Weelicious Spinach Cake Muffins Makes 24 Mini Muffins or 8 large muffins Ingredients: • 1/2 cup unsweetened applesauce • 1 large egg • 2 teaspoons vanilla extract • 1 cup fresh spinach, packed • 1/3 cup sugar • 2 tablespoons vegetable or canola oil • 1 1/2 cups all-purpose flour • 1 teaspoon baking powder • 1/2 teaspoon baking soda
3. Place the remaining ingredients in a separate bowl and combine. 4. Pour the spinach puree in a large mixing bowl. 5. Slowly mix the dry ingredients into the wet until combined. 6. Scoop batter into a greased mini or regular muffin tin, filling each cup 2/3 of the way. 7. Bake for 12 minutes for mini muffins and 18 -20 minutes for regular sized muffins.

FAVORITE AUTHOR? I read every single Roald Dahl book as a kid. I love Robert Graves as well. Dumas is an incredible writer. I enjoy motivational books, so Tony Robbins is a favorite of mine. I like Tim Ferris’s books as well as podcasts. I like reading biographies of American Presidents (I am up to about 15 so far).
FAVORITE PLACE TO VACATION? We have been to the Florida Keys as a family several times. The water is incredible, you can see fish 50 feet down below the surface. I did one of my fellowships in France and we went to the south of France to visit the coast. Southern Italy is another incredible place we have been that I will go back to for sure. It is one of the most beautiful places I have ever been. DO YOU HAVE ANY HOBBIES? I am an avid golfer. I also really enjoy cooking and making interesting types of ice cream. I love listening to audiobooks on every topic imaginable.

From its beginning in 1977, Texas Back Institute’s goal has been to be a high-level multi-disciplinary academic spine center, integrating the forefront of science and education with the best health-care business practices. Forty-five years later, Texas Back Institute is one of the largest freestanding multidisciplinary academic spine centers in the world. Dr. Stephen Tolhurst, M.D. is the new President of Texas Back Institute and a great example of the medical talent it attracts to our area. He studied at the University of Chicago for Undergrad, and medical degrees, followed by the Orthopedic Residency Training Program at University of Michigan, and ending with a combined orthopedic and neurosurgical Spine Surgery Fellowship at the Cleveland Clinic before joining the Texas Back Institute team in 2012. With the “Surgery as a Last Option” Approach, the providers at Texas Back Institute believe surgery is not always the best course of treatment. This has been a cornerstone of their care philosophy. Hope Clinic of McKinney The mission of Hope Clinic of McKinney is so inspiring. How and when was the clinic founded?
Hope Clinic of McKinney saw its first patient in 2017, the fulfillment of a plan that began in 2014 with the recognition of the unmet need for quality care for the uninsured in our community. Our research shows that 12% of McKinney residents are without medical insurance. In East McKinney, where Hope Clinic is located, the need is even higher. In June 2016, a team of volunteers and partners formed to bring our mission of providing free healthcare to Collin County’s under-resourced and uninsured to life. Hope Clinic of Garland, a well-established charitable clinic in Dallas County, welcomed our team into their facility and provided much-needed encouragement and knowledge. We then partnered with the Baptist Immigration Center, who generously offered to donate the use of their building to Hope Clinic to use when they were closed. And, Empowering Community Health Outreach donated their consulting services to provide vital direction and infrastructure to clinic planning.

Through the hard work of our volunteers, and with the support of the community, Hope Clinic began operations one day a week at the Baptist Immigration Center in July 2017 to provide medical services regardless of a patient’s ability to pay. By 2018, clinic operations expanded to 2 days. And in September 2019, Hope Clinic relocated to our current location which is a dedicated permanent clinic space on E. Lamar. In January of 2022, we expanded into the space next door, and we now call this 3,000 square foot space home. Our vision is to expand operations over the next few years to be able to see patients 6 days a week.
Hope Clinic truly has a life-changing impact on its patients. How have you personally seen this in action? Do you have any patient stories or testimonials you would like to share?
There are many, many stories that we can share from the patients we are privileged to serve. The majority of our patients are Hispanic females, ranging in age from 40 to 64. Many of these are single working moms simply trying to support their families. One of the most impactful patient stories that we can share is about “Pat.” Pat was driving home from work one day when a pedestrian
committed suicide by running into oncoming traffic, breathing his last breath in front of Pat’s car. The trauma burned into her mind, leading to increasingly pervasive bouts of anxiety, panic attacks, nightmares and the eventual diagnosis of PTSD. From there, Pat’s life spiraled out of control. At first, she could not drive her car. Then she lost her job. Next, she lost her home and eventually, also her family. Pat was too sick to be treated in an outpatient setting so she turned to Medical City McKinney, where she learned she had a severe kidney injury and was also diagnosed with diabetes. She was treated there until her kidney function improved and was discharged to return home with insulin that needed refrigeration. The problem was that Pat had no home and thus, no way to store her insulin. Thankfully, Pat learned about Hope Clinic nine days after being released from the hospital. When she first walked through our doors, she was short of breath, fatigued and dragging to the point where she barely felt strong enough to walk the 20 feet from the waiting room to the exam room. Pat began oral medications and a longacting diabetic agent that was injected once a week at the clinic. She received education about her condition, and her kidney function was monitored at Hope Clinic, helping her to break the cycle of repeated illness and hospitalization. She was connected with a Hope Clinic counselor and is now showing significant improvement in her anxiety. After she became stabilized, she was able to take on day jobs frequently for several weeks. Eventually, Pat was connected with long-term employment as a live-in caretaker.
Pat’s story is unique to her, but there are thousands of other stories out there, many about people cruising along in life until something suddenly derails both their health and well-being. Thankfully, Pat’s story did not end there, and Hope Clinic was there to support her. Are there plans to grow the clinic? Any goals of increasing the scope of services offered?
Our vision is to expand operations over the next few years to be able to see patients 6 days a week. This is moving forward in a big way thanks to our recent (January of 2022) expansion of clinic space from 1,700 to 3,000 sq. feet. We have been able to renovate the space right next door to the clinic to give us more exam rooms, add designated private counseling rooms, and give us a designated area for eye exams as well as chiropractic care and physical/occupational therapy. More space allows us to accommodate more medical professionals at the same time. This translates into being able to see more patients. How can people get involved in volunteering or donating? What is the clinic needing most right now?
In 2022, we anticipate seeing over 700 unduplicated patients that will translate into approximately 3,800 appointments. These patients are asked to pay nothing for their care, but that doesn’t mean the clinic does not incur expenses and we cannot serve this many without volunteers. We are blessed to partner with pharmacies and labs that offer us lower-cost prescriptions and services. And, we continue to have the need to add to our 100+ volunteer support base, especially as we expand. Our clinic model relies heavily on volunteer medical professionals to join with our parttime doctor and registered nurse to provide quality care to our patients. Beyond these, the clinic asks for others to come alongside as Spanish-speaking translators and front desk/ office volunteers. And finally, we encourage those of the Christian faith to consider one of
our most important roles at the clinic…being a Patient Advocate who meets with each patient following their medical appointment to help process their appointment, offer community resources and pray with them. And while volunteers are the foundation of the clinic, consistent financial and in-kind donations from individuals, corporations, civic organizations, foundations and churches allow us to keep our doors open, purchase medical supplies, cover prescription/lab/immunizations costs, and cover necessary administrative costs that are essential to provide licensed healthcare. ESD’s Late Start Benefits Students’ Health by The Episcopal School of Dallas Eagle Edition co-editors-in-chief, Emily Lichty ‘22 and Gina Montagna ‘22
F
rom the dedicated work of our school’s trainers to our yearly tradition of Student Body Week, there are many examples of how ESD focuses on promoting student health and wellness. Following the pandemic, we have enthusiastically welcomed back activities that facilitate spirit amongst students, such as Homecoming Week and cheering on athletes at sports games. We also have continued to benefit from programs such as our yearly drug education and testing program and our recent self-defense class for female upperclassmen. However, one of our favorite health practices at ESD is one that developed during the pandemic when, to prevent large group congregations and contagion, many of the breaks during the day were cut allowing the school to move our start time from 8:45 a.m. to 9:30 a.m. Now, while we have returned to a similar pre-pandemic schedule, we begin our school day at 9 a.m. and end at 4 p.m. According to Live Science, the average school start time in Texas is 8:05 a.m. which means our delayed start time gives students nearly

an hour of extra time before school starts and more time to catch up on our much-needed sleep. There are numerous studies on the health benefits of giving teens more time to sleep, especially with rigorous schedules filled with homework and extracurricular activities. Extra sleep helps with teenager’s development and physical growth spurts, according to Johns Hopkins Medicine. Sleep can help restore the brain and help with learning, focus, concentration, sociability and memory. Additionally, it can combat depression, erratic behavior and even prevent car accidents. Despite these benefits, many teens are not getting enough time in bed. A study completed by Pediatric Parents says teenagers need between 8.5 and 9.5 hours of sleep each night. But according to a 2015 CDC national survey, 72.7 percent of high school students do not get enough sleep on school nights. While encouraging students to find time for an earlier bedtime is certainly beneficial, it is more natural for us to wake up later. And, according to Johns Hopkins Medicine, our circadian rhythms naturally lead us to a later bedtime and later awakening, making it difficult for teens to fall asleep before 11 p.m. Although the late start was created to provide students with more rest, many have used this extra time in the morning to get some productive work done or check in with teachers. Whether it is getting to school to study in the library or finishing work at home, students have taken advantage of this extra time to complete their school work. “I like the late start because it allows me to get

Students are increasingly involved in extracurriculars while in high school and often dedicate time to sports, arts and clubs outside of the classroom. While completing college applications and balancing school work and extracurriculars, seniors have especially appreciated ESD’s late start because it has allowed them to rest after a late night or meet with college guidance counselors for questions.
Students involved in sports, like Click, often have weekly lifts or early morning practices, which have now been pushed back to later times because of the late start. Student athletes no longer have to wake up before the sun rises and can now enjoy later morning practices that do not require a 4 a.m. alarm.

Stuart Harvey Bright August 16, 1978 – February 4, 2022
Stuart Harvey Bright went to be with the Lord on Friday, February 4th, 2022 at the age of 43. Stuart was born in College Station, Texas on August 16, 1978. He grew up in Dallas where he graduated from Highland Park High School. He then graduated from SMU with a Bachelor’s Degree in Business. Stuart was the CEO of Bright Equities, LLC and a key Board Member of Bright Industries. As the grandson of Dallas businessman Harvey “Bum” Bright, Stuart was proud to carry on his legacy in the family business. Stuart married the love of his life, Heidi, in October of 2004 and raised his three children in Lewisville. More than anything in the world, Stuart’s heart belonged to his wife and three children. His love and devotion for them was unmatched. After years of battle, one of Stuart’s greatest accomplishments was his five years of sobriety. Never one to forget his past struggles, he embarked on a journey that taught him not only to be a student, but also a mentor to many like him. He was a devoted member of his men’s bible study and his AA group, which allowed him to develop relationships that will carry on well beyond his time here on earth. His family and friends knew that his honesty and leadership were the catalyst to his success. Stuart served as a Chairman and Board Member for multiple organizations, such as Drug Prevention Resources and Lewisville ISD Community Budget Advisory Committee. His contributions to those

groups will leave us all with an exemplary example of what it truly means to serve, while asking for nothing in return. Stuart’s love for fitness and the outdoors ignited a passion in him that provided huge amounts of joy in his life. He completed an Ironman, multiple marathons, and thousands of miles running, cycling and swimming. Stuart also enjoyed playing golf at The Lakes at Castle Hills, as well as hunting and fishing at the family ranch nearby.
Stuart is preceded in death by his father, Clay Bright. He is survived by his wife Heidi and his children Kaysen, Bella, & Grey, his mother, Susan Kohler and her husband Tommy, his siblings Justin Bright and wife Suzanne, Parker Bright, & Ginger Koons and husband Tommy, along with his nieces and nephews: Madison and Ben Bright, Judge and June Koons. There are many other family members and friends who will forever mourn the loss of the man we knew and loved so dearly.

• 1 cup plus 1 tablespoon buckwheat flour (or ½ cup buckwheat and ½ cup flour of choice) • 2 tablespoons sugar • 1 teaspoon baking powder • 1 teaspoon baking soda • ¼ teaspoon salt • 1 ¼ cups buttermilk, shaken • 2 eggs • ½ teaspoon pure vanilla extract • 4 tablespoons melted butter, plus more for the skillet
1. In a medium mixing bowl, mix together the flour, sugar, baking powder, baking soda and salt.
4. Preheat your skillet or griddle over medium-low heat Brush the cooking surface with butter.
2. In a liquid measuring cup, measure out the buttermilk. Beat in the egg, melted butter, and vanilla extract.
5. Using a ¼-cup measure, scoop the batter onto the warm skillet. Cook for 2 to 3 minutes and flip. Cook on the opposite side for 1 to 2 minutes, or until golden brown.
3. Add the wet ingredients to the dry ingredients and mix until just combined. The batter should have some small to medium lumps.

NORFOLK, Va. – Petty Officer 2nd Class Hanna Dixon, a native of Flower Mound, Texas, serves the U.S. Navy aboard a U.S. Navy warship operating out of Norfolk. Dixon joined the Navy seven years ago. Today, Dixon serves as an information systems technician aboard USS Bulkeley. “I joined the Navy because I wanted to give back as well as have a job with an honorable and gratifying reward,” said Dixon. Growing up in Flower Mound, Dixon attended Flower Mound High School and graduated in 2015. Today, Dixon relies upon skills and values similar to those found in Flower Mound to succeed in the military.

Destroyers like USS Bulkeley are taking part in an initiative called Task Group Greyhound (TGG). It is designed to provide the fleet with additional continuously ready, fully certified warships prepared to accomplish a full range of ondemand missions. TGG assigns Arleigh Burke-class guidedmissile destroyers homeported at Mayport, Florida and Norfolk, Virginia to be at-the-ready to fill fleet commander requirements and to counter Russian naval threats to the homeland. A growing priority, the destroyer’s activities also support the need to maintain an undersea warfare competitive edge over Russian submarines off the East Coast. Serving in the Navy means Dixon is part of a team that is taking on new importance in America’s focus on rebuilding military readiness, strengthening alliances and reforming business practices in support of the National Defense Strategy. “The U.S. Navy is the world’s finest Navy,” said Dixon. “Ensuring international waters are safe and open for free trade is key to our nation’s freedom and prosperity.” With more than 90 percent of all trade traveling by sea, and 95 percent of the world’s

It was amazing for me, and I was so happy to make him proud.” As Dixon and other sailors continue to train and perform missions, they take pride in serving their country in the United States Navy. “Serving in the Navy has made me into the woman I am today,” added Dixon. “This job continuously challenges my character and strength. I would not have the same personal core values I have today without the Navy. I’m so grateful and fortunate.” USS Bulkeley is part of the USS George H.W. Bush Strike Group ramping up for a fleet exercise that will integrate multi-level faceted training that will prepare them for future deployments. The ship’s crew has successfully completed all basic phase training and is making outstanding progress to be prepared to operate in a complex seamanship environment.
