Only Gluten Free RÊcipes Carrot And Leek Bisque This tasty bisque is creamy, rich in flavour and nutritious, yet low in fat. Traditionally bisque has rich, creamy and even texture and is made from pureed seafood or vegetables, so it has a thicker, more velvety consistency than soup. If your kids don’t like the texture of cooked vegetables, serving them bisque is a good way to include vegetables in their diet.
Ingredients: • • • • • • • • • • •
1 ½ tbsp. coconut oil 1 organic celery, diced 4 organic medium size carrots, diced (do not peel) 1-cup coconut milk 2 garlic cloves, minced Garnish ~ chopped organic green onions 1 organic leek, using only the white part, cut lengthwise and dice ½ tsp. organic GF dried thyme 4 cups organic GF vegetable broth 1 ½ tbsp. organic GF apple cider Sea salt and organic GF freshly ground pepper to taste
Serves 6
Directions: • Add coconut oil, leeks and celery into a pot and sauté 5 minutes on low heat, add thyme and stir • Add carrots and vegetable broth and simmer for 15 minutes • In batches add soup, coconut milk, apple cider and garlic into a blender or food processor and process until smooth, return back to pot • Garnish with chopped organic green onions, sometimes I add a pinch of cayenne if you like a bit of spice.
