Sedi Halvorson GENERAL MANAGER It’s hard to believe February is here, and we are probably around close to two months from t teeing it up again. We had a great January at the club, and a thank you to all who came out to join us for member events and dining. February again offers many opportunities to experience some fun and unique events, only offered to our members. Hours of Operation: We get many calls here at the club asking if we are open, or what our hours are during the offseason. For your reference, those hours of operation are always included in your monthly newsletter, as well as by logging in online at oxbowcc.com, on the club calendar tab. We also post all of our member events on the club calendar, with quite a bit of information on each one, and how to sign up.

Speaking of member events, we have plenty in the month of February. Our Super Bowl viewing party will be on Sunday, February 4th. We will be offering food and beverages throughout, with the game on all TV’s. Your club is a great place to watch sporting events, and Sunday is another great day to come over and have fun with other members. We also have another outstanding wine dinner on the 7th, this month will be Italian themed, featuring wines and culinary offerings from Chef Scott inspired by Italy. These wine dinners have been hugely popular, and remember, seating is limited. Also check out Murals and Mimosas with Kate Podolak on Sunday the 11th, as well as celebrating Valentine’s Day with your special someone by either attending our special cooking class on the 13th, or our wonderful four course dinner on the 14th. Baby News: Congratulations to our AGM Jake Hughes and his wife Clare on the birth of their first child, an adorable girl named Dylan Clare! She was born on January 30th at 11:28pm. Clare and Dylan are both happy and healthy, and we are all excited to see Miss Dylan around the club in the coming months!

Lastly, we continue to get ready for the upcoming season, and are excited to keep learning and growing as a team, to continue to enhance the membership experience at Oxbow! Our goals for 2018 include continuing the growth of our membership, as well to continue to grow our offerings to all of our members, particularly families. It has been and will continue to be a huge focus for us for many years to come. We want each member of your family to love membership at your club.

Hopefully the worst weather is behind us, and we will begin to see some warmer weather as we get through February. I hope everyone is enjoying the winter months, or able to head south somewhere warm for a bit during this time of year. I hope to see you soon, at YOUR club!

Hello, Oxbow! Another month has come and gone. Time really does fly out here. Golf season seems so close to being here. All of a sudden, the pool is open and we are back in to the full swing of things. But, we have one more winter menu change before we reach that point. We are keeping all the Oxbow favorites and changing just a couple of tiny things. For instance, the salmon dish will be tweaked just a little bit. Well, to be honest… a lot a bit. But change is good, right?? This doesn’t mean you can’t still order the old-fashioned way. Another addition to the menu is in homage to the would be Super Bowl winner Carson Wentz. When we had his event here last July one of the dishes from the evening will be gracing the menu. Bison hunter’s pie. This is going to be a nice comforting dish for those cold nights yet to come. A few other additions such as duck confit and a couple new pastas. That is currently the big conversation around the culinary department. Don’t forget to sign up for the cooking class this month. This month we are going to be making desserts. This class is right before Valentines day. So, you’ll be able to take some techniques home and make something yummy for that special someone. Also, this month we are having our Italian wine dinner. These wine dinners fill up quick so act fast! Past that we are just looking towards the future golf season and what we can do to make it a fun one for everyone! Thanks for stopping by and we will see you around the club!! For this month’s recipe I want to share a little throwback from this last summer. The seared tuna. I know that it is a recipe that works well with 80 degrees of sunshine. But, like many others I have started my new year’s resolution. That is trying to shave a couple pounds off the mid-section. I have even switched to smaller tasting spoons!!

Seared tuna Ingredients for the slaw mix: 1 cup white or Napa cabbage ½ cup red cabbage ¼ cup shredded carrots 2 sprigs fresh cilantro Ingredients for avocado mousse: 1 ripe avocado 1 teaspoon fresh garlic 1 teaspoon salt and pepper Juice of one lime 2 sprigs fresh cilantro ¼ cup sour cream ¼ cup buttermilk 1 teaspoon cumin

Ingredients for slaw sauce: 1 tablespoon soy sauce 1 tablespoon sweet chili sauce 1 tablespoon sriracha 1 teaspoon toasted sesame oil 1 teaspoon rice wine vinegar 1 teaspoon crushed red pepper flake

Procedure for the slaw: Mix all your veggies together. Mix all your sauce ingredients together. Slowly add them all together. You will eventually figure out your sauce to veggie ratio. You want to mix this just before serving. The soy sauce has a lot of salt and will eventually wilt all your veggies. Procedure for the mousse: Add all ingredients together in a blender. Blend it all up. If you find that it is not blending completely smooth, that means it is to dry. Just add a little more buttermilk until it takes. This will keep for 3-5 days under refrigeration. Procedure for the tuna: Heat a sauté pan on high heat. Add 2 tablespoons of vegetable oil. Let the pan heat until it just starts to smoke a little. PLACE not DROP your tuna into the pan. Cook for approx. 2 minutes on each side. Remove and slice. Put this all together the way you see fit. Enjoy!!

NEWS FROM THE FAIRWAY

DAVID WOOD SUPERINTENDENT In January and February our time is spent on mowing equipment maintenance. Every piece is brought into the shop and cleaned; engines are serviced and moving parts greased. Bearings and seals are checked and replaced as needed, hydraulic hoses and connections evaluated for wear and tear to prevent failure during the summer months. Safety switches and emergency brakes are checked for our staff to operate all the equipment safely. Rotary mowing blades are removed, sharpened and balanced for all the rough mowers.

Green, tee and fairway mowing units consists of two parts, the reel and the bedknife. All the reels are placed on a spin grinder that sharpens and hones the individual blades. Bedknives are either replaced because of wear or sharpened for another year. With rough mowers and reel mowers combined, there are a total of 160 different reels and blades that need to be sharpened before the spring. With all the property changes in the city and on the golf course that have happened in the last 12 months I would like to remind everyone that the use of snowmobiles and atv’s is prohibited from the course. We are seeing more of this type of recreational vehicle traffic with the removal of the homes and the construction of the ring levee. Exploring the original golf holes in the winter is an enjoyable walk or a great workout if you are cross country skiing. The peacefulness of the secluded area and the chance to see wildlife is very relaxing, just please do so without damaging the golf course.

COREY hERLICKSON Head Golf Professional Hello Oxbow members! My name is Corey Herlickson and I have the honor of calling myself your new Head Golf Professional. I am very excited to be a part of this wonderful club and the excellent team we have assembled. All of the members with whom I have spoken have said, “Welcome to Oxbow!� I cannot tell you how much it means to have such a welcoming group to work for. My family and I are very grateful for the opportunity we have at a place like Oxbow CC. I come from The Meadows Golf Course in Moorhead, MN where I have spent the last 12 seasons as the Head Golf Professional. My love of my life of 12 years, Stacey, and I owned the restaurant at both The Meadows and Village Green for the past 11 seasons. We have sold the restaurants and Stacey is looking forward to a stress free summer! I have an 8 year old son, Isaac, and a 6 year old daughter, Abigail. You will be seeing a lot of them at the club this summer, because they love swimming and golf. Prior to The Meadows I was at three different facilities in Las Vegas. The most well-known course I worked at is TPC Las Vegas, which co-hosts a PGA Tour event each year in November. I moved to Las Vegas after graduating from the University of North Dakota with a major in Secondary Education and History as well as a minor in Middle School Education and Meteorology. I am originally from Grand Forks. I am looking forward to meeting each and every one of you in the future. Please make the professional staff aware of in any way we can assist you.

Pre-Season Tip

It never hurts to get your clubs ready for the start of the new season. You can do so by cleaning all of the heads and digging the dirt/sand out of the grooves with a golf tee. You also should clean the grips to identify if you need to replace them. Fill a small bucket with warm soapy water. Scrub the grips with the wet rag by holding the rag in your hand and grasping the grip. Pull back and forth and this will help to remove built up oil and dirt that makes the grip feel less tacky. If when you are finished any club feels slick, you know it is time to have us replace your grips.
