“It not only helps the soldiers over there; it helps with the family members with loved ones being far away. It’s people helping people.”
When Marcos Cabrera was in the service, there were no phones or Facebook to connect him to the world at home. All he had were letters. “It might even come from someone you don’t know,” Cabrera said. “I’ve met people who kept relationships with strangers that wrote them letters. Letters are important because it will always be with the soldiers no matter where they are.” Cabrera was one of the many people who attended Ormond Strong’s Letter to Soldiers event Saturday at the Ormond Beach Regional Library. He said that, even with the Internet, the letters still serve a great purpose. “It not only helps the soldiers over there,” he said, “it helps with the family members with loved ones being far away. It’s people helping people.” Nataliana Sacks joined Ormond Strong after her husband’s National Guard unit deployed to Afghanistan in March. The two got married during a four-day break in June, and plan to have a big Disney wedding when he returns in a year. “Disney, church and the Miami Dolphins are our big things,” Sacks laughed. “Austin actually found out about Ormond Strong and told me I had to meet up with them. Commission sets tentative tax rate

Property owners will pay more if rate holds up. WAYNE GRANT NEWS EDITOR
The City Commission set the tentative millage rate for the next year at their July 28 meeting. The rate will be placed on the TRIM notice that property owners will receive from the Volusia County Property Appraiser next month. TRIM stands for “truth in millage,” and allows citizens to see their estimated taxes for the coming year.
The final tax millage for the city of Ormond Beach will be determined by the commissioners in two public hearings at 7 p.m. on Sept. 9 and 23. If the proposed rate holds up, city property owners will be paying more, because the rate is above the rolled-back rate, which would bring in the same amount as the previous year. Chef Mark Pullin isn’t afraid to admit that he likes to eat. His culinary skills began when he was 4, when he had to cook for himself while his mother worked. Back then, the menu was homemade macaroni and cheese, with potato chips on top. “I was extremely fat,” Pullin chuckled. “I started then, and I liked to eat, so I kept going. I became an executive chef by the time I was 22.” Pullin has opened 17 restaurants during his career so far, and has worked primarily in Ohio, Las Vegas and Ormond Beach. While living in Las Vegas for a year, Pullin studied under Chef Roy Yamaguchi and Chef Randy Oviot, and was able to cook for people like Kid Rock, Martha Stewart, Bobby Flay, Joe Montana, Jerry Rice, Paris Hilton, the president’s secret service and Chris Angel. In 2011, he beat out 20 other competitors in the Taste of NFL, and was crowned culinary champion. He went on to cook for 3,000 people at that year’s Super Bowl. “I’ve catered to over 55 different famous people,” he said. “I’ve

gotten really lucky in Vegas and Ohio. I have no kids, I’m not married, cooking is my everything.” During the three years he’s lived here, he’s open Blau Grill, Fusion 43 and 31 Supper Club. “Basically all the number restaurants,” he joked. Despite all his success, Pullin still had a yearning for more. He wanted a job focused mainly on the food, and less on the intense and time-consuming operations of running a restaurant. “I just want people to enjoy themselves,” Pullin said. “I’ve been cooking $100 steaks for so long. My friends can’t afford it. I just want to be able to give back to people who want to enjoy good

food, and not have to save up to go out to dinner. Someone who can come enjoy an $8 burger, and I don’t have to worry about someone writing me a bad review because the person sitting next to them was wearing shorts. It’s about the food.” It was that frustration that led Pullin to start his own food truck business simply called The “Good Food” truck. Thanks to investments and faith from his friends like Diane Michael of Callan Group Communications, Pullin said he is able to fight one common misconception people have about food trucks. “They think it’s all pre-made products,” he said. “There is no can opener here. I make everything — ketchup, mustard, hot sauce — from scratch. The only thing I don’t do is bake my own bread and make my own tortillas. I refuse to call myself a chef and buy pre-made stuff.” As of now, Good Food sells “kicked-up American classics,” but eventually, Pullin wants to expand the business to be able to make any of the over 50 styles of
DID YOU KNOW?
After over 30 years in the bartending school business, Hank Belden will retire at the end of the month. According to a press release, Belden has been the owner of the Hospitality Training and Bartending Institute since 1984. “We have provided hundreds, if not thousands, of trained bartenders to Volusia County area bars and restaurants over the past 31 years,” said Belden in the press release. “That’s a lot of jobs keeping our local economy vibrant.” Belden has managed bars in California, Hawaii, Australia and places throughout the U.S. He decided to open his own school after seeing the need for good bartenders. Belden prides himself on not being a “typical” bartending school. Students can stay in school as long as it takes to learn the program, and as long as it takes to find a job, which they also help students do. The course not only focuses on how to make drinks, but how to increase bottom line profits and raise check averages, both for the bartender as well as the establishment. Belden’s motto for being a great bartender is, “The more fun you have, the more money you make.” The course not only teaches how to prepare all types of cocktails, what type of glass to serve them in, and garnish them properly, but other skills that make a successful bartender. Some of these skills include providing excellent customer service to patrons, how to build a repeat business, and going beyond expectations. Belden is seeking a new owner to carry on the school. It can be worked on a full- or part-time basis. The school is located at 1132 W. Granada Blvd. They can be reached via phone at 673-6477, or online at bartendersplus. com orfacebook.com/HospitalityBartending.

food he can create. Eventually, he wants to franchise and help other people open up their own food trucks. “Diane helped make my dream come true, and I want to do the same for other people,” he said. “We want to touch as many people in as many places possible. I’m very blessed to being doing what I’m doing.” Three months after the start of the business, Pullin said the response from the community has been overwhelmingly positive. Still, no matter how far they grow, he’ll never forget an important rule: It’s all about the food. “How many memories do we have that it started it out with great people and great food?” he said. “That’s all it takes. The rest is history.”

NEXT YEAR’S BUDGET
The total proposed budget for the city is $85,892,131, which is $6,190,958 more than last year. Before the meeting, Finance Director Kelly McGuire presented the operating budget to the commissioners. A capital budget workshop was held earlier this year. “It’s not realistic to expect government to operate with the same dollars year after year after year,” she said. She showed a chart that showed that in many years the city has held to the rolled-back rate. Added expenses include five new police officers (partially paid by a grant); a new neighborhood improvement officer; a new information technology specialist; facilities and vehicle repair and replacement; Environmental Learning Center supplies; enhanced sports field maintenance; median landscaping

In future years, as properties are annexed, the businesses are expected to bring in funds through taxes and fees to pay for services. The city outsourced the maintenance of sports fields in the past year, which cost more money but improved quality. The commissioners agreed the investment has been worthwhile, pointing to the recent national baseball tournament held at the Sports Complex.

Added to the millage are three obligation bonds approved by voters in previous years, which total 0.2727. That makes the total millage 4.557, which means that a property owner would pay $4.557 per $1,000 of appraised value after exemptions are substracted. Owners can find the appraised value on their TRIM notice, when it is sent.

BIG KID NOW
ORMOND BEACH
There’s more to Greek food than feta Observer After some time with Chef Elaine, I was eating grape leaves and toasting to ‘yia mas.’
EMILY BLACKWOOD COMMUNITY EDITOR
Walking into The Casements’ kitchen Thursday evening, I was smacked in the face with a smell so warm and inviting that I forgot to knock. My lunch had only consisted of a few handfuls of cheese, so by this point my stomach was basically running the show. Thankfully, instead of scolding me for my rudeness, Chef Elaine Pitenis welcomed me with open arms, and, when seeing my camera, subtly put on some pink lipstick. This evening, for her Big Fat Greek Cooking Class, Elaine was teaching a full house of 11 students how to make a traditional Pastitso dinner. The meal included Pastitso, a Greek-style
MY BIG FAT GREEK COOKING CLASS
lasagna, spinach and feta triangles, stuffed grape leaves, Greek salad, and something sweet I dare you to try to pronounce: Galaktoboureko. As we, as a town, have discussed before, my cooking skills are subpar at their best, and life-threatening at their worst. So I maintained my distance from the fancy kitchen tools per usual, and meandered around snapping pictures of the class and eavesdropping on conversations. Most of which were about the delicious smells coming from the food, and the incredibly slow pace of the clock. “I don’t know about you, but I’m going to eat,” A.J. Clemonts said to me while also staring at the freshly baked dish in front of us. “And I’m not going to be shy about it.” “How do you keep your pans so nice?” Jennifer Fisette asked the chef. “All my pans look like they went to war.” “A.J., does she feed you well?” Dianne Kulp questioned about the meals during his evening shift.
Photos by Emily Blackwood
“I never burn anything,” said Chef Elaine Pitenis. “I don’t like that word. I caramelize it.”
“We’re about to find out,” he said with a slight sense of urgency. After getting lost in the conversations around me for an hour or so, Dianne brought me back to life with my favorite kind of question: “Emily are you going to stay and eat with us?” You betcha, Dianne.

They may look alike, but they’re ‘Not Brothers’ EMILY BLACKWOOD COMMUNITY EDITOR
When Bob Panek hired on Roy Mangus, he was more interested in the experience on his resume than the similarity in their facial features. In fact, it wasn’t until another woman accused Mangus of teleporting until Panek realized they looked alike. “At work I was at one place and
he was at another, and someone asked him, ‘Are you guys brothers?” Panek said. “He said ‘No, we’re not brothers.’ One thing led to another, and we got to know each other and became friends.” It was that awkward encounter that led forming the Not Brothers Band in 1998. Now made up of Buzz LaLonde and John Bigwood, the band has been performing together off and on for 19 years.
“For about three or four years we played all over Daytona Beach,” Panek said. “Then we took a hiatus and went our separate ways. We just got caught up in life, and we were kind of burned out on the music scene. We just recently got back together.” Self-described as a “rock ’n’ roll time machine,” Not Brothers Band covers songs spanning 40 years of music. The group does everything from The Beatles to Deep Purple to R.E.M., but not in the way you might think. “If we’re playing R.E.M., you
would expect to hear ‘Losing My Religion’ or something else real popular,” Panek said. “We like to do the obscure songs, not the big hits. We would play ‘Man On The Moon.’” The group will perform in the Ormond Beach’s final Summer Sounds Series concert 7 p.m. July 31, at Rockefeller Gardens.

MASS SHOPLIFTING 9:52 p.m. — 1400 Block of West Granada Boulevard. Shoplifting: Surveillance footage at a beverage store showed the clerk being distracted by two suspects while four other suspects put bottles down their pants or in a bag. All of the suspects then left the store. They then re-entered, and began concealing bottles in the same manner. The clerk saw a suspect in a back room and asked her what she was doing there. She said she had lost her keys and was looking for them. While this was going on, the suspects all fled the store with the merchandise. After they left, the clerk noticed bottles were missing so called law enforcement. A person who was parked next to the suspects said they made a clanking sound when they approached their vehicle. At least 20 bottles of liquor were missing with a total value of $813.80.

He thought this was odd until he got back to the table and saw that the cash was missing. He asked for a report to be filed but declined to press charges. COACH AND THE BABY SANDCRAB

eabreeze volleyball coach Tarisa CraigCraggy’s mood changed and her eyes popped at practice, when her sister came through the gym door, carrying her 11-month-old son, Keegan, who had just come in from a swimming lesson. Last season was unlike any other in Craig-Craggy’s 10-year coaching career. She gave birth to Keegan a few weeks before the season began. Craig-Craggy revealed some of the best and challenging moments she has endured since becoming a first-time mother. Dawsey: What were some of the biggest challenges, having a newborn? Craig-Craggy: I had to figure out how to balance having him at home and then coming here and having the energy to coach 24 girls, especially when you’re up every couple of hours feeding. Once I figured out how to manage it, I got used to it, and I’m still not as energetic as I used to be, but it’s worth it. These girls make it easy. Dawsey: Is Keegan the new little brother to 24 sisters? Craig-Craggy: Oh, yes. They love him, and their parents love him. When I bring him to games,

they all fight over who’s going to get him. ‘I want him. I want him.’ The parents and girls make it easy for me to keep coaching. I didn’t know if I would be able to continue coaching after having a kid, but it’s who I am; it’s what I do, so I’m going to keep coaching as long as I can. Dawsey: How often do you hold him while coaching? Craig-Craggy: Earlier in the summer, I had to bring him to every open gym. My sister’s here from Ohio now, so I don’t have to bring him to practice every day, but, at the beginning I paid one of my softball players and one of my former players to come and play with him in the corner. He cried a lot because he’s in the I-lovemom stage. He only says ‘ma-ma,’ and I also like him here because I like to see him. Dawsey: So, he’s in the I-lovemom stage, but you’re in the protective stage right now, correct? Craig-Craggy: Yes. I’m very lucky my parents retired last year right before I had him, and they came down here (from Ohio) and babysat throughout the whole year, and they’re coming down again to watch him throughout the school year. I’m a little nervous putting a newborn in day care, especially my first kid, so I’m lucky he gets to be with my mom and dad. Dawsey: How does your hus-

band feel about little Keegan not saying ‘Da-da?’ Craig-Craggy: He’s (Mark) OK with it, and Keegan will get there. He’s just with me all the time while Marks’s at work. He just started walking and talking, and I’m the one that’s there. Dawsey: Have any of your coaching methods changed since you’ve become a mom? Craig-Craggy: I think I’ve learned to be more patient. I’ve always been a patient coach, but now I talk to these girls how I would like a coach to talk to Keegan one day, and I catch myself sometimes, when I want to be a little harsh. Also, when I’m here I try to be all the way here. Even if I have Keegan, I don’t want to shortchange the girls. Dawsey: After practice, does he get passed around? Craig-Craggy: I think some of the girls are scared of babies, but a lot of them will come over to see him. My outside hitter (Vail Linn) gave me a Seabreeze volleyball onesie that her mom made for

him, and they already told me I can expect a new one this year, so they all take to him. Dawsey: How does that make you feel, knowing how much they care for him? Craig-Craggy: Amazing! These girls are just an extension of my family. I’m with them so much, and I love it that they love him and that they’re willing to help me. I have unlimited babysitters, whenever I need to go out. When my husband and I need a night on the town, I can call one of these girls up, and they’ll come.
y wife, Jessica, will tell you that I’m a “people person.” She often laughs when I tell her there is a real shyness to my personality that people don’t often see; but it’s true. Unfortunately, that shyness did not come into play when I attended the Halifax Regatta this past week. Thankfully, I found Laura Leffler, a rower mom (if that’s a term?), who was delighted to inform me on all the festivities and the best spots to get pictures of the rowers. After she explained to me, she sent her youngest son, A.J., to help guide me along the way. That was very thoughtful of Laura because I would’ve had no idea what to do or whom to take pictures of, if he didn’t accompany me. So, as we journeyed from the boathouse to the bridge, I began to interrogate him about all of his life. I asked him his age (13), how many siblings he had (youngest of seven), about his favorite song (only the ones with good tunes), his favorite school subject (social studies), his grades (very smart, trust me), if he sang at all (never, but I didn’t believe him), why he chose rowing over football and many other questions (I swear I’m not nosy). And, like any new “best friend,” A.J. answered them all. I even tried to convince him that the word “regatta” should always be pronounced with an English accent, but he didn’t agree. I still think so. Here are some interesting facts that I learned about him: He was selected into the Duke University Talent Identification Program. He wants to either follow in his dad, Charles’, footsteps as a veterinarian or a computer engineer, and he had to stop playing football because of flat feet, but, after fixing the issue, he still chose to go away from it, which ultimately led him to rowing. I always tell my editor that there’s a story everywhere; I truly believe that. In 45 minutes, standing on a bridge with a 13-year-old eighth-grader, I was able to peek into a fascinating life and make a new friend, simply because I asked a bunch of questions. If you see me around, don’t be afraid to interrogate me; I just might beat you to it.

RESULTS FROM ADULT AND JUNIOR PROGRAMS
JEFF DAWSEY SPORTS EDITOR
There were over 360 entries and over 30 rowing clubs that competed in the 19th-annual Halifax Regatta Saturday, July 25, at the Halifax Rowing Boathouse. “This was my first HRA Summer Regatta experience, and I never imagined how much it takes and how many hands it takes to make a regatta run efficiently,” said Victoria Ciccone, head coach of the Junior and Adults teams. While the adult Halifax Rowing Association program has consistently placed first in races throughout its history, the Junior program is proving that it’s only getting better with every competition.

HEALING CLASSES
COMMUNITY EDITOR
Conny Dempsey stares at her in-process piece of art for a few moments. It’s three hands, fingers intertwined, spanning across the page. “Life is our past, present and future,” she says slowly. “It goes on and on and on.” She’s flipping through a magazine, scanning to find the perfect letters to write out “love is” when a woman across the table hands her a piece of decorative floral paper she had been eyeing earlier. “You are so sweet,” she exclaims. “Now I need some glitter.” Dempsey is just one of the many students in sold-out self-expression healing classes offered at the Ormond Memorial Art Museum. Founded in 2011, the Art of Healing program has used the combination of art therapy research and thoughtful imagination to inspire self-expression for those who have endured tough times. After having a waiting list for the
past few months, museum Curator of Education and Outreach Kristin Heron is done sending people away. Starting in August, Art of Healing will be expanded to two classes a month — one at the museum and one at the Florida Hospital. “I hope to be able to reach as many people as possible now,” Heron said. “I introduce a variety of artful techniques, and present them in a way that is relaxing and fun for everyone. My projects have multiple layers. I want everyone to experience the joy of creating in the present moment, leave with a beautiful piece of art they are proud of, feel a sense of accomplishment and confidence, and then maybe this will translate to another area of life.” And it seems her students are very appreciative of her creative efforts. “I love how Kristin infuses meaning into our projects,” Rose Vanderberg said. “We really get to play and connect with each other, and express what’s in our hearts in
a safe way.” There was a full house at the museum July 23 for the programs “Healing Hands” class. In this mixed media workshop, participants used collage and a tracing of their hands to represent what they’ve experienced in the past, and what they hope for in the future. “Our hands are very personal,” Heron said. “We see them every day, and in many instances they are how we express ourselves creatively. By spending this time really focusing on how we have lived and how we hope to live, we can learn to focus on living with intent every day, and making the most of every moment.”
Charlotte Towe has lived in four different RVs. She describes her “fifth-wheel lifestyle” with so much confidence and ease that it made this writer think about abandoning her own permanent property. “Me and my husband just sold all of our stuff, and got on the road,” Towe said. “My husband died in 2006 from inoperable lung cancer.” Currently living in a local campground, Towe said she likes being able to go anywhere she wants, but right now she chooses to stay because her sister lives in Palm Coast. With a family history of cervical cancer, Towe is using the Healing Hands class to express her fear of medical issues. Her mother died from complications of the cancer. “My doctor has offered me a couple of alternatives,” she said. “But I’m not rolling the dice on anything. There’s plenty of time.”

In the past year, Rose Vanderberg has experienced many different kinds of loss. “I recently retired from being the program director for a nonprofit hospice, and I just moved to Ormond Beach from Winter Park,” she said. “That kind of loss — it’s good, but there’s a loss of what’s familiar.” Perhaps the hardest form of loss in recent months was the death of her Uncle Bernie. “He was a special person,” she said. “He really encouraged me, and was my cheerleader. He gave me lots of love. What made him even more special was that he was my father’s brother, who was also very dear to me. So Uncle Bernie was the last of the brothers.” Despite the hardships she’s faced, Vanderberg still bears her infectious grin and positive attitude, which she says is easy to have during her art class.
