1 cup all purpose GF flour (I use cup 4 cup) ¼ cup GF hemp hearts 2 tsp. aluminum free baking powder 2 tbsp. freshly ground flax seed + 6 tbsp. water (mix and place in the refrigerator for 30 minutes) ½ cup pure maple syrup ½ cup GF brown or white rice flour ¼ tsp. sea salt 1 tsp. organic GF cinnamon ¼ cup coconut oil (room temperature) ½ cup coconut milk (room temperature) or almond, rice or hemp milk.
Directions: • Preheat oven to 375 F and place rack in the middle of the oven • In a bowl combine, flour, hemp hearts, sea salt, baking powder, cinnamon and walnuts. • In another bowl mix coconut oil, maple syrup, coconut milk and flax mix, then add to dry ingredients and stir couple of times, then add blueberries and gently combine all ingredients until all the flour is covered • Spoon out into muffin pan lined with parchment paper cups • Bake for 30 minutes at 375 F, cool before serving
