GENERAL MANAGER’S MESSAGE Wednesday, January 10th

I hope everyone had a wonderful Christmas and a happy New Year! We are excited for 2018 here at Oxbow! We had a great December here at the club, thank you to everyone who came out to dine, or attend one of our events. We had another great Santa Brunch, and of course many holiday parties here at the club. Our annual Stag event was a huge success, with 125 members and guests attending, and raising almost $65,000 for club capital needs. Again, thank you to all who came out to these events! January

We have lots more great events and activities planned for January, and I hope that everyone is able to make it out to the club this month. Please look for details on all the upcoming events in the following pages of your newsletter. I am excited that we are able to bring you more and more new and interesting ways to come out to the club in the offseason. Chef’s cooking class will be fantastic, and will fill up quickly. And of course, Deuces Wild Dueling Pianos at the end of the month is always a blast for the membership and guests. GENERAL MANAGER’S MESSAGE

Head Golf Professional I am happy to announce that we have hired Corey Herlickson, PGA as our new Head Golf Professional! Corey comes to us after spending the past eight seasons at the Head Pro at the Meadows. Corey brings a wealth of knowledge and experience to Oxbow, including programs for all golfers, as well as teaching, club fitting, and merchandising. Having both Corey and our Director of Golf, John here will ensure that we can provide the proper attention to our membership and events, and continuously work to enhance your golfing experience at your club. You will hear from Corey in next month’s newsletter, he will be starting on January 8th.

As a team here, we will spend the next couple of months not only planning and having events for the winter, but also to begin preparation for the upcoming season. It’s hard to believe it, but the offseason goes by tremendously fast for those of us here. Before we know it, we will be discussing opening the course and diving in to the season. We were happy with many things in 2017, as we navigated through the first season in our new facilities, as well as a modified golf course and all the work that came with getting the ring dike through the course finished. Now we focus on where we need to improve in 2018, and implementing action plans to do so, so that your membership experience is the best it can possibly be. We received a lot of feedback over the past twelve months, both positive and constructive. I can promise you that we as a team will continue to work to always be improving and enhancing your Oxbow experience. I hope to see you out at Oxbow soon! ASSISTANT GENERAL MANAGER It was a year to remember... After the first full year in our new clubhouse we are started seeing members use the clubhouse more and more! We have seen members host business meetings, birthday parties, retirement parties, anniversary parties, engagement parties, wedding, etc. If there is a word party behind it… Oxbow has hosted it! Please keep us in mind when planning your next event. Looking into 2018 we our dates are filling up fast! We have booked 18 wedding so far and many outside golf tournaments have intentions on rebooking. Please look at our event calendars on page 7 and 8 to see what events we have planned for members.

This month featured event is Dueling Piano’s. Dave & Ted from Deuces Wild are back to Oxbow on Thursday, January 25th starting at 6:30pm. Dave and Ted were here back in February last year and everyone that attended LOVED THEM! Please bring as many guest as you would like! This chance to go to a dueling piano bar doesn’t happen often in the Fargo area. Please confirm how many friends are coming with by emailing rsvp@oxbowcc.com!

Happy new year, Oxbow! It has been an awfully cold start to the new year. Luckily, we have some fun events coming up to get through those cold winter days. The first of which is our French wine dinner. We will be doing a fun five course dinner. Featuring some fresh truffles and caviar. Our last wine dinner was so fun, you’ll want to sign up asap. Spots are limited for this event, so act soon. Another event that I am particularly excited about is the cooking class. In this first class we will be going over soups, stocks and sauces. This was one of my first classes when I went to culinary school. It was probably my favorite. I am really excited to bring this to you! This class has a very limited number of spots as well. I like to keep this one a little more intimate so that I can work with everyone one on one. Last but not least we have Dueling Pianos joining us again. Last year’s event with these guys was a blast! Be sure to make dinner reservations for that evening as we will be quite busy. Have a wonderful January and we will see you around the club! For this month’s recipe I want to share a simple chicken stock recipe. This will be one I will be going over at the cooking class this month. I personally believe that any great food starts and a lot of times ends with a good stock. Whether It’s a soup, a simple sauce or even a main course. Enjoy!!

Chicken stock Ingredients: 3-4 chicken carcasses

2 large carrots

2 stocks of celery

2 large yellow onions

1 tablespoon whole black pepper

½ a bunch of fresh parsley

3 whole bay leaves

3 cloves of garlic

4 sprigs of fresh thyme

8 quarts water

Procedure:

There is a couple of different ways to make the stock. First is to stick everything into a stock pot bring it to a boil then back down to a simmer. This will go for a minimum of three hours. Another way is to roast your bones and vegetables. This will give your stock a deeper color and a more robust flavor profile. Each has its place in the kitchen. For the first of the two this stock is great for soups. The second way is a great addition to sautĂŠing vegetables. Such as those Brussel sprouts everyone loves so much. Cooking is meant to be fun. So never hesitate to experiment in your own kitchen!

NEWS FROM THE FAIRWAY

DAVID WOOD SUPERINTENDENT All the hard work that goes into putting up snow fence around greens for collecting snow on the greens is warranted with the extreme cold temperatures we are experiencing. With the snow that has fallen we are seeing on average about 4 to 6 inches of cover on the greens. Under this cover the temperature differentials are about 20 degrees higher than the ambient temperature. The snow cover also acts as an insulator against the drying winter winds. Unfortunately, we still have several months of winter so this blanket of snow may make roads and sidewalks slippery, it is helpful in the survival of the turf in your home lawn and the golf course.

PAST EVENTS

STAG NIGHT December 1st was Stag night at the Club. We had one of the best turnouts in years with over 125 people in attendance! With everyone’s help, we raised over $64,000 for the Club. With the proceeds the Club attends to buy a Trackman Golf Launch Monitor and help the maintenance department maintain and get new equipment to keep the course looking as amazing has its been! Thank you for all of your support!

Another great turn out for our annual Santa Brunch! Kid’s got to decorate cookies for Santa, make a Holiday Craft, and take pictures with the big guy! We served 300 people for Brunch. Thank you for all who attended!
