ONLY GLUTEN FREE RECIPES Apple And Butternut Squash Meatloaf

This is a healthy way of serving meatloaf, it is low fat with added apples and butternut squash and is truly delicious! Serves 4 – 6


INGREDIENTS: 1 1/2 pound lean organic ground beef  1 lb. organic butternut squash, peeled, seeded and cut to small pieces or finely chopped  1 cup organic parsley, chopped  1 tsp. sea salt  1 tbsp. organic GF apple cider  2 organic apples, peeled, cored and chopped  2 garlic cloves, minced  4 oz. good quality goat cheese  1 tbsp. pure maple syrup 

DIRECTIONS: Preheat oven to 350 F  In a large bowl mix all the ingredients together except maple syrup  Form a loaf and place in a baking dish, brush entire meatloaf with maple syrup  Bake for 1 hour at 350 F covered with foil, take foil off, increase temperature to 380 F and bake another 30 minutes or until well browned  Remove meatloaf out of the oven, cover with foil and let it rest for 20 minutes before cutting, serve with GF gravy 
