nd just like that, another great golf season in the books at Oxbow! We officially closed the golf course after play on Sunday, Oct. 27th. Last year we made it to November 2nd. Overall, it was a terrific golf season at the club, despite the late start this year, as well as some wintery weather in October. Just a reminder: the golf shop is still open. We have lots of great holiday gift ideas, as well as a chance to get quality gear at discounted prices.
Additionally, we have many great events and activities for the whole family over the winter months. Detailed information on November’s event calendar can be found in this newsletter. Don’t forget about the Trackman!

Thank you for all who attend our 3rd annual charity gala. I am thrilled to report that we raised over $24,000 that evening for Cystic Fibrosis of North Dakota. It is a pleasure to be part of such a giving community. In the three years we have been doing this, Oxbow Country Club members have raised just shy of $100,000 for charity. If you weren’t able to attend this year, you won’t want to miss out next year!
Winter Hours of Operation Starting in November, the club will go in to winter hours for the season. Please be aware that the schedule is as follows for the administrative offices and member dining. New for this year the club’s restaurant will be open on Wednesdays as well. Monday – Tuesday: Member dining closed; clubhouse administration open 9AM to 5PM Wednesday – Saturday: Member dining from 11AM to 9PM Sunday: Member dining from 10AM to 8PM, Brunch served from 10AM to 2PM 3

MATTIE OLSON DIRECTOR OF MEMBERSHIP & MARKETNG
H
ello everyone! My name is Mattie Olson and I am the new Director of Membership & Marketing here at Oxbow Country Club. I am so excited and honored to be here! I just graduated from NDSU this spring with a degree in Strategic Communications and a minor in Hospitality and Tourism Management. I consider myself very fortunate to have been hired for this position; so far I love everything about my job! Not many people can say that.
I would describe myself as being very creative, goofy, and outgoing. I’m a natural leader and a bit of a perfectionist. I love designing, decorating, taking pictures, making people laugh, and spending time with family and friends. Before I started here, I worked part time at the Plains Art Museum as an Event Coordinator and Social Media Specialist. I have also ran my own photography business, Framed & Mattie-d, since I was a sophomore in high school. I would love to meet all the members and learn everyone’s names; so if we haven’t met yet, please feel free to introduce yourself! If you have any suggestions for future events or things you’d like to see implemented at the clubhouse, please reach out to me so I can try and make these ideas happen!
I will be in charge of marketing, graphic design, recruiting new members, managing our social media accounts, documenting our events, and—most importantly—planning fun events for I’m looking forward to a great first year and our members! I’m very social-media savvy and can’t wait to see all the fun things we’ll do! am passionate about party planning so this position will be a very fun job for me!

ello, Oxbow!! Another month has passed and the weather has gotten a lot colder. It was an awesome golf season. Now we get to enjoy the club inside! This November we will be releasing the new dining menu! I am pretty pumped for this one! There will be a lot of things going away to make room for the new items. Such as, prime rib. We will be offering prime rib every day! We are adding a couple new pasta dishes and some new entrees. Probably one of the biggest changes will be the side options. We will be offering different options such as a white cheddar mac-n-cheese. Other options include baked yam with brown sugar butter. We have some old sides that will be coming back as well creamed corn being one of them. So be sure to stop by your club this month and try something new!!
restaurant and that will be the offering that evening. We want to keep it a secret until the night of. This will give you the opportunity to try something you may never had before. I’ve spoken with quite a few people about this and they are all very excited! If you didn’t know, we are now open one extra day a week this year. There was a lot of call for menu service on Wednesdays. We answered that call! I believe this off-season will be one of the busiest we have ever seen. We plan to start our cooking classes early January. To be sure to keep an eye out for that. The previous cooking classes have been a huge success. They fill up quick though! That is about all the new I have from the culinary department. I’ll see you around the club!
This month we are going to be trying a new concept. We will be doing a pop-up restaurant once a month. That means one Wednesday a month we will be picking a theme for a 6

For this month’s recipe I want to share our crab cake recipe. This is going to be on the new menu and I think it’s a great recipe for us to forget about the cold weather. Ingredients:
1lb lump crab meat
1 tablespoon diced shallot
1 tablespoon minced celery
1 teaspoon Dijon mustard
1 teaspoon Worcestershire
Zest and juice of one lemon
2 sprigs fresh thyme
1 teaspoon garlic powder
1 tablespoon Louisiana hot sauce
1 tablespoon Old Bay
1 egg
1 egg yolk
1.5 cups panko style bread crumbs
Procedure: In a large mixing bowl add all the ingredients. Form into cakes and sauté in clarified butter on medium-high heat. When the cake gets golden brown flip it and cook until golden brown. The internal temperature should reach 145 degrees. If you do not reach that temperature finish them in a 350-degree oven. Serve with rémoulade and a glass of your favorite white wine. Enjoy!! 7

his golf season came to an early end this year due to the colder than normal temperatures. On average our normal closing date has been the first week of November. This year’s October 27th closure is one of the earlier dates I have on record.
Tee boxes and fairways, we have applied anti-desiccant products to help protect these areas. These products are sprayed on and coat the leaf and crown of the plant to prevent drying out. We will also install some snow fences around the exposed sand bunkers to reduce the amount of wind erosion that can occur to the sand over the winter months. Our ideal winter would have a 12 snow cover over the entire property to provide a layer of insulation for all the grasses and course features.
The tasks needing to be done have changed for preparing the new course versus the old course for winter. With the entire site having more of an open exposure our concern is more about preventing desiccation of the grasses more so than disease management on weaker turf varieties. We have again spread a layer of sand on the greens in an attempt to cover the crown of the plants. Plus, the Board of Directors approved the purchase of poly woven covers to be installed over all of the putting surfaces. Oxbow had purchased covers for the north holes during construction, so we only needed covers for the south greens. With covering the greens, we will reduce the amount of snow fence previously installed. These covers have a life expectancy of about ten years, assuming they are not damaged from an outside source; snowmobile, mice, etc.
The new Grounds Department/ City Maintenance Facility is in the earlier stages of construction. Demolition of the building and site preparations have been completed with no problems. Lee Jones and Son Construction have been retained to begin the project. Footings for the new building are scheduled be dug in the first week of November with framing starting soon after. It was difficult watching the removal of the original maintenance facility, but we are excited for what the new building will provide for our employees and the City.
