Ochil Foods are a family fine foods wholesaler, based in Perthshire, Scotland, who have been supplying chefs throughout the United Kingdom for three generations. It brings us great pleasure to introduce to you our Scotland Collection, a selection of some of the finest products from Scotland’s esteemed natural larder, from Game and Seafood to Artisan Producers creating an eclectic array of the highest quality produce, including; Charcuterie, Cultured Butter and Bean-to-Bar Couverture Chocolate. We at Ochil Foods understand the importance of both quality and provenance when creating a menu and the increasing consumer appetite for such information. Delivering this adds value to your menu and we hope that this magazine will be a useful tool both in your kitchen and front of house.

Ardgay Game Father and son team Les and Ruairdh Waugh run Ardgay Game from their brand new state of the art Venison processing facility at Bonar Bridge. Their success has been built on strong long term relationships based on family values with some of Scotland’s most prestigious Highland Estates around Ross-shire, Caithness, Sutherland and Invernessshire. Rigorous quality control ensures that they always deliver the highest standard of product. All carcasses are hung for 21 days minimum to tenderise the meat, then they are skinned and butchered by Les’s highly skilled butchers, who combine tradition and technology to produce the finest cuts of meat for discerning chefs. Ardgay are the only processors in Scotland to be both Wild Venison Quality Assured and have SALSA accreditation.

Game Scotland is home to a bounty of natural game, available during different seasons throughout the year. Ochil Foods works closely with estates to provide a consistent supply, including, amongst others, Mar Estate and Dinnet on Deeside, and Rossie Ochil in Perthshire.

Gartmorn Farm Poultry Roger and Susan Lucey have been farming free range poultry from Gartmorn Country Park for the past fifteen years and now count some of Scotland’s leading chefs and eateries on their client list. They produce slow grown, traditional, full flavoured chicken, based on the French Sasso breeding company.

The Pekin ducks are a lovely tender product given the age needed to create a fulsome flavour. The ducks love the free range and are like pigs in clover waddling all over the fields.

Isle of Skye Shellfish When one thinks of Skye, one thinks of The Cuillins, rugged mountains, dramatic scenery, the sea and of course shellfish, it is at the heart of every menu on Skye’s esteemed food scene. With langoustines, lobsters, scallops and crabs delivered straight from a fisherman’s catch.

Located at the south east of the island at Kyleakin Ali, Billy and Iain and their families have been creel fishing for langoustines for generations. Traditional skills and care allows us to do the easy bit of bringing this amazing produce to you.

On the mainland we dream of such fresh fish and, over the past three years, I think we have cracked the next best thing. With the help of famous Skye Chefs and restaurateurs Shirley Spear and Michael Smith we have been introduced to the best and most reliable fisherman on the island.

Campsie Glen Charcuterie This small family business was founded in 2015 by Duncan Smith, who spotted a gap in the market for Seafood Charcuterie. Within one year it was named Delicious Magazine Seafood Product of the Year and has already built a loyal following. Charcuterie, the art of curing, drying and smoking is generally thought of in terms of meat and traditionally pork. Duncan cures his fish for up to seven days in three distinct cures; Island, Highland and Lowland. He then dries the fish, the most important stage, removing up to 25% of the moisture, by carefully controlling air temperature, humidity and flow, before finishing it off with a traditional smoke, to give it depth and flavour.

Mr C’s Pies Founded by Robert Corrigan under the ethos of creating cold raised pies equal to the quality of produce available in Scotland’s larder. This he has achieved, with two Michelin starred chef Andrew Fairlie recently commenting; “Robert’s pies are the best pies of their type that I have ever tasted.” Robert offers a range of twelve pies, from traditional pork to game. Each pie uses quality Scottish ingredients, with the pastry made using organic flour and specialist Italian lard.

Puddledub Farm The Mitchell family has farmed at Clentrie Farm, Auchtertool since 1905. Tom and his sister Camilla established Puddledub in 1999, seeing a growing market for their local home grown Pork. Puddledub’s philosophy is simple; to create perfect pork, with genuine provenance and a short supply chain. All their pigs are bred and reared at Clentrie, fed on homegrown wheat and barley and bedded on straw from their fields. They butcher, cure and cook all their pork on the farm and as such can truly guarantee complete traceability from farm-to-plate.

Great Glen Charcuterie Anja and Jan Jacob founded Great Glen Charcuterie in 2003, from their home in the Highlands of Scotland. Using sustainably sourced local wild venison they have created a selection of highly acclaimed Venison Chacurterie products; Salami and Green Peppercorns, Chorizo, Bresaola and Smoked Venison. These stunning products are extremely versatile and can be used on simple charcuterie boards or in any number of other dishes including; pizza, quiche, salads, scallops, linguine, traditional stew and many more.

Charles Macleod Charles Macleod is a traditional butcher business established in 1947. Located in the pristine Outer Hebrides, the business is now run by the third generation of the Macleod family. The mainstay of the business is the production of the world famous Stornoway Black Pudding. Now with its own European PGI (Protected Geographic Indicator) Status, this humble local delicacy has become a gourmet staple in many of the top restaurants throughout the UK.

Inverlochy Vintage Located at the western end of The Great Glen at the foot of Ben Nevis, outside the historic town of Fort William, Highland Smoked Salmon are a privately owned specialist smokehouse that has been manufacturing and supplying smoked salmon for over a quarter of century. Their salmon is both cold and hot smoked.

Kilduncan Farm Eggs Originally founded by Donald Peddie and his team. Kilduncan Farm in Fife is a small scale free range egg producer supplying us with the highest quality hen and duck eggs. On Donald’s retirement, Kilduncan has recently been purchased by The Blyth Family, who have been producing eggs in Fife for over seventy years and are keen to maintain the Peddie’s reputation for excellence. We also work with a second duck egg producer Robert Love, Love-a-duck, near Aylth

Milk is natural, healthy and full of goodness, that is the way Katy Rodger likes to keep it. The family’s closed herd of 60 British Freisian cows were all born on the family farm, Knockraich and provide the milk which is then churned in their custom-built creamery. Katy and her daughters, Helena and Catherine, have been making yoghurts, crème fraiche, crowdie and cultured butter since 2009.

Their products have attracted praise from the food industry picking up multiple awards.

Isle Of Mull Cheese Jeff and Christine Reade moved to Sgriob-ruadh Farm in 1981. It had no roof and a generous array of plants growing within its ruins. Over 30 years later, the farm buildings have been renovated and extended to include a large cheese cellar where Mull’s only dairy farm matures its wares for up to 18 months. Their raw cheeses are made from the fresh milk of Sgriob-ruadh cows, using only renewable energy. The results are their famous Isle of Mull, a tangy farmhouse cheddar that occasionally develops blue veins (if you’re very lucky).

Errington Cheese Cheese making began in 1983 at Walston Braehead Farm as Humphrey Errington looked to diversify the farm and dependence on government subsidies. Humphrey became interested in sheep milking and ewes milk cheese because of the ancient tradition of this activity in the Upper Clyde area. Humphries daughter Selina and her husband Andrew now run the farm and cheese business. They run 450 dairy Lacaune sheep in the Southern Uplands of Scotland 1000ft above sea level. All the milk is made into cheese by hand using traditional methods on the farm by a small dedicated team.

Highland Fine Cheeses Highland Fine Cheeses is a family business established by The Stone Family in 1963, manufacturing traditional cheeses unique to the Highlands of Scotland. These have become some of Scotland’s most recognisable cheeses, specialising in soft, creamy varieties. The range includes oatmeal and peppercorn covered Black Crowdie, until recently called Gruth Dhu. Caboc, rolled in its trademark pinhead oatmeal. Blue Murder, Strathdon Blue and Morangie Brie.

Inverloch Cheese Inverloch make fantastic cheese from their own cow and goat milk, produced on the beautiful peninsula of Kintyre. Started by Kay Eaton, their first product was Inverloch goats cheese. They also produce two other waxed cheddars, Drumloch, a full fat cows milk, and The Isle of Kintyre Apple Smoked Mature Cheddar.

Kenmore Bakery On the shores of Loch Tay, a mile from Kenmore, Keith and Sheila Mitchell have been making Oatcakes and Tablet exclusively for Ochil Foods since 1994. Each and every oatcake and piece of tablet are made and cut by hand. They have gained a loyal following as well as being recognised by numerous Great Taste Awards.

Gourmet Pasta Founded in Morningside, Edinburgh some 25 years ago, Mickail Mikroulis continues to make the finest freshly made pasta in his new kitchen in Leith. Mickail’s range includes; Angel Hair, Linguine, Tagliatelle and Ravioli, which are revered by many.

Summer Harvest Oils For more than 130 years, Summer Harvest have farmed the green hills of the Strathearn Valley at Ferneyfold Farm and it is from here, husband and wife team, Mark and Margaret Bush have been producing their exceptional oil.

They take great care in traditional rotational farming techniques, nurturing the crop to produce cold pressed rapeseed oil of the highest quality.

Cullisse Rapeseed Oil For over 150 years the Mackenzie family have farmed the rich, fertile soils of Easter Ross, surrounded by the beautiful coastlines of the Moray, Cromarty and Dornoch firths, and sheltered by the rugged mountains of the north west Highland range. It is this unique geography which creates the distinct taste of Cullisse Rapeseed Oil. Robert Mackenzie is truly committed to giving back, and as such donates 20p for every litre sold to his chosen charity Farm Africa, who work with grass roots farmers in Eastern Africa, improving the food security and livelihoods of smallholder farmers whilst promoting climate smart approaches that ensure farmers can also manage their natural resources sustainably.

The Visaro family have been making Ice Cream in Scotland since 1955. Vincent is a true artisan with an unrivalled focus for quality. He is undoubtedly one of Scotland’s best Ice Cream and Sorbet makers and for this reason has been Head Judge at The Scottish Ice Cream Awards for the past fifeteen years.

Leadketty Farm Fruit Leadketty has been farmed for the past 80 years under the capable stewardship of the Corrigall family. Harold and Moira Corrigall and their son Stephen manage 16 hectares of strawberries, raspberries and brambles employing over 100 people every year for the picking season.

Leadketty are located right on our doorstep, the heart of berry country. The big advantage of this is that we can collect our fruit daily, often only a matter of hours after being picked. This means the freshest berries straight to your restaurant and no time wasted in storage or transport.

Galloway Lodge Preserves Established in 1971 by Nigel Hesketh, Galloway Lodge Preserves has grown into one of the most popular and successful producers of high quality marmalade, jam, chutney, jelly and mustard in Scotland. Now run by Fiona Hesketh with help from her two sons Sholto and Ruaridh and their very able staff. They are a true family business that is obsessed with the quality of their product and ensuring that each jar that they produce is as good as the last. Only the finest ingredients are used and cooked in small batches using traditional methods - this guarantees a quality product with an authentic taste.

Chain Bridge Honey

Chain Bridge Honey Farm, Berwickshire was founded in 1948 by William Selby Robson and is still run today by his son Willie and wife Daphne and their three children Stephen, Heather and Frances.

They currently have nearly 2,500 hives in a 40-mile radius of Berwick-uponTweed and can produce up to 80 tonnes of heather and flower honey per year. This scale puts them in the rare position of being able to supply honey all year round without having to rely on imports. The knowledge and expertise built up over 70 years of trading allows them to produce what we believe is the best honey money can buy.

1988

1949 Andrew Dixon takes over the running of Broadleys and purchases 1946 Balgour Farm adding Free Range Turkeys to his farming enterprise. Major Alastair Dixon founds his herd of Native Aberdeen Angus Cattle at Broadleys Farm, Gleneagles, Auchterarder, Perthshire.

1986 Agricultural Holdings sold.

Neil and Annie Dixon purchase Ochil Foods as a trout farm, near Auchterarder and diversify into wholesaling a range of local produce.
