GENERAL MANAGER’S MESSAGE
Sedi Halvorson GENERAL MANAGER Welcome to the official start of summer at Oxbow! Unlike last year, we had great weather over the Memorial Day weekend. A big thank you to all who came out to the pool and course over the three day weekend! Looking forward to June, we have a ton of fun in store for everyone! Member Appreciation Day will be June 9th, followed by the annual member guest tournament the following weekend, ending with the Father’s Day pool party. League is in full swing, Junior Golf camp runs this week, and we have many more fun ways to enjoy your membership! I hope everyone is able to find lots of time this summer to come and have fun at your club! A quick THANK YOU to members who have referred new members to us this spring. We are now over 30 new members in 2018, and we hope that number continues to grow! As always, please contact Alison or myself if we can assist in helping you get a friend or colleague to join us at Oxbow! A couple of housekeeping items as we get in to the swing of the season: a reminder that local guests (reside within 50 miles of the club) are welcome once per month at both the pool and course. This applies to any guest, no matter what member brings them out. If you have any questions on this policy, you can contact me at any time. Additionally, we will be emailing out the 2018 Club Policies and House Rules to all of our members shortly. These policies address everything regarding golf course and practice facility dress code, pool policies, and much more. These are important to maintain a positive environment throughout the club. Please read these when we send them out in the next few days, so that you are aware of these rules and policies while using your club.

A note about the North Nine renovation: we know many of you are excited to see the progress being made on Phase II of the rebuild. However, at this time, we need our members to not drive, bike, or anything else in this area. There is heavy construction going on, as well as fresh cement being poured daily. We already had bike tire tracks impress in our fresh cart path. We have also seen seeded areas damaged by golf cart tire tracks. Once the cart path is finished and seeding is complete, we will allow some tours and such on the new side. But for now, PLEASE do not drive around Phase II! There is too much potential damage that can be caused by someone who does not know what is going on.

SWIMMING LESSONS
(continued) Also, the dues structure for the membership year beginning July 1st, 2018 will be coming out shortly. Please watch for this email next week. You will notice that we will no longer be assessing a separate capital fee in addition to your dues. This has been rolled in to the 2018 – 2019 membership year dues, so you will now only have one “fee” for total use of your club. It is part of our ongoing effort to reduce the extra charges that many clubs are known for, and something we are committed to eliminating. Our main goal is to provide all of our members with the best value in club membership, and not have “tickytack” charges that appear on your monthly statements. As far as we know, we are the only club in the region that includes all cart usage in your dues. More information regarding this and other changes will be sent to you next week. As a reminder, we hope that all members up for membership renewal will be joining us again for the 2018 – 2019 year. However, if you are not, you need to notify Alison or me if you will be ending your membership on June 30th. If you will be enjoying another great year at the club and seeing the opening of our full new course in 2019, you do not need to do anything.

CATERING EVENT COORDINATOR Summer may have just started, but if your wedding planning. it’s already time to think about next year. Oxbow CC has recently unveiled a new WINTER WEDDING PACKAGE. There are some great reasons to host your wedding in what is traditionally considered the “off season.” Not only is the whole town painted white to match your nuptials, we can also move the ceremony indoors for a cozy feel. Not to mention, we offer a reduced room rental (for nonmembers) and reduced food & beverage minimum, which works great for smaller parties. No matter the time of year, every wedding at Oxbow CC will get the best service and delicious food from Chef Scott. Winter wedding packages at Oxbow CC are available November through March. Wouldn’t your first look be beautiful in front of the fireplace at your club?

FOOD AND BEVERAGE
JAKE HUGHES ASSISTANT GENERAL MANAGER The pool is officially open for the season! You will see some new things out at the pool this year. The most noticeable change is we would like everyone to sign in at the pool house to ensure we are registering all guests. With the growing membership and new staff, we can’t recognize everyone as a member walking through the gates. The check-in process is necessary to make sure guests are being tracked. Daily guest fees are $7 and all guests must accompany a member. We heard your comments from last year and put in a landing pad at the bottom of the baby pool slide. No more scraped bottoms or torn suits for the little ones! Lastly, we know everyone loves our homemade desserts in the restaurant, so we decided to make a homemade ice cream treat for the pool! This year we will have homemade ice cream cookie sandwiches made a variety of ways. Try one the next time you’re at the pool!

JUNE 2018
Hello, Oxbow! Summer is finally here. It seemed like it would never get here. We’ve started the new spring/summer menu and it seems to be a crowd pleaser. We also recently opened the pool and the menu for that seems to be a hit as well. Our new Grab-N-Go menu is also in play. Be sure to check it out next time you are out for a round of golf or sitting poolside. It includes a few different takes on the hot dog, from the Chicago Dog to the 38 th Parallel Dog (comes with kimchi and toasted seaweed). Other news from the culinary department includes two interns starting in the kitchen. They both come from the NDSCS culinary program. Myself and my Sous Chef are going to work with them closely so they can go back to school and show their fellow students that the Oxbow culinary team rocks!! I have also added some other help to the kitchen. They all have a great background and are eager to learn our philosophy in the kitchen. It really is great having golf back in season. I am starting to see a lot of familiar faces around the club. That is the kind of thing that keeps us motivated. That is all the news we have from the culinary department this month. I know we have a ton of events planned this summer. You can find details for everything in this newsletter. Like always, all feedback about the food is welcomed. See you around the club! PAGE 7

RECIPE OF THE MONTH
RECIPE OF THE MONTH By Scott motschenbacher CHIMICHURRI I hope you all have been enjoying our monthly recipes and have seen the videos of those recipes we have been posting on social media. This month, I want to share our chimichurri recipe. This a new addition to the menu. It is the sauce that comes with our new steak bites (bull bites). This has been the biggest selling appetizer we’ve seen since the lobster corn dogs. This sauce is hugely popular in South America—especially Brazil. It is the perfect condiment for grilled red meat. Ingredients: 1 jalapeño 1 bunch cilantro 1 bunch flat leaf parsley also known as Italian parsley ¾ cup of red wine vinegar 1 tablespoon pepper flake 2 cloves garlic 1 teaspoon kosher salt 1 teaspoon fresh cracked black pepper 1 tablespoon dried oregano 1 cup olive oil Procedure: Rough chop your jalapeño, parsley, and cilantro. Place all ingredients except olive oil into a food processor. Start to blend everything until it becomes a paste. At this point, slowly drizzle in your olive oil. After all the oil is incorporated, you are good to go! Try this sauce out at your next grill out or just come see me. Enjoy!!

GOLF SHOP NEWS
COREY hERLICKSON Head Golf Professional The golf operations team has grown and learned a lot since the beginning of the year. We are very grateful for your patience as we worked our way through some problems that arose from our learning curve. We hope that you have noticed some of the changes to our operation to make it more consistent and structured. We are trying to make it even more member-centered in our processes. Junior golf is off and running the first week of the month. John Dahl continues his legendary golf camp right away in June. PGA Jr. League begins practicing the first week in June as well, with competition beginning the second Monday of the month. The league is being led by Assistant Golf Professional Danny Sam and Alexis Piatz. They are very passionate about junior golf and we are looking for a successful campaign with this group of juniors. We have a boys’ team and an all girls’ team. We are one of only five leagues across the country with an all-girls division! Family Sunday Fun Day begins the first Sunday of June. We will offer 10-15-minute lessons from 3:00 – 4:30. Tee times for families with kids 17 and younger will be on the front nine from 3:30-5:00. They are spaced out every 15 minutes to allow room so nobody feels rushed. You must call the golf shop to make a tee time for family golf. If you are not a family with kids 17 and younger, you will need to tee off before 3:00 or after 5:00 to play the new nine. We will do our best to make room on the old nine, but history has shown that it will be very busy over there during the 3:30—5:00 time period. Beginner tees have been a hit. If you haven’t seen or played them, ask for a scorecard in the golf shop. They set up at level 1 measuring 1,500 yards and level 2 measuring at 2,000 yards. These tees are meant for all beginners to have success right out of the gate rather than playing a tee box that is too long and frustrating for them. Kids or adults can play these tees. To find them, look for silver circle discs with the Oxbow logo on them in the fairways.

NEWS FROM THE FAIRWAY
DAVID WOOD SUPERINTENDENT With the lack of rainfall this spring, the new golf course construction has been moving along quickly. Seeding of the first three holes (6, 7 and 8) has been completed and we are seeing germination. Landscapes Unlimited’s SEEDING ON FUTURE HOLE #8 (LU’s) grow-in team is now focusing on grassing holes 4 and 5. Golf feature construction (greens, tees, and bunkers) has moved into the center portion of the project with work being done on holes two, five, and six tee complex. The cart path company is moving south from five green area out towards 14 green/ Riverbend Road. The cart paths should be finished in early June.
SEEDING ON FUTURE HOLE #8
The late spring did delay our original construction schedule by several weeks. The current weather conditions have been conducive for the construction portion to stay on track for a midJuly finish. Work has started on the reconstruction of the tee for hole #9. Top soil has been spread and leveled. Irrigation will be installed the beginning of June and sodding will soon follow. Once the sod begins to root into the soil, the mowing height will be lowered for play.
SEEDING ON FUTURE HOLE #7
JUNE 2018
With the new golf course designed around a several large bodies of water, the flow of traffic tends to lead all golfers into concentrated areas (green and tee locations). This is all intended by the architect for the design and safety of players. The bad part about this is the golf cart traffic wears down the grass in these areas. Our staff has been installing cart signs and ropes to help vary the traffic patterns. Thank you for those who follow these suggestions. There is one other thing that can help with this issue, please double up on golf carts. I have noticed multiple times a foursome of golfers out there with four carts. This is twice the amount of traffic and soil compaction that can be avoided. It is a long season, and if we start sharing carts now we will see the benefits throughout the season. See you on the course. David Wood PAGE 15
EMPLOYEE SPOTLIGHT 1975
SARA PARRIES, YOUTH ACTIVITIES & EVENTS INTERN Hi! My name is Sara Parries and I am the Youth Activities Intern here at Oxbow Country Club this summer. I recently graduated from Concordia College in Moorhead, MN in Elementary Education and Middle School Math. In the fall, I will be beginning my first year of teaching as a 7th-grade math teacher at Liberty Middle School in West Fargo.
This summer I will be hosting a lot of really great activities for kids of all ages to enjoy at the pool! We will have a weekly Craft-N-Splash where kids at the pool can do a fun craft in the afternoon. Twice a month, we will do a fun, physical activity/game on the lawn next to the pool. And at least once a month, I will host a Learning Laboratory. This will be a short, but FUN STEM (science, technology, engineering, and math) activity or experiment. As the summer goes on, more weekly activities will be added to the pool calendar. Make sure you check out the new bulletin board in the Pool House for a full schedule of events.
I am also VERY excited to be developing three themed summer camps for Oxbow's youth. The first camp will be Oxbow Rock Star. This will be your child's chance to rock the stage! I will have lots of music themed activities, crafts, and games planned, as well as a fun music component, such as a concert on the last day! The second camp will be Iron Chef Oxbow. For this camp, I will be teaming up with the kitchen staff to create some fun, food themed activities! The final camp will be geared toward 4-6 year olds. This will be a fun camp for kids to be introduced to traditional day camp activities and other exciting things to do at Oxbow CC!
I am very excited to be in this position for the summer! I have been having a blast planning the activities and I am looking forward to sharing it with you and your children!
