BOARD OF DIRECTORS

GENERAL MANAGER September was a terrific month here at Oxbow! Thank you to all of our members who participated in some really fun events. We crowned our League champions, as well as our Men’s Day champion at the end of September. We had a truly great night for Couples’ Glow Ball, with over 40 couples enjoying a beautiful night at the club. One of my favorites, Outdoor Movie Night, was a tremendous success!

As we transition in to October, we still have some nice golf days in store. The Jack-O-Lantern Tournament will be the first Saturday of the month, so get signed up with the Golf Shop for this fun, two-person event! Oxbow’s annual Oktoberfest celebration will be on Friday, October 13th, featuring great German food and drink, as well as live music! We also have more great family events coming up this month, with Date/Movie night on the 27th, and the OxBOO Family Halloween party on the 29th. There are lots of fun ways to enjoy membership this month at your club! I hope everyone has received a digital or print copy of our Fall Event Guide, which Alison distributed at the end of September. This is a great way to know all of the events and activities coming up over the course of the next few months. We will be launching the new menu in the restaurant later this month. Some of your offseason favorites will return, and we unveil some new selections for you as well. Chef and his team are working hard to create menus that the entire membership will enjoy throughout the fall and winter months. A quick golf course construction update: the ring levee is still being constructed, and the contractors are currently in the process of moving the golf course dirt up against the levee to form new Holes 3 and 14, as well as features for a couple of other holes. We are currently planning on how to proceed for the rest of the season, and hope to have most of the course seeded yet this fall. This time of year, weather plays a big part of how much can get done, as well as the continued ring levee construction. You will continue to see lots of activity on the north side holes, with bunkers being finished, remaining features being completed, and hopefully seeding where we can. Some of this will carry in to the spring of 2018. Construction will go for as long as possible in to November.

The golf season is beginning to wind down, but there are still many golfing days left this year. On top of that, we have many fun events and activities planned for everyone! We have a great October in store for you, at your club!

FOOD & BEVERAGE UPDATE SCOTT MOTSCHENBACHER Executive chef This month is an exciting one! We have a few new things that will be coming to an Oxbow near you—first is the new menu. This has many member favorites, with the addition of some new dishes that I hope you will like. Some new items are a grilled halibut steak and a salt-baked trout. A lot of you have expressed your love for seafood, so I am trying to deliver on that. Another thing I am really excited about is using locally raised beef. In September, I got the chance to tour Ditterich Family Farms. It is located just outside of Vergas, Minnesota. DuWayne Ditterich is the proprietor of the farm and he gave me a tour. I was able to “MEAT” some of his cows in person. I don’t know much about livestock, but these were some healthy-looking cows. He went over how he feeds and raises his cattle. From an ethics stand-point, he is doing it right. I have had the chance to sample some of his products, and can say that they are something I will be proud to serve you and your families. We are also updating our Sunday Brunch Menu with some fun new options, such as a Pumpkin Waffle and a Breakfast Flatbread. I hope to see you all out at your Clubhouse this October for some of the fun events Alison has planned. See you around the club!!

PUMPKIN CRÈME BRULE For this month’s recipe, I thought I would keep it Cooking procedure: seasonal. I am going to share my pumpkin crème brule recipe. This is a very easy and tasty recipe. In a mixing bowl, add egg yolks, sugar, spices, and pumpkin. Mix thoroughly. Everyone likes pumpkin!! In a sauce pan, add cream and vanilla and bring to a slight simmer. ( Just enough so that it is just barely bubbling.) Ingredients: Remove from the heat and slowly add to your mixing bowl. If you add the hot cream too fast, ½ pint heavy whipping cream it will turn it all into pumpkin scrambled eggs. ½ cup sugar Once all is incorporated, pour into soufflé cups about 3/4 full. Place these into a large 1 ½ teaspoons vanilla extract baking dish and add enough water to come up half-way on the cup. Place in 350-degree 6 egg yolks oven for 30-45 minutes. You will know they are done when just the center is a bit wobbly. ½ cup pumpkin puree Remove from the baking dish very carefully and store in your refrigerator to cool, about two 1 teaspoon nutmeg hours. 1 teaspoon cinnamon For the next step, you will need a torch. You can pick one up at the local hardware store. If that is a little too aggressive, stop by Creative Kitchen. They have multiple torches that work great for the kitchen! Once you have your torch, add raw sugar or white granulated sugar to the top and melt with your torch. Be sure to keep the torch moving or you can very easily burn the sugar. Let it set for 2 minutes and break open with a spoon. Enjoy!!

23rd NEWSANNUAL FROM

THE FAIRWAY

DAVID WOOD, SUPERINTENDENT Phase two construction continues on the north nine golf holes. The green cavities on Holes 13 and 14 have been filled with root zone mix. Tee boxes on 2, 6, 7, 8, and 13 have been shaped and filled also. Cart paths have been installed on Holes 2, 8, and 13, with work continuing on Holes 6 and 7. There are a lot of changes every week as this construction moves forward and Landscapes Unlimited gets closer to beginning the dormant seeding process. Levee construction through the golf course by Meyer Contracting this past month has been on schedule. A large portion of the center and north levee has been completed with work continuing on the southern portion. The levee that has been completed has allowed the start of the tie-in work with the golf construction. The tie-in work includes the fairways on Holes 3 and 14, and tees on Holes 4 and 6. The levee is still on pace to be finished by mid-October. This fall, we will begin to mow down and remove the native grasses on the south golf holes. This is done to keep the seasonal die back material from smothering out the new growth in the spring. Plus, it will help weed management in the spring and early summer.

With the potential for frost on the grass in the mornings now, I would like to remind everyone to keep their golf carts off the course if temperatures are in the 30’s. Please check into the Golf Shop before going out to play the course or the practice green. Frost can form on the grass even if the air temperature is above 32 degrees. See you on the course, David Wood

Golf Course Architect Bruce Charlton was onsite in September to oversee construction.
