Alex Wigley, Polesden Lacey’s Gardens and Outdoors Manager, writes Home Farm Orchard at Polesden Lacey is a popular retreat for families in the summer. Children can visit the chickens and see the beehives and bug hotel while parents watch contentedly on the picnic benches. All the while, local and heritage apple varieties such as ‘Crawley beauties’, ‘Claygate pearmains’ and ‘Byfleet seedling’, are slowly growing ready for harvesting in the autumn, and eating in our café. In the winter months, we work on pruning the trees to ensure a bountiful harvest the following year. If you have tree fruit such as apples and pears at home, now is the perfect time for their main prune when dormant between November and March. This may be formative to help shape a younger tree, to stimulate fruit bud production on an established tree, or regenerative on a neglected tree. Formative pruning depends on the intended size and shape of the tree-whether you are aiming for an open-grown bush, or trained forms such as espaliers, cordons, or fans. Firstly, clean sharp secateurs and saws are essential, ideally cleaned between trees to prevent the transfer of diseases.

Short fruit bud spurs

Regardless of shape, for good crops, you are aiming to stimulate the tree to produce fruit buds rather than leafy vigorous shoots. On some tip-bearing varieties, this may be at the tips of growth, and on spur-bearing varieties, this will be at the base of last year’s growth or on short side spurs. Remove any diseased or damaged material, or crossing branches which are rubbing and any rotten fruit from last year. Good airflow is important to prevent diseases so thin out dense crowded growth which will also allow more light to reach forming fruit. By reducing the length of ‘leaders’ at the end of each growth by around a third, and side shoots to a few buds the tree will be encouraged to produce fruit buds. If you have a tip-bearing variety such as ‘Discovery’ or ‘Bramley’s Seedling’ then pruning should aim to replace a proportion of older branches each year by cutting them back to a new shoot near the truck to form a replacement branch.

EPSOM STATION

NEW ARTWORK TAKES PRIDE OF PLACE AT EPSOM STATION Passengers arriving and departing from Epsom station are now treated to a stunning artwork installation, courtesy of Go Epsom Business Improvement District. Consisting of 10 original, commissioned artworks that focus on the rich history and heritage of Epsom, the installation was created by British artist, Eliza Southwood.

This is just one element that is going towards building a better visitor experience to Epsom”

Depicting Epsom Salts, busy markets, heritage buildings, horseracing and famous events, the imagery is reminiscent of iconic travel posters from the 1920’s, but has been given a strong, contemporary and striking look. The artworks are printed on plywood, an unusual and innovative method, in part to reduce the use of plastics in the project. Karen Pengelly, BID Manager at Go Epsom said “It’s so good to finally see the artworks in place, they will be appreciated by so many people and do such a good job of telling a story about our lovely town.

WINTER WALKS

New Year

WALKS IN SURREY There’s nothing nicer than a refreshing winter walk to blow away the cobwebs after a busy Christmas and new year. With the crisp cold fresh air and some beautiful scenery, wrap up warm and head out to discover the beautiful Surrey countryside this winter. A lovely route to explore takes you from Leatherhead to Dorking. It is a 9.5 kilometre trail that is good for all walkers, whether you prefer a brisk quick walk or a gentle amble. Along the way you will get the opportunity to visit two historic market towns and the outstanding countryside of the Mole Gap, including Denbies, England’s largest vineyard. Discover a river that has carved a route through the chalk of the North Downs, some of the best ancient yew and box woodlands in Europe and historic parkland that has inspired famous

writers and artists through the centuries. From Leatherhead Station you can pick up the silver metal arrows to guide you along this walk and all the way to Dorking. This walk is published through a collaboration with the Surrey County Council. There are a few gentle gradients along the way, plus one short steep climb. The paths through parkland and woodland can get muddy so sensible footwear is required. Navigate several kissing gates and some steps but there are no stiles

on route. Whilst most of the paths are fenced, a couple of sections cross fields/parkland where you might come across livestock, so please take particular care with dogs. On rare occasions the riverside paths can flood, so avoid this walk after prolonged heavy periods of rain. Please allow 3 hours to complete this walk. This walk follows public footpaths and bridleways which cross private and public land. Information is included for your interest, but please respect people’s privacy, keep dogs under control and remember the Countryside Code.

OVENGLEAMERS TOP TIPS FOR LOVING YOUR COOKER THIS NEW YEAR 1. I nvest in a non-stick oven liner. They help to catch all those annoying drips that stick to the bottom of your cooker, which later can become a burnt-on mess. Easy to wash or pop in the dishwasher.

2. D o not use harsh chemicals. Instead, try a safer

homemade option using items found around your household. For an all-purpose cleaner and deodorizer, mix together 4 tablespoons baking soda with 1 litre warm water.

3. G et the wiping habit! Wipe away any spillages

immediately with a damp cloth. Don’t give the mess a chance to stay. I know this sounds easy and as hard as you try it is a chore, the oven can still be hot and some of the stuff just doesn’t want to come off but stick with it. Get a microfibre cloth and use it wet with washing-up solution.

4. C over your roast! You need to stop the grease

spitting all over your lovely clean oven. To do this just put a lid on your roast tin or cover with foil or try a roasting bag. This way the inside of your oven and your grill (if its inside your oven) won’t become completely coated in grease when you are cooking. This grease, if left in the oven, becomes burnt on carbon in the long term and is very difficult to get off.

THE HORTON ARTS CENTRE

CLASSICAL CONCERT KICKS OFF PILOT EVENTS AT THE HORTON

On Sunday 5 December The Horton, Epsom’s new arts centre, opened the doors to host its first ever live music event, a fantastic sold-out performance by The Denman Street Quartet. The quartet got everyone in the festive spirit, playing everything from I Wish It Could Be Christmas Everyday to Tchaikovsky’s Nutcracker Suite. The pilot performance allowed the venue to test the spaces and processes before they fully open in 2022.

Hosting the first audience since the renovation of the semi-derelict building six years ago was a big moment for the project team and volunteers. The Horton welcomed 120 visitors through the doors – the most people at any one time in the restored building to date.

Chocolate TORTE

Wow your loved ones with this rich dark chocolate torte, topped with fresh, juicy raspberries or pomegranate seeds

INGREDIENTS

METHOD

225g unsalted butter, plus extra for greasing 250g dark chocolate (70% cocoa), broken into pieces 5 large eggs 225g light muscovado sugar, broken up to remove any lumps 85g ground almonds 50g plain flour, plus an extra 1 tbsp

1. G rease and line a 23cm springform tin. Heat oven to 180C/160C fan/gas 4. Put the butter and chocolate in a medium bowl and gently melt together, either over a pan of simmering water or in the microwave. Stir until smooth, then set aside.

For the topping 150ml double cream 100g bar dark chocolate (70% cocoa), broken into pieces 1 tbsp icing sugar, sifted A handful of raspberries or pomegranate seeds

2. C rack the eggs into a large bowl, add the sugar, and whisk for 5-8 mins until the consistency is thick, mousse-like and doubled in volume. Pour the chocolate mix around the edge of the bowl, then fold together slowly and carefully using a large metal spoon until the batter is evenly brown with the odd ribbon of chocolate appearing - this helps keep the light bubbles you have created. Sift over the almonds, flour and ¼ tsp salt, then fold in until mixed. Slowly pour the batter into the tin. Bake on a middle shelf for 30-35 mins, or until the cake is risen and set on top. Cool the cake in its tin on a rack. The torte may sink and crack a little, which is fine. 3. T o make the topping, bring the cream to the boil. Put the chocolate in a separate bowl with the icing sugar, then tip the hot cream over it. Leave for a few mins, stir until smooth, then let it cool and thicken for 10 minutes. Carefully remove the torte from its tin onto a plate, and spread the icing over the top, letting it drip down the sides. Leave to set for a few minutes, then decorate it with raspberries or pomegranate seeds. Either chill for a few hours or serve straight away.

In its first year, sales of Mrs Beeton’s eponymous Book of Household Management topped 60,000 making it one of the most famous cookery books ever published garnered from her childhood. Born in 1836 in London, Isabella Mayson was the eldest of four children from the marriage of Elizabeth and Benjamin Mayson. After her father died her mother married Henry Dorling, Clerk of the Course for Epsom races, who ran a successful printing and publishing company in Epsom with his father, William. It is over 150 years since the first instalment of Isabella Beeton’s Book of Household Management was published, navigating many a young newlywed through the art of running a household. Aimed at a captive middle-class market of women who had little practical experience or household skills, the book gave a step by step guide to carrying out domestic tasks and advice on topics ranging from childcare to managing servants. It was also the first to format recipes, listing ingredients before explaining how to cook the dish, in a layout that is still followed today. Although she had little experience of running a large household much of Isabella’s knowledge was

Between them the couple had eight children - and went on to have another 13 - so accommodation in the Dorling premises was cramped. In 1845 Henry leased the Grandstand, a building which had been constructed 15 years earlier by Epsom Grand Stand Association.

An Unusual Childhood Henry bought a new printing press and moved his business to the Grandstand basement, leaving his father and sister Lucy to run the bookshop and stationers in Epsom High Street. He began reforms to the building and the races, laying out a new Derby course in 1847 and building a new wing for the grandstand.

As the eldest, Isabella was expected to look after the youngest of the brood who were sent off to live in the vast building which could accommodate 5,000 spectators. On race days, when the grandstand returned to its original purpose, the children were packed off to Brighton. In 1856, after a brief courtship Isabella married Sam Beeton, an entrepreneurial publisher who had realised that cheap books and magazines were selling well, because growing numbers of people had been taught to read for the first time. He also realised that there were two gaps in the market, no-one was publishing anything specially aimed at women or children. The Englishwoman’s Domestic Magazine was the first cheap publication of its kind. Sam set essay competitions; commissioned columns and did his best with correspondents to Cupid’s Letter-Bag. Within a few months Isabella had taken over the household hints and cookery columns in the magazine. She added a third on childcare, the arrival of her own first baby did not interrupt the www.outaboutmagazine.co.uk


LOCAL HISTORY flow of work. Within a month of her debut she had evolved a characteristic style - brief, blunt and clear, supported by epigrams or proverbs.

Most of her recipes, though she tested them, came from earlier books. Only one recipe in the book Baroness Pudding, from the Baroness de Teissier of Woodcote Park, has an Epsom link.

An Erudite Cookery Book Isabella spent three years planning the Book of Household Management from the couple’s home in Pinner, and had it issued in parts along with the Englishwoman’s Domestic Magazine.

The Secrets of Organisation The Book of Household Management was the best organised publication of its kind. There had been other works on the same subject, but none had the same cool efficiency. Isabella had watched her mother cope with 18 children and her father manage 250,000 racegoers, and she knew the secrets of organisation. The success of the book, which remains in print, led to future projects.

Apart from some training in German pastry making, which she received at finishing school in Heidelberg, and some subsequent lessons at Barnards the confectioners in Epsom, Isabella had never needed to cook herself.

In 1861 Isabella was called in to edit women’s features for a new magazine entitled The Queen. Three years later she helped plan a girl’s magazine, the Young Englishwoman, and early in 1865 while working on the Dictionary of Cookery she gave birth to her fourth child. Local Milliner tells us about her passion

My name is Margaret Bovington, owner and creator of Emms Millinery. I am a 62 year old milliner who found millinery late in life and wish I had found it earlier. I love creating elegant headpieces suitable for all occasions, whether it’s for a wedding or something bespoke to wear to the races. I began making hats in 2017 when I received an invitation to attend Royal Ascot. I thought it would be fun to try and make my own hat. Luckily it was a success and after receiving compliments I was encouraged to learn more and so my passion began.

I feel millinery should not only be beautiful (often it is what makes an outfit go from good to great) but it should also be affordable. I like to offer a range of headpieces for various budgets, each one crafted with care using high quality materials and traditional millinery techniques.

Trending now are halo crowns (think Duchess of Cambridge). These are not only gorgeous to look at but also easy to wear. Most of my headpieces are made from Sinamay, a natural fabric produced from Abaca fibres, a type of banana. It’s my favourite material to use.

All are bespoke one-off designs and I love designing something to match a particular outfit that is completely unique. Hatinators (a cross between a hat and a fascinator) are popular with Mothers of the Bride etc as they don’t flatten the hair as a hat does when removed.

I work from a small studio in my back garden in Ewell where I find inspiration from nature. I also love old Hollywood and the air of elegance that surrounds it which I try and incorporate into my designs. I offer an online service for those who are not local to me.
