MARCH 2022
AUTUMN 2020
The colder months are behind us, the countryside is blooming and the sun is shining. The Maltese don’t much like the cold and you can tell from the increasing number of happy faces. Everyone is looking forward to the brighter, sunnier, warmer days on the horizon. The weather during spring in Malta is perfect for outdoor sports and activities in nature. If you like hiking, this is the best time to head outdoors and plan a trekking adventure. We’ve got you covered with some of the most adventurous hiking trails that will take you through breathtaking spring scenery. Flick through the pages and you’ll see why this is the perfect month for a road trip to Malta’s sister island, Gozo. The island awakens to rolling hills of burgundy and gold, as patches of clover and haystacks adorn the countryside. If you’re a foodie, this is your ideal destination. The island is jam-packed full of seaside eateries that are just waiting to be explored, so we’ve listed a few of our favourite spots, which you definitely shouldn’t miss. With Easter coming up next month, we’ve delved into the origin of our very own traditional sweet; Kwarezimal, a traditional Lenten biscuit eaten across the islands. And yes, we’re spoiling you by giving out its recipe to recreate this sweet taste of Malta in the comfort of your own home. We couldn’t be happier to welcome you!

Manchester United and VisitMalta are once again collaborating on a promotional campaign aimed at enticing Manchester United fans to choose Malta as their next travel destination. “Escape to Malta” takes us to the Maltese Manchester United Escape Room at Old Trafford, where Scott McTominay, Dean Henderson, Raphael Varane and Victor Lindelof take up a series of challenges and riddles, which they all have to succeed in, so that they can have the opportunity to escape to Malta themselves. Throughout the four challenges, the four team players find out more about Malta’s seaside towns, the unique diving attractions, the beauty of Gozo and Mdina, as
well as a mention about the glorious weather of the Maltese Islands, where Malta’s very own 300 days of sunshine get an honourable mention. The fact that Malta is the official destination partner of Manchester United is leading to Malta obtaining visibility and marketing coordination on an unprecedented level, not just in Europe but in other markets such as America, Asia and the Middle East. It is also helping in establishing Malta as a centre of excellence for sports tourism, a tourism niche which in 2022, most notably the first three months, is expected to continue assisting in the recovery of the tourism sector.

Friends with Plants: An Art Exhibition by Ryan Falzon Il-Kamra ta’ Fuq, Mqabba
The exhibition features oil paintings based around the theme of plants – a subject which has currently become a trademark and a synonym of Ryan Falzon’s oeuvre. Falzon goes a step further by including figures in his greenery inundated interiors. This comes as no surprise. Falzon amalgamates the concept from his Botanica series with another series titled Selfies, which has not yet been exhibited. Just like many others confined inside domestic spaces during several periods in the past two years, Falzon emphasises that plants were of a great comfort during the pandemic. This pandemic showed us how much the human being craves companionship, and plants are a perfect non-demanding companion. The lack of commitment required by plants created this wordplay on the title Friends with Plants.

The Feather Collector Exhibition Valletta Contemporary Art, Triq Lvant, Valletta
Wioletta Kulewska’s solo exhibition at Valletta Contemporary Art features her latest series of large-scale paintings,
watercolours, collages, sculptures and installations; a body of work instigated during Kulewska’s residence at The Pedvāle Art Museum in Latvia, 2021. Kulewska’s paintings oscillate between abstraction and representation. In her practice, she explores threads associated with spirituality and human relations within the natural world. Kulewska is interested in the imagery of prehistoric cultures, analysing its contents, signs and symbols. Her practice is informed by her travels — trips to the Baltic, Caucasus and Eastern Mediterranean territories have resulted in encounters within the ancient world, that have served at points of departure for the distinct narratives found in her extended body of work. Forms of peculiar souvenirs brought back from these expeditions, such as small artefacts or elements of nature (feathers, shells, bones), can be found across her canvases.
The programme attempts to explore the ways women are seen and the ways women see themselves, whether through the expectations they place on themselves or the external forces of family and friends and society at large. Collectively, the films explore themes of vanity, survival, responsibility, care, dependency, oppression, emancipation, dissent, activism, celebration, love, friendship, disappointment, and empowerment. Ultimately, this collection of films sets out to create a cinematic context for framing the everyday challenges of every woman – both ordinary and extraordinary, and anywhere in between. It embraces the curatorial theme of highlighting women who have been “pushed to extraordinary acts when their rights and lives – and those of their societies – have come under threat”. It also turns a particular lens on women and girls in public and private space; on safety and expected behaviour. Get your tickets from www.kreattivita. org

MUŻIKA MUŻIKA
THE REVIVAL OF MALTESE MUSIC
Words by Terrence Mifsud
The local music industry and its esteemed followers have been yearning for a reputable music festival for a number of years. Fortunately, ‘Mużika Mużika’ (literal translation of ‘Music Music’), successfully managed to revive the industry in a span of two years, pulsating hope in music devotees, singers, writers, singer-songwriters, musicians and producers alike.
music. The Maltese festival ‘Għanja tal-Poplu’ (People's Ode Song Contest) did just that, and it is still currently running from its commencement in 1973 with the help of the Youth Travel Circle (YTC). They have been hosting a yearly contest with national music giants taking home first prize, including singers Glen Vella and Eleanor Cassar back in 2000, and Corazon in 2007,2009,2010, and 2016.
THE HISTORY OF THE MUŻIKA MUŻIKA Mużika Mużika’s bright future had an indirect humble beginning back in 1960. It all started when a Christian youth group banned together to organise a national festival for the enjoyment of the Maltese public. This relatively small festival created a tremendous ripple effect, motivating organisations to host festivals specifically targeted to re-vitalise Maltese
In 1981, The ‘Festival Internazzjonali tal-Kanzunetta Maltija’ was announced, delighting prospective competitors to submit their entry in hopes to share their music with the Maltese public. What was different about this festival was the actual aim of the outcome. While it’s main audience was the Maltese public, this particular festival, which we now know as ‘Mużika
Mużika’, wanted to amalgamate the ideas of creating Maltese music and not only sharing this with the national audience, but also to expand to an international level. The top three of this festival had the opportunity to compete in international festivals, with the Maltese language, something which was implicitly frowned up due to the disappointing results in the Eurovision Song Contest in 1971 and 1972. In some instances, this festival also incentivised international artists to collaborate and add on songs in Maltese on their album/CD. To the astonishment of musical aficionados, following 20 years of consecutive entertainment, the televised ‘Festival Internazzjonali tal-Kanzunetta Maltija’ was abruptly called off. Multiple people even petitioned for its return, albeit it making a surprise comeback for one year in 2013, still the festival never recuperated to its prime years. GRANDIOSE RETURN In 2021, with the support of the Minister for the National Heritage, the Arts and Local Government, it was announced that ‘Festival Internazzjonali tal-Kanzunetta Maltija’ was returning decades after its absence, under the new name ‘Mużika Mużika’. With over 320,000 televiewers from all around the country, the festival took the industry by storm, instantaneously becoming a national sensation. The inaugural winner was Glen Vella, Malta Eurovision representative in 2011 with ‘One Life’ and the ‘Għanja tal-Poplu’ co-winner in 2011. His song ‘Ħarsa Biss’ (‘Just One Look’), written by musical legend Joe Julian Farrugia and composed by singer and producer Philip Vella, initially tied with runner-up Christian Arding, both scoring 78 points. Glen Vella eventually won the tiebreak due to his overall televote score. This nail-biting finish gripped viewers, causing them to eagerly await next year’s edition. MUŻIKA MUŻIKA 2022 Spanning over three days between the 24,25 and the 26 of March 2022, this year’s large-scale live festival will surely be a marvel of musical talent, live orchestra, brilliant staging, and ingenious compositions. This year’s participants have already been announced and the line-up is undeniably impressive. From 2013 Junior Eurovision winner Gaia Cauchi, to 2012 Eurovision representative Kurt Calleja, 2017 Eurovision representative Claudia Faniello, and X-factor Malta participants Nicole Frendo and Bloodline, this year’s show is set to be worth the hype and vigorous anticipation.
Which one of the 20 participants will take home the highly regarded title of ‘Mużika Mużika 2022 Winner’?

MANI
KATA by Terrence Mifsud
Manikata, translating literally to ‘Apple’s Spring’, is a quaint rural village to the North East of Malta. Bordering Mellieħa, Manikata is home to breathtaking beaches, an abundance of farm lands and remnants of a rich historical past that even goes back to prehistoric times. One cannot mention Manikata without elaborating on the beauty that is Għajn Tuffieħa. Maltese for ‘Apple’s Eye’, Għajn Tuffieħa, also known as Riviera, lies posteriorly to Manikata, neighbouring Mgarr. To get to this beach, a 200 steps staircase must be used to descend and dive into the crystal blue sea. Famous for gorgeous sunsets, restful walks and striking hikes, Għajn Tuffieħa is a natural attraction that needs to be on every traveller’s to-do list. Manikata was particularly popular in the Bronze Age and the Roman Era. Remains such as cart ruts still lace the surroundings of the village, with one lining covering the Miżieb area, all the way to the cliffs close to the Mejjiesa bay by passing through the parish church. The Roman era left its mark in Manikata, with its remains of Roman baths and Roman tombs. Being a fruitful land full of farmlands and pasturelands, it is not surprising that Manikata was a key catalyst in the Middle Ages, accommodating hundreds of farmers for the cultivation of fruit trees, vegetables and other crops. Since there weren’t a lot of inhabitants living in Manikata, many of the fields were owned by land owners from the former capital city of Malta, Mdina and other populated towns such as Rabat. The vast majority of this agricultural land was stripped off from the farmers to make way for a Royal Marines Centre back in the early 20th century when the British period ensued. A camp was built in Għajn Tuffieħa, hosting residential quarters for British soldiers and their families. The same camp was then shifted into a hospital during the first world war (1914-1917) to treat injured military soldiers. Residents from Manikata took the role of nurses to assist these soldiers in their recovery. Expectedly, Manikata fell victim to air-raids due to the placement of the Admiralty camp. The Roman tombs were often used to provide shelter during this turbulent era. Since most of the inhabitants of Manikata were residents from other cities and towns such as Mellieħa and Rabat, there was no initial need for a church. Being that Roman Catholicism is the dominant and official religion of Malta, and as inhabitants started to move in to this minute village, the need for a church kept exponentially increasing. This is when Lazzru Grima, a local farmer, encouraged other villagers to construct a church in Manikata. As money was being collected, the Camilleri brothers took the role to plot the land. Dedicated to St Joseph, the church was built in a span of a year with the help of the master mason Spiru Grima. St Joseph is now celebrated on the last Sunday of every August. This chapel later became too small for the evergrowing population of Manikata, causing the construction of a bigger church in 1964. Today, Manikata is transforming into a hotspot for Maltese residents due to its captivating scenery, calm ambience, serenity, and its relative close proximity to Malta’s sister island of Gozo. While not bountiful, numerous villagers still work as full-time farmers while others have taken on this role as a part-time basis or simply as a pastime. These fields encompass across areas like il-Wilġa ta’ Għajn Tuffieħa (Għajn Tuffieħa meadow) and ixXagħra l-Ħamra (The red garrigue).

THINGS TO SEE IN MANIKATA
GOLDEN BAY
MANIKATA PILLBOX
Ir-Ramla tal-Mixquqa, or as it’s most commonly referred to as Golden bay, is a picturesque sandy beach in the north western coast of Manikata. Bordered by natural dunes, high hills, and jagged cliffs, the sandy strip is also watched over by the 17th century tower which was established by the Knights of Malta. During the evening, the Golden Bay is also soughtafter for its visually arresting sunsets, while some families also meet up at the beach for a relaxing barbeque, taking particular relish in enjoying the cool cosy nights. Bus 44 can take you directly from Valletta to this glorious beach, while you can catch bus 223 from Buggiba, Qawra and St.Paul’s bay as it also stops very close to Golden bay.
Pillboxes were pivotal fortified structure during the second world war fundamentally to adhere to the British antiinvasion provisions. The pillbox in Manikata is situated at the back of the Għajn Tuffieħa Camp. This particular rectangular pillbox was the last of its kind to be built in Mellieħa and also in Malta. The fortification of this pillbox was built by the Royal engineers in the early 1930s, right during the Abyssinian Crisis. Their slick camouflaged structure fits in with the layout of the landscape while also suiting its former role perfectly. This pillbox’s current main purpose is now to serve as a remembrance of Malta’s past and affiliation in the second world war.
GĦAJN TUFFIEĦA TOWER
PARISH CHURCH OF ST JOSEPH
Built in 1637 by the order of Saint John on the cliffs looking out on Ghajn Tuffieha bay lies the Ghajn Tuffieha watchtower. It was one of seven towers constructed by Grand Master Lascaris during his reign. In line with the Lippija and Nadur Tower, the limestone tower was initially placed on the site of a medieval watch spot, equipped with a ½ - pounder gun and used as a military installation for troops to be stationed for defence. Designed by Vincenzo Maculani, the tower’s delineation was relatively alike the Lippija tower due to its square plan and two floors encased by a flat roof and a parapet. While the tower is being threatened by coastal erosion, it was renovated and reopened to the public back in 2013.
Dedicated to St Joseph, the Roman Catholic parish church is a modern and ingenious church, shedding off the traditional Baroque church designs and instilling a more critical regionalism style. Built between 1964 and 1974 and designed by Richard English in 1962, the Manikata church serves as a symbol of the rectification and reformations in the Catholic church. Taking inspiration from the Notre Dame du Haut chapel, the abstract exposition of the traditional girna, and the Megalithic Temples of Malta, England created the design with the creative intent to also incorporate the natural environment which encompasses the surroundings of the church. WIED FULIJA
HOME TO ONE OF THE MOST DIVERSE ECOSYSTEMS If you’re looking to escape the hustle and bustle of the busy streets of Sliema and Valletta during your stay in Malta, then the stretches of green landscape, and blue waters found in the quaint village of Żurrieq may be the perfect place for you. A recent addition to the already iconic attractions of Wied iż-Żurrieq and Blue Grotto, there is now Wied Fulija that offers uninterrupted sea views extending as far as Filfla. Wied Fulija served as a landfill for 42 years until its closure in 1996. However, walking along the paved pathway at Wied Fulija today, there is no way of guessing that this was once a landfill. This area in Żurrieq has flourished and is bursting with wildlife following a landfill rehabilitation project with a €4.5 million investment that WasteServ completed last year. Lined with shrubs and trees, this has become a highly sought-after area by people of all ages that go there to get away from the rigours of daily life to enjoy a nice stroll or to sit and watch the sun go down. The two waste mounds that still contain around two billion kilogrammes of waste were recontoured at a safe angle, then covered with a subsoil and a topsoil, and revegetated. Around 43,000 trees and shrubs were planted as part of this extensive rehabilitation including Maltese Everlasting (Helichrysum melitense), Olive-leaved Germander (Teucrium fruticans) and Golden Samphire (Limbarda crithmoides). A paved pathway, dotted with benches, was also created to allow access to the cliff ’s edge. With this project, WasteServ wanted to restore this area to its natural habitat and worked to transform this former landfill into a green area for the enjoyment of all. Another objective of this project was to make sure that it blends with the surrounding area. In fact, this project embraces a low maintenance design that was achieved by choosing tree and shrub species that are known for their hardiness and are well-suited to the climatic conditions of this area. One can already admire the way nature has started to reclaim the 10 hectares of land. To contribute to the already rich habitat of this area, WasteServ collaborated with BirdLife Malta to make the site an appealing habitat where the Scopoli’s Shearwater (Calonectris Diomedea) can nest by installing nest boxes. It also collaborated with the Malta Beekeepers’ Association to install a number of beehives to help with conservation of the endemic Maltese honeybee (Apis mellifera ruttneri). Owing to this project, Wied Fulija is today home to one of the most diverse ecosystems. And while this landfill had been an eyesore for so many years, it is today a great outdoor spot that will allow you to get off the beaten track. And guess what? Our national bird, the Blue Rock Thrush (Merill) has already made this stunning place its home.

ADVENTUROUS HIKING TRAILS The Latin proverb ‘March comes in like a lion, and goes out like a lamb’ gracefully depicts the shift from Winter to Spring. The build up and commencement of Spring heartens outdoor enthusiasts, encouraging them to step out of the warmth of their own home and explore the wonders of their own country through blissful hikes. Particularly in the Maltese Archipelago, March is the perfect month to take on a challenge and wander around the beauty of the islands
DINGLI CLIFFS Being the highest point on the island, Dingli Cliffs is the perfect hiking trail for adrenaline junkies and lovers of peaceful scenery. Reaching a height of 253 meters above sea level, Dingli cliffs enchants visitors with its coastal views and vicious waves splashing against the cliffs. While the hike starts along the roadside, it ends with the beauty of Blue Grotto, stretching over a 13km hike, with an estimated duration of three hours. While this may be a challenge for beginners, this western coast of the island offers hikers an exclusive view of Filfa and the Mediterranean Sea.
MDINA Mdina, the fortified and former capital city of the island, attracts millions of tourists every year to step foot into its historical buildings and its combination of medieval and baroque architecture. Hiking from Mdina’s narrow streets out into the suburbs of Rabat will give you the opportunity to pass through landmarks such as the St Nicholas Church and the medieval Bastion Square. Walking uphill towards Rabat will reward you with scenic views of the valley and the frondescence of the surroundings of Siggiewi. This trail is relatively easy, being great for beginners, lasting around two hours with an approximate length of 10km.
WIED IL-GĦASEL Wied il-Għasel, translated to ‘Honey Valley’, is a valley located in Mosta in the northern region of Malta. Engraved with a multitude of caves, one which is settled in by the Chapel of St Paul the Hermit, Wied il-Għasel is the perfect hiking spot as it houses accessible walking/ hiking paths for travellers who want to explore the nearby naturalistic groves of this place. Run through by the Maltese Victoria lines, the valley is sure to mesmerise any explorer nearby. The loop trail can be completed in around 90 minutes, bridging the city in around 6.5km.
XLENDI, GOZO Malta’s sister island Gozo is renowned for its mystifying cliffs located in the southern coast, accommodating tourists with visually arresting hikes, particularly in Xlendi. Xlendi is tremendously popular with swimmers, divers and snorkelers due to the sandy beaches stretching out the urban village. Nonetheless, the hiking trail crossing through Xlendi is not only picturesque because of the white cliffs and the coastline along the village but it also takes you to the edge of Sanap Cliffs in Munxar, where you can sit down and savour the sunset from that spectacular view. This hike takes an estimated duration of two hours and a total length of 11 km.
FREEDOM DAY IN MALTA WHAT'S IT ALL ABOUT? Words by Terrence Mifsud
Forty-three years ago, on the 31st of March 1979, the final British naval base evacuated the Maltese islands for the very last time. This triumphant moment signified a new dawn for the country’s present and future, becoming liberated from a foreigner ruler for the first time in hundreds of years. This chapter was initiated from the ripple of events that caused the country’s political independence from Britain on the 21st of September 1974, after 150 years of British rule. THE BRITISH REIGN Following the events of the ‘Imblokk tal-Franċiżi’ (literally translated to French Blockade) or as some other historians refer to it as the ‘siege of Valletta’ in 1800, the British Empire acquired total jurisdiction over the Maltese islands. The period in which Malta was ruled by Britain, was not only a detrimental period for Malta’s culture heritage and identity but it also precipitated an array of political circumstances that shaped Malta’s history. Malta’s valiant effort in the Second World War stemmed negotiations for the island’s possible autonomy from Britain. While Malta gained independence on the 21st of September 1964, a constitutional treaty with Britain, which affirmed that Malta would still serve as a base for the British military base with Queen Elizabeth II representing Malta as a Head of State, was still abided for the following decade until Malta became a Republic. When the Labour Government was re-elected into power back in 1971, it fought to revise the treaty, but still allowing the Royal Navy to use Malta as a naval base. The realisation of this treaty established Malta as independent de facto (by law) and de jure (by law), christening the 31st of March 1979 as Freedom Day, becoming a public holiday ever since. MEMORIALISING FREEDOM DAY Freedom Day is supplemented with numerous national
traditions to commemorate the historic moment through a concatenation of events and also independent ceremonies in different localities around the Maltese archipelago. 1. REGATTA Organised by the Malta Rowing Association, rowing teams from localities such as Valletta, Vittoriosa (Birgu), Senglea (Isla), Cospicua (Bormla) battle it out in an annual rowing event within the Grand Harbour. Who reigns supreme would then be gifted with an honorary shield award. This event gathers thousands of spectators that line the Grand Harbour to support their favourite team and congratulate them at the finish line. 2. MILITARY PARADE Recognised as one of the largest displays of the year, the military parade is held by the Armed Forces of Malta as well as the Malta Police Force at St George’s Square, Valletta. Similar parades are then displayed in Vittoriosa and also in front of the War Memorial in Floriana. This event is showcased on national television, with a huge number of attendees showing up to display their support as a token of respect, with high-up influential dignitaries attending the parade, including the Prime Minister, Opposition Leader, and the President. These national highrankers often place flowers on the memorials or perform an annual speech to follow the national codified constitution. 3. FREEDOM MONUMENT Designed by the local sculptor Antonio Agius to commemorate this historic moment, the Freedom Monument has become an iconic symbol in the heart of Vittoriosa. Placing wreaths on the monument as a sign of respect has become a yearly tradition that numerous people still follow to this day.
IN SEARCH OF
LOCAL HONEY Follow along with this column by Emily A Francis, as we explore further into the culture and cuisine of the Maltese Islands, starting off with fresh foods as a single item, grown and harvested locally

OH MY MALTA
33
When we first arrived in Malta, one of the first items I went in search of was local honey. Using local honey in any new location that we plan to live is important in introducing our bodies to the pollens from around our new local area. This is a sure fire way to help our bodies to begin to build its immunity. It was one of our first excursions we had planned so we jumped on the ferry and took the ride over to Gozo. I found a man selling his local honey in front of The Basilica of the National Shrine of the Blessed Virgin of Ta’ Pinu. I bought a single jar and used it daily until it was gone. My only regret was not buying more. When the opportunity came up for me to return to Gozo and meet local bee keeper Joseph DeBrincat, I couldn’t wait to bring back a much bigger jar of honey! He was as lovely as they come and I am so grateful for his willingness to show us around and teach us more about the way of the bees and the local flowers and trees that they use. Joseph keeps his hives in an area that has eucalyptus trees surrounding. This is incredibly important because in the month of August especially, the eucalyptus are the only trees still able to be used to pollinate. The leaves remain green year-round, but they only flourish in August. August in Malta and Gozo is the dry season and the other plants and wild flowers that the bees use to pollinate from are not in season. The eucalyptus trees are controversial to the people of Malta because they serve a wonderful purpose to some and are considered less than desirable by others. For a bee keeper, the eucalyptus tree is vital. But it does cause harm to the soil when the leaves fall due to chemicals that are released. They also consume a large amount of water which can deplete the soil. For the bees and for the honey, the eucalyptus trees are exquisitely important. The eucalyptus trees were planted around the 1980s as they are not indigenous to Malta. They are also not allowed to be planted any further, so what is there in the fields is all that remains of what Gozo will get to keep. Bees are precious to our environment and so many terrible practices are happening around bee hives. We need every bee and bee hive that we can possibly can get. Bees are paramount to keeping a healthy ecosystem. And honey is truly liquid gold. It is a gift from God. Honey is the one substance that no one has ever been able to identify every single ingredient in it. No one can make synthetic honey. It is only for our bees to make for us and we need them desperately. Honey is the most natural food known to man and we need to all be part of the solution in keeping the bees thriving and the honey flowing. The best thing we can do at home is plant wild flowers wherever we can. The bees need wild flowers in order to thrive. Wild flowers are heavily encouraged for everyone who has a garden to plant. We all need to work together to give our bees the pollen
they need to strengthen our immunity and theirs. Bees are fascinating little creatures and we see many more of them in Malta than I have for several years back in the states. There is a reason for that. There are chemicals known loosely as NeoNates (neonicotinoids) that are in homegrown garden chemicals in the US that have a total ban throughout Malta {1}. For this reason, the bees are still alive and thriving over here. There are 3 neonicotinoids to be exact that have a total ban throughout Malta and most of the EU as well. GOZO HONEY Gozo is known for producing the top-quality honey. There is less pollution in Gozo and there are more flowers. They have better nectar and better pollen because of the abundance of wild flowers and the eucalyptus trees, clover trees, carob trees, thistle, prickly pear cactus flowers and many more wild flowers and trees for the bees. Bees travel up to two miles from their hive. That means that in Gozo the bees can cover a lot of territory in those two miles and pull pollen from all over creating a mixed flora honey. Like baking a cake, the mixture from all the different flowers makes the best honey combinations and flavours. When a bee finds flowers to pollinate, they go back to their hives and do something called the waggle dance. There is actually a dance floor that is located close to the entrance of the hive where a honey bee will come and dance their jig to share with the other honey bees and worker bees about where the flowers are located. This waggle dance that they do is incredibly intricate and fascinating. The bee that is telling the information of the nectar through the waggle dance will indicate which direction the flowers are located by the angle of her own waggle. This tells where the nectar is in relation to the direction of the sun. The bee won’t even be finished with her dance before the crew flies out to maximise the potential of getting to that nectar. They work together in such a way that we as humans could learn so many things from. PURCHASING HONEY Because there are now honey businesses that are guilty of adding in extra sugar to the jars or other preservatives, there are very important things to look for when you are on the hunt for the most authentic local honey. The most important words to look for on any jar of honey are PURE LOCAL HONEY or NATURAL LOCAL HONEY. Always look to purchase honey from the bee keepers and farms if you are able to find them. If you are at the store, make sure you are buying jars that have those words pure and local. If those jars do have any additional ingredients added to the honey, it will be listed in small print at the bottom of the jar. Always look for the fine print and choose a jar that doesn’t have any.

KWAREŻIMAL MALTESE LENTEN BISCUITS by Rebecca Mallia Bugeja
THE HISTORY
THE RECIPE
It is believed that kwareżimal were introduced in Malta during the reign of the Knights Hospitallers of St. John. They are traditionally baked during Lent and thus one can only find them in the Maltese culinary calendar at this particular time of year. In fact, the name Kwareżimal is derived from the Italian word ‘Quaresima ’which means Lent, and refers to the 40 days of sacrifice associated with the period.
These chewy biscuits, packed with loads of flavour are made using ground almonds, oranges, lemons, cocoa and spices - all natural products available at the time. This recipe uses oats to increase dietary fibre so as to give a healthy twist to this delicious morsel.
In medieval times sugar was not restricted during Lefnt like it usually is nowadays, because it was considered to be a type of ‘spice' due to its medicinal properties. Back then, it was meat and animal products that were not allowed during this religious period, thus making Kwareżimal naturally vegan and dairy free.
It also uses 100g less sugar than recommended, thus why it is best to use molasses or dark brown sugar as they increase the flavour and allow for such a reduction to be made. Traditionally chopped almonds are used for the top decoration but personally, I prefer pistacchios as they give a pop of colour and flavour as well as that extra crunch. They are quick and easy to make, and can actually be enjoyed any time of year!
Makes 8 Kwareżimal
INGREDIENTS
METHOD
100g plain flour (gluten free if needed) 100g ground oats (gluten free if needed) 200g ground almonds 100g molasses or dark sugar 2 tablespoons dark cocoa powder 1 teaspoon ground nutmeg 1 teaspoon ground cloves ½ teaspoon ground cinnamon (increase to 1 tsp if desired) 1 tablespoon natural vanilla extract Zest of 1 lemon Zest of 1 orange Juice of 1 orange 1 tablespoon orange blossom water (ilma zahar) 60ml water, approximately (can be increased to 80ml if needed) Honey and chopped nuts for decoration
1. 2. 3. 4. 5. 6. 7.
Preheat the oven to 180oC. Mix all the dry ingredients together. Add the orange blossom water, vanilla extract and juice. Slowly start to add the water until a soft dough forms. Shape the biscuits into flat logs, roughly 4cm by 10cm and around 2cm thick. Place on a baking tray lined with baking paper and bake for around 25 minutes. Once removed from the oven leave to cool for around an hour and then drizzle with honey and chopped nuts. Feel free to use any chopped nut, I used pistacchios for a pop of colour but anything works!

Mdina, Malta
YOU CANNOT MISS SIGHTSEEING AT MALTA’S SILENT CITY If you’re looking to have a quiet, easy morning while getting your culture fix, look no further than Malta’s Silent City, Mdina. Serving as Malta’s old capital city, Mdina’s fortified walls sit on top of a hill overseeing neighbouring towns. Take in the stunning views while enjoying the medieval and baroque architecture. You can travel directly to Mdina from Valletta and back using route 50. TRAVEL ACROSS THE GRAND HARBOUR USING THE FERRIES The Valletta Ferry Service operates a half-hourly service between the Three Cities and Valletta. Described as pieces of living history, the Three Cities (Vittoriosa, Senglea and Cospicua), sit at the heart of Malta’s historic centre, directly across Valletta’s Grand Harbour. We recommend having lunch at one of the many restaurants located at the Vittoriosa waterfront which are just a few minutes away from the ferry service stop. END YOUR DAY IN STYLE Take the bus to Malta’s most stylish town, Sliema. Simply take route 18 to Valletta from Birgu and then take route 13A to Sliema. Home to Malta’s largest shopping mall, you’ll find the island’s top restaurants and cool, exclusive bars to end your perfect day.
