgin olive oil 1 clove garlic, finely chopped 1 tbsp tandoori powder or garam masala salt (preferably fleur de sel or other coarse sea salt)

PEACH CHUTNEY 1 tbsp sugar 1/4 cup rice vinegar 4 medium peaches, peeled and cut into ½-inch dice 2 tbsp grated fresh ginger MINTED YOGURT 1½ tsp honey 1½ tsp chopped fresh mint pinch ground cumin pinch turmeric
1 cup (250 ml) plain low-fat yogurt kosher salt and freshly ground black pepper METHOD Combine the olive oil and garlic in a bowl. Rub the mixture all over the salmon. Sprinkle the salmon with the tandoori powder or garam masala and season it lightly with salt. Cover the salmon and refrigerate it for up to two hours. Dissolve the sugar in the vinegar in a nonreactive saucepan over moderately high heat. Bring the mixture to a boil and cook it for one minute. Stir in the peaches and ginger and return the chutney to a boil. Reduce the heat and simmer the

Preheat the grill on mediumhigh for five to 10 minutes, or until the chamber temperature rises above 500°F (260°C). Rinse the soaked plank and place it on the grate. Cover the grill and heat the plank for four to five minutes, or until it starts to throw off a bit of smoke and crackles lightly. Reduce the heat to medium. Place the salmon fillet on the plank. Cook for 10 to 15 minutes, or until the fish has an internal temperature of 135°F (57°C). Serve the salmon with the chutney and the yogurt sauce.
