Oregon City’s recipe for Buying Local in a Global Economy By Amber Holveck

Ingredients 3 parts 6 parts 4 parts 6 parts

Raw Materials Retail Value Added Products Service

Assess your available Raw Materials. Any good economic recipe calls for a few raw materials. There was a day when Oregon City was brimming with raw materials — timber, fishing, farming, etc. About 100 years ago or so “buying local” was what most people did. Transportation was limited but many raw materials were plentiful. For finer items, merchants had to place orders from many miles away and wait days, weeks or months for their goods to arrive. Oh, how times have changed Oregon City’s economic recipe. Or have they? With a few exceptions, perhaps not much of our recipe has changed but the proportion of ingredients. Today, fewer 4

raw materials are “harvested” in Oregon City but as population increases so does the labor force, which is a raw material. Despite the decrease in total acres farmed, our residents are fortunate that we still maintain a fairly healthy percentage of production capacity. Local consumers can directly enjoy these raw materials like fruits, veggies, ornamentals and more via the Oregon City Farmers Market and at u-pick farms all over Clackamas County.

Begin by blending 1 part Raw Material with 1 part Retail. Oregon City has a strong example of blending raw materials with retail. Our community can boast a special relationship between Oregon City’s own Serres Greenhouse & Farm and Haggen Food & Pharmacy. Here we have a convenient, modern grocery store that receives daily deliveries of lettuce from a local Oregon City farm. Consumers can purchase from Haggen more Serres produce, like blueberries, tomatoes and green peppers to name a few. Local farms like Serres purchase inputs for their many crops and employ people. They then sell local

produce to a Pacific Northwest owned, neighborhood grocery store which in turn employs people from the area. Both are partners in providing a healthy, local product for your dinner table and contributing to our economy!

Before mixing, allow 1 part Retail to warm to room temperature before mixing. Entrepreneurs have a special influence in any community and entrepreneurs can be part of any of the recipe ingredients. The 2005 beginning of My Mother Knows, LLC, was the fulfillment of a lifetime dream. Mary Heins and her mother shared a dream to operate a shop that would provide a charming array of cards, gifts and inspiration. The owner of My Mother Knows is engaged on the “front lines” of her cheerful gift shop. Mary shares, “My greatest rewards are the relationships developed through our customer service. My customers are part of a huge family who depend on us to meet their shopping needs for all seasons.” My Mother Knows Greetings & Gifts is a

“We live in a global economy” and “Buy local” are two phrases frequently used when referencing our shopping habits and economic development. Materials and products are produced and shipped all around the world and yet we are to buy locally. How can these philosophies co-exist? These are not easy concepts to wrap your brain around, but we decided to try and create a “recipe” that will help you combine these philosophies into your perception of Oregon City’s economy.

destination for regular customers coming from Lake Oswego, Vancouver, etc. Regulars bring their friends and eventually ask for a good place to eat. Mary gladly refers them to our locally owned bakeries and cafes. Not only are “out-of-town” dollars being spent in this business, they are encouraged to stay and spend a little more. This is the power of allowing one part of your Retail ingredient to “warm” to meet the needs of our economy.

Keep all ingredients within easy grasp as you begin blending in Value Added Products. The early examples of Oregon City’s “value added” ingredients were the mills – a woolen mill, flour mill, lumber mill and paper mills. Today’s value added products look more like high tech manufacturing. A great recipe takes advantage of each ingredient’s uniqueness. Fortunately, we don’t all have to be manufacturing experts to appreciate the richness it brings to our recipe. Manufacturing jobs and other value added efforts add a dynamic flavor to our recipe in the form of “new money” and are considered “traded sector”. While there are fewer of these ingredients in our local recipe, it doesn’t take too many to add a strong global flavor. Here’s an example of an entrepreneur who wanted to build the proverbial “better mousetrap.” Starting in a garage in California and eventually building its facility in Oregon City – this is the story of Benchmade Knife Company. Benchmade is an award-winning manufacturing business now employing 180 people with approximately 50% of those employees living in or around Oregon City and our neighboring communities. Benchmade Knife Company does business with over

50 countries worldwide with export sales up 11% year-to-date despite a weakened US dollar. The US is still Benchmade’s largest market, but its export business has been growing steadily for the past several years. Our manufacturers prefer to have their raw materials located as close to home as possible with easy access to roadways, railways, container ships and airlines. They also need ready access to a prepared workforce, one of our raw materials.

Add each part of Service and stir vigorously. When you begin the Service ingredients step, you will notice that there are many kinds of Service available. Because there is such variety it is important to stir in these ingredients vigorously. One prime example is Funnelbox Production Studios. Funnelbox CEO Robb Crocker and his crew are producing creative content in downtown Oregon City and in 10 seconds can send it to an LED display at the Galleria Mall Gap Store in Houston, TX, for onsite digital advertising. This kind of digital age business is actually one of the fastest growing companies in Portland. This ingredient fills an important and growing aspect of Oregon City’s economic recipe. More companies like Funnelbox are choosing Oregon City’s downtown for their “creative” home which is still considered Portland Metro, yet far enough away to have the character and sense of belonging that is ‘so’ Oregon City. Another portion that demonstrates the range of our Service ingredients is restaurants. In fact, some of our restaurants choose locally grown foods in their favorite recipes. What a great connection — raw material, value-added (fixed and prepared) and served on your dinner plate!

© Amber Holveck

Add in remaining ingredients and blend well. Take care to prevent any ingredients from spilling. Allow the flavors to blend overnight and then enjoy! By now most people are familiar with the slogan “buy local”. It’s simple — if we spend more of our money in our own community it will remain here longer. Not every business in Oregon City can be independently owned and operated. Good can come from spending money with our corporate businesses located in Oregon City, too. Remember that these larger cousins in town can offer a competitive price point, employ our family, friends and neighbors, and pay taxes while contributing to charitable efforts. Our recipe for buying locally in a global economy is not simple. Oregon City’s recipe won’t stand up to the “taste test” if we are missing any one of our ingredients. Get to know and savor Oregon City’s recipe and work to understand the importance of each kind of business in our local economy. Caring for what matters most During the fall and winter months, family and friends are often at the forefront of our thoughts. Back-to-school means backon-schedule. Falls brings Halloween and Thanksgiving. Winter brings Hanukah, Christmas, New Years and Valentines. Gifts, food, and family gatherings dominate many of our thoughts. Two groups that can get lost in the rush are the seniors in our lives and our pets. We asked local experts to share their advice on these two topics to help you prepare for the fall/winter season. In addition, we have included reminders to prevent thefts over the holidays, new guidelines for CPR, and ways you can help others in our community.

An active senior is a happy and healthy senior! Staying active is important for everyone who battles the winter blues. This is especially true for our senior community. With limited outdoor activities available during several months of the year, I am often asked what I would recommend to help seniors stay healthy and active. Below is a quick list of fun and easy ways to stay active, healthy and keep a positive mind set. Attitude is half the battle!

Conflicting emotions are normal Do you ever feel at a loss when it is time to visit your parents or grandparents? Do you wonder what to say or how to carry on a conversation? What will you do or have to do during the visit? Emotions play a big part in a relationship with our aging loved ones. Some of us might feel guilty, especially if you haven’t visited in awhile; after all, your life is so busy you just haven’t had the time. You could be experiencing denial, because you are seeing a change in their health but hoping they are okay. Because you want them to be okay, you convince yourself that they haven’t changed. Maybe you feel anger or frustration—resenting the demands of your aging family members or the other family members who can’t or won’t help provide care. You could also be experiencing feelings that you failed, if you didn’t notice the little “signs” that things just aren’t what they used to be with them. Finally, you might have unrealistic expectations of yourself listening to thoughts of “I must do…” or “I should do…”. First, let yourself be as sad as you want. Accept those feelings of guilt — they are normal. Work through your anger and

frustration. Know that it is common to feel conflicting emotions — it’s okay to feel love and anger at the same time. The sooner you accept those emotions that come with the territory the better you and your loved ones will be. When you make your regular visits, there are some pretty easy ways to ensure good quality of life for your aging family members and friends. Be sure to notice if they appear to be losing weight or acting differently. It could be that they are not feeling well but won’t tell you. Is it possible they are not eating properly or forgetting to eat? If they are already receiving Meals on Wheels, check to see if they are actually eating the food. Sometimes an elderly individual will choose to feed his or her pet instead. Make sure their homes are a comfortable temperature for them. Don’t forget to check on their medications, too. Are they taking their prescribed medications as they should? Are they running out? You may be feeling that this topic is nothing but negative, but think about the positive, too. Enjoy the visits with them while you can be together. The most important thing to the seniors in your life is to see your smiling face—this will make them the

Caring for your senior loved ones during the holidays The holiday season can be lonely for our community’s seniors, even though they may not be alone. Parents and grandparents of our generation were taught not to be a burden and will not ask for any more of our time than we already squeeze out of our schedules. We need to be the ones to make the effort. Reflecting on years of caring for our community’s seniors during the holiday season, I can recall many very special days. I’d like to share some tips I’ve learned over the years to get our senior loved ones engaged and thankful to share with us in the spirit of the season. It is all too common for our visits to be spent talking or asking about the same old things. Break out of that mold. Bring yourself into their world. Remember or discover something relevant to them and find a way

to share in that event. For example, I once cared for a one-room schoolhouse teacher. We had lots of fun quizzing each other with math tables. For a veteran I might share patriotic poetry or a book of period planes. We talk about what holidays were like when they were young. How about stringing popcorn and cranberries for the tree — maybe include the grandkids? Gifts are hard to buy for someone with limited space and probably everything they need. Candy can only go so far. • Try looking for a biography of a favorite performer or president from their past. • Find a newspaper or magazine published the year they were born. • Note cards, return address labels and stamps can be useful. • Subscribe to a large print Reader’s Digest. Reach out and give in a way that is meaningful to your beloved senior. They have lots to share if we just show we are interested. z About the author Debbie DeRusha owns two Adult Care Homes in Oregon City — Haven Corner and Prospector Terrace. The good life for seniors

Protect your property during the holidays

In 1982, John Naisbitt’s bestselling book Megatrends predicted that we were transitioning from an industrial age into an “information age.” Sound familiar? And because we were moving into this high tech age, Naisbitt said that human beings in the 21st century would have an increasing need for “high touch.”

The holidays are upon us and everyone is busy running around buying presents or supplies for the holidays. The Oregon City Police Department would like to encourage everyone to keep their property safe.

We are seeing Naisbitt’s predictions come true in the field of aging services in many ways. Certainly our retirement communities have become increasingly high tech. We are always in search of the bigger data “pipe” and more reliable wireless access. Our senior populations are emailing, surfing, and Skyping. They play Wii bowling, and they watch news stories and silly videos on YouTube. Some have even mastered social networking so that they can communicate with their grandkids and, in some cases, great grandkids. Unlike their much younger counterparts, however, today’s seniors didn’t grow up with technology. Consequently they know how to live without out it and because they know how, I feel they can teach the rest of us how to live. When I think about what makes life good for our seniors, I think of four essential ingredients. Living in a beautiful natural setting that restores us every time we look outside. Creating needlework, watercolors, wood carvings, photographs, and stories. Connecting by checking in on each other when we are grieving or unwell and in small ways such as getting to know each other’s pets and playing games together. Finally, learning from each other by telling stories about our lives, the work we did, the places we have lived, the people we love, and our traditions and beliefs.

When you are at local stores and shopping for your family please do not leave a purse or wallet in a shopping cart. Let’s make it hard on the bad guys. Hold that purse or wallet in your hands. We’ve said this before but can’t stress it enough. If you are shopping and you have packages in your vehicle, put them in your trunk and out of view. If the bad guy can’t see what you have, more often than not, they will not break into your car. Remember to always lock your car. When you leave your home for a family function, lock your doors and windows. Burglaries increase during the holiday season. The colder weather during the winter months tends to ice up our vehicles. Every year the Oregon City Police Department takes stolen vehicle reports from people who have left their vehicles running to defrost the windows. Please help us cut down on these winter vehicle thefts. Do not leave your vehicle running unattended. If you need to do this please lock your car and be in the area so you can keep an eye on your vehicle. Never leave your child unattended in a vehicle. The bad guy stealing your car is often focused on the driver’s seat and not the child. He may steal your car and not even know your child is there.

In a high tech age, these gentle touches are grounding and remind me daily of what makes life good. z

The Oregon City Police Department takes pride in serving our community. We would appreciate any help that the community can give us in cutting down on crime in your neighborhood. The Oregon City Police Non Emergency dispatch number is 503-655-8211.z

Tips&Trends

Preventing boredom in pets during winter During the long, long months of winter that we have in the Pacific Northwest, we as humans can often find ourselves a little stir crazy indoors. Well, your pet can be even more bored, and not at all interested in watching another re-run of that TV show. When cats and dogs get bored they can do things that can be destructive. Some examples of this are chewing, getting on furniture and counters, urinating or defecating in an inappropriate area of the house, scratching furniture or door frames, and barking. All of these things can be a sign of boredom and can sometimes lead to a condition called separation anxiety. There are things you can do to help your pet with their boredom and with any anxiety they might feel in your absence. When your pet is chewing on items other than their proper toys, first remove that item and replace it with a more appealing toy. Choose a toy of proper size and type for your pet, perhaps one that is flavored or one

you can add a treat to such as kong toys or treat balls. If your pet is chewing on power cords, furniture or items you cannot remove, do not allow your pet access to those areas when you cannot supervise them. When training your dog to choose a toy over something else, play with your dog with the toy, wiggle it in front of them and throw it around. Always praise your dog when you see them choosing to play with the toy. Cats also need toys and theirs can have catnip to encourage play.

During the holidays, pets can become overexcited, confused or frightened. When guests are over keep pets in a quiet part of the house and watch for open doors. Even though your routine might change, try to keep your pets on their normal routine of feeding and exercise. Holidays are not the best time to introduce a new pet to the household.

If you plan to participate in Halloween festivities, such as answering your door to trick-or-treaters, keep pets in a quiet part of the house. Watch for open doors and make sure your pets have ID tags and/ or are micro chipped in case they do get out. Outdoor pets, especially black cats, should be kept indoors on Halloween.

Decorations are a potential risk, such as fake cobwebs being ingested, and should be kept out of reach of pets. Light strands, loose wires and cords can be a serious hazard. Never leave candles, such as those in jack-o-lanterns, unattended especially around puppies and kittens. Make sure your Christmas tree is well secured. Avoid adding preservatives, aspirin Fall/Winter 2012

Holiday safety tips for pet owners

Keep holiday treats, candies and nuts out of your pet’s reach as they can make your pet quite sick. If eaten, candy wrappers can cause an upset stomach, nuts can cause blockages. Chocolate: unsweetened, dark, bittersweet and baking can be toxic to pets. If your pet eats it, call your veterinarian or animal poison control center as treatment may need to be rendered immediately.

10

Daily exercise and play are important in helping your pet with boredom. Consult your veterinarian for advice and information regarding behavior changes or problems, and medications or treatments for any of the conditions listed above. z

or sugar to your tree’s water, or keep the water covered. If your pet ingests holiday decorations such as breakable ornaments, tinsel, string, ribbon and thread, it could experience serious internal injuries or death.

Snow globes may contain antifreeze (ethylene glycol). As little as one teaspoon of antifreeze when ingested by a cat can be fatal. The ingredients in liquid potpourri can cause burns to a pet’s skin, eyes or digestive tract.

Holly: Leaves can cause damage, and berries are mildly toxic. Mistletoe and Poinsettia: Not toxic, but the leaves and berries can cause gastrointestinal upset. Lilies: All parts of the plant are toxic to cats. Bulbs (daffodils, tulips): The bulbs are the most poisonous part. Finally, dogs and cats that sleep outdoors should have a snug, dry, draft free place to sleep. Car engines are of particular danger to cats that sleep outside. Cats seek the warmth of car engines, and can be severely injured or killed when caught in the fan belt of a car’s engine. Make it a habit to check under the hood for animals and honk your horn before starting your car. z About the author Dr. Karen Henson is the owner of the Cat’s Meow Cat Clinic located 19743 S Highway 213, Oregon City. Tips&Trends CPR easier than ever Care for our larger pets, too Editor’s note: Clackamas County is one of our country’s top 10 counties for horse ownership. While many horse owners don’t conveniently live on their own acreage, many continue their love of horses thanks to many stables throughout rural Clackamas County. Quite a few stables can be found conveniently located just outside Oregon City and in Beavercreek and Redland. Horses are highly valued by their owners and a considerable investment. Thus, good health care and maintenance of this beautiful animal is a must. Keep your horses healthy during the fall and winter months by starting with the basics. Quality feed and a balanced diet are essential. Watch out for moldy hay and plan to increase the amount of feed in cold weather. Pay special attention to pregnant mares, old or young horses, and non-dominant horses. Provide a salt block and make sure your horses are drinking enough water. An average horse consumes approximately 10 gallons of water per day. Colic is the most frequent fall/winter emergency. Cold water can lead to decreased drinking and impaction colic. Check your horses’ water frequently, break any ice, and try to maintain the water temperature at 45– 65 degrees Fahrenheit. Weather, stress, and diet changes all contribute to the risk of colic. Outlined below are some basic year-round guidelines for the care of your horses.

Most horses require yearly teeth floating and dental maintenance. • Contact your equine veterinarian about a deworming schedule for your horse. • Feeding 3 quarts of wheat bran (mixed into a mash with warm water) once weekly during cold weather may help prevent impaction colics. • All eye injuries or abnormalities require immediate veterinary attention. • When cleaning wounds, use 2% Chlorhexidine solution (Nolvasan) diluted as follows: 25cc Nolvasan to 1 quart water or 1 teaspoon Nolvasan to 1 cup water. • Grass sugars (carbohydrates) are lowest in the pasture from 3-10 AM. Any turnout of horses at risk for lamimitis should be done during this time and avoid afternoon grazing. • Make all feed changes slowly over 10-14 days, even with new shipments of the same hay. • Feed at least 70% of your horse’s diet as forage (hay or pasture). • Grain meals should be divided into at least 2-3 feedings per day to avoid digestive problems. z About the author Dr. Steve Sundholm is the owner of Equus Veterinary Service, located at 14671 S. Each year 383,000 out-of-hospital sudden cardiac arrests occur throughout the United States, with nearly 88 percent of them occurring at the victim’s home. It is due to this staggering statistic that Clackamas Fire District #1 would like to encourage its citizens to get CPR trained. Cardiopulmonary Resuscitation or CPR, is an easy way to make a life saving difference and to give a victim of cardiac arrest a better chance of survival. Now, learning and performing CPR could not be easier as the American Heart Association is recommending “Hands only CPR.” This means that CPR no longer requires the rescuer to perform mouth-to mouth resuscitation in order to be effective. It has been proven that performing hard and fast chest compressions provides the downed victim with adequate blood flow to vital organs, thereby increasing the chances of survival until help can arrive. An easy way to remember the pace for giving compressions is to sing the song “Staying Alive” by the Bee Gees. A victim’s chance of surviving sudden cardiac arrest is increased when the “Chain of Survival,” is in place. The chain of survival includes five vital links and drastically increases the chances of a victim surviving the event. The 5 links in the adult Chain of Survival are: • Immediate recognition of cardiac arrest and activation of the emergency response system • Early cardiopulmonary resuscitation (CPR) with an emphasis on chest compressions • Rapid defibrillation • Effective advanced life support • Integrated post-cardiac arrest care More information about the life-saving effects of learning CPR are available at the American Heart Association website at www.heart.org or by calling Clackamas Fire District #1 at 503-742-2600. z About the author Brandon Paxton is the Public Information Officer for Clackamas Fire District #1. What does future hold for former

Blue Heron mill site? Local and regional leaders are investigating the site where the former Blue Heron Paper Mill once operated. This land steeped in cultural and industrial heritage could provide a rare opportunity to once again connect the public with the Willamette riverfront and one of its best treasures, the Falls, while supporting Oregon City’s vision for the future. Photo courtesy of City of Oregon City

The Blue Heron Paper Mill, which closed permanently in February 2011, was busy with the sights and sounds of paper mill production for over 100 years. Amidst the gray clouds of 175 people losing their jobs, some believe a silver lining awaits: “If this is done right it could be the most important development project that Oregon City’s seen for some time,” stated Oregon City Mayor Doug Neeley.

long-term vision for Oregon City and the region. The four values are:

Truly, we should be excited when you consider the possibilities. 23 acres located along the Willamette River tucked in on the Oregon City side of Willamette Falls with easy access to Hwy 99E and I-205. Distinctive character is rooted in this site, too — ancient Native American fishing, first long-distance transmission of electricity, the Oregon City Woolen Mills, and more. Normally, property like this would be relatively easy to sell for redevelopment.

• Economic Development, creating opportunities that will return the site to private developers and implement Oregon City’s vision for downtown; and

• Cultural Interpretation, seizing on the opportunity to share the value that is woven into the fabric of Oregon City’s history; • Public Access, providing visitors an opportunity to reconnect with the Willamette River and Falls;

• Ecological Restoration, investing to re-establish and enhance native plant communities and improving water quality along this ecologically diverse stretch of the Willamette.

As exciting as this opportunity is, it is also extremely complicated. The significant unknowns on the site, particularly the liabilities, costs of demolition and long-term management of the site, must be studied. Any decision must balance the potential of a spectacular statewide destination with the commitment to spend taxpayer dollars responsibly.

Metro and the trustee of the former site have signed an agreement that allows the property to be investigated. During this investigation period, the property is still on the market; it is not Metro’s or the partners’ intent to stand in the way of private investment or interest. On the contrary, this work is intended to eliminate barriers to private investment on the site.

The significance of this project is such that it requires involvement by an array of public partners. Oregon City, Metro and other partners have agreed to four equally-important values, which they feel work together to create a product reflects a positive,

The first phase of this project, which is currently underway, involves conducting the studies of the site that are necessary to: 1) understand as fully as possible the site’s significant liabilities and opportunities and determine if the acquisition is in the

18

Fall/Winter 2012

public’s best interest, and; 2) strengthen the partnership and create a framework for public confidence. If the investigations result in a decision that the project should move forward, a contract will be negotiated with the trustee and the next phase of the project will begin. No development plans have been created for the property yet. Oregon City requires that a project of this size be guided by a master planning process. This public process would help identify the development possibilities, such as hotels, apartments, retail, light industrial, tourism, parks, etc. It will likely be several years before we see any significant rehabilitation. When that time comes, it sounds like downtown neighbors will be ready. “We’re looking forward to welcoming 1st through 5th Streets back into downtown Oregon City!” proclaimed Downtown Manager Lloyd Purdy. The community of Oregon City should understand that a Master Plan kicks off an intensive effort of public engagement allowing each of us to have a part in what happens. Oregon City Economic Development Manager Eric Underwood shared, “I believe there is an opportunity to have a development as unique as the property, resulting in a product of the community. The only way to develop this product of the community is for the community to get involved when that time comes.” z

A history… Oregon City is the first incorporated city west of the Mississippi River. Established in 1829 by Dr. John McLoughlin at the base of the thundering Willamette Falls, Oregon City was the destination for thousands of Oregon Trail pioneer settlers in the 1840s. With its rich heritage and natural beauty, the City at the End of the Oregon Trail continues to connect visitors to our nation’s pioneering past. Oregon City was the first State Capital and is the County Seat of Clackamas County. The city has three major zones, defined by steep hills or bluffs. Oregon City is home to shopping areas, recreational opportunities, businesses, and a wide variety of historical and cultural attractions dedicated to celebrating the Pioneer spirit. Rich history, natural beauty, and a progressive community have found a home in Oregon City. It is the blend of old and new that makes Oregon City such a vibrant place to live, work, and play. z

Porter Mustard Chicken By Chef Robert Kensler

Midway Historic Public House

Inspiration I get a lot of inspiration from the seasons, especially autumn. Between the cool crisp air, the vast array of colors in the trees and all the great harvest festivals and holidays, makes for a perfect time of year. This dish has a touch of fall in it. The earthiness of the herb blending with slight tangy spice of the mustards and a touch of sweetness from the beer and wine make this dish shine on a cloudy fall day. Paired up with some roasted squash and apples, and you’ve got autumn on your plate.

Ingredients 2 ea. Boneless, skin-on chicken breasts 1 tbsp Minced garlic 1 tbsp Minced shallots 1 tsp Lemon juice ¼ cup Sweet white wine (Riesling, Chablis or Pinot Gris) ¼ cup Olive oil 2 tbsp Dijon mustard ½ tsp Kosher salt ½ tsp Black pepper 1 tsp Fresh chopped thyme

2 tbsp Stout or porter beer 6 tbsp Stone ground mustard ½ tsp Dry mustard 1 tbsp Butter

Directions Make a marinade for the chicken by combining garlic, shallots, lemon juice, wine, olive oil, Dijon mustard, salt, pepper and thyme in a mixing bowl. Mix well. Place chicken in a zip-lock bag and cover with the marinade. Refrigerate at least 4 hours (overnight is best). Remove the chicken from the marinade and cook on a medium-hot grill for about 20 minutes or until the chicken has an internal temperature of 145 degrees. Remove from heat and let rest for 5 minutes. In a small pan combine the porter and the stone ground mustard. Bring to a simmer and remove from heat. While sauce is still hot, add the dry mustard and finish by melting in the butter while stirring constantly. Serve the chicken glazed with the porter mustard sauce. This dish is great served with any seasonal fresh vegetables and mashed or roasted potatoes.

A Warm Welcome from the Church in Oregon City The Church in Oregon City welcomes you! We invite you to discover new bonds of friendship, the joy of worship, the satisfaction of service and especially God’s amazing love and grace. The leaders of local churches and ministries listed below meet together monthly for fellowship, planning and prayer. We’re from diverse denominations and backgrounds, but we join together in one cause in the service of Jesus Christ. We unite around an ancient statement of Christian faith, known as the Apostles’ Creed: I believe in God the Father Almighty, Maker of heaven and earth, and in Jesus Christ, His only Son, our Lord; Who was conceived by the Holy Spirit; born of the virgin Mary; suffered under Pontius Pilate; was crucified, dead and buried. He descended into hell. The third day He rose from the dead; He ascended into heaven; and is seated at the right hand of God, the Father Almighty; He will come to judge the living and the dead. I believe in the Holy Spirit; the holy catholic(universal) Church; the communion of saints; the forgiveness of sins; the resurrection of the body and the life everlasting. Amen. We have expressed our unity in serving the Oregon City community through: • Participating in City Serve opportunities. • Sponsoring the annual National Day of Prayer Breakfast. • Helping in emergency preparedness networking for the City. • Providing Marriage Enrichment and Pre-Marital Preparation Programs. • Participation in the Oregon Food Bank Harvest Share food distribution. • Joining in prayer for and proclaiming Christ to the inhabitants of the City. • Sponsoring the OC Compassion Connect, a one day free medical and dental clinic, which served over 180 individuals. • Sponsoring a Christian Education Forum where parents could investigate various educational opportunities for their children. • Helping to provide weekend food for needy grade school children through Backpack Buddies programs around our school district. Whatever your own background or beliefs, we extend an open hand. Come experience our faith first-hand. Visit the Church in Oregon City website at churchinoc.com.
