Maybe it’s the nights drawing in and the nip in the air which turn our thoughts to comfort food, or maybe it’s just the love of good food, but this issue certainly has a bit of a foodie theme. Bianca Marton is the chocolatier in Brentford whose mother’s Hungarian recipes led to her meeting her husband Tibor and whose salted caramels helped launch her successful chocolate making business. She talks to Sam Pennington p 10. We give you four brand new recipes for delicious dishes from some of the top chefs in the UK. They came and talked about their latest cookery books at the Cook Book Festival in Chiswick in September p 16. Halloween ALL DRESSED UP AND NOWHERE TO GO? Sam Pennington looks at the options If trailing around the neighbourhood knocking on doors trick or treating is not your style and you’re looking for Halloween activities which are a little more structured, there are several to choose from in our area.

Osterley Park’s Halloween Pumpkin Festival
From 20-28 October, Syon Park will be hosting a Halloween week filled with spooky activities for the whole family to enjoy, with free entry for kids.
Now an annual fixture for Hounslow Heritage Walks, the ghostly tour takes in some of the highlights of St Nicholas’ churchyard in Old Chiswick, including a mysterious empty grave as well as the resting places of several famous actors and painters. The walk will take you past some of the oldest buildings of the mediaeval fishing settlement while exploring the ominous legends surrounding them. This is a brilliant way to explore the rich history of the area and is perfect for Halloween, taking place on the last Sunday of October. The meeting place for the walk is St Nicholas’ Church, Chiswick Mall at 2:30pm and costs £3, no booking is required.
Join the team at Osterley Park between 20-28 October for the annual pumpkin festival, which kicks off this halfterm with a variety of activities. The main feature, pumpkin carving, runs between 11am-4pm daily, providing you with the opportunity to take home your very own frightening pumpkin. On Friday and Saturday the park is also offering after dark tours of the grounds for the brave, exploring the darker side of the Georgian manor. You can also go along and roast marshmallows over an open fire pit or get creative making wild art in the garden. Tickets for individual events can be purchased at nationaltrust.org.uk/osterley-parkand-house.
Creepy events includes Halloweenthemed crafts, eerie trails around the park, and an exploration of the haunting history of Syon House. If you visit on Wednesday, Thursday or Sunday there’s an opportunity to learn more about the gruesome goings-on in the historic house. No booking is required and the event is free with general admission to Syon House.

West London is teeming with artists. I suppose given the population of London you could say that about any profession in any post code, but there do seem to be an awful lot of successful, award winning, gallery shown artists in our neck of the woods. I wanted to hold an exhibition which showed Chiswick through the eyes of professional artists who live locally and brought them together under one roof. Nineteen artists have obliged and I think their work is stunning.

Sam Pennington talks to Brentford's chocolatier Bianca Marton Bianca Marton is living the dream. She makes the most fantastic chocolate creations. It took a while for her to work out what her dream was. She came to west London from Hungary in the late ‘90s. Her first career at Glaxo Smith Kline led to a second as a business coach, but she realised she wasn’t practising what she preached. She wasn’t doing what she really wanted to do. She had gone to university in East Berlin. The city and the university were grey and bleak and not like home, so to cheer herself up she used to bunk off lessons, (especially political economics) and make cakes. She baked like her mother had taught her when she was little and the smells of the mouth-watering Hungarian recipes attracted a stream of friends to her door; one in particular was Tibor, who she subsequently married.
A partnership made in heaven It was when Tibor booked a handmade chocolate making course for their daughter as a present in 2011 that the penny dropped. What she really, really wanted to do was to make chocolates.
She started in her kitchen at home. The reviews were fantastic, especially for the dairy free ones she made for her brother and his family who are dairy intolerant. The chocolates sold very well at Camden, Richmond and Brentford markets and after three years Bianca needed to expand. Fortunately making chocolates makes you very popular with your friends and neighbours. Writer and broadcaster Jeremy Nicholas liked her sea-salted caramels so much, he decided to make her a Dragon’s Den style offer. He bought a share of the business allowing Bianca to open a chocolate shop in Brentford, where she now makes all the chocolates on the premises. Jeremy, a renowned after-dinner speaker, gives talks on chocolate making. Tibor, chief chocolate taster, takes his work very seriously and Bianca is living her dream of making people happy by creating gorgeous artisan chocolates. If you fancy yourself as a budding chocolatier, Bianca now also runs classes where she teaches the art of making vegan chocolate, flavourings and ingredients. OSTERLEY PARK'S HEAD GARDENER, ANDY EDDY, TELLS US ALL ABOUT THE NEXT SEASON IN THE GARDEN. ‘As we leave summer behind and drift slowly into the Autumn months and as the leaves colour and fall from the trees it is time to think about the next season in the garden and especially spring. There are lots of plants that we can buy in now that will brighten up our beds, pots or balconies in the spring and the cheapest and the ones that hold the most hope for successful –and easy – bright colours are bulbs. Here at Osterley we purchase and plant thousands of bulbs in many shapes and forms every autumn from a sustainable wholesale supplier but every garden centre or hardware store will have a tempting selection of bulbs – usually at a very good rate and they are ready to plant now. Narcissus – daffodils – should be planted straight away whereas tulips can wait until at least November and will still flower at the correct time in April and May. The blue and white striped crocus that you can see in the accompanying picture is a variety called ‘Pickwick’, this is a very reliable and weather proof bulb that will flower in early spring and is widely available. We often plant this bulb
in pots as we find that squirrels (who love to dig up and eat freshly planted crocus!) can be prevented from eating them by putting a cover over the pots until they are growing strongly. In the second photo you will see St Bridgid anemones in sparkling candy colours and these are a dual purpose bulb as they can be grown in any light filled bed or border and also in pots where they will flower from March to June, the other great aspect to these lovely flowers is that you can pick them and they last a long time in water. If you are planting bulbs in grass in your lawn or wildflower area there is a technique called ‘naturalising’ this is so that the bulbs will come up in a random patter rather than singly or in a straight row and will always give a more effective display. All you have to do is throw the bulbs in an arc and plant them all exactly where they fall (the tendency is to move them apart or make patterns) even if some are touching or are a distance away from each other it give the appearance that they grew there naturally. All in all planting bulbs is a cheap, cost effective way of brightening your garden right through spring and into early summer.'

As the days are getting shorter and there’s a definite nip in the air, take a look at these comforting, yet healthy, autumnal recipes ideas from the brand new books by some of the authors featured at the Cook Book Festival in Chiswick in September.

SERVES 2 MAKES 8 PANCAKES
2 ripe bananas (total 200g), peeled 100g quinoa flakes 180ml any milk 1 egg 1 teaspoon vanilla extract 2 teaspoons ground cinnamon Melissa Hemsley 1 1⁄2 teaspoons baking powder A tiny pinch of sea salt 2 teaspoons maple syrup 1 1⁄2–2 tablespoons coconut oil, for frying METHOD

Melissa Hemsley’s ‘Perfect Pancakes’ From Eat Happy by Melissa Hemsley (Publisher Ebury Press, £20) TOPPING OPTIONS
100g mixed berries, a spoonful of natural yoghurt, crushed pistachios and a drizzle of maple syrup 2 apples, grated, a sprinkling of cinnamon and a spoonful of toasted flaked almonds

1. Place all the ingredients for the pancakes (except the oil) in a blender or food processor and whizz for about 30 seconds. Alternatively, mash the bananas with a fork and mix in a jug with all the remaining ingredients. 2. Melt a little of the coconut oil in a large frying pan on a high heat. 3. Spoon about 3 tablespoons of the batter into the pan and use the back of the spoon to swirl into a rough circle about 1cm thick and 8cm wide. Repeat to make another two to three pancakes, depending on the size of your pan. Reduce the heat to medium and leave the pancakes to set for 1 1⁄2 minutes. When they start to bubble, flip each one over and cook for 1 minute on the other side. 4. Remove from the pan and repeat with the rest of the batter, using a little more of the coconut oil each time, until you have made eight pancakes. Place the pancakes on a plate in a low oven to keep warm while you make the rest. 5. Serve as is or add your favourite toppings.

Silla Bjerrum’s Pork Belly Yuzo Miso From Robata by Silla Bjerrum, (Publisher Jacqui Small, £25)
SERVES 4 MAKES 8 SKEWERS
YOU WILL NEED
METHOD
8 wooden skewers, soaked for 30 minutes in cold water.
1. Make a brine. Place the sugar and salt in a mixing bowl, then pour over the boiling water and mix well. Top up the brine with the ice-cold water.
INGREDIENTS For the Skewers
100g (3½oz./½ cup) caster (superfine) sugar 50g (2oz./1⁄3 cup) seaweed salt 100ml (scant ½ cup) boiling water 400ml (1½ cups) ice-cold water 600g (1lb. 5oz.) strips of pork belly Sake-Mirin Spray For the Yuzu Miso Dressing
1 tbsp mirin 1 tbsp caster (superfine) sugar 50g (2oz.) yellow miso 1½ tbsp yuzu juice
2. Trim the pork belly, removing the rind and leaving as much of the fat attached to the meat as possible. Cut into 1 .5 x 1.5cm (1/2 x 1/2 in.) wide pieces, add to the brine and leave to soak for 2 hours in the fridge. 3. For the dressing, place the mirin, sugar and miso in a small saucepan over a gentle heat and stir until the sugar is melted and the mirin incorporated. Remove from the heat, stir in the yuzu juice, and set aside to cool down 4. Start the robata grill. Drain the pork belly through a colander, discarding the liquid. Divide the pork between the eight skewers. Grill over the bincho coals, spraying with sake-mirin spray and rotating every 2 minutes. Repeat until the pork is cooked through and crisp on the edges, about 8–10 minutes. Remove from the robata and, while still piping hot, add dollops of the yuzu miso to the crispy pork, then place in a serving dish

DINNER
20g dried porcini mushrooms 300g silken tofu
MAIN COURSE: Jo Pratt’s Creamy Mushroom, Leek and Chestnut Pie
40g butter 2 tbsp olive oil 250g chestnut mushrooms, halved 250g portabella mushrooms, thickly sliced 2 large leeks, sliced 4 cloves garlic, peeled and crushed 200g ready to eat chestnuts, roughly chopped approx. 2 tsp fresh thyme leaves 2 tbsp cornflour 80ml / 1/3 cup Madeira wine 2 tsp sherry vinegar 375g all-butter puff pastry block Flour for dusting SERVES 4

1 egg yolk mixed with 1 tbsp milk (egg wash) pinch poppy seeds (optional) flaked sea salt and freshly ground black pepper
METHOD
1. Heat the oven to 200 degrees C / 400 degrees F / Gas 6. 2. Place the porcini mushrooms in 400ml boiling water and leave to soak for 30 minutes. Drain and reserve the liquid. 3. Put the tofu and reserved porcini liquid into a blender or food processor and blitz until completely smooth and creamy. Set aside. 4. Melt half the butter with 1 tablespoon of the olive oil in a large saucepan over a high heat and fry the chestnut mushrooms and portabella mushrooms until they have browned and softened. Remove from the pan. Reduce the heat to medium-low, add the remaining butter and sauté the leeks for a few minutes until softened and just starting to colour. 5. Stir in the porcini mushrooms, fried mushrooms, garlic, chestnuts and thyme. Cook for about one minute. Mix the cornflour into the Madeira wine to make a loose paste, then add to the pan along with the tofu and porcini ‘cream’. Bring to a gentle simmer and cook for 3-4 minutes
for the sauce to thicken. Stir in the vinegar and season with salt and pepper. Transfer to a pie dish or individual dishes and leave to cool slightly. 6. Roll the pastry out on a lightly floured surface until just a little bigger than the dish / dishes. Brush a little egg wash over the rim of the dish / dishes and sit the pastry on top, pressing the edges to seal. Brush the top with egg wash and scatter with poppy seeds (if using). Pierce a hole in the centre to allow steam to escape when cooking and sit on a baking tray. 7. Bake in the oven for 30 minutes or until the pastry is puffed up and nicely golden. Rest for 5 – 10 minutes before serving.

DESSERT: Rich Harris’ Celeriac Rice Pudding with Bramble Compote

From Root & Leaf by Rich Harris (Publisher Kyle Books, £20) INGREDIENTS
METHOD
450g peeled celeriac, finely diced 250ml whole milk 25g caster sugar 1 vanilla pod, split lengthways and seeds scraped out generous pinch of freshly grated nutmeg
1. Put the celeriac, milk, sugar, vanilla seeds and pod and nutmeg in a saucepan and bring to a simmer. Cover the pan and cook for 25 minutes until the celeriac is soft; it should give easily when pressed against the side of the pan with a spoon. Discard the vanilla pod, then pour the mixture into a liquidiser and blend to a smooth purée.
For the rice base:
2. Meanwhile, combine all the ingredients for the rice base in a separate saucepan, bring to a simmer and cook gently for 25 minutes, stirring occasionally.

3. Stir the celeriac purée into the rice and bring back to a simmer, then remove the pan from the heat, cover with a lid and leave to stand for 5 minutes. 4. Combine all the ingredients for the compote in a small saucepan, bring to a simmer and cook gently for 5 minutes – the blackberries should start to soften but still hold their shape. 5. Divide the rice pudding between warmed serving bowls and spoon over the compote, the serve.

CHISWICK HOUSE GARDENS’NIGHT TIME TRANSFORMATION The gardens of Chiswick House are beautiful at any season. Winners of the London in Bloom People’s Choice Award for parks last year, the grounds of the Grade 1 listed building are kept in top shape by Geraldine King and her team, many of whom are volunteers. This winter they will be lit up by a new light installation giving visitors the chance to see the house and gardens as never before. You are invited to follow the trail of individual contemporary lighting installations and see the selection of modern art along the way.

The house itself will be illuminated with a light show projected on to the exterior and set to music in what the organisers promise will be a ‘spectacular’ visual display. Inside the walled gardens, the food and drink tent will be offering a bar, including ‘seasonal specials’ such as Terry’s Hot Chocolate Orange, Bailey’s Hot Chocolate, Hot Apple Cider and a variety of food. For food lovers looking for something special, there will also be a Supper Club, held in the 18th century conservatory. The organisers Sleek Events say advance booking will be required, as it is expected to sell out quickly.

Sara Ward says now’s the time to make like a squirrel According to the Collins Dictionary, if you ‘squirrel’ things away, you ‘hide or store them so that you can use them in the future’. At Hen Corner the phrase ‘squirrel away’ has an entirely different usage - usually me yelling at the little blighters to stop eating my fruit!
Be it a verb or a command, you can’t help but be captivated by the cheeky so and so’s when they are playing in the garden, tightrope walking the edge of a fence, or hanging by their feet to pilfer the nuts that you’ve kindly left for the wild birds. This year, more than most, we’ve sadly lost a lot of crops to squirrels. All our peaches, which survived both Storm Eleanor in January and the Beast from the East in February, were growing perfectly until the pesky thieves snatched them a week before they were ready to harvest. Our pears were plucked whole from the trees. We will, however, not be deterred as we have grand plans for our almond tree next year; it will be protected by a fort-like cage built over and around it and a bee hive positioned at its base to ensure perfect pollination. On a more positive note, after a couple of years stealing figs before they were ripe, the squirrels have realised that they don’t store well or taste nice when hard and green, so we have high hopes for a bumper fig harvest at the end of October as long as the weather holds out. Back to the dictionary definition, all other harvest has been safely gathered in. Honey and preserves are potted up, squirrelled away and saved as a treat reminiscent of warmer days to be enjoyed in the months to come. It’s great to work with the seasons and as we pack away our preserving pan, we pull out the pasta machine to create scrumptious suppers using eggs from the hens in the garden and home grown squashes to fill handmade ravioli.

The Osterley & Wyke Green Residents' Association was formed in the 1980s to fight a planning application for a housing development on part of Osterley Park. OWGRA won - but, more than thirty years on, the battle to preserve the character of the area continues. The association’s ten-strong committee, of which I am the Secretary, is very active in monitoring planning applications. Analysing and commenting on major planning applications takes up a lot of our time and this is particularly important as we have two conservation areas. We recently opposed an application for a shisha lounge in a residential area and an inappropriate office development overlooking residents’ gardens and they were both turned down. It's not just planning applications that concern us. Since the new committee was formed two years ago, it has worked closely with the relevant authorities to deal with issues such as crime, traveller incursions and anti-social behaviour, such as drivers using a local car park as a night-time race track.

Recently we have also been involved in discussions with Hounslow Council and the new Nishkam School on schemes for parents dropping off and picking up their children and measures to discourage inconsiderate parking in the area, to prevent traffic gridlock. The association has close links with Hounslow Council, the police, local businesses, the National Trust, schools and sports clubs and has around 500 members. It holds public meetings two or three times a year, each focusing on a specific topic relevant to local residents. There are also regular newsletters and email updates, as well as an active website and Twitter account. If residents are experiencing problems, we do what we can to help. In urgent situations, our good network allows us to update residents and businesses very quickly by email.

As the leaves begin to fall and the nights draw in, the Landmark Arts Centre once again opens its doors to artists from far and wide. The annual Autumn Art Fair, open on October 20th & 21st, showcases over 75 artists from Middlesex, Richmond, Surrey, and often further afield too. Held in the Landmark Arts Centre’s historic building near Teddington Lock, the art fair provides a unique setting for individual artists who make high quality fine art to exhibit and sell their work direct to the public. Artists often find inspiration from the natural world; the walls in many a family home are adorned with paintings of the green rolling countryside, or a beautiful seaside print. Artists exhibiting at this year’s Autumn Art Fair at the Landmark Arts Centre are no exception, but there are a few who have taken this interest in nature and focussed in on dramatic textures and sculptural surfaces, with distinctly beautiful results.
