My name is Max Campbell, and I’m a 25 year old sailor and surfer from Cornwall, UK. Over the last five years, I have spent a lot of time restoring old sailing boats, and then using them as a means to travel and see the world. I grew up in a place surrounded by sea, and my entire childhood was spent in and around the water. My stepdad is also a boatbuilder, and as a kid I spent a lot of time in boatyards. At some point, the two worlds merged, and I decided I wanted to restore an old sailing boat and go sailing. After finishing uni, I took off on my little wooden boat Flying Cloud. I had no real plan, only a thirst for adventure. I sailed down the coast of Europe, to the Canaries, Cape Verde, and then across the Atlantic

It is also good to know that herring is considered a sustainable resource.

Sweden also has the tradition with "surströmming". This rotten delicacy is not for the picky eaters. The smell is awful, and the taste is "interesting" according to some. It's better you decide for yourself. Another option is the cold-smoked herring. Try it with a cup of strong coffee. Delicious!

My name is Arianna, I am a very passionate chef that loves nature and food, and is specialized within seafood. My biggest passion is where food comes from. What is your nr. 1 ocean memory?
When I was younger my mother took me and my brother to the Bahamas, where she was from, to show us her homestead. We stayed at a hotel called Atlantis, which had a concept based on the story of Atlantis, the famous underwater city. The story, and the hotel itself, showed me how big and full of resources the sea is. There could be whole cities that we don´t know about. Imagine how much food and other resources there is! Growing up, this experience gave me a hunger to learn more about it.

I always wanted to learn free diving. This would give me the opportunity to help me see more of the ocean, and feel like I am a part of it, without too much interference. Name a marine destination you want to visit.
In Norway we have many beautiful places. I wish to go to Lofoten. There is big diving-areas, ocean-life and big productions of stockfish. My plan is to record my trip there, and put it up on my Youtube channel; The World on a Fork.

ORIGINAL RECIPE "DOGALE CONFRATERNIT A DEL BACCALÀ MANTECATO" SERVINGS: 4
For the creamed cod: 300 g of dried cod stockfish already wet and boned (pulp and skin) 300 ml of lightly scented extra virgin olive oil (approx.) 1 clove of garlic 4 bay leaves 1/2 lemon salt and pepper
For the zucchini julienne: 2 large courgettes salt pepper extra virgin olive oil Other: pink pepper parsley

For the courgette flowers: 4 flowers 50 g of flour (also mix of rice flour and 00 flour) 80 ml of sparkling water or white wine (approx.) salt
INSTRUCTIONS For the creamed cod:
Put the cod (stockfish) in a saucepan, cover it with lightly salted cold water and bring to a boil. Cook it for about 20 minutes with the garlic, lemon juice and bay leaves. "Stir" the fish pulp by hand with a wooden spoon or with a planetary mixer (avoid the blender and if you really have no alternative use the plastic blade), pouring in the oil and letting it whip as if it were a mayonnaise, until a compact and homogeneous cream is obtained. If necessary, add a little cooking water and bring it to the end of creaming, with a few whole pieces still left. Season with salt and pepper. For the courgette flowers:
Clean the flowers carefully, open them gently and remove any impurities. Leave the pistil as well. Prepare a batter with water and flour. Add the water, stirring with a hand whisk, until you obtain a consistency such that the batter adheres well to the flower, while remaining fluid.
Immerse yourself in the flowers one by one. With the air fryer: place them on the grill covered with a sheet of parchment paper lightly greased with olive oil, close it and fry the flowers at 200 ° C. After 5/6 minutes, turn them and remove the parchment paper (place them directly on the basket). Fry for about another 6 minutes, or until golden brown. Place them on a saucer. Classic frying: dip the flowers in a pan with plenty of seed oil. When they are golden and crunchy, place them on a plate covered with a sheet of absorbent paper and pat them with excess oil. Salt them. For the zucchini julienne:
Cut the outer part of the courgettes into julienne strips and blanch them for 30 seconds in boiling water. Drain and dry them well. Put them in a bowl and season with salt, pepper and extra virgin olive oil. Keep aside Prepare the sandwich:
Take the sandwiches and cut them in half. Place the cut parts on a grill or pan and heat the sandwich. Take the bottom part of the sandwich and put some julienne courgettes. Add a crispy fried courgette flower and finish with a spoonful of creamed cod. Garnish with a few berries of pink pepper and chopped parsley.
