Sedi Halvorson GENERAL MANAGER Welcome to spring at Oxbow! This spring certainly feels different than the past three I have written about before. For the first time in four years, we will open the course in April instead of March. We were probably due for this, and it reminds us how spoiled we have been over the past few years. Hopefully we see a warming pattern soon, and can get this season rolling! Until then, we still have some great things happening at your club in April!
Membership: As you would expect with this weather, membership inquiries are behind pace at this point. As the weather warms up each spring, that is when we typically see prospective members start inquiring about membership. We are still getting leads, but each season the quantity of leads we receive is proportional to the warming temperatures of spring. We know these will increase once the snow is gone, but we would still like all of our members to begin (or continue) the recruitment of new members now. We are offering great incentives for new members to join in 2018, and we need our current members to help getting your friends and colleagues to consider membership at your club. Myself and Alison are always ready to assist, whether it be by initiating contact via email or phone, meeting with prospective members here at the club for a tour and meal, or however else we can get great new members to join Oxbow. Please reach out to us any time!

Due to scheduling conflicts, we are postponing the Annual Meeting, previously scheduled for Wednesday, April 11th. We will announce a new date as soon as we can. We apologize for the inconvenience, but we want to ensure that your Board of Directors are all in attendance, and that we can provide you with the most up to date and correct information of all that is going on with our club, and the finishing of our golf course project. Speaking of the Annual Meeting, we are still searching for certificate holding members who would like to help shape the future by running for a seat on the OCC Board of Directors. Please reach out to any current board member or myself for more information.

Alison molony Director of membership & events This month, I am pleased to give you more information about April’s Feature Event, the Charity Gala! We’ve been getting a lot of questions about this year’s charity, Matthew’s Voice Project, as well as the event itself. Here are some commonly asked questions, and more information about how YOU can help! For event specifics, check out Page 12 of this newsletter.
What is Matthew’s Voice Project? Matthew’s Voice Project is an effort to provide support to students in Fargo and West Fargo that are experiencing homelessness. Matthew’s Voice is run entirely by volunteers to give these homeless students the support and encouragement they need to graduate high school. While federal grant money is set aside to take care of the basic school needs for these students, Matthew’s Voice Project goes above and beyond by providing senior portraits, graduation parties, and Christmas gifts, among other things. Here’s what we have in store that evening: 1. Chris Hanson from Bob 95 FM is returning as this year’s emcee for the event. As an Oxbow member himself, Chris likes to have fun with the crowd. His fun and lighthearted nature ensures that everyone will have a great time. 2. Dance the night away to the Front Fenders following the dinner & auction. JAKE HUGHES ASSISTANT GENERAL MANAGER We have big news for Friday, April 13th! This day will be the last day of Pot O’ Gold, and we will keep drawing until we have a winner! If nobody wins this Friday, the jackpot on the 13th will be a $550 food & beverage credit, and somebody is walking away with it. You must be present to win and have dined at the club. There are only a few spots left for the last wine dinner of the Winter Season. On April 26th, Flora Springs Winery out of Napa Valley will be coming to Oxbow to showcase their amazing wine selection. Of course, Chef Scott will be showing off his creativity in the kitchen and catering his menu to the wine. Chef is very excited for this wine dinner, so don’t miss out! The menu will be published soon, so keep an eye on your email.

Hello Oxbow! Here we are with one more month behind us. I think we can all agree on one thing, winter can go away now! Last month when I was writing this, it seemed like golf season was minutes away. But, alas, there is still snow on the ground. Luckily, we have some fun April events to keep us occupied in the meantime. We already had our Easter Brunch! The brunches we have out here are always fun for me as the Chef. I get to see a lot of you that I normally don’t get to see until golf is here. April is also the month for the Princess Ball! It’s a great day for dad and daughter to spend some quality time together. At the end of the month, we have our wine dinner. These have been hugely popular this year. I hear there is not much room left for this one, so you might want to book ASAP. We are starting the new spring/summer menu at the end of this month. I have tried hard to listen to all the requests. I am hopeful this one will be a success! One big change to the menu is the salmon. We are going back to the way we originally served it. There might be some past menu items that will be gracing the menu as well. I always urge everyone to let me know if there is something special you want. If we have what we need to make it, we most certainly will! Don’t be shy! That is all the news from the culinary department. Sorry, we get a little boring this time of year. I’ll see you around the club!

RECIPE OF THE MONTH
RECIPE OF THE MONTH By Scott motschenbacher PIMENTO CHEESE SANDWICH For this month’s recipe, I am doing a take on the Masters Classic Pimento Cheese Sandwich. This is usually a pretty boring sandwich, so we’re going to jazz it up a bit. This sandwich, along with other classic food from the Masters, will be on special April 7th & 8th.
Ingredients: 1 cup sharp cheddar cheese ½ cup gorgonzola 1 cup smoked gouda ½ cup Romano ¾ cup roasted red peppers 1 cup mayo ½ cup Dijon mustard 1 tsp dried oregano 1 tblsp granulated garlic 1 tblsp crushed red pepper 1 tsp celery salt

In a large mixing bowl add all your ingredients and mix well. Spread a thick layer onto plain white bread. In a sauté pan on medium high heat add 1 tblsp unsalted butter. When the butter is melted and bubbling, add the sandwich. Grill on both sides for 2-3 minutes. Remove and enjoy!

COREY hERLICKSON Head Golf Professional Welcome to spring (insert sad trombone sound)! It sure is a lot different than 2017. With snow cover on the course, golf season seems a long way away. However, it will be here before we know it and we are really excited about what we have in store for you in 2018. One of the real focuses of the Golf Shop Team this year is to begin to provide experiences that have not been available at the club in the past. With our women, we plan on making the beginning golfer comfortable with all the processes of playing golf at our club, as well as giving them a better understanding of what you need to golf and why clubs are made the way they are. We will also offer different levels of instruction for lessons on Ladies’ Night to better meet the needs of all of our female golfers. Junior golf will have some changes as well. Our intent with the changes will be to provide a more structured environment that allows the professional staff to be teachers and mentors to the juniors. We also have PGA Jr. League for golfers of all levels that want to participate in competition in a scramble format. Think of it like little league baseball, but golf!

NEWS FROM THE FAIRWAY
DAVID WOOD SUPERINTENDENT As the calendar starts to get closer to opening the golf course, we have finished up winter maintenance of all the mowing equipment and utility vehicles. Bryce Fenske, Maintenance Mechanic, and Jesse Lunde, Assistant Superintendent, have been working hard to ensure all the mowers are functioning properly and safe to operate throughout the golf season. Sharpening blades, changing fluids, and tuning up motors is a long process that began in November and is rewarding when we see them out mowing for the first time. Golf course opening dates throughout the years have varied greatly. The earliest that we have on record is March 22nd, 2012. The latest date (non-flood year) is th April 25 , 1996. I know that everyone is anxious to get the season started, but my first concern is protecting the course from lasting damage that could affect playing conditions throughout the summer. With the all-season tee surface on the driving range, this will enable you to at least start using the range if conditions are too soft on the course.

Last month, Industrial Builders started the rocking of pond edges of the north side lakes. The weather cooperated and they were able to finish the majority of the project while the ground was frozen. There is a small section that remains to be finished along #14 teeing area when the soil conditions thaw and they can place equipment on the pond edge. Placing the rock will help to keep the pond banks stable for many years. We are in contact with Landscapes Unlimited in regard to mobilizing their crew to resume and finish up phase two construction. I anticipate that work will resume the third week of April and conclude the end of June. Grow-in of the north holes will take the complete season of 2018. As of now, the earliest the new golf holes would open is spring of 2019. We are hoping for a dry spring to get Landscapes Unlimited started. See you on the course, David Wood PAGE 15

EMPLOYEE SPOTLIGHT This month, we introduce you to woman behind the delicious dessert creations at Oxbow, Suzanne Goerts Haen. Suzanne, or Susie, has worked here just over a year, and absolutely loves her job at Oxbow. When asked her favorite part about working at the club, she immediately thinks of the people—both her coworkers and the members. “I love making connections with people I wouldn’t otherwise be able to. We have a great team here.“
Susie got her start working in the restaurant business at the age of 15 while working as a server. She recalls, “One day, the cook didn’t show up so I told the owner that I could do it. From that day forward, I started cooking and was managing the kitchen by the time I was 16.” While that is an impressive age, her experience in the kitchen started even before that when she was 10-years-old. “I helped my Mom and Dad cook for our entire family of nine people. That was my way of helping out.” Though Susie is known at Oxbow for her desserts, she also has experience in many other types of cuisine. For instance, she once worked at an authentic Italian restaurant in Portland. Here, she experienced one of the highlights of her culinary career when famed Italian-born chef, Marcella Hazen, cooked for and chatted with the entire kitchen staff. Susie lives in Fargo with her husband Mark, who she has been married to for almost 35 years. At their wedding, they enjoyed a beautiful six-tiered white wedding cake made by Susie’s sister. (Quality baking skills must run in the family!) Together, she and Mark enjoy hosting friends and family at their house for dinner, which they prepare in not one, but TWO kitchens. They have three grown children, Grace, Michael, and Joseph, as well as three fur babies: an American Eskimo named Eddie, a white cat named Phoebe, and a black cat named Lucy.
Though Susie spends most of her time at Oxbow behind-the-scenes, she would love to meet you. She especially enjoys meeting the member’s children and loves seeing all the brand new babies at the club! If you ever see her, feel free to say hello and introduce yourself. You’ll find out that it never hurts to get on a first name basis with the woman making your dessert! P A G E 16

When she’s not in the kitchen, Susie loves gardening, collecting antiques, and decorating her home. Amazingly, she never tires of eating desserts, even though she bakes all the time. When quizzed on her favorite dessert she says, “I love the simplicity of Crème Brule; but then again, nothing beats a rhubarb custard pie.”
