Since moving here, I have made a lot of new friends. “I lived in the same road in Chessington for 65 years and had a wide network of friends, which made the move for me quite a wrench. However, since moving here I now know I made the right choice. My apartment is smashing, there is ample space; I really love the restaurant and the meals are wonderful.”

SEASONAL RECIPE
SUMMER
Desserts With summer upon us and friends and relatives now able to visit, this is a superb desert to have prepared ahead of guests coming over.
RASPBERRY TART Method:
Method:
4 egg yolks 2½ oz (70g) caster sugar 3tbsp plain flour 10fl oz (300ml) milk ⅛ tsp salt ½ tsp vanilla essence 1 lb (450g) fresh raspberries 5 tbsp red currant jelly 1 tbsp fresh orange juice
For the pastry, sift the flour, baking powder and salt into a bowl. Stir in the sugar and orange rind. Add the butter and cut in with a pastry blender until the mixture resembles coarse breadcrumbs. Stir in the egg yolk and just enough cream to bind the dough. Gather into a ball, wrap in greaseproof paper and refrigerate. For the custard filling, beat the egg yolks and sugar until thick and lemoncoloured. Gradually stir in the flour.
For the pastry:
6½ oz (190g) plain flour ½ tsp baking powder ¼ tsp salt 1 tbsp sugar Grated rind of ½ orange 3oz (85g) cold butter, cut in pieces 1 egg yolk 3-4 tbsp whipping cream
6
In a saucepan, bring the milk and salt just to the boil, then remove from the heat. Whisk into the egg yolk mixture, return to the pan and continue whisking over moderately high heat until just bubbling. Cook for 3 minutes to thicken. Transfer immediately to a bowl, add the vanilla and stir to blend. Cover with greaseproof paper to stop a skin forming. Preheat your oven to 180 °C/Gas 6. On a floured surface roll out the pastry ⅛ in (3mm) thick, transfer to a 10in (25cm) pie dish and trim. Prick the bottom with a fork and line with crumpled greaseproof. Fill with baking beans and bake for 15 minutes. Remove the paper and beans and continue baking until golden. Let cool. Spread an even layer of the pastry cream in the pastry case and arrange the raspberries on top. Melt the jelly and orange juice in a pan and brush on top to glaze.

SURREY LAWNS & GARDENS
Beautiful GARDENS
David Field is the owner of a successful landscaping and garden maintenance company in Surrey. Brick walls can define a garden and they can come in lots of different shapes and sizes. Sometimes a wall is needed to retain soil, this allows a garden to be levelled or terraced off. Or they can be built purely for aesthetic purposes. There are three main types of wall: brick, concrete block (rendered/clad for appearance), and natural stone. The important points when building a wall are: Drainage all retaining walls should consider ground water and have a way of draining this away otherwise when the soil gets wetter during winter, the added weight will knock the wall over. Planning permission - this comes into effect as walls get taller and can be affected if obscuring views across junctions. Adding a damp proof course helps for longevity too.
Case Study: This wall is one we recently completed for a customer in Epsom. We removed an existing curved flint wall and rebuilt it in a straight line to transfer some of their car parking space into garden space.

NATIONAL TRUST
Gardener’s NOTES
Alex Wigley, Polesden Lacey’s Gardens and Outdoors Manager, writes As we move from June into July and August there’s a battle for centre stage at Polesden Lacey between the Rose Garden and the long double Herbaceous Borders. Roses in the garden offer so much interest not only with their bold floral displays and fabulous scents, some right through to the autumn, but also later with colourful hips in the winter. Now is the perfect time to take a notebook and visit gardens or plant nurseries and choose the perfect rose for the garden. It’s hard to appreciate the variety of scents and subtle changes in colour as a rose goes from bud into an open flower from a plant catalogue; so do your research now whilst they are in full flower. There are many types of roses, so the first decision is what size of plant you are aiming for and what colour. Aim for a repeat flowering rose and ideally one with a good scent. Many nursery websites allow you filter by the characteristics you’re looking for to give a list of suitable roses. Roses are available now as
containerised plants or bare-root in late autumn/ winter. If you visit Polesden Lacey this summer, look out for Polesden Lacey’s own Rosa ‘Margaret Greville’ which was cultivated to celebrate 75 years since Mrs Greville bequeathed the property to the National Trust. The Herbaceous Borders at Polesden Lacey contain a mixture of bulbs, herbaceous perennials and annuals. Herbaceous perennials are fantastic value for money as they regrow from the base year after year and can be lifted and divided into more plants as they get bigger. Many will flower from early summer right through to the frosts, with some of my favourites being Rudbeckia, Penstemon, Salvia, Achillea and Geranium. Interspersing annuals such a Cosmos, Sunflowers Antirrhinum, or Dahlias can help fill gaps or add some height to the border, or you can add a shrub or two for some more permanent structure.

READY, SET, go! Summer of sport comes to Polesden Lacey
Staying at home doesn’t mean we have to stay indoors this summer. The National Trust’s Polesden Lacey is launching a summer of sport with The Polesden Games – Ready, set, go. Come and spend the day exploring the pleasure grounds and find our seven fun sporting activities for you and your family to enjoy and create memories of a lifetime. Amble along the grassy lawns and woodland paths and challenge friends to a round of frisbee golf. Find the track for the sack race, or the ping pong table nestled between the trees and look out for the obstacle course, bean bag toss and Swedish game of Kubb. Whether you’re eight or eighty, take on the family and see who’s the winner. Pick up your Get, set, go card and stickers at the
ticket office and let it take you on some exciting outdoor adventures. After you’ve completed the activities, don’t forget to record the occasion with a photo on the winner’s podium. No visit to Polesden Lacey would be complete without a trip to Home Farm Orchard to visit the chickens. Whilst you’re there, why not check out the beehives and bug hotel. It’s a great spot to relax and have a picnic. You can also take in the gardens and explore the wider estate with fantastic views over the Surrey Hills and Ranmore common. The Polesden Games – Ready, set, go starts on 10 July and runs throughout the summer until 1 September. There’s no extra charge for this activity, but normal admission applies.

EPSOM & EWELL FOODBANK
EPSOM & EWELL FOODBANK
Covid’s impact on North Surrey In 2019 Epsom & Ewell Foodbank fed 5,314 people, in 2020 we fed 12,535 people, a 236% increase. Covid has had a huge impact. We set up in 2012 and we run centres in Epsom, Ewell, Leatherhead, Tadworth and Banstead plus many other wraparound support services. Originally people in food poverty were offered three vouchers in a 6-month window, the expectation that this was all they needed prior to accessing benefits and allaying problems. However, as time
has gone on, we have realised that the nature of food insecurity has become much more entrenched, and can remain a major problem even when in employment. Our mission is to work towards an end of the need for a foodbank. We have seen big jumps in demand for our services, which in a community as rich as Surrey is not right. Thank you for your support and generosity as we strive for a brighter future.

HOBBLEDOWN
LONDON’S LARGEST
Raptor Centre Opens its Aviaries at Hobbledown Adventure Park
A purpose-built Raptor Centre home to 18 Birds of Prey opens within Hobbledown Adventure Park in Epsom on July 3rd. Featuring a selection of owls, hawks, eagles and falcons, this centre will also host a breeding pair of Lugger Falcons, endangered in the wild due to demand from poaching. As part of a recent £1.2m investment into the park, the centre will be home to 18 birds at full capacity, this includes the Gymnogene (African HarrierHawk), just one of a handful Bird of Preys that blush red in the face during their mating display and a Ural Owl which pairs for life and sings duets with its mate. With the new building, guests will now be able to see the birds every day, untethered within their own specific aviary.
The new centre will be ideal for school trips and will soon house an education room to support core elements of the Key Stages 1 and 2 curriculum with a live webcam from the Lugger aviary. The Raptor Centre was founded by Eddie Hare in 1977. The sanctuary was rehomed into temporary lodgings at Hobbledown in 2018 whilst they waited for planning permission for the new building. Sadly, Eddie died shortly before the centre was complete but his wife Ronnie, who has been flying birds for nearly 20 years, is delighted with the birds’ new home. She said: “It’s a wonderful addition to the Park and a striking demonstration of our commitment to the welfare of these incredible creatures.” Guests can view the birds in their new aviaries daily and flying demonstrations are held by Ronnie every day except Wednesday during the summer months.

Surrey’s
FAMOUS FACES Plenty of actors, singers and well-known people have grown up in Surrey Many celebrities have been born in Surrey over the years, including Caterham-born Bill Nighy, Epsom-born Warwick Davis and Dame Julie Andrews, of Walton. Take a look at some familiar faces who have lived in our beautiful county. TOM FELTON Thomas Andrew Felton is an English actor and musician. He is best known for his role as Draco Malfoy in the film adaptations of the best-selling Harry Potter fantasy novels by J. K. Rowling. Tom was born on 22 September 1987 in Epsom. He was educated at West Horsley’s Cranmore School until age 13, after which time he attended the Howard of Effingham School in Leatherhead for his secondary education. Felton developed an interest in
28
singing during his childhood and subsequently joined school choirs; he was offered a place in the Guildford Cathedral Choir.
ERIC CLAPTON This musical legend was born in Ripley on 30 March 1945 and went to Ripley Primary School. In 1961, after leaving Hollyfield School in Surbiton, Clapton studied at the Kingston College of Art but was dismissed at the end of the academic year because his focus remained on music f @outandaboutmagazines

rather than art. Around this time, Clapton began busking around Kingston, Richmond, and the West End. In 1962, Clapton started performing as a duo with fellow blues enthusiast David Brock in pubs around Surrey. Eric Clapton is a English rock and blues guitarist, singer, and songwriter. Clapton has been referred to as one of the most important and influential guitarists of all time.

James went on to play Natasha Rostova in the television series War & Peace, and starring roles in several films, including Baby Driver, Darkest Hour, The Guernsey Literary and Potato Peel Pie Society, the musical Mamma Mia! Here We Go Again, Yesterday and most recently, Rebecca.
DAME JULIE ANDREWS Dame Julia Elizabeth Andrews DBE was born in 1935 in Walton, before settling in Hersham after her parents’ divorce. She married her first husband Tony Walton in Weybridge in 1959, not long before her golden period in the limelight of cinema, playing Mary Poppins in 1964, and Maria Von Trapp in The Sound of Music in 1965. She has won several awards throughout her life, including an Academy Award, a BAFTA and five Golden Globes.
WARWICK DAVIS Warwick Davis was born in Epsom, Surrey. He was educated at Chinthurst School and later the City of London Freemen’s School. f @outandaboutmagazines
Warwick is an English actor, television presenter, writer, director, comedian, and producer. He played the title characters in Willow and the Leprechaun film series; several characters in the Star Wars film series, most notably the Ewok Wicket; and Professor Filius Flitwick and Griphook in the Harry Potter film series. Davis starred as a fictionalised version of himself in the sitcom Life’s Too Short. He has also presented the ITV game shows Celebrity Squares and Tenable.
DAVID WALLIAMS David was born at St Teresa’s Maternity Hospital in Wimbledon, in the London Borough of Merton, in 1971. He is the son of Peter Williams, a London Transport engineer, and Kathleen Williams, a laboratory technician who worked at Sutton Grammar School. Walliams grew up in Banstead, Surrey, specifically in the residential area of Nork, with his mother, father and sister Julie. He was educated at Collingwood Boys’ School in Wallington, and Reigate Grammar School.
PETULA CLARK This singer, actress and composer was born in Ewell, on 15 November 1932. Both of Clark’s parents were nurses there at Long Grove Hospital. Clark’s mother had Welsh ancestry, and her father was English. Young Sally’s
@outaboutmag
stage name of Petula was invented by her father; he joked it was a combination of the names of two former girlfriends, Pet and Ulla. Clark’s professional career began during World War II, as a child entertainer on BBC Radio. In 1954 she charted with “The Little Shoemaker” — the first of her big UK hits—and within two years began recording in French. International successes included “Prends mon coeur”, “Sailor” (a UK number one), “Romeo” and “Chariot”. She is best known for her upbeat signature song “Downtown”.
MICHAELA STRACHAN Born in Ewell, Surrey, Strachan grew up in Hinchley Wood and attended Chadsworth Stage School, then Claremont Fan Court School, both in Esher. Later, while at ArtsEd, London, she briefly held jobs as an Avon lady and as a kissogram. After her years at ArtsEd, Strachan performed in theatre, before moving on to children’s television. In 1984, she appeared in the musical Seven Brides for Seven Brothers at the Grand Theatre, Blackpool. Most recently, Michaela Strachan is known for presenting Springwatch and Autumnwatch alongside Chris Packham who she worked with earlier on in her career on the popular children’s programme, The Really Wild Show.
