From the General Manager

Three years ago, One&Only Reethi Rah printed its very first edition of this wonderful piece. It all started with a 10-page resort guide that was solely designed for our in-house guests. And today as we publish the 20th edition, Life has become an 'inspirational travel guide' for all our past and prospect guests. It has been redesigned and reimagined to become a comprehensive publication that gives you a round-up knowledge of our beautiful island. In this edition, we covered weddings and honeymoons in addition to our usual stories. I believe that your wedding and honeymoon are part of the most special journeys that you'll ever take, and with our exquisitely idyllic setting, there's no better place to celebrate love than One&Only Reethi Rah. These memories will become lifelong ones that you can continue to share with your loved ones. They may also be a reason for you to reminisce your travels and return to one of your favourite destinations in the future. Having said that, we have decided to feature One&Only Palmilla in Los Cabos in this quarter's destination guide, as I recollect my memories from the trip to Mexico last summer. Along with these fine array of features, we have our usual stories covering dining, wellness, activities, KidsOnly and fashion. There is one special person to thank, without whom all past editions of Life could not have thrived in the manner it did. I would like to take this opportunity to thank Vivian, the resort's Marketing Manager, who was behind the scene in creating every single edition. Together, we made this magazine project soar, taking on every edition to a new level.

I hope these pages will bring a little bit of One&Only into your own life and that you will have as much pleasure reading this as we enjoyed compiling this for you. Born in Paris, France, Jean-Luc found his passion for hospitality industry and gastronomy world since a very young age. Jean-Luc’s extensive luxury experience includes roles as the General Manager at One&Only Le Saint Géran, One&Only Ocean Club, The Residence in Mauritius, as well as Managing Director at Sandy Lane in Barbados and General Manager at Le Trianon Palace in Versailles. In addition to leading some of the world’s most prominent hotels, he has also held the role of Directeur Général for the Michelin Guides Worldwide (Paris/New York/Hong Kong/Tokyo).

Melt the chocolate in a bowl over heat. 2. Add butter to the melted chocolate and mix well until the butter melts. 3. Add the egg yolk to the mix and whisk well. 4. Whip the egg white with sugar in a separate bowl until the sugar crystals melt. 5. Mix the two mixtures together. 6. Place in the glass jars and keep refrigerated for 24 hours.

7 facts that you didn't know about Indian cuisine THE LARGEST SPICE PRODUCER India is rightly called the Land of Spices. No country in the world produces as many varieties of spices as India. FOREIGN INFLUENCES Greek, Roman and Arab traders have contributed a lot to the first foreign flavours in Indian cuisine. INGREDIENTS FROM PORTUGAL Staple ingredients of Indian cuisine like potato, tomato and chili don't have Indian origin. They were brought to India by the Portuguese. OUR FAVOURITE INDIAN CUISINE IS NOT INDIAN Here comes a blow! Our very favourite Chicken Tikka Masala and Butter Chicken, which are popular dishes in India, are not Indian. It was invented in Glasgow, Scotland and today these are the most popular food in the entire Indian cuisine.

FANDITHA Meaning ‘magic’ in Dhivehi, the local language, the restaurant bears homage to the mythical Lady Fanditha that once graced in this remote corner of the island where to this day ancient ‘djinis’ (genies) of Arabian and Maldivian legend continue to weave their enchantments. Fanditha is a casual beachside restaurant located on the northern tip of the island. With a unique Arabian concept, mesmerising ambience and open views of the Indian Ocean, Fanditha offers the true taste of Middle Eastern, Indian and Maldivian cuisine. NUMBER OF FLAVOURS According to Indian Food Theory, Indian food has 6 different flavours: sweet, salty, bitter, sour, astringent and spicy. THE WEDDING IS NOT OVER YET Payasam (rice pudding) or gulab jamun (milk based sweet), one of the favourite sweet dishes of South India, is a must-serve at important ceremonies like weddings. According to South Indian tradition, a wedding is not over until payasam is served. ORIGIN OF BIRYANI Love eating dum pulao or mutton biryani? Do you know how this style of cooking originated in India? Here's the story: The Nawab of Awadh was facing a shortage of food in his region so he ordered a meal to be cooked for all the poor in huge handis, covered with a lid and sealed with dough. This helped cook a lot of food with minimum resources, but who would have thought that this would eventually lead to a new style of cooking, now known as 'Biryani'.

The best beef from Japan Japanese cows are said to live an emperor's life, which is why they produce the fattest and most succulent flesh in the world. Every cattle farmer in Japan has his own method of indulging their cows, from secret blends of soybeans, tofu byproduct or sake mash in the feed; mineral water to drink; and daily walks and supposed beer massages to encourage fat distribution. Some even play classical music to relax the animals, while making sure they receive plenty of time in the sun. Saga is located on the northwest part of Kyushu island, and beef from Saga is considered one of the big three in Japan, along with Kobe and Matsuzaka. Seen as the Rolls-Royce of beef, Saga-gyu is known throughout Japan for its unique, marbled appearance and its incredible taste. The history of Saga beef can be traced back to 1983, when a cattlerearing group in Saga conducted a research programme that led to the successful export of quality beef. It didn’t take long for its value to be recognised, and by 1988, Saga beef established itself as a leading beef brand. As production rapidly increased, certification requirements were established for the brand, and the sweet, rich taste of Saga beef grew to be enjoyed worldwide. A strict certification standard has been set for all official Saga beef. First, the beef must come from a black-haired Japanese cow grown raised in an agricultural-association-designated farm. Second, it must mark above 7 out of 12 in the Beef Marbling Standard set by the Japan Meat Grading Association. Any meat that does not meet these standards is not considered Saga beef. If you want to taste Saga beef in all its glory, Tapasake serves the beef in both traditional and modern ways – namely tataki, teppanyaki, hobayaki, toban yaki, kushi yaki and more. The traditional Japanese methods include cooking A5 Saga beef on a toban yaki (a ceramic plate) or as tataki. RAH COLADA Recipe for 1 serving INGREDIENTS 50ml Pineapple infused white rum 25ml Malibu (Coconut liquor) 40ml Coconut milk 6ea Pineapple chunks 5-6ea Dehydrated pineapple slices Pineapple foam PREPARATION 1. Prepare a coco-shell tiki mug. 2. Add all ingredients in a blender to blend. 3. Pour in a coco-shell tiki mug over ice. 4. Garnish with dehydrated pineapple slices around the mug. 5. Add a whip of pineapple foam.

Prenatal yoga

It’s no secret that yoga is one of the best things you can do to relieve stress. The relaxation-inducing practice has been shown to lower stress levels, fight depression and reduce inflammation, among other health benefits. JOANNE IGNACIO RESIDENT YOGA INSTRUCTOR Born in the Philippines, Joanne began teaching yoga 10 years ago, while juggling careers in brand management and hosting on television. She eventually chose to leave it all behind to pursue yoga full-time, and is now of Experienced Registered Yoga Teacher 500 (ERYT500) status – an accreditation given by Yoga Alliance to teachers who have been teaching for at least 4 years, have undertaken at least 500 hours of training, and have logged at least 2,000 hours of teaching time. She has also served as a faculty member for yoga teacher training programmes in India.

Staying fit during holidays As we all know holidays are a time to indulge in food you wouldn’t normally eat every day, and cocktails you definitely wouldn’t drink every day. Exercising while you’re away will mean that you don’t return from your holiday feeling, for lack of a better word, completely 'bleurgh', and does something crazy like adopting a juice cleanse diet. It will be great to take advantage of what activities we offered on the island – regardless of what they are. It’s even better if you opt for something you haven’t tried before, as it means that it’ll work different muscle groups to what you usually work during your usual workouts. Most of the activities proposed in the resort are particularly good and will make you have good workout in a different way. The spectacular view from our Fitness Centre is something not to miss while you are staying in the resort. Everybody is aware that holidays is to experience the location, not lock yourself away in a gym. But even a 20-minute exercise on the treadmill will make a difference to how you feel. Cooling off afterwards with a dip in the vitality pool at the Spa Courtyard or good assisted manual stretching with the Fitness Personal trainers is a must.

The different types of training that you should experience on holidays are Pilates reformer, boxing/ kickboxing session, outdoor Queenax training, TRX Suspension training and a discovery on Kinesis™. Of course if you love the peaceful world of yoga and meditation, you should take the chance to have some group or private classes with our resident yoga teacher who possesses a repertoire of different yoga techniques such as aerial yoga, hatha yoga, vinyasa, pranayama, yogilates and meditation. We also make sure that the kids are not forgotten. Private training will be provided to teach proper techniques of swimming for little ones of 5 to 12 within different category levels. Once the training is completed, they will receive a training passport and medals as reward. It’s not so difficult to stay fit while you are on a holiday, so please meet the energetic team from the Fitness Centre to inspire and guide you through your training.

Dive in! SHARK DIVE Voshimas, a small thila (reef) located in Madiveru kandu (channel) at south of One&Only Reethi Rah, is one of our two best shark points. The thila has some coral rocks on top with a stunning fish life and the sharks are always on the thila’s current side. Alternatively, Kuda Faru, located north of Only&Only Reethi Rah, offers one of the highlights in North Malé Atoll. The thila extends into Makunudu kandu for some distance on the southern side. The west side drop off is the best for shark watching. Every Monday and Thursday. 9am to 12.30pm TURTLE DIVE West Point is located north of One&Only Reethi Rah, deep in a channel. The reef is long and therefore a good place for a drift dive. It is an extension of Makunudu’s house reef. The top of the reef is only 3 metres under the surface and it slopes gently down to more than 30. On different depth and along the site are some reef ridges and coral rocks. The corals and fish life make this reef a beautiful dive site, but it is also our best dive site for seeing Hawksbill sea turtles. Every Tuesday, 2.30pm to 4.30pm STING RAY DIVE Madivaru Beyru and Madiga are two sites on the outer rim of the atoll. The top of the reef starts at 8 to 10 metres and slopes down to 20-30, down to a sand bottom. Along the reef slope and on the sand lays a number of small to big coral blocks hosting a rich fish life. These sites are considered some of the best areas in Maldives for to see sting rays and groups of eagle rays. It is also great for underwater photography since there is none or very little current here. Every Friday. 9am to 12.30pm

WRECK DIVE The wreck is a former tugboat, sunk by the dive school in 1988 at the house reef of Hembadu, southeast of One&Only Reethi Rah. It is close to the reef so the navigation to and from the wreck is rather easy. It is 16 metres long with the top at 15 metres and the bottom at 22 metres. The boat is a focal point for marine life and is a fish-watchers’ delight. On the wreck’s portside from 18 metres to the surface are big coral rocks. This is also a perfect place for a night dive. Every Saturday. 2.30pm to 4.30pm

BODU HITI THILA A big thila located in Hiti kandu (channel) south from One&Only Reethi Rah. Top reef is at 10 metres and on the thila’s south side are some bays in the reef with sandy bottoms between 15 to 30 metres. On the middle coral ridge are some overhangs/tunnels. Several big coral rocks are to be found both on the thila, reef slopes and bottom. The fish life multitude especially around the rocks and on the current side of the coral ridges. Tip: Sting ray, nurse and gray reef shark are visitors to this reef. Manta rays are seen here between December and April and it is one of the best manta points in the Maldives. Turtles are frequent on the reef top all year round. KUDA FARU Kuda faru is located north of the Resort and is one of the highlights of the northwest. It is a finger of reef extending into the channel a short distance from the outside corner of Makunudu kandu. The reef is like a thila. The top is at 13 metres, slightly oval in shape and about 50 metres long. It is separated from the main reef by a sand saddle at 15 metres. The thila extends into Makunudu kandu for some distance on the southern side. The west side has more drop off side than the east and is also the best for shark watching. There is an overhang with soft corals at 25 metres depth to the southwest of the thila. Tip: This is one of our best dive sites for sharks. The reef is also host to a rich fish life, with morays, snappers, groupers, triggers, napoleons, scorpion fish and more. Gropes of eagle rays are common from November to May. Turtles are usually seen.

PEAK A big thila located in Hiti kandu (channel) south from One&Only Reethi Rah. The top of the reef is at 8 to 10 metres. Along the southern reef side which slopes down to more than 30 metres, are plenty of small caves and overhangs and one larger one that lies at the southeast end. On the top and southwest at 20 metres of the reef are groups of big coral rocks. Beautiful fish life. Tip: This is one of our best dive sites for seeing a rich fish life and it offers surprises like guitarfish and hammerhead shark. White tip reef sharks, napoleons and turtles are common; gray reef sharks sting rays, eagle rays and batfish can also be seen. It is possible to see manta rays during the northwest monsoon (December to April). KUDA THILA This spectacular dive site is located in Makunudu kandu north of One&Only Reethi Rah. The top of Kuda thila is at 20 to 25 metres. A long time ago when the sea level was much lower than today, passing water cut out huge overhangs on the south side of the thila. After a while the top of these overhangs were too heavy and collapsed forming a canyon between the thila and them. The reef is an interesting proof of how dive sites in the Maldives have been created. Stunning coral life. Tip: Sharks, napoleons, tunas, barracuda, jackfish and turtles are common visitors at the reef. Take your time to look under the rocks there are loads of reef fish and sometimes even sting rays and nurse sharks can be found.

Dolphin watching in the Maldives Throughout the year we are fortunate enough to see a variety of marine mammals around One&Only Reethi Rah. Our Marine Biologist explains which species are most common, where you might see dolphins around the resort and how you can have the opportunity to see dolphins up close and personally during our Dolphin Cruise excursion. A total of 23 species of whales and dolphins have been reported in the Maldives. Collectively, whales and dolphins are known as cetaceans, a word derived from the Greek word meaning sea monster. Cetaceans are mammals that have adapted to spending their whole lives at sea. Their entire body is streamline and furless, which makes them very efficient swimmers in the water. Like all mammals, cetaceans breathe air using their lungs. Their blowholes, which are their nostrils, are positioned at the top of their head. They need to regularly break the water’s surface in order to breathe air and this is often the best time to see dolphins. The most common species of dolphin we see around One&Only Reethi Rah is the Bottlenose dolphin (Tursiops truncatus). Small pods of Bottlenose dolphin can often be seen outside Reethi during breakfast, from the Chi Pavilion at our Spa and sometimes whilst out on our House Reef. Bottlenose dolphins are found in temperate and tropical waters around the world – they reach a maximum size of 4 metres and have an estimated life span between 40 and 50 years. >>

READY, SET, GO DOLPHIN CRUISE

If we venture out a little further past the Reethi Rah island, to the east side of the Atoll, we almost always find acrobatic Spinner dolphins (Stenella longirostris), which are in fact the most common species of dolphin found in the Maldives. This charismatic species is well known for their spinning behaviour, as their name suggests. Spinner dolphins reach a maximum size of 1.8 metres, have a life span of approximately 20 years and live in large family groups, with pods consisting of hundreds of individuals. To spin, they will use their flippers like wings – at the beginning they roll slowly due to water resistance (approximately 1-2 rolls per second). Once they exit the water there is less resistance and this allows them to spin up to 7 times per second! Spinning is a behaviour that is used for communication with others, social interaction, to display dominance, to dislodge parasites from their skin, and of course for fun. Experience an up-close and personal encounter from the boat, and watch the dolphins jump, spin and play in their natural environment, then enjoy the sunset on the ride back to the resort. Literally meaning 'Big Drums' in Dhivehi – 'Bodu' for Big and 'Beru' for Drums, the Bodu Beru is a reminder of Maldives multi-ethnical influences with strong roots from East Africa. Although the exact period of the first drums arrival is still not clearly defined, Maldivian historians have estimated it around the 11th or 12th century AD, with the arrival of Africans brought by the Arabs seafarers on their route to Asia. Many West Africans arrived and settled in Maldives where they have let a strong musical influence amongst others. The tradition has survived the centuries and modern influences. A rich and storied history Commanding the choicest locale in all of Baja California, One&Only Palmilla is situated on land that enjoys a rich and storied history dating back millions of years, when volcanic movement and earthquakes split a 1,100-mile-long finger of land off mainland Mexico. Los Cabos (Spanish for ”The Capes”) survived merchants, explorers and pirates to later welcome celebrated authors and biologists intrigued by the rich marine life in the Sea of Cortez. The resort itself was built in 1956 as a 15-room luxury hideaway by Don Abelardo Rodriguez, son of the President of Mexico. Accessible only by yacht or private plane, its earliest guests included Hollywood celebrities like John Wayne, Lucille Ball, the former United States President Dwight D. Eisenhower is also among the past guests; all attracted by the privacy of the resort as well as the region’s deep-sea fishing. Following the construction of the Transpeninsular Highway in 1970, the resort became increasingly popular and grew to 50 rooms by 1984. In 1991, the Palmilla Golf Club opened, and in 1996, the property was again expanded to 115 rooms. The glamorous flavour and ambience of the original resort were carefully preserved in One&Only Palmilla, which opened in February 2004 following a US$ 90 million refurbishment.
