I hope everyone had a wonderful Christmas and a Happy New Year! We are excited for 2017 here at Oxbow. We had a great December here at the club. Thank you to all who were able to come out and experience your new clubhouse. We had recordbreaking attendance at this year’s Santa Brunch and enjoyed a very busy New Year’s Eve. Our Annual Stag Party and Auction was a huge success. Almost 100 members attended the event and we raised close to $45,000 for capital needs at the club. Again, thank you to everyone who attended our events last month! We have a lot to look forward to in January as well. I hope that everyone makes plans to visit the club this month. Please look for details on all the upcoming events in the following pages of your newsletter. Starting January 8th, we will offer a specialty plated brunch menu every Sunday from 11 AM—2 PM. Chef has created a great menu with a lot of diverse menu items. We are excited to offer this to the membership and hope that you add Oxbow Sunday Brunch to your weekend plans! In other news, Tom Keppel, our accountant of five years, is retiring. Tom has worked in the accounting office since 2012. He has been a great asset to the club and has been someone I personally looked to for opinions and advice, especially during my first year. We are sad to see Tom go, but wish him well in retirement and thank him for all of his service to Oxbow! For the time being, if you need any assistance from accounting, please contact myself or Jake Hughes. As we launch in to 2017, the Oxbow Board of Directors and Management Team will be having a retreat to review our opportunities and challenges for the upcoming year, as well as discuss the overall vision for the club. With the many changes that have taken place over the past year, it is a great time to evaluate where we are as a club and where we want to go. This is an exciting time for all of the members of Oxbow. This will provide us an opportunity to ensure we are together in our strategic plan for the coming years. By now, many of you have had the opportunity to experience your new clubhouse. We welcome feedback, both positive and things we can improve on. Even now, we are still learning our new building and all the things that go with it. We want to be a club that you are proud to be a member at, and provide you and your family with a great experience every time you visit. Bundle up, stay warm, and we will see you at your club! Events Update Alison Molony Director of Member Engagement & Events KIDS’ NIGHT—We are thrilled to announce the return of Kids’ Night! Drop the kids off with Oxbow Staff to enjoy games, activities, and a child-friendly flick while you treat yourself to a meal in the restaurant. Upcoming Kids’ Nights will be held on January 6th, February 3rd, and March 3rd. As a general rule of thumb, children must be potty-trained in order to attend or have an older sibling that can help look after them. Reservations for Kids’ Night are required. FAMILY SKATING PARTY—For those of you who don’ t know, the tradition of ice skating at Oxbow continues at the New Clubhouse! David Wood and his Grounds Crew are maintaining a skating rink on the frozen pond this winter. Hockey nets are set up and you are welcome to skate at your leisure. On Sunday, January 22nd, we are hosting a Skating Party from 12 PM –3 PM with plenty of outdoor and indoor fun planned. Make sure to bring your own ice skates and dress warmly!

NEWS FROM THE FAIRWAY Happy New Year to everyone! I hope your Christmas was joyous and wish you a prosperous 2017. I would like to thank everyone who came out to Stag Night and/or donated one of the many fine auction items. The commitment this membership shows towards a cause continues to amaze me. The money raised in the past has helped provide needed capital equipment purchases for the Grounds Department. With the recent colder temperatures, we have opened the skating rink on the pond by the Clubhouse. The lights will be working from 5:00 PM until 10:00 PM every evening. Plus, there is enough snow for sledding on the hill just east of the OLD Clubhouse by the old number one silver tee box. Come out and enjoy some outside activities! Just a reminder, please do not drive golf carts, snowmobiles or ATVs on the course during the winter. We have seen turf damage done in the past from the compacted snow freezing and turning to ice. If you see any activity on the golf course, please let us know. With the recent rain and ice formation, the sidewalks and parking lots have become difficult to navigate. We have been using ice melt products heavily to break up the ice and mechanically removing it with the tractor. See you on the course, David Wood 3


Recipe of the Month Pretzels & beer cheese dip Executive chef, scott motschenbacher Hello, Oxbow! Now that we have 2016 behind us, it’s time to start thinking about new and exciting happenings in 2017!

Coming up in January, we have partnered with Drekker Brewing Company to bring you a specialty beer dinner coming up on Thursday, January 26th. I am still putting the finishing touches on the menu and we will be sending out more details soon! With the beer dinner coming up, I have decided to share my recipe for beer cheese dip and homemade pretzels. This is a tasty snack that is perfect for watching the big game at home with friends!

Pretzel Ingredients: 2 ½ cups of all purpose flour 1 cup warm water 1 tbsp active dry yeast 1 tbsp sugar 3 cups hot water ¾ cup baking soda Pretzel Procedure: In a large mixing bowl, combine flour, sugar, and salt. Mix yeast and warm water together in a separate bowl. Let water and yeast sit for 10 minutes to let the yeast bloom. Then, add yeast mixture to flour mixture and mix until all is incorporated. Cover with a towel or plastic wrap for at least an hour, but no more than two hours. Mix hot water and baking soda in a separate bowl. Roll dough mixture into a large log. Cut into 4-6 equal portions. Roll each portion into a snake and wrap into pretzel shapes. Dip them in the baking soda and hot water mix. Place on a greased cookie sheet and bake for 10-15 minutes in a 450 degree oven. Dip Ingredients: 2 tbsp butter 1 tbsp olive oil 1 tbsp fresh chopped garlic ½ cup of your favorite beer (I recommend Drekker’s Broken Rudder) 1 cup heavy cream 1 cup grated gruyere cheese ½ cup grated cheddar cheese 2 tbsp fresh parsley Dip Procedure: In a sauté pan, add butter and olive oil. Heat until the butter just starts to brown. Add garlic and cook until the garlic starts to brown. De-glaze with beer and simmer for 5 minutes. Then add cream. Bring mixture to a rolling boil and add both cheeses. Be sure to keep stirring until the cheese is fully melted or this will burn to the bottom of your pan. Turn heat off and finish with parsley. I personally like to add a few dashes of hot sauce to mine. Dip your pretzels in and enjoy!

Ryan won $150 Food and Beverage credit just for dining with us on a Saturday night. Remember, the Pot O’ Gold drawing happens every Saturday at 8 PM and increases by $25 every week someone doesn’t win. On Saturday, January 7th, the Pot O’ Gold is sitting at $50. If you plan on dining at Oxbow, it will benefit you and the staff if you could make a reservation. This will help Chef Scott prep his fresh menu accordingly and we can have the appropriate number of staff to better serve you. Golf shop news Last month’s snow didn’t stop a few golf swings from occurring during Oxbow’s annual Stag Party & Auction on Friday, December 2nd. Using Glow Ball supplies, Eric hosted an outdoor pitching contest to raise funds in addition to all the other activities going on that evening. Congratulations to Shawn Sperle, whose winning pitch was only fifteen inches from the cup! Three pallets of new Golf Shop fixtures have now been assembled, including a brand new handicap computer workstation. Posting scores will now occur in the Golf Shop. Of course, the GHIN mobile app is also always available for member convenience. Peggy and Eric have deep-cleaned the entire Golf Shop, as any new construction always requires. The space is really starting to take shape as you can see by the photos included on this page. In preparation for the 2017 PGA Junior League, Eric has attended 2 two summits along with other PGA MN section administrators and facility captains. There will be some exciting changes this year in the F-M conference! All matches will now be jamboree style in which every team will play at one location each week. This will create greater excitement, be easier on the parents, and provide more flexibility for Oxbow’s and other facility’s tee sheets. An unofficial club repair committee also met last month to begin developing a budget. New tools and workbenches will be needed in order to provide this service. Right now is the time to start thinking about club repair so you are prepared once this white stuff melts. Finally, as the Golf Shop begins to develop next year’s team, we welcome any suggestions or connections you may have for outside service and Golf Shop employees.
