All aboard The Polar Express! Gaylord Texan Resort’s beloved

ICE! exhibition is back after a two-year hiatus and will bring the holiday classic, The Polar Express, to life with stunning ice sculp tures. Crafted by a team of 40 ice artisans, ICE! is carefully constructed from over two million pounds of ice over the course of six weeks. The talented carvers that create this arctic artwork will travel more than 7,000 miles from their homes in Harbin, China, to Grapevine, Texas. Known as “Ice City,” Harbin is no stranger to elaborate ice carvings – it’s home to the largest annual ice and snow sculpting festival in the world. Span ning nearly 17,000 square feet, ICE! is a labor of love using skills and techniques passed down from generation to generation of highly trained ice sculptors. From minuscule details no bigger than a coin to soaring scenes towering at more than 30 feet tall, each ice carving is meticulously created by carvers who will clock in at over 12,000 man-hours on the project. Colored ice engineered by a chemist to ensure the bright colors are vivid the entire season is lit by LED lights to create a cheerful, holiday scene. While this is the 15th ICE! at Gaylord Texan, this is the first year that The Polar Express has been featured. Guests will don the provided signature blue Gaylord Texan parkas as they venture into the frosty 9 degrees Fahrenheit air, kept icy with a state-of-the-art chilling system that will turn ICE! into one of the coldest spots in Texas. Inside the attraction, guests can speed down two-story-tall ice slides, explore ice tunnels and arches, and and those ages 21 and up can grab a drink at the ice bar. A separate area is dedicated to an awe-inspiring Nativity Scene carved in crystal-clear ice.

TEXAS BACK INSTITUTE Celebrates 45 Years

Over the past 45 years, Texas Back Institute has made a name for itself with cutting-edge innova tion and top-notch patient care. We spoke with Dr. Stephen Tolhurst, MD, to reflect on TBI’s years of achievements.

Looking back on the past 45 years, what has been the key to TBI’s success?

The key has been our people. Our philoso phy has always been to identify the best physicians who are committed to patient care, education, and research. We have been fortunate to attract many of the top spine surgeons and physicians nationally to join our team. We also have had a won derful management team that has worked hand in hand with our doctors to create our unique and vibrant practice.

Given your unique background in combined orthopedic and neurosurgi cal spine surgery, what initially drew you to work with TBI? How has your knowledge and career grown since joining the institute?

I was drawn to TBI due to its national reputation as an innovative, vibrant, and patient-centered practice. I have always enjoyed training surgeons, and the ability to closely mentor and train our fellows, the next generation of spine surgeons, appealed to me. My knowledge and career have grown immensely since joining TBI. When starting my practice, I was fortunate

to be surrounded and mentored by excel lent spine surgeons who were leaders and innovators in their field. I felt very well trained after my spine surgery fellowship, but within the environment, I learned as much in my first year of practice here at TBI as I did in my spine surgery fellowship training.

What are a few of the factors that set TBI apart from other spine care centers?

The depth and breadth of our spine surgeons, neurosurgeons, and nonopera tive spine physicians set us apart. We are able to treat both spine and neurosurgi cal issues ranging from ultra-minimally invasive surgical techniques to complex trauma and scoliosis reconstructions.

We have the expertise to treat any spinal problem and also to ensure the patient is treated by someone within our group who is an expert at their specific issue and surgery. We also are active in research and education, which keeps us at the forefront of new spinal techniques. Finally, we pride ourselves on evidence-based treatments. While we use many innovative treatments for our patients, we also work hard to ensure that what we offer is based on solid clinical evidence.

What is your goal as a spinal surgeon? How does that align with TBI’s vision? My goal is to approach each patient

individually and understand their needs. I seek to offer the best possible care for my patients, reduce their pain, and return them to the active lifestyle they want. Often, that doesn’t require surgery. When it does, my goal is to use the latest, least invasive, and most effective treatments to get them back to the life they enjoy. TBI’s vision is to provide the best patient care in an environment of innovation, education, and research. We have a diverse array of doctors with a multitude of backgrounds, but we all approach our patients with that as a guiding principle.

pain, what advice would you give them?

This will most likely get better and not need surgery! Most back pain will go away, but it can take time. Start with anti-inflam matories, exercise, and physical therapy. If it doesn’t improve, then you should prob ably see a doctor like me. Make sure you understand your diagnosis and the pros and cons of different treatment options.

Is there such a thing as a typical, routine workday for you? And if there is, what is your favorite part of it? My day starts early. I’m typically in the OR three days a week and seeing patients in the office the rest of the time. I also

have significant administrative responsi bilities as group president – those tend to get sprinkled throughout my day. Days can be long, especially in the OR, but typi cally I can join my family for dinner. My favorite part of my job is doing surgery. It gives me the best opportunity to make a major difference in someone’s life in a relatively short time. Successfully carrying out a procedure that’s both intellectually and technically demanding is incredibly gratifying.

Besides your career, is there anything that drew you to North Texas?

My family and I love to travel, and North Texas offers excellent access to the world.

It’s a growing and vibrant area with a friendly and diverse community and is also a great place for my wife and me to raise our kids.

It seems like many of us in North Texas have back and spine issues. Do you think any of that relates to where we live and our lifestyle? Our lifestyle definitely plays a role. More and more of us have sedentary jobs that place us at risk for neck and back issues. Spine issues are incredibly common throughout the country. Fortunately, most don’t need surgery. If they do, there are many great treatment options from the experts at TBI.

David Rems , General Manager

David was born in Boston, MA, and raised 30 minutes south of Boston in Brockton. His grandfather, a hotel director of engineering, introduced him to the hospitality industry at a young age. Growing up around the hotel business, David quickly knew this would become his passion. David attended Johnson and Wales University in Providence, RI, where he received his BS in Hospitality Management and played four years of collegiate tennis. David has held Management positions in all aspects of hospitality for the past 25 years – in Country Clubs, Hotels, and Restaurants. He once served as Director of Operations at Stonebriar Country Club for four years and as General Manager of Denton Country Club, where he completed a five-year full club reinvention. David joined Las Colinas Country Club and oversaw the multi-million golf course and club renovation, where they now are the host club of the Invited Classic.

David was named the GM of Stonebriar Country Club in the fall of 2021. Under his leadership and vision, the club has thrived with improved and enhanced services and amenities. But he has only just begun. Stonebriar has a long history of incredible membership and involvement with the club committees and Board of Governors. Working in partnership, the future of Stonebriar Country Club has never looked better.

David currently resides in Prosper with his wife Cara, daughter Lexie and son Boston. He has an open-door policy and is always available to his Members. When he is not at the Club, David enjoys spending time with his family, cheering on his children at their many sporting events, and traveling.

FAVORITE PLACE TO VACATION?

We have been to the Florida Keys as a family several times. The wa ter is incredible, you can see fish 50 feet down below the surface. I did one of my fellowships in France and we went to the south of France to visit the coast. Southern Italy is another incredible place we have been that I will go back to for sure. It is one of the most beautiful places I have ever been.

DO YOU HAVE ANY HOBBIES?

I am an avid golfer. I also really enjoy cooking and making inter esting types of ice cream. I love listening to audiobooks on every topic imaginable.

Dr. Kevin Kruse is a board eligible orthopaedic surgeon with fellowship training in the shoulder, as well as the elbow and hand. Dr. Kruse has published several papers on shoulder, elbow and hand surgery, and has presented at medical meetings throughout the United States. His research interests include management of rotator cuff tears, shoulder arthroplasty and the use of ultrasound in the shoulder. He is a candidate member of the Arthroscopy Association of North America, American Society for Surgery of the Hand, the American Association for Hand Surgery, and is affiliated with Texas Institute for Surgery.

Why do people age diff erently?

You’ve obviously heard of stereotype. But how about an AgeoType? Everyone ages differently, but why is that? Aging is driven by both genetic and lifestyle factors. In fact, a study by the Stanford University School of Medicine suggests that people fall into at least 4 distinct “ageotypes” that classify our biological aging patterns. The pathways that drive how a person ages vary and there are distinct aging patterns, based on measures of organ function and other biomarkers

By determining your ageotype, you can prevent and reverse the debilitating conditions that may be programmed into your genetic code. Because as you likely know by now, your risk of developing chronic health conditions is only 25% dependent on genetics, and 75% dependent on environmental factors. This means you have much more control over your biological age than you think!

So read on to learn how your aging might offer you the opportunity to take action – with lifestyle changes, medications, or other strategies – and take back some of the control you have over how you age!

Some people’s hearts stay strong well into their 60s, but their kidneys begin to fail. Others may have the kidneys of a 30-year-old but fall victim to constant infection. So far, scientists have identified four distinct ageotypes: Cardiac , Liver, Kidney, and Immune System . Some people fit squarely in one category, but others may meet the criteria for all four, depending on how their biological systems hold up with age. With the help of your primary care physician or a physician trained in Functional Medicine, you can research your biomarkers, learn your risk factors and start making the changes to a better you!

Type 1: CARDIAC

These people are at a higher risk of cardiac “wear and tear” as well as elevated blood sugar and blood pressure levels.

As with all ageotypes, exercise is important—but even more so for those with Cardiac Aging. I recommend 40 minutes a day of moderate intensity. Diet should include high levels of healthy Omega- 3 Oils most commonly found in wild caught fish and minimal amounts of inflammatory Omega-6 Oils. (found in processed and fast foods)

Blood sugar is also important to control so foods should have a low glycemic index load* and daily intake of sugar should be less than 25 grams/day.

These patients are at a higher risk of developing liver disease and compromised detoxification pathways.

Type 2: LIVER

The liver is a powerhouse of an organ. It performs a variety of essential tasks, ranging from producing proteins, cholesterol, and bile to storing vitamins, minerals, and even carbohydrates. It also breaks down toxins like alcohol, medications, and natural byproducts of metabolism. Keeping your liver in good shape is important for maintaining health.

The foods listed on the right have shown beneficial effects on the liver which include a lowered risk of liver disease and cancer, higher antioxidant and detoxification enzyme levels, and protection against harmful toxins.

This person would be susceptible to kidney disorders, elevated blood pressure and high cholesterol levels.

Type 3: KIDNEY

Your kidneys are essential. They remove waste and excess fluid from the body; they also release vital hormones that regulate blood pressure, and control red blood cell production. Maintaining optimum kidney health is essential for everyone, but people with existing kidney disease or similar conditions need to pay particular attention. Certain foods can do double duty by providing essential nutrients and helping keep these vital organs in peak condition.

Some people suffering from kidney disease need to limit their protein, so they should ensure the protein they do eat is high-quality and low in sodium and phosphorus. Removing the skin reduces the amount of these nutrients. Making your meals with fresh chicken breast is preferable, as pre-cooked versions often have additives such as salt.

Fats to limit Butter - Lard - Bacon fat

Gravy - Nondairy creamers

Type 4: IMMUNE SYSTEM

Those who generate higher levels of inflammatory markers are more prone to autoimmune diseases. Many people who have followed an AutoImmune Protocol (AIP) Diet report improvements in the way they feel, as well as reductions in common symptoms of autoimmune disorders, such as fatigue, gut or joint pain, and thyroid imbalance. The AIP diet focuses on eliminating inflammatory foods and replacing them with health-promoting, nutrient-dense foods that are thought to help heal the gut, and ultimately, reduce inflammation and symptoms of autoimmune diseases. It also removes certain ingredients like gluten, which may cause abnormal immune responses in susceptible individuals. On the AIP diet food list, you eat lean meat, seafood, liver, bone broth, many vegetables, fruit, yogurt and other fermented foods, and some oils. What’s not on the AIP diet list?

Eating an AIP diet means you have to eliminate grains, dairy, eggs, nightshade vegetables (tomatoes, potatoes, peppers and eggplant), seeds and nuts, legumes, coffee, alcohol, processed oils, refined and artificial sugars, and food additives. You slowly add those foods back into your diet, watching for any flares in your symptoms for several days. You can incorporate foods back into your diet if they don’t cause problems and continue to avoid the ones that do.

Your Chronic Disease Ageotype is an important step in the discovery of the root causes of your chronic inflammatory diseases or risks. Testing for inflammation markers will help you find underlying health issues, and uncover root causes of your problems. BEEF BOURGUIGNON

• 1 tablespoon extra-virgin olive oil

• 10 slices bacon, roughly chopped

• 3 pounds stewing beef, patted dry

• 1 large carrot sliced 1/2-inch thick

• 1 large white onion, diced

• 6 cloves garlic, minced (divided)

• 1 pinch coarse salt and freshly ground pepper

• 2 tablespoons flour

• 2 cups Merlot or Chianti

• 3 cups beef stock

• 2 tablespoons tomato paste

• 1 beef bouillon cube, crushed

• 1 teaspoon fresh thyme, finely chopped

• 2 tablespoons fresh parsley, finely chopped

• 2 bay leaves

- In a large dutch oven, cook the chopped bacon until crisp, and remove from the pan

- Preheat oven to 350 degrees

- Sear beef on all sides to intensify the flavors, set off to the side with the bacon

- Heat olive oil in the dutch oven and cook onions and carrots until soft, and remove from the pan

- Whisk in flour to the remaining oil/fat in the dutch oven to create a roux. Stir constantly until the color has deepened and the flour smells rich and nutty

- Stir in the tomato paste and briefly cook until the color becomes darker

- Pour in the red wine and bring to a boil, being sure to scrape off any stuckon bits of meat

- Add the beef stock and cube of beef bouillon and cook until slightly thickened, about 15 minutes

- Place the bacon, beef, and vegetables into the dutch oven with the fresh herbs and cook in the preheated oven for 2 to 3 hours, or until the meat is fork tender

- Serve with baguette, cornbread, or spooned over buttered egg noodles or mashed potatoes. Garnish with a generous sprinkling of fresh cracked pepper and chopped parsley.

Unthinkable: Who Kills Their Grandmother?

Eight years ago, beloved grand mother and friend Mildred Dar rington was viciously murdered in her own bed. In Unthinkable: Who Kills Their Grandmother, Dr. James W. Marquart, professor of criminal justice at UNT, unravels the case to reveal the motive of the murderer and the lasting impact it had on the once close family.

Can you tell us about your back ground? Did your time as a prison guard shape your career trajectory, or were you always interested in the criminal justice system?

I got interested in criminal justice as an undergraduate. At first, I wanted to be a police officer, but a class tour of the Iowa State Penitentiary changed everything for me. While at Texas A&M as a doctoral student, I had the opportunity to visit sev eral Texas prisons on a research project. I was allowed to walk anywhere I wanted and talked to anyone I wanted to, and I took advantage of that access to a closed world. I met some old-time convicts, they were fascinating, and they all told me that if I wanted to understand Texas prisons, I needed to work in one. I did, and that experience really paved the way for or shaped my professional career. I had the ability as an “outside-insider” to really study prison organizations. The guard ex perience provided me with extreme “street cred .” I studied many things, including capital punishment, prisoner health care,

and social control in prisons. In fact, my first visit to Eastham State Farm was in the summer, and as I was driving up to the unit to meet the warden, I saw 1,500 inmates dragging sacks in long lines and picking cotton by hand. These were grown men, many were hardened criminals, and I wanted to understand why they complied with the guards on horseback who were yelling orders at them to pick cotton. I pulled my car over and watched this scene, and it was a very unusual site. I’ll never forget that scene and can recall it like a great movie in my mind at any time.That experience and my work as a prison officer opened many doors. I’ve studied and vis ited prisons throughout the United States, the United Kingdom, and Israel. Most importantly, I am grateful to the Texas prison system for the opportunity to work there and grow personally at the Eastham State Farm.

What initially drew you to research the murder of Mildred Darrington?

I had never heard of Mildred Darrington before, never. My wife and I were looking for a home in Frisco, and we made an offer on one house, but the inspection was not good. We lost $5k earnest money. Our son found a newer home, and we purchased the place, which had a total renovation. A year passed, and we at tended a Christmas party down the street. Our neighbors kept asking my wife about the house, whether we liked it, what do

we know about the previous owners, etc. Finally, my wife said, “what’s the deal with our house?” And they replied in unison, “you mean you haven’t heard?” That reply sent shivers down our spines, and we looked at each other in shock. We found out that the previous owner murdered his grandmother in Illinois and was arrested on 8/14 on the front lawn of our beautiful home. The story fell into my lap and drew me into taking on this book project. I have a number of academic research books, three published by the University of Texas Press and one true crime book. As we were walking home from the party, my wife said, “you need to write a book about this murder,” and I did just that. She inspired me to write this book. It’s the first book where I didn’t have to go to a penitentiary or jail or death row to find a worthy topic. The project came in the front door. Plus, it’s the best book I ever wrote.

While writing Unthinkable, what was the most shocking discovery?

There are a few shocking discoveries, but the primary one for me is the scope and depth of the perpetrator’s secret lives that led to debt, untruths, infidelity, betrayal, and, even tually, the murder of a family member. This crime destroyed a family. I am very partial to crime victims, and I want the reader to remember those left behind.
