INVITATION EPCAS Winter General Assembly “New Thinking” 30 January – 1 February 2012 Maastricht, The Netherlands

Preface Dear EPCAS members, We are proud to invite you for our upcoming EPCAS Winter General Assembly, which will take place on January 30th and 31st, 2012. After the Winter General Assembly, which is organized exclusively for the EPCAS members and several prospective members, the European Catering Conference will take place. The European Catering Conference is the sequel of the BeNeLux Party Caterer Congress, which EPCAS initiated last year. This year, both the EPCAS Winter General Assembly and the European Catering Conference are inspired by the theme “New Thinking”. The EPCAS Winter General Assembly will start with the traditional opening dinner and presentations of the members of EPCAS at EDEN Design Hotel Maastricht on Monday evening the 30th of January. On Tuesday morning, January 31st, we are invited by the Queen’s Commissioner at the Provincial Government Buildings on the Meuse. Our General Assembly will take place in the exact same room where the Maastricht Treaty was signed in 1992 and we are very excited about welcoming you right there, at the birthplace of the European Union. After the Winter General Assembly, the European Catering Conference officially starts. More information about the conference is stated in the official invitation, which you have received as well. We are proud to inform you that several EPCAS members have committed to host one of the workshop sessions during the European Catering Conference. Our special thanks goes out to Arjan de Boer (Director, Shoot my Food), Daniel JohnsonAllen (Director Operations, Moving Venue), Miguel Júdice (CEO, Lágrimas Hotels & Emotions), Rob Baan (Managing Director, Koppert Cress), Arnaud Rannou (Director, Mychefcom) and Christian Chytil (Director, Impacts your Event) for their commitment. One of our goals is to welcome a thousand European caterers at the conference in 2015. With the combined programme of the Winter General Assembly and the European Catering Conference, we have made some major steps towards the future and we are very much looking forward to further improving this concept together with you. As EPCAS member, you play a very important role in the European Catering Conference. You are, after all, the initiator of this conference and an ambassador of our industry throughout Europe. Thank you for your support and we are looking forward to welcoming you soon in Maastricht! With kind regards, The EPCAS Board, Advsiory Board and Conference Committee

A special word of thanks goes out to… The following EPCAS members, who have committed themselves to hosting a workshop session during the European Catering Conference. Daniel Johnson-Allen Moving Venue Many of you have met Daniel Jonson-Allen during the EPCAS Summer General Assembly in Portugal, last August. Daniel is the director operations of the London-based leading event catering company “Moving Venue”. One of the prestigious catering experiences of Moving Venue was the catering for the Royal Family of The United Kingdom, as Daniel already shared with you during the Summer General Assembly. During his presentation at the European Catering Conference, Daniel will lead the way in a world of high quality and even higher expectations. Marie-Luise Weiss Cup Concept During the EPCAS Summer Meeting in Portugal, many of the attendants were very enthusiastic about the Cup Concept. A word of thanks goes out to Christian Chytil from Impacts – your event. He is not only a new member of EPCAS representing Austria, but he also introduced Marie-Luise Weiss, marketing executive of The Cup Concept, who will host a workshop during the European Catering Conference. The cup system is not only a benefiting partner concerning the ascending issues of environmental friendly – and hereby ecologically correct – events, it also holds a number of opportunities for event operators and caterers to increase revenue and minimize costs. In her presentation, MarieLuise Weiss will cover why environmental issues will become daily business in catering and events, what the possibilities are to boost the ecological aspects of an event, and then achievable manners about how to get there and how to make money with it. Rob Baan Koppert Cress We are proud to announce that Koppert Cress, represented by Bart Leemans, is a new member of the Committee of Related Branches of EPCAS. Koppert Cress has developed taste into art by providing seedlings, flowers and leafs of various plants, each of which amaze by their natural taste and appearance. Rob Baan, CEO and owner of Koppert Cress, made a successful business out of these cresses with his vision and a drive to do things differently. During his presentation, you will experience the unique flavours of Koppert Cress and the added value of these cresses to the catering industry. Arnaud Rannou Mychefcom Arnaud Rannou, director of Mychefcom, is the newest member of the EPCAS Advisory Council. After working in the event business for many years, Arnaud has been in charge to develop sales and marketing for ‘Traiteur de Paris’, a new member of the Committee of Related Branches, which manufactures convenience products for caterers. Arnaud has travelled around the world to understand the need of caterers and how convenience products can help them in their day to day business. Recently, he launched his own business and works on connecting producers and caterers throughout Europe. In his workshop, he will use his experience to guide you through the world of convenience products.

Miguel Júdice Lágrimas Hotels & Emotions EPCAS Member Miguel Júdice from Lágrimas Hotels & Emotions, one of our hosts during our EPCAS Summer General Assembly in Portugal, has also committed himself to host a workshop session during the European Catering Conference. He will share one of his best practices, in which he will elaborate on the 37th international congress of Relais & Chateaux which Lágrimas caterered in November 2011. The Relais & Chateaux congress is an event for leading chefs and boutique hotel operators from all over the world, and there were over 150 Michelin stars attending. As we know, our colleagues in hospitality are one of the toughest groups to satisfy. In his presentation, Miguel will share his experiences with regard to catering for a group of these high standards. Miguel Casanova Traiteur de Paris During the EPCAS Summer General Assembly, many of you have met Jérôme Droin, one of the account managers of Traiteur de Paris. Traiteur de Paris recently became a member of the Committee of Related Branches and manufactures convenience products for caterers. The company designes products that make the lives of caterers and chefs easier and produces desserts, canapé’s, petit fours, side dishes and sauces from three production units in France. You will have many opportunities to try their products, while during the EPCAS Winter General Assembly and the European Catering Conference they are providing their products during the welcome dinner, the lunch and the breaks in the conference. Miguel Casanova, Sales Manager of Traiteur de Paris, will be representing the company within EPCAS. Paul de Weger C.E.O. Amplixs Interaction Management Amplixs is a company specialized in online research and data collection in the broadest sense. The clear web based reports will portray the results as a measurement, monitor or as a benchmark. Amplixs uses a technology that allows you to simplify and accelerate the process of collecting and processing data. Through online research they clarify your performances and help you make the right decisions. The service is completely focused on giving authorized users access to online information from internal or external research through unambiguous, structured and mainly efficient measuring methods. Together with EPCAS, Amplixs will set up the Catering Quarterly Monitor to commit research and gather relevant data about the European Catering industry of which the results will be distributed to all members of EPCAS. The results will be clarified during the future General Assemblies.
