Detox Recipe by Ben Rule, Odyssey Chef

Members often ask me how to put together this Odyssey menu favourite. Not only is it very easy to make at home, but it also includes some great ‘superfood’ ingredients in it which can help aid in liver cleansing, your weightloss goals and overall liver detoxification.

Serves 2 • 200g mixed quinoa • 150g fine beans • 100g tinned chick peas • A large handful of baby spinach • A few leaves of both basil and flat leaf parsley finely chopped • Mixed seeds (pumpkin, sesame and sunflower) • Bayleaf and 2 cloves of garlic • Half a lemon First drain and rinse the chick peas, drizzle with a few drops of the coconut oil and bake at 220°C for about 20/30mins turning occasionally. Meanwhile, cook the quinoa in a pan of simmering water with a bayleaf or two and a couple of cloves of garlic. This will take about 15 to 20 mins but check the packet as times can vary a little.

Towards the end of the cooking time, lightly toast the seeds under the grill and blanch and drain the fine beans in boiling, salted water for 3 mins. When cooked, drain thoroughly and drop into a mixing bowl adding the crunchy chick peas, quinoa, baby spinach, chopped herbs and the remainder of the coconut oil. Season to taste, toss all ingredients together and dish up on warm plates served with a wedge of lemon. To make this meal a little more substantial, simply add some grilled chicken, seared seabass or even some flaked poached salmon.

Metabolic Afterburn One of the biggest unknown and misunderstood subjects within fitness is Metabolic Afterburn. One of the most important things to remember when exercising is that it is not the amount of calories you burn during a workout but the amount of calories your body continues to burn after a workout that counts. Metabolic Afterburn is one of the biggest contributors to weight loss and the way in which you train will determine the amount of Metabolic Afterburn you achieve. There are 2 main types of training: firstly we have ‘Steady State Training’, this is where you train at the same intensity for a given time e.g. 20 mins at level 4 on a bike. The other type of training is called ‘Interval Based Training’, this is done by changing the intensity of a workout at specific times e.g. 1 min walk on treadmill followed by 30 seconds sprint repeated several times.

Interval based training is what raises your Metabolic Afterburn by basically shocking the body’s metabolism into continuing to burn calories for hours after a gym session. The intensity of a workout is more important than the duration of a workout. When we train in this way we also change the component structure of our bodies. Resistance training is a huge part of this. Resistance interval training will help develop and increase muscle within our bodies whilst also reducing the amount of body fat we have. The more muscle we have in our body the more calories we burn at rest, this basically means that if we increase muscle within the body we burn more calories at rest. For example, for every 3kg of muscle we gain we burn an extra 300 calories per day, in other words we burn 300 calories for FREE! It’s a win-win situation!
