Happy Valentine’s Day!

M

any of us will soon be purchasing chocolates and flowers for our sweethearts, or writing our dearest a love letter or two on February 14th. Valentine’s Day has evolved from a somber Christian day of remembrance into a day for all of us to celebrate those we love the most. The day’s origins, however, are a bit more complicated. According to the Oxford Dictionary of Saints, there are actually at least two Saint Valentines remembered on February 14th, and potentially a third. Valentine of Rome was a Christian priest who was martyred in 269. A few years later, Valentine of Terni, a bishop, was killed in 273. Not much is known about them. Modern histories of their acts, including what led to their deaths, were likely destroyed in the 4th century. What remains are a few wonderful legends. The most endearing of the Legends of Saint Valentine is now referred to as The Golden Legend. According to this legend, on the evening prior to his execution, Valentine wrote a note to the blind daughter of his jailer, a girl named Julia. He signed it simply “Your Valentine.” The following morning, the young girl woke with the ability to see. A miracle! After sitting up in bed, she turned to see the world’s first Valentine’s Day card next to her. Today’s romantic Valentine’s Day customs likely originated in 19th century England and have spread throughout the world. Cupid, the ancient Roman god of love, has become as important a symbol as Valentine himself. In parts of Europe, lovers give each other “Valentine’s Keys” as a symbolic way to unlock their hearts. In the United States, people tend to give gifts of sentiment such as flowers, chocolates and love letters and poems, or gifts of pampering such as massages and jewelry. So, this February 14th, as you give your most cherished loved one that something special, you can also share the rest of the story.

ith the celebrating of the holidays behind us, the New Year is a great time to focus on your health and wellbeing. For many people losing weight is the big objective. We live in a country where a great many people weigh more than they should. If you have been wishing you could get rid of some excess fat but have had little success with dieting, Slender Fit U is the answer! For many years now Slender Fit U has been helping their clients to lose weight and even reduce or eliminate medications with an easy medically supervised weight loss program. On the diet it not uncommon to lose nearly a pound a day. That means with the 46 day program, you could very likely lose 40lbs or more. The typical person will lose ½ to 1 pound of body fat per day without exercise or special foods. During the program you will be monitored regularly and coached on what to eat to maximize the effectiveness of the program. Owner and Program Director Geri Kelleher is often referred to as the “HCG Guru”. A little over 10 years ago Geri quickly lost the extra pounds she wanted to get rid of with an HCG program and she got very excited about helping others do the same thing. In 2010 she opened an office in Davie and a few years later a second office in Coral Springs. Asked for some comments on the program, Ms. Kelleher stated, “The best part of my job is seeing people change before my eyes and watching them get their confidence back. Over the years I have helped thousands of people achieve their weight loss goals. We stay involved with all of our clients; one of the reasons for our high success rate is that we make sure that every client gets the proper guidance and support throughout the program. Also, we don’t water down the HCG. We give it in the strongest prescription dosage available for weight loss. We also provide injectable prescription B12. The Lipotropic Vitamin B12 shots help detoxify the liver and increase metabolism and energy levels. The combination helps assure maximum weight loss without feeling hungry all the time or suffering from bad moods.” Here’s a quote from one of Slender Fit U’s clients, “Besides being the most effective diet I have ever gone on, this was the easiest diet I have ever been on. Almost every morning when I got on the scale, my weight would be down. No 12 FEBRUARY 2018 | OURCITYMEDIA.COM

long workouts, no agonizing hunger pains. That’s how great this diet is.” There are two programs to choose from. On the 23 day program women typically lose 15 pounds and men will typically lose 20 to 25 pounds. In the 46 day program the numbers average 30 pounds for women and 40 – 50 pounds for men. Ninety percent of Slender Fit U clients keep the weight off. After completing the HCG / B12 program you will go on a three week maintenance program gradually introducing a higher calorie diet where you will make sure that you do not gain any more than 2 or 3 pounds. This will then help lock in a new “normal” weight for your body allowing you to more easily maintain the weight loss as you return to normal eating. The diet helps “rebalance” the metabolism and in addition to losing unwanted abnormal fat you easily modify your relationship with food and eating to maintain long-term weight loss. What makes the diet so effective? Every pound you lose is a pound of FAT, which is very different from losing a pound of weight. You are not losing muscle mass, or water. You will also lose the inches around the waist and thighs where excess fat tends to collect. Before starting the diet you will get a physical exam from one of the medical doctors associated with the program. This is included in the cost of the program and involves no co-pay on your part. So how does the weight loss program work? It is a scientifically researched program that combines HCG and a low calorie diet during the 23 or 46 day program. HCG, which is short for Human Chronic Gonadotropin, is a complex amino-peptide protein that exists normally in men and women. Because it is a natural substance, the program is very safe with no side effects. You will also be eating regular foods like eggs, chicken and fish, green vegetables, apples and so forth. Most people experience little or no hunger during the Slender Fit U program because thanks to the HCG they are burning anywhere from 1,500 to 3,000 calories from their stored fat. If you are ready to be on a diet program that really works and works very fast without a lot of exercise and hunger pains, come in and visit Geri Kelleher for a consultation. Consultations are free and by appointment. For information and to see more before and after photos, visit www.SlenderFitU. com or call 954-423-1376.

The Sky’s The Limit: Broward County Public Schools Reach Highest Graduation Rate in Six Years BY TERRY JAILLET

B

roward County Schools continued a four-year trend of increasing graduation rates according to the Florida Department of Education. 81% of high school students in the 2016/2017 school year cohort graduated, representing the highest BCPS graduation rate ever recorded. The graduation rate places the school district 41st out of the 75 Florida public school districts. The state’s overall graduation rate improved by 1.6 percentage points to 80.7 percent, ranking Florida as 37th overall. In 2011 Florida adopted the Federal Uniform Graduation Rate method to compare schools and school systems on a more level playing field. Graduation rates are now standardized across the country. The Federal Uniform Graduation Rate method tracks students by “cohort.” Each year, students entering ninth grade are included in a cohort with an expected graduation year four years later. The number of these students who graduate “on time” is then included in the

graduation rate. There are strict rules for adding or subtracting students from the cohorts that all districts must follow. Each state, however, has different graduation requirements. Florida’s standard diploma is considered a more rigorous credential than some other states making state-by-state comparisons complex. Coral Springs High School saw the largest one-year increase in graduation rate, increasing by 7.6 percent to 94.4 percent. Coconut Creek High School and Piper High School also increased their graduation rates by more than 5 percent. School Superintendent Robert W. Runcie was proud of the performance saying, “We are extremely proud of these results, which highlight our commitment to ensuring our students complete their high school education and are prepared for college and careers.” Several Broward Schools had perfect graduation rates, including the Atlantic Technical College, the College Academy at Broward College, Somerset Academy Charter High School and the Somerset Arts Conservatory.

POSITIVE PARENTING

Keeping Children Safe Online BY TERRY JAILLET

Teens watch more than twice as much YouTube video as television. Three out of four American teenagers subscribe to SnapChat and Instagram. These facts, from a pair of studies published by Trendera and Influence Central, are not surprises to anyone with children. Today’s young people are the first generation of humans to grow up since the advent of the iPhone. Child Engagement It will come as little surprise to anyone that there are a number of thriving chat rooms and forums filled with teens detailing ways to get around parental control platforms. Motivated teenagers can be quite clever. An interesting example of this is my own experience with a great app called Life360. Life360 allows parents to get real-time information about their kids’ location, cell phone use and travel habits (e.g. were they speeding). My kids don’t like this app because it drains battery life. One afternoon, I was wondering where my teen son Justin was. I clicked on the Life360 app, pulled up the map, and there he was, in Pyongyang, North Korea! In reality, Justin was two blocks from home playing basketball, but he had very quickly figured out how to “spoof” his phone’s GPS; something I am quite sure I will never know how to do. Whether parents like it or not, our society is never going back to a time where young people use personal electronic devices less. The entire global culture has quickly evolved with the mobile phone at its center. Experts agree that the best way to keep kids safe online is the combination of parental controls, mindful oversight and, most importantly, engagement with children. No one knows what teens will be doing ten years from now, but we can be sure it will include even greater use of technology than today.

COVER STORY

Get Fit at Koko FitClub Where Fitness Meets the Digital Age BY RACHEL GALVIN

T

he New Year is the perfect time to live healthier and get in shape. There are lots of sweaty gyms and hang-out with rows of equipment but for most people these places do not sustain their interest. Koko Fit offers a unique alternative in a clean and calm environment utilizing highly sophisticated computer controlled training equipment. You will get a unique training program designed specifi-

cally for your objectives and adapted to you current physical condition. Combining the best in digital technology, strength training equipment, cardio machines and personal training, this club is a step into the future of fitness. Founded 1n 2007, KokoFit Club has locations in over 33 states, including locally here in Coral Springs and Plantation. The Coral Springs location has been open for over five years and has successfully helped hundreds of people get in good shape. Derek Van Beber owns both locations. Derek’s primary objective is to offer a friendly approach fitness that designed specifically for your needs. With Koko Fit you are really getting a team of top personal trainers to work with on a personal basis. It is a unique idea that takes full advantage of modern technology. The exercise programs of top fitness coaches were programmed into a computer. The machines in the Koko FitClubs have access to all of that programming and apply it to your personal profile that gets entered into the system locally. You get a flash drive that stores all of your data and workout results so that when you plug the drive into a machine to start a workout it know who you are, what your objectives are and what you have accomplished so far. Koko Fit offers a much more efficient workout, which guests can do in as little as 45 minutes three times per week. Consistency is important and with your key card you can access the club any time you want. Koko Fit is designed to meet your schedule and provide the maximum benefits for the time and effort you decide to put in. It isn’t just about gaining strength and muscle, it is also about losing weight

and feeling great. It is a long term approach to fitness that keeps you interested, offers incentives to getting better every visit and guides you every step of the way. So let’s talk a little about the technology. When you come in and step on the machine’s platform it does not just measure weight and height it also measured eBMI (enhanced body mass index), which is much more accurate than a standard BMI. It measures everything from bone density to fat and muscle content. As mentioned, you will get a USB flash drive, which is put into the eBMI Koko FitCheck station so all your progress and results can be tracked. Each time you use a machine, you plug in the flash drive and a customized program appears on the screen, telling you what to do and how to do it based on your current condition. There is a screen that illustrates the pace you should try and follow for best results and it constantly gives you feedback on how you are doing. When you are using the cardio machines you

will use a headset that plugs into an audio trainer to explains every movement and how it is helping your body. If desired, Derek and his staff can manually modify exercises as needed and also add additional exercise routines. In addition, the staff will help you develop a custom meal plan aimed at helping you achieve your objectives. The whole program is customized for you based on whether you want to build

muscle, lose weight, repair or even recover after an injury. Also. like a video game, as you progress to different levels you will unlock different workouts. The program changes as you get stronger. It also changes it up so you don’t wear out a muscle group. Andrea Gelman who has been going to Koko Fit Club since they first opened. went elsewhere to a trainer and ended up being worked so hard she hurt the next day. She even had to have surgery for a workout injury. In contrast, coming to Koko Fit makes her feel better. “I don’t know if it builds the muscles around the spine or what, but after being hurt there I came here and my neck felt better. I will never go anywhere else.” Joel Sansone left his personal trainers too for Koko Fit. Now his whole family has joined. “The

best part of the place is the accountability” he says.” Amy Deloach agrees and says “it’s the first program I can stick to. It’s fun and I am seeing results. I feel it is something I will be able to sustain and keep doing.” Ready to try the Koko Fit Club advantage? They are offering a 30 days for $30 deal right now. Koko Fit Club is located at 6280 W Sample Road Suite 207 Coral Springs, FL 33067. OURCITYMEDIA.COM | FEBRUARY 2018 23

Two North Broward Students Bound For D.C. to Participate in U.S. Senate Youth Program

T

wo students who reside in North Broward County will represent Florida at the 56th annual United States Senate Youth Program’s (USSYP) Washington Week scheduled March 3-10. Coral Springs High School senior Stephen Marante and Carlee Goldberg, a senior at North Broward Preparatory School in Coconut Creek, will join Florida’s two U.S. senators, Bill Nelson and Marco Rubio, for the week-long series of events. Stephen and Carlee were selected from among the state’s top student leaders to be part of the 104-national student delegation. They will also receive a $10,000 college scholarship for undergraduate study. Stephen currently serves as the student advisor to the Broward County School Board and is an executive board member for the Broward County Association of Student Councils. He was class president for three years and has been involved in speech and debate for four consecutive years. Carlee, a resident of Parkland, is president of the National Honor Society at North Broward Prep. Under her watch, the school’s NHS chapter was restructured to be geared toward community service and leadership opportunities for all members, creating a committee system centered on interests of the members. Stephen and Carlee are both members of U.S. Rep. Ted Deutch’s Congressional Youth Cabinet. Stephen is also active on the Children’s Miracle Network/Dance Marathon and has helped raise more than $10,000 for Nicklaus Children’s Hospital in Miami. He is also a member of the City of Coral Springs Teen Political Forum. Carlee is also the founder and president of StudentsLinked, an organization that publishes a newsletter of scholarships, programs and service opportunities accessed by more than 15,000 students in four states. Her extensive list of activities and recognitions also includes captain of the debate ream, advisor for Youth Leadership Broward and Student Government representative. She is active in her community, participating in Key Club and Teen Court as well as youth political events, tutoring and serving as the youth outreach intern for the Boynton Beach Historical Preservation Society. Each year, the competitive USSYP merit-based program brings the most outstanding high school students – two from each state, the District of Columbia and the Department of Defense Education Activity – to Washington, D.C. for an intensive study of the federal government and the people who lead it. While in Washington, student delegates attend meetings and briefings with senators, members of the House of Representatives, congressional staff, the president, a justice of the Supreme Court, leaders of cabinet agencies, an ambassador to the United States and senior members of the national media. Students also tour many national monuments and several museums. Transportation, all expenses and the $10,000 college scholarship for each are provided by The Hearst Foundations. Two alternates for the Florida attendees were also chosen: Zoe Terner, a senior at Somerset Academy Canyons Middle/High School in Boynton Beach, and Ava Joy Cockey, a senior at Eastside High School in Gainesville

POSITIVE PARENTING

playing one sport year-round. Sports should be fun for children. Overuse injuries in children is a concerning trend.” – Dr. James R. Andrews [put in a call-out box] Some of the most common overuse injuries for young athletes include tennis elbow, impact-related running injuries (like shin splints) and many shoulder and elbow related injuries often suffered by baseball pitchers.

BY ANNA KANE

n 1982, 12-year-old Andre Agassi and his doubles partner, Roddy Parks, won the National Indoor Boys 14’s Doubles Championship in Chicago, IL. Less than a year later, he was shipped off to Nick Bolletieri’s Tennis Academy in Bradenton. He would go on become one of the greatest tennis players in history. Agassi famously trained exclusively for tennis from a very young age and reached greatness. Most of our children are not prodigies like Agassi. Many however, face pressure to specialize in a sport at increasingly younger ages. The emergence of club teams and travel sports combined with a prioritization of excellence over participation and the year-round warm weather of South Florida makes this trend even more pronounced here than in other areas of the country.

Different Strokes for Different Sports…

Does Specialization Make Someone a Better Performer? Author Malcom Gladwell famously coined the “10,000-hour rule.” This “rule” is an adaptation of an old theory about chess masters. It suggests that becoming a master requires around 10,000 hours of dedicated practice and training. Gladwell applied this theory to life more broadly: to become a true expert takes a lot of hard work! Proponents of sports specialization have adapted this theory: if a child shows an aptitude for a sport, having them focus on this sport early sets them on a path to attaining those 10,000 hours, becoming great and potentially gaining a college scholarship.

26 FEBRUARY 2018 | OURCITYMEDIA.COM

Sports Specialization: Should Kids Focus on What They are Best At? A 2013 study by the National Institute of Health suggests, however, that timing may be what matters most. The study’s conclusion states “Some degree of sports specialization is necessary to develop elite-level

skill development. However, for most sports, such intense training in a single sport to the exclusion of others should be delayed until late adolescence.”

Health Risks There are essentially two types of sports-related injuries: traumatic injuries and overuse injuries. Overuse injuries are typically caused when a person does the same physical motion over and over, causing wear and tear. Playing a single year-round sport significantly increases the risk of these types of injuries. Dr. James R. Andrews, founder of the Andrews Institute for Orthopedics & Sports Medicine has become an outspoken critic of specialization. “I have seen my patient population and surgical cases get increasingly younger. Children, parents and coaches need to realize that kids need to take a break from

The benefits and timing gained from specializing vary significantly by sport. Sports where athletes tend to be elite at a young age favor earlier specialization. Parents of star gymnasts or tennis players often contemplate home-school their children to maximize training time. According to a 2016 NCAA survey, almost nine out of ten college gymnasts said they had specialized by the age of 12. Other sports had far less pronounced benefits and trends toward specialization. Football players, for instance, had the lowest levels of high school specialization. In fact, every touchdown scored in this year’s NCAA National Championship Game was scored by an athlete who played multiple sports throughout high school. Interestingly, none of them play any other sport while in college. In fact, multi-sport collegiate athletes are extremely rare.

Should You Make the #1 Sport the Only Sport? Specializing in a single sport at a young age is a bad idea. A study that tracked young athletes between 1990 and 2011 concluded, “For most sports, there is no evidence that intense training and specialization before puberty are necessary to achieve elite status. Risks of early sports specialization include higher rates of injury, increased psychological stress, and quitting sports at a young age.” For High School kids, it’s a bit of a different question. Sports participation like theater or art or music are as much about a teen’s self-identification and pursuit of happiness as they are about pursuing excellence. Being good at something is important to selfesteem and makes that activity more fun. So, if your 14-year-old daughter wants to drop Basketball to focus on Volley Ball, tell her to go for it!

Nurse at Broward Health Coral Springs Honored for Providing Exceptional Care to Elderly Patient

A

nurse at Broward Health Coral Springs received special recognition in December for going the extra mile in providing care for a 93-year-old patient. Matthew Enlow, RN, was presented with the medical center’s Diseases Attacking the Immune System (DAISY) award during a ceremony at the healthcare facility on Coral Hills Drive in Coral Springs. During the presentation, hospital officials said Enlow demonstrated heartfelt empathy as he afforded the patient the additional time and consideration she required, at the same time providing quality care to his other patients. This personal attention, they said, touched the hearts of his patient’s family and provided them comfort during her final days. The DAISY award is presented through the DAISY Foundation, created in November 1999 in memory of J. Patrick Barnes, who died from complications of an autoimmune disease at age 33. Because Barnes received exceptional care while battling his disease, his family established the award as a method of recognizing the profound impact nurses have on the lives of patients and their families. More than 2,700 healthcare facilities in all 50

states and 70 other countries honor nurses with the DAISY award. Broward Health has been providing quality healthcare for more than 75 years. The system

includes five major hospitals and more than 20 locations and offices overall, offering a wide spectrum of expert medical care to all members of the family.

Police Community Involvement Unit Awarded Inaugural Martin Luther King, Jr. Monument Award

T

he Coral Springs Police Community Involvement Unit has implemented groundbreaking programs that embody the ideals of Dr. Martin Luther King, Jr. and his legacy. For those achievements, the unit was selected among a dozen nominees to receive the Inaugural Martin Luther King, Jr. Monument Award during the MLK Annual Business Lunch held at Heron Bay Marriott on

Friday, January 12. In receiving the award, Community Involvement Coordinator Lynne Martzall said, “The relationships built through our programs and every day interactions; renew the faith of the community, especially children, in their public servants. Our department should serve as a model for agencies across the country.” During his Keynote address, Dr. William Pickard noted,

“What a remarkable city this is, when the award winners for such a prestigious award, are the members of the local police department.” For the second year, the unit has run an enrichment program, Summer BreakSpot, for under-served youth between the ages of 6-11, who reside in the city. The program enrollment, mentoring, education, sports and feeding components is coordinated solely by the department members with the goal of enriching the lives of children who need it the most. In addition, each year the unit coordinates an Angel Tree, Shop with a Cop and Toy Distribution program to assist families most in need in our community. The lasting memory left for children in these homes, and families struggling, is not of fear of the men and women of law enforcement.

While it was the Community Involvement Unit who were honored, it is the work of the entire department and its commitment to Community Policing that made this recognition possible.

Coral Springs Festival of The Arts & Crafts

C

oral Springs will surely shine “Under the Sun” March 15 through March 18 when the art and culture of Northwest Broward is celebrated with The 14th Annual Coral Springs Festival of the Arts. The Festival will begin Thursday and Friday, March 15 and 16 with free literary workshops at the Coral Springs Center for the Arts showcasing authors who write comics, horror, mysteries and more. The weekend will bring over 200 artists and crafters in a juried art and craft show produced by Howard Alan Events at The Walk at 2700-2900 University Drive. Five bands each playing a different genre of music will fill the air with artistic sound. Performing artists will force us to feel the beat and delight our eyes with their movement. Each year the Festival chooses an artpiece and an artist to represent the Festival. The 2018 Signature Artist is art teacher Susan Greeley and her artpiece “Everything Under the Sun”. A resident of Boca Raton, Susan comes to South Florida from Toronto, Ontario, Canada. Each summer she returns to Canada where she enjoys Plein Air watercolor painting. She aspires to enable the viewer to experience everyday places in a new light. Susan is active in art groups throughout the area and has received recognition in multiple art shows. The Coral Springs Festival of the Arts is a family oriented event offered free to the community by the volunteers who put on the event and the businesses who support it. Funding comes partially from The City of Coral Springs and the Broward County Cultural Council. The Festival continues to need more sponsors and volunteers. Off site parking with free trolley service to the Festival at The Walk is available at the Coral Springs Center for the Arts and the parking garage at the new city hall. To view directions and complete schedules of events or to become a sponsor or volunteer go to www.csfoa.org. OURCITYMEDIA.COM | FEBRUARY 2018 37

Help Fight Inflammation with Food

O

n top of being tasty, certain foods contain specific nutrients and natural compounds that may help fight inflammation, a condition linked to arthritis and gout. With that in mind, try heading to the fridge or pantry the next time you feel joint pain, swelling or stiff knees. Colorful fruits and vegetables, including ruby red tart cherries and dark leafy greens like spinach and kale, are among the most powerful anti-inflammatory foods, along with oily fish (salmon, sardines and scallops), nuts, seeds and whole grains. Ingredients such as ginger, turmeric and olive oil may also help combat inflammation. For an inflammation-fighting boost, Montmorency tart cherries contain the “highest anti-inflammatory content of any food,” according to research conducted at Oregon Health & Science University. Results show that cherry intake can help reduce blood levels of gout-causing uric acid and reduce the painful

symptoms of osteoarthritis. Research also shows that Montmorency tart cherry juice can reduce post-exercise inflammation and muscle pain. “For decades, people with arthritis and gout have consumed tart cherry juice for pain relief. Now there’s scientific evidence to back up this popular folklore remedy,” said registered dietitian Michelle Babb, author of “Anti-Inflammatory Eating Made Easy.” “Since Montmorency tart cherries are one of the richest sources of anthocyanins, a potent type of flavonoid, they can offer a natural way to help ease the pain related to arthritis and gout.” To help fight inflammation with food, try this recipe for Bay Scallop, Baby Kale and Corn Salad with Tart Cherry Granola, which is packed with anti-inflammatory ingredients. Bay Scallop, Baby Kale and Corn Salad with Tart Cherry Granola

Savory Granola: 1/3 1/3 ¼ 2 2 ¼ 2 1

cup oats cup chopped walnuts cup sunflower seeds tablespoons buckwheat groats tablespoons pepitas cup extra-virgin olive oil tablespoons honey tablespoon spicy brown mustard salt pepper ¼ cup dried Montmorency tart cherries

Dressing: 1 3 2 2 1 2 1

Prep time: 30 minutes · Cook time: 15 minutes · Total time: 45 minutes · Yield: 1 salad

shallot, minced tablespoons extra-virgin olive oil tablespoons dried Montmorency tart cherries tablespoons Montmorency tart cherry juice tablespoon spicy brown mustard teaspoons apple cider vinegar teaspoon honey salt pepper

Salad: 10 1 1 ½ 8

ounces baby kale grilled ear of corn, kernels sliced off cup sprouts (alfalfa or microgreens) tablespoon butter ounces bay scallops, patted dry

To make savory granola: Heat oven to 350 F. Line baking sheet with parchment paper or baking mat. In large bowl, combine oats, walnuts, sunflower seeds, buckwheat groats and pepitas. In small bowl, whisk together olive oil, honey, mustard, salt and pepper. Pour wet ingredients into large bowl and toss until well combined. Spread mixture onto baking sheet in single layer and bake 18-20 minutes, tossing once halfway through, until granola starts to turn golden brown and crispy around edges. Remove from oven, add cherries, toss to combine, spread into single layer and let cool. To make dressing: In food processor, process shallot, olive oil, cherries, cherry juice, mustard, vinegar, honey, salt and pepper until smooth. To make salad: Place kale, corn kernels and sprouts in large bowl; set aside. In large skillet over medium-high heat, melt butter. Once hot, add scallops and cook until golden and starting to caramelize on one side. Flip and repeat on other side. Add scallops to large salad bowl. Pour dressing over top and toss until well combined. Break up granola into small pieces and add to salad bowl. Toss lightly before serving. COMMUNITY NEWS

Taste Of Coral Springs Benefits Local Children’s Charities BY NICOL JENKINS

E

njoy the best of fine cuisine and spirits while supporting great causes right in your hometown. Get your tickets for the Taste of Coral Springs 2018, which will be held on Tuesday, February 27th from 6:30 to 9 pm at Coral Springs Center for the Arts, located at 2855 Coral Springs Drive. The event will boast a fabulous open-air layout with themed décor. Wine, spirit and beer samples, and cuisine from local restaurants and caterers, with entertainers and silent auction! The Taste of Coral Springs is a sampling of food, fine wines, craft beer, and premium spirits available in South Florida. The Taste of Coral Springs was established as a collaborative effort with community members and businesses to raise funds through an annual event to benefit educational and careeroriented programs for local children’s charities. Each year, the Taste lights up the night at the Coral Springs Center for the Arts as you and more than 850 of your closest friends sample delectable foods from local restaurants and wine and spirits from vendors and distributors, all of which is included in the admission price. Don’t miss your chance to spend a spectacular evening under the stars with fabulous themed entertainment and bid on exciting silent auction items. Previous Taste of Coral Springs events have contributed more than $455,000 to worthwhile charities. This year’s theme is Speakeasy and there are many food and spirits vendors to look forward to. Some of the vendors include: 4 Rivers Smokehouse, Bru’s Room, Kilwin’s of Coral Springs, The Melting Pot, Monkey Rum, Funky Buddha Brewery, Zona Fresca, Whole Foods Market of Coral Springs and much more! There is also a great Silent Auction. Bid on an array of gift certificates to our many restaurants and vendors plus entertainment, accessories and sports memorabilia, including great local gift baskets! All proceeds from this year’s event will benefit three local children’s charities: the Coral Springs Cadet Squadron of the Civil Air Patrol, Coral Springs Museum of Art and YMCA of South Florida. The Coral Springs Cadet Squadron of the Civil Air Patrol’s mission is to inspire the country’s youth to become leaders

and good American citizens through their interest in aerospace. The mission of the Coral Springs Museum of Art is to create a stimulating and enjoyable educational visual arts experience for the South Florida community, exhibiting diverse Florida, national and international artists. The Museum also offers many children’s programs including: art classes, museum tours and more. The YMCA of South Florida has been a leading nonprofit committed to strengthening communities through youth development, healthy living and social responsibility. The YMCA believes that all kids deserve the opportunity to discover who they are and what they can achieve. That’s why, through the Y, more youth today are cultivating the values, skills and relationships that lead to positive behaviors, better health and educational achievement. “The Taste of Coral Springs, Inc. is a 501(c) (3) registered not-for-profit organization. We have raised more than $455,000 for local children’s charities since the inception of the event,” said John Arnold, Chairperson for Taste of Coral Springs. The Taste of Coral Springs has been benefitting local charities for 21 years. There is a committee of 8 volunteers who organize the event, along with volunteers from each charitable organization. “This year’s non-profit organizations were chosen because of the children’s programs they provide in the Coral Springs community,” added Arnold. Besides benefiting local children’s charities, the event will showcase all the great restaurants and food businesses in the local community. “The local businesses love the event because they get to showcase their great food and beverage products. We have more than 800 guests attend each year and they just love the event,” said Arnold, adding, “Besides supporting the charities, they get to come out and support the great food and beverage vendors in the community. They also love the music and auction we provide at the event. It is one of the premier events in the City of Coral Springs.” The Taste of Coral Springs event was originally created some 20 years ago by a group of business people to raise monies for local children’s charities so they formed a not-for-profit organization and hence the event was created. The event has been successful ever since and continues to grow in vendors, attendance and contributions to local children’s charities. “I think there are many benefits for local businesses. All vendors get to showcase their products and services. Businesses who purchase sponsorships get to showcase their products and services. We are very proud of the event, the impact on local children’s charities, local vendors and our great Coral Springs community,” said Arnold. Don’t miss this year’s Taste of Coral Springs and a chance to try some of the best cuisine and spirits in Coral Springs. Businesses also have an opportunity to become a sponsor and showcase their products! For more information on purchasing tickets and becoming a sponsor, visit http://www.tasteofcoralsprings.org/.
