I am very lucky and proud to work for One&Only Reethi Rah: representing an ultraluxury resort in a spectacular location; collaborating with a team of dedicated and talented professionals; interacting with guests who make themselves feel at home during the stay with us. We want to provide amazing experiences and everlasting memories for our guests and I love being able to provide that with our incredible team. No matter how experienced a traveller may be, visiting a place for the first time often presents a challenge. It’s usually simple enough to figure out the basics of a destination – in most places all these information are available in a travel guidebook and a tourist’s map. However, by the time you are reading my message now, it is probably obvious that this is not the case for the Maldives. This is why we publish Life at One&Only Reethi Rah, to give you a sense of a place, for you to understand the spirit of the Maldives and our little piece of paradise. This magazine will act as a travel guidebook for those who are new and not new to our resort. It is a comprehensive publication which the readers would be able to understand that our team of exceptional experts proves to be an invaluable asset for our guests and our resort. Shortly after his graduation from school, Ali decided to join the hospitality industry. It is his passion to meet, greet and serve our guests from different nationalities and cultures. Ali tells us how amazing it is to serve and to fulfill the guests’ satisfaction – especially being part of the One&Only Reethi Rah team.
BEING A VILLA VALET AT ONE&ONLY REETHI RAH A villa valet is someone who brings the ‘feeling at home’ to the guest. The guests are far away from home and he takes it as his pleasure to prepare the villa upon arrival so that the guests feel home at One&Only Reethi Rah. Noting down all guest preferences and ensuring that the requirements have been set in their villa prior to arrival and finding any additional needs and wants during the stay allows him to deliver services for them to be fully satisfied with the stay.
ALI’S MOST UNFORGETTABLE DAY There are many unforgettable days on this beautiful island. Once he was the Villa Vallet for a family staying in two villas and the kids asked him to do a special arrangement for their mother’s birthday as a surprise. To create an amazing and unforgettable day for the mother, he organised all amenities needed and waited for the day to come. The day has come and when the family was out for breakfast, he created a bed decoration including a birthday banner and placed balloons inside and outside the villa. After the mom had seen the surprise, the children called and asked him to come and see them in the villa. When he went, the mother was crying in happiness. The mother was totally blown away by the decorations as well as the kids, who did not expect all these decorations.

Tapasake features new-style sashimi, ‘avant-garde’ nigiri, as well as the classic Tapasake signature dishes with a twist. The old standards of black cod marinated in yuzu miso remains rich and sweet. One of the highlights from the newly added items includes the avant-garde nigiri. These are classic nigiris that have been taken to another level by using unexpected ingredients such as foie gras, wagyu beef and eel. An interesting mix of delicious crunchy shrimps, fresh maguro sashimi and truffle mayonnaise create one of the new signature rolls. Saga »

Though desserts are not Japan’s strong suit, do try the fruit crumble served on hoba leaf, or our homemade black sesame seeds, tofu ice creams or lime and sake sorbet. If the extensive à la carte menu leaves you with too many choices, opt for Tapasake’s omakase menu, featuring the chef’s specials. The omakase menu features sushi chef’s specials, the classic black cod in three different dressings, slow cooked wagyu striploin and assorted mochi ice cream. As the beauty of the Indian Ocean unfolds at your dinner venue, the chefs of One&Only Reethi Rah are behind the scenes in the kitchen passionately creating another art of cuisine for you. This is why our attempt to maintain the quality of our food is bound to bringing some of the world’s finest ingredients to the plate. The word ‘cuisine’ comes from the French language and indeed it is the French people who have elevated food and cooking into a form of art. No other countries have paid so much attention to what people are going to eat and how they are going to eat it. Having this philosophy in mind, we created the new Earth menu at Reethi Restaurant by bringing the luxury French brasserie concept together with the quality of ingredients and the creativity of our chefs. The new Earth menu uses some of the finest ingredients that any chefs can find in the market, especially the beef. The selected beef for the Earth cuisine is strictly and passionately chosen from the best breeds, countries and
farms around the world. Premium selection of beef from France, Ireland and Australia with cuts such as tenderloin from Normandy – France, côte de bœuf and Master Kobe Wagyu Striploin (Grade 9) create the base of our meat selection at Earth. There are many regions with their own specialty foods, and we believe that the origin of produce is of critical importance – from cheese and butter to salt and wine, and of course, the key ingredients such as meat, fish and seafood. For those who would like to experiment on their culinary experience, the new Earth also brings exquisite selection such as Tsarskaya oysters from Cancale – France to Burgundy snails. Executive Chef Emmanuel Soares and his team have taken a modern approach to a classic cuisine to create this new integrated and well-balanced selection of fine food. SAKE, JAPANESE RICE WINE NARAMAN SAKE FOR ONE&ONLY REETHI RAH
In December 2008, One&Only Reethi Rah, Maldives has exclusively collaborated with Yumegokoro Sake Brewery (Kitakata City, Fukushima Prefecture) to produce a limited edition sake – Naraman Daiginjo by One&Only Reethi Rah. Since the collaboration and introduction of this special sake at Tapasake, it has been very popular among our guests. Renowned for its high quality sake, Yumegokoro Sake Brewery designed its premium brand label with a limited edition sake bottle available only at One&Only Reethi Rah. Since its launch, guests have appreciated the fine art of sake tasting complemented with the modern Japanese cuisine at Tapasake. Yumegokoro Brewery was founded 132 years ago in 1877 in Kitakata City, Fukushima Prefecture. Kitakata City is graced with the Iide mountain range stretching out to the north and Life at One&Only Reethi Rah | 26
the Oguni mountain base to the East. The fresh water filtered among those mountains is known as one of the most refreshing and pure mountain water sources in Japan. This pure water and Gohyakumangoku, the finest quality sake brewing rice grown locally in the Kitakata area, combined with a skill cultivated over 132 years of focused experience in making sake to produce the high-quality sake called Naraman Daiginjo. Mr. Nobuo Shoji, the 11th owner of Yumegokoro Sake Brewery, has succeeded in preserving the Yumegokoro Sake Brewery tradition while refining techniques even further to create Japanese sake that has garnered numerous awards all over Japan. For the sake developed for One&Only Reethi Rah, Mr. Shoji has created a masterpiece wherein ori (rice sediment) is added to junmai sake (pure sake) to produce a champagne-like namazake (unpasteurized sake) called ‘Naraman Ori-Garami.’ After being pressed, the

sake must be kept at temperatures under 5°C until opening to maintain its exquisite flavour. During the unfiltered process, the natural flavour of rice is infused through the unfiltered pure sake which is heated in the bottle. In general, Japanese sake is usually heated briefly at about 60°C to stop the generation of lactic acid bacteria and suppress yeast activity. In the limited edition sake, this process is conducted by heating each bottle individually after the sake is poured in the bottle. This is a time consuming routine, but it ensures a fine quality of junmai sake that

seals in the unique flavour and captures the essence of sake. Finally, polishing over 50% of the rice allows the resultant ‘Naraman Junmai Daiginjo’ to be thoroughly free of the harsh flavour that can crop up in sake made from rice. Traditionally, sake has traditionally been drunk hot in Japan; however, Junmai Daiginjo is generally served cold out of necessity. But making the choice to enjoy it hot unlocks its magical bouquet and flavour. As a result of the delicate rice milling process, the overall taste is cleaner, lighter and more fragrant.

HOW TO ENJOY SAKE PURELY CLASSIC WARM You already may be accustomed to drinking sake warm in small porcelain cups (Sakazuki). To serve warm, pour sake into a small open mouthed carafe (Tokkuri). Heat it in a hot water bath over very low heat to approximately 40°C about 5 minutes. Never boil sake, as this will destroy the aroma and the flavour. Many sakes also may be served at room temperature. PURELY CONTEMPORARY CHILLED Chilled sake is becoming increasingly popular as a versatile drink before, during and after meals. Traditionally only the highest quality sake is chilled to enhance its delicate, unique flavour. Chill sake to about 10°C. Serve it in an all-purpose wine glass just as you would a fine white wine. Once sake is opened, it should be stored in the refrigerator and consumed reasonably quickly.

RAW FOODISM IN A NUTSHELL GO VEGAN, RAW AND GLUTEN-FREE Raw food diet is made up of fresh, whole, unrefined, living, plant-based foods: fruits, vegetables, leafy greens, nuts, and seeds, which are consumed in their natural state, without cooking or steaming. The first benefit of following a raw food diet is that you allow your body to cleanse and heal itself. Next, the proper raw diet gives comfort to your digestion system. Then follows a vegan diet, which is similar to a raw food diet. However, vegans consume their plant-based foods raw and cooked. Another popular method of healthy eating is the gluten-free diet. Gluten is found in grains such as wheat, barley, rye, and a cross between wheat and rye called triticale. It is found in the researches that 28% of adults have reduced or eliminated gluten from their diet last few years. Born in Châtenay-Malabry, France, Chef Emmanuel is the main pillar of the kitchen. He is widely travelled within his career, with more than 29 years of experience spanning across the globe, his international journey started in Brazil, then continued on his path to Morocco, Portugal, Russia and Ukraine prior to joining One&Only Reethi Rah.
Guillermo Vindas – “Chef Memo” – was born in Costa Rica. He has worked in over 7 places including Seychelles, China, New York, Dubai and Spain. Today, he oversees the entire kitchen, together with Chef Emmanuel, ensuring that every dish served here is a culinary work of art.
Hungarian by nationality, Chef Lajos was born and raised in Serbia. Prior to joining One&Only Reethi Rah, Chef Lajos worked as the Corporate Executive Pastry Chef based in Donetsk Donbass Palace and in Kiev Opera Hotel and also Hyatt Hotels in Belgrade, Serbia and Paris, France. YOUNG CHEFS
The little pirates are happy, they are just as eager as to enjoy this great holiday as their elders. Every Monday at KidsOnly of One&Only Reethi Rah is a fun-packed day of activities and food. Little ones get to come meet Captain Hook look-alike and crew for a full day filled with activities – ranging from pirate t-shirts and hat making, to hopping on a traditional Maldivian dhoni for a cruise and an island treasure hunt.
KidsOnly is organising fishing trips catered to young children and teens. We love the opportunity to bring the next generation of fishermen out for their first deep sea adventure.
Do your kids aspire to be the next great chef? Those who can’t get enough of stirring, whisking and decorating– not to mention getting ingredients all over your walls – will love putting on a mini chef’s hat and trying a hand at one of the KidsOnly’s cooking classes.
The day begins at 10am where the children will meet at KidsOnly, who will design their outfit for the day – painting their own pirate t-shirts, making the pirate hats and face paintings to ensure their looks are perfect. Following a lunch altogether, the children will hop onto a traditional Maldivian dhoni for a cruise around the island, where they will also walk on planks and jump into the sea for a swim.

Take the kids on an adventure of ageold Maldivian fishing methods, assisted by our experienced boat captain and his deck hand. As the little ones master the local handline method of fishing, they will be amazed by what they might catch: snappers, jacks, barracudas, to mention a few. This trip could also set a great opportunity for families to create another common hobby and the experienced young fishermen may be able to join the parents for a sunrise or sunset fishing at One&Only Reethi Rah. This is the perfect first time fishing trip for children of all ages.
The chefs of One&Only Reethi Rah presents a unique culinary experience offering cooking classes to children and teens. Classes offered include chocolate making, pizza making, sushi making and pastry decoration. Getting them along to a cooking class is a great way of making friends, developing skills and getting out of making them lunch. Who knows…they could end up writing one of our favourite new recipes for kids!

GONE DIVING THERE IS A STEREOTYPE THAT SCUBA DIVING IS ONLY FOR YOUNG AND ADVENTUROUS MEN. THIS MYTH COULDN’T BE FURTHER FROM THE TRUTH.
In 2014 36% of all PADI certifications worldwide were female. This is a sharp increase in the initial early days of scuba diving and it is slowly on the increase. The figure for scuba diving in the Maldives is even higher. Though PADI does have some age restrictions for some of the more difficult scuba diving courses; however, the entry-level courses such as the PADI Discover Scuba Diving, PADI Open Water Course and PADI Advance Open Water Course can be done by children 10 years and above. This makes scuba diving during your stay at One&Only Reethi Rah a real option for the whole family. Giving your children the opportunity to experience the underwater world can introduce them to a side of nature that cannot be experienced on land. Scuba diving can also feed their natural curiosity about the underwater world. Teaching children how to scuba dive and completing the PADI Open Water Course not only provides an activity for the holiday, but an activity for every family holiday in the future. It also provides a hobby for the whole family to share. As far as top end age goes, yes there is a medical requirement prior to Life at One&Only Reethi Rah | 38
starting any PADI courses; however, this is more related to significant illnesses or injuries. If you are reasonably healthy and have some level of fitness, there is no reason someone cannot dive into their 80’s and there has been recorded cases of people scuba diving in their 90’s. Another misconception is that scuba diving is more difficult than snorkelling. Technically this is not always correct. Snorkelling requires that act of swimming, the technique that humans use to stay above the water. Scuba Diving uses a device called a BCD or Buoyancy Control Device. This is designed to make you neither float nor sink, which underwater gives you the feeling of weightlessnes; meaning that you only need to move your legs for propulsion not to keep you above the water. Underwater scuba diving requires a lot less energy than snorkelling. The second factor is – when you breath out using a snorkel you fill the snorkel with what is called “dead air”. This dead air remains in the snorkel and when you take your next breath the dead air is the first air to enter your lungs. This means when snorkelling you get less fresh air and often this gives you a sense of breathlessness. The scuba diving

breathing apparatus, the regulator, has very minimal dead air space so you get fresh air more often. So given the fact that you are not working as hard to stay above the water, breathing less and breathing fresher air, once you have conquered the mental side of scuba diving, it will be a whole lot easier and provides a much more exhilarating experience. As we wanted to give all of our resident turtles a name, we have asked all our readers to suggest us names for each juvenile. Naming our turtles gives us a more personal connection to each turtle and allows us to tell the story of each individual. The first foundations were laid on Friday, 22 April 2016 for One&Only Portonovi – an integral part of the new luxury lifestyle development being built in Montenegro. In a ceremony attended by the Prime Minister of Montenegro, other senior government ministers, and senior executives from One&Only Resorts and Portonovi parent company Azmont Investments, construction commenced on Europe’s first One&Only resort.
