Chef Vargas Keeping the Classics Current by Ally Marrrone
pening a restaurant in Los Angeles is always a gamble. There are a number of things that can go wrong that will make or break your business but we sat down with the Executive Chef Freddy Vargas of LA’s new eatery here for the long haul: Ponte. With a prime location, elegant décor, and Italian fare so good you will want to come weekly, Freddy gave us some of the secrets to making food top critics agree is soon to be a Los Angeles staple. Ponte opened its doors this year and has already been featured in a number of publications boasting its success. We, at Bello, wanted to find out the behind the scenes of the rising star restaurant and we think it starts with spaghetti.
Chef Scott Conant perfected this Italian classic and when we asked Chef Vargas what makes it so special his response: it’s all in the dough. Chef Vargas and his team make the dough from scratch to produce the noodles even your Nonna will envy. “We aren’t trying to re-invent the wheel here” Chef Vargas adds, “we make the classics and we make them well.” That’s not to say there isn’t their fare share of flare like the Braised Duck Agnolotti: a new twist on an old favorite featuring a fois gras emulsion that highlights the quality of the food and the panache of the chef. With daily specials featuring seasonal ingredients from the local farmer’s markets or an award winning original cocktail from the bar, you can come back without ever having the same thing twice. Bello wanted to take a more in depth look at not only the restaurant itself, but the Chefs’ behind the food. Chef Vargas comes from an Ecuadorian family where the cuisine consists of various soups and stews “I remember my Dad being in the kitchen with his shirt off eating a

bowl of soup” he says, but his passion for food doesn’t come until later when the ever influential Emeril Lagasse starts taking over Food Network. “I know there are videos of me imitating him a lot. I don’t know where they are, thank God!” Fast forward twenty years and Chef Vargas is creating his own Italian cuisine style like

Emeril, only without the signature catch phrase. With the rise of reality cooking shows, we see a lot of personal preferences and pet-peeves from many chefs so we asked what are his “don’t’s” in his kitchen. They are surprisingly simple: don’t be sloppy and be proactive. “I am very hands on- I plate; I cook… I don’t just stand

at the expo line and bark orders. I am very involved.” An involved Executive Chef no doubt helps with keeping the staff on their toes, but also shows the intense passion Chef Vargas has for his food. “At the end of the day I still love to cook.” Chef Conant and Chef Vargas have a long standing relationship with many successful restaurants between them. The balancing act of creative input can be delicate and the difference between success and failure. Bello wanted to know how the process works between an Owner and it’s Executive Chef. “We have worked together so long I kind of know what he’s thinking but communication is key. I send him pictures and recipes and he gives me his input on things he likes or doesn’t like. The goal is the long dollar- keeping the creativity is something Scott encourages me to do.” With 14.8 thousand followers salivating and planning trips from all over the country, to consistently packed dining rooms, whatever Ponte is doing- it’s working. Upon walking into Rise Nation you wouldn’t think it was different than any trendy new fitness spot in Los Angeles, but once you walk up the stairs to the ultra sleek platform you know this place means business. Rather than direct her to get what I had pictured in my head, I told Sirena to free herself up and move through the environment as she saw fit, using her instincts and taking advantage of the moment. Albert Einstein famously said, “Look deep into nature, and then you will understand everything better.” For actor Justin Prentice of 13 Reasons Why, this idea is twofold. BELLO recently had the chance to catch up with the 23-yearold star where he explained why he is so passionate about exploring nature, and his belief in the importance of exploring one’s inner nature as well. “I like being in less densely populated areas, so I try and get away from LA when at all possible just to kind of recalibrate,” he says. For Justin, experiencing the outdoors is the most thrilling way to unplug. Of all his adventures, Justin says a recent trip with his girlfriend was one of his all-time favorites. “[We] did a tour where we started in Oklahoma, through Colorado and then the Southwest – Arizona, Utah, New Mexico -- a week and a half long excursion in the truck, pitching the tent and finding random places to camp. That was pretty spectacular.” Having spent the first 13 years of his life growing up in rural Tennessee and this past decade living in Los Angeles, Justin feels blessed to call both of these worlds his home. “My upbringing helped shape who I am. A lot of the core of who I am [came from growing up in Tennessee] -- I guess the hospitality, at least some semblance of manners -- that stuck around.” His years in Los Angeles have come

with an extra set of benefits. “I’m glad I moved to Los Angeles at a young age to still be influenced by the culture around me -- it’s such a melting pot. You have a bunch of cultures coming together, it gives you a different perspective about everything, which was also really helpful.” Playing Bryce Walker on 13 Reasons Why, a character with such a tough guy persona, serves in stark contrast to Justin’s true nature. Wise beyond his years, he has a profound understanding of the importance of self-expression and how it maximizes one’s fulfillment in life. “We live in an age where people are pushing for more of their true selves -- fly your own colors and be who you are instead of trying to fit into a box that someone else has assigned for you.” It’s for this reason that Justin and some of his co-stars were so proud to march in this year’s Pride Parade in San Francisco. “[We] went out to support and walk through the parade and it was a blast. It was a really cool energy of acceptance.” For Justin, experiences like this are the very definition of what makes a true man in the modern world. “I think it’s really important for people to be their own person as opposed to trying to conform – there’s a lot of pressure [out there for guys these days] but there is also a lot of counterforce to the hyper masculinity in terms of being yourself.”

From a young age, Justin had big dreams of being an artist. “This sector of the arts is about storytelling and getting important topics out there,” he says. “From a young age I was drawn to the industry; I wanted to act and I’ve been chipping at it for almost a decade now. It’s really cool when you get the opportunity to have a project like [13 Reasons Why], that actually influences people’s lives for the positive. There’s a lot of projects out there and they all have their positive and negatives but you don’t always get this level of opportunity which is really cool and I’m humbled by it.” For the next four months, Justin and his co-stars are shooting season two in Napa Valley, and in his downtime he will soon be fulfilling a dream he’s had for a long time. “When I do have a weekend to do something extracurricular I might head towards the scuba diving front. I’ve been wanting to scuba dive for a long time. Ross [Butler] was up here with us last season, got his scuba diving certification, so we may all go. I might try and get certified while I’m up here. There’s a cool close knit community for it.” You can look forward to seeing Justin in season two of 13 Reasons Why in 2018, and be sure to catch him on AMC’s critically acclaimed series Preacher which just began its new season on AMC.

"I felt so incredibly privileged to be there and to be witnessing these animals in the wild -- living as they should be," Nathalie says about her safari adventure during a recent six-week trip to South Africa. There to film scenes for the third installment of the Maze Runner film series, she had only a few days of shooting and plenty of time to take in the raw, natural beauty and history of one of Africa's crown jewels. "It was amazing being in Cape Town and South Africa, and to be learning of their history -- both old and recent. I visited Robben Island where Nelson Mandela was incarcerated for so many years. I learned about how the prisoners were treated, as well as the painful chapter of segregation." Experiencing the country's living history also proved to be emotional at times. "All of these things were sad and terrifying to learn, but also incredible to learn of the power of the human spirit. You can learn about these things in books, but to see this history and meet these people up close is extraordinary -- especially for me, a woman of color who has a mixed heritage. It was such a privilege and I had an incredible time there. I met nothing but really great people everywhere I went." "I also went to a place called Cheetah Outreach where they rescue cheetahs and educate people about them as well. It was beautiful to meet all these people who have dedicated their lives to saving animals." The stunning natural wonders of the region also elicited moments of pure awe. "There was one moment during the safari when we saw a mother rhino with a young baby," she says. "We got very close and we could hear the baby screaming. Our guide told us it was screaming because it was hungry, and soon enough we watched as the mother began nursing. It was so beautiful and it really hit home as another example of how much we have in common with these animals. At the end of the day, our biggest purpose in life is to offer protection to those we love." Lessons in care and compassion have

been ever-present throughout Nathalie's life. "My mother cared for people with special needs since I was around three-years-old. When I was about fourteen my mom began to care for them from our home. To this day we have two women who have lived with us all these years who are like my family."Â Her passion for the care and support of people with special needs, as well as for those who care for them, is further strengthened by her love of her godson who has autism. "My godson is ten now, and about four years ago we raised enough money to get him an autism service dog. I believe they also just raised enough money for another child to one. Hopefully we can help more children get support from these special dogs. It's something I'm really passionate about." She adds, "We also need to support these parents who are making the right choices for their kids -- choices that are both conventional and unconventional." For Nathalie, the powerful lessons of love, care, and grace which she has learned from her mother, as well as from the many people with special needs who have passed through her home, have also shaped her philosophy of how film and television can best give back to society when characters on-screen reflect the people who surround us each day.
Now that she has been part of so many hugely successful big-budget productions, Nathalie says she is embarking on an incredibly exciting new chapter of her career as she begins to explore choices and potential projects in other parts of the spectrum. "I'm in a space right now where I'm searching for the right thing. I've been working on so many brilliant large-scale productions -- such as the action of the Fast and the Furiousfranchise and the fantasy of Game of Thrones. Right now I'm looking at more independent productions, to try and push myself in ways that I haven't been pushed before." As she ventures into this new territory, she takes wisdom and inspiration from two of her heroes. "Meryl Streep, for example, is one of the greatest character actresses that has ever lived. Her body of work and its variety makes her someone I really look up to." Nathalie adds, "Someone who is more so one of my peers, in terms of our age, is Jennifer Lawrence. She's got such a great range as well. She's really proven her diversity of choices -- from X-MEN to all of her terrific independent work such as Silver Linings Playbook and Joy. She's really shown her chops -- from comedy to drama. She's done it all, and that's something I look up to. I'm always excited when another one of her projects comes out."
"Often the greatest characters in film and television are reflections of the women we encounter in our everyday lives. These are the roles that are the most important, in my opinion, because of the unrealistic and overly-stylized depictions of female characters. I would love to see more stories about men, women, or parents who are fulltime caregivers -- to see all of the sacrifices they have to make. As well as the stories of the people being cared for -- people whose voices are not being heard. I also love seeing all of the actors with special needs who are working more and more now."

Before the interview, I had noticed one of Nathalie's Instagram posts from a year ago. "If it's both terrifying and amazing then you should definitely pursue it," the quote read. So I asked her if she can think of any personal examples in which she's lived up to this challenge. "Absolutely! I have always had quite a big fear of being underwater or of being submerged. When I was a kid I had someone jump on top of me when I was in the pool, and I said to myself, 'Nope, that's not happening again.' Then last year I did a film that required me to be at the bottom of a swimming pool. I had to learn how to use a regulator and how to take air without coming up. I didn't quite realize how scared I was, and there was a point where I was crying. My mom helped me calm down over the phone, and the producers were amazing, so I just kept getting better and better." All of that hard work helped Nathalie overcome her biggest fear in life. "Four weeks later I could be underwater for 5-7 minutes at a time. It was an amazing achievement, and earlier this year, by total coincidence, I was approached by Speedo to be a brand ambassador in order to help encourage people to swim at least one kilometre. I told them, 'OK guys, I just learned how to go underwater! [laughing]' Then they told me, 'That's fine! You're actually perfect because we want people who are inexperienced or really experienced -- it doesn't matter what your ability is.' That got me swimming, so I'm doing it quite regularly now. When I have a long stretch where I'm not swimming I sometimes get the jitters, but I shake it off and I get right back in."
