LOCKDOWN BAKING
Baking
LOCKDOWN
Discovering a new passion Whilst we have been adjusting to life in various stages of lockdown, the nation has discovered a new passion for baking. As a way for people to de-stress and selfsoothe in times of crisis, creating delicious sourdough bread or decadently iced cakes has become a comforting hobby for many. During the first lockdown, sales of baking ingredients sored, the shelves were bare of flour, and eggs were sometimes hard to come by. Luckily now the shops are back to being well stocked with baking essentials readily available. Will this baking passion continue as we adjust to the ‘new normal’? Cakes and bread have all the ingredients to offer people a happy celebration, they bring people together and make pretty much everybody happy. With the dark winter nights upon us, will you be practicing your skills or learning new ones in the kitchen? Tucked away from the hustle and bustle of Ashtead Village, chef David Gillott is living the good life and
sharing his culinary skills at his Four Gables Food Academy. A few years ago, they used to run a cookery school. Eventually, the events business took over and they decided to put the cookery school into cold storage. However, since lockdown, they decided to dig it out of the freezer and launch it online as Four Gables Community Cookery School on Facebook. You can follow them as they post a daily store cupboard recipe to help you and your kids get cooking. You can also enjoy two weekly cookalongs on a Tuesday and Friday morning at 11.30am, with the aim to provide a bit of light-hearted fun to keep the whole family entertained. Four Gables have shared with us their delicious recipe for Rocky Road Twix bars, so why not give it a go and enjoy this delicious treat on a long winter walk in the new year. Enjoy baking!

METHOD Melt the butter, chocolate and golden syrup together in a heatproof bowl set over a pan of simmering water. Don’t let the base of the pan touch the water. When the chocolate mixture has melted and is smooth, set aside for a couple of minutes before stirring in the mini marshmallows, shortbread chunks and chopped Twix bars. Pour this into a lined 20x20 square baking tin. Smooth the top and place in the fridge while you melt some more white chocolate for the topping. Retrieve the rocky road from the fridge and pour over the melted chocolate. Decorate with chopped Twix bars and pop back in the fridge for about 2 hours or until firm enough to cut into squares.
GREEN FLAG AWARD
GOING
Green
Four of Epsom and Ewell’s green spaces have once again won the Green Flag Award! Four green spaces within Epsom and Ewell have been recognised by the Green Flag Award Scheme as some of the very best in the world. Epsom Common Local Nature Reserve, Ewell Court Park, Alexandra Recreation Ground and Rosebery Park join other green spaces awarded this recognition throughout the UK.
• Epsom Common Local Nature Reserve has won the award for the fourteenth consecutive year. It is the largest local nature reserve in Surrey and is a Site of Special Scientific Interest (SSSI). • Ewell Court Park has won the award for the ninth year in a row. The park is the former gardens of the historical Ewell Court House.
A record-breaking 2,000 green spaces across the country have received this international award in a year when millions of people have seen the value of having great quality green spaces on their doorstep.
• Alexandra Recreation Ground has also won the award for the ninth year in a row. It is a sports ground with facilities for cricket, soccer, bowls, tennis and basketball situated in Alexandra Road, Epsom.
The four green spaces in Epsom and Ewell that were put forward for judging for the award were selected, as they are broadly representative of the different green spaces within the borough:
• Rosebery Park has once again won the award for the eighth year running. It is a formal town centre park in Epsom.

GREEN FLAG AWARD The Green Flag Award scheme, managed by environmental charity Keep Britain Tidy under licence from the Ministry of Housing, Communities and Local Government, recognises and rewards well managed parks and green spaces, setting the benchmark standard for their management across the United Kingdom and around the world. Councillor Barry Nash, Chair of Epsom & Ewell Borough Council’s Community & Wellbeing Committee said: “We are absolutely delighted that four of our parks and green spaces have once again won the Green Flag Award, a testimony to the hard work of our staff and also to the input and support from community groups and volunteers. “We know how much quality green spaces matter to residents and visitors, especially more than ever this year, and this Award celebrates the dedication that goes into maintaining our parks and green spaces to such high standards. Let’s continue to respect our beautiful green spaces by keeping them clean and safe for everyone to enjoy.
“By lighting up a tree in Rosebery Park to mark our Green Flag Award success, we joined buildings and landmarks across the country, going green for parks to celebrate and to say a massive thank you to the parks staff, volunteers and the Green Flag Awards judges for all their hard work this year.” Commenting on Epsom and Ewell’s success, Keep Britain Tidy Chief Executive, Alison Ogden-Newton OBE said, “This year, more than ever, our parks and green spaces have been a lifeline and we know that millions of people have used them to relax, meet friends, exercise or simply escape for a short time. “It is a testament to the incredible dedication and hard work of parks staff and volunteers that, despite the challenges that went along with record numbers of visitors, Epsom & Ewell Borough Council’s award winning parks and green spaces have achieved the highest international standards demanded by the Green Flag Award.”

WIN A FAMILY PORTRAIT
CREATING BEAUTIFUL, TIMELESS
Family Portraits
Have you noticed recently how quickly time is passing by? If you have children in your family, they seem to be growing before our very eyes don’t they? As the pandemic has taught us, time with our extended families has been very limited, and very precious. Award Winning Surrey-based Professional Portrait Photographer, Rachel Thornhill, takes you behind the scenes of creating a beautifully timeless family portrait. Creating family portraits against the backdrop of a family home is something Rachel loves to do for her clients, after all, it’s the people they love the most in the place they love the most! Starting with a cup of tea and a chat, portrait sessions are relaxed and fun, and Rachel gets to know the family and their characteristics. During this time, she takes a beautiful set of portraits to take away. A week or so later Rachel will arrange to visit the family again for their photograph viewing and ordering session. This is when
they sit down together and go through the portraits, selecting their favourites and working out how best to display them. This recent set of family portraits were considered to be worthy of a few awards too! The family kindly allowed Rachel to enter them with the Master Photographers Association Monthly, Regional and National Awards, where she received two Highly Commended certificates, two Merits and then a Finalist Award in Portraiture in the South East of England! The icing on the cake for a normal client portrait session, with the sole aim of creating something wonderful as a gift.

WELLNESS
FOREST
Bathing Experience the benefits of spending time in nature In a time when we may all be feeling a little uncertain about life, taking time to wind down without the distraction of technology can be an enormous benefit to our mental and physical well-being. What is Forest Bathing? Establised for over 40 years, it is simply time spent in nature, surrounded by trees for health and well-being purposes. Contrary to its name, you do not get wet! Studies have shown that spending as little as 15 minutes surrounded by nature can lower blood pressure, reduce stress and anxiety, increase your ability to focus and improve general well-being. The Surrey based Forest Bathing Institute (TFBI) was established with the purpose of protecting our ancient woodlands and forests while helping people to improve their mental health and well-being by spending time under the canopy of trees and being immersed in nature. TFBI was founded by husband and wife team, Gary Evans and Olga Terebenina who both have a passion for nature, the environment, conservation, mental health and well-being. Gary is actively working with Government bodies and stakeholders, landowners, healthcare providers such as the NHS and the universities to propagate the health giving benefits of immersive nature based therapy,
and to raise awareness of the health benefits of Forest Bathing, both at a mental and physiological level on the body. Olga is a philosophy graduate with a passion and extensive knowledge of holistic healing practices and lifestyle, with experience from studying in India. It is this blend of learning and expertise in Eastern practices that Olga brings to the training. TFBI is currently working with the Surrey Hills Area of Outstanding Natural Beauty and local landowners to conserve the environment, and also to host Forest Bathing events across the region. So, it is a wonderful opportunity to showcase the natural beauty and wonder of this region, whilst informing and educating event attendees about the health-giving benefits of the ancient woodlands and forests in the region. TFBI is also planning to provide grant aided, immersive nature therapy sessions, for those Surrey based NHS and key workers, who may be suffering from stress, anxiety and any mental health issues arising from the Covid 19 situation. Please note that these sessions will adhere to Government social distancing guidelines. Take time to switch off from technology and immerse yourself in the wonderful nature we have around us and experience the benefits of Forest Bathing this winter.

SCHOOL A dynamic, fun and caring school environment
Banstead Prep School is a co-educational prep school and nursery for girls and boys aged 2 – 11 that offers an incredibly diverse curriculum and co-curricular programme, thanks to subject specialist teaching and access to facilities, right from the Early Years. The school has an ethos of instilling lifelong skills and promoting positive metal health and creating opportunities for children to be excited and truly engaged with their learning, which leads naturally to excellent academic progress: English and Maths attainment are individually tracked, and more than 30% of children achieve standardised scores in the top 2% nationally. Children move on from Banstead Prep to a wide range of selective independent senior schools and grammar schools as well as state secondary schools and are awarded scholarships for exceptional academic achievement and talent in Art, Music, Drama and Sport. The school believes in working with parents and children to identify the right school for each child and supporting them to secure a place at the school of their choice.
Banstead Prep has recently welcomed a new Headteacher, Jon Chesworth, previously Deputy Head at Thomas’ Clapham, who was excited to join the community: “Banstead Prep is a dynamic, fun and caring environment that everyone is proud to be a part of and I was convinced it was somewhere I wanted to be from my very first visit.” Jon has been teaching for over 17 years in both prep and senior schools, starting his career in Physical Education and more recently taking a further interest in pastoral care and wellbeing. His ethos is a natural fit for BPS “School should be fun. Happy children flourish and happy children learn. Our greatest responsibility as teachers and leaders is to create an environment where our children feel safe, valued and listened to”. It’s been challenging to show parents the school without the usual open days and BPS has created a Virtual Open Day at bansteadprep.com/admissions, available 24/7 so parents can visit at a time to suit them. The Admissions team is available on 01737 363600 or admissions@bansteadprep.com and can arrange personal tours outside of school hours.
