2020 is certainly continuing to make life interesting for all of us. At Oxbow, the golf course closing on the 20th was one of our earliest ever. That being said, it has been great that so many of our members were able to play more this year than ever before, even with everything going on. We now turn our attention to the off-season here at the club. I have noted the clubhouse hours below for everyone. WINTER HOURS OF OPERATION Starting last week, the club went to winter hours for the season. Please be aware that the schedule is as follows for the clubhouse and dining: MONDAY - TUESDAY  Member Dining closed  Administration open 10AM to 4PM WEDNESDAY - SATURDAY  Member Dining from 11AM to 9PM

Corey sent out the simulator schedule in a separate email a couple weeks ago, and it is covered again in this newsletter. As a reminder, the Golf Shop is open throughout the off-season. Corey and Peggy have been receiving some great fall and winter apparel, as well as glassware perfect for holiday gifts! OFF-SEASON EVENTS I realize that the canceling of a couple of our normal October events was challenging. This has been an overall challenging year on many fronts, for many of our members. We are working diligently to plan some upcoming events for you, as you will see in the coming pages. With the spike in COVID cases in October, we wanted to be extra cautious to ensure the health of all of our members, as well as the team that serves you here at the club. We have planned out some fun in November, including a Trivia Night and a Comedy Night featuring Oxbow member Gary Pattison. We will also be doing Santa Brunch in December. We have spoken to Mr. & Mrs. Claus, and determined some ways to make this happen. We will have more details coming up this month. However, you can put it on your calendar for Sunday, December 6th. Please note other exciting changes in food and beverage in articles by Chef and Kyle.

STAG We are tentatively planning for our annual Oxbow Stag event to take place on Friday, December 4th. I would like to stress that this is tentative, based on COVID protocols. We will not have the event if it is against the state of North Dakota recommendations at the time. We will be sending out more information as we get farther into November, and will alert everyone if there is a change of date. THANKSGIVING The club will be closed on Thanksgiving Day, as normal. Chef will be making family style Thanksgiving meals this year, and Suzy will be baking hundreds of pies for you again. We will be right back open again on the 27th, so stop up and join us to get out of the house, or if you need a break from shopping! More information can be found in the following pages of the newsletter, and as always, we will send out more details as we get closer to the holiday. GOLF COURSE David and his team are still working out on the course putting up snow fencing. With a quick warm spell coming, hopefully, we are able to get the greens covered yet this fall. The snow and cold came much earlier than usual, so we are playing catch up on the course maintenance front.

In closing, I want to thank every one of our members for a great golf season at Oxbow! This year has presented many challenges; but overall, we consider ourselves lucky because our members were able to enjoy their club without too many obstacles for most of the year. We are still encouraging everyone to wear a mask when walking about the club in effort to keep COVID out of the club. We truly appreciate everyone’s efforts so far. I promise we are working to give you a great club experience this winter, for you and your family. GOLF SHOP UPDATE 1975

What a great season of golf we had! At the start of the season, we had no idea what the year would look like due to COVID-19. It certainly didn’t turn out the way I thought it would. We were the busiest we have ever been! With trying to make sure we kept things sanitized for our members and keeping our team members safe, we worked extra hard and we hope that it showed. The amount of play was crazy too! Below is how the numbers played out: ROUNDS OF GOLF 2019 - 9,845 2020 – 14,617

Coming to Oxbow this off season will be a Oxbow Golf Shop YouTube channel. Our intent with the channel is to communicate information to you in a different format and to highlight products we have in the Golf Shop. We will be learning along the way, so don’t make too much fun of us as we grow in experience. We are bringing in new products in November that will be for Christmas and are more cold weather related. We hope you stop by and check them out for Christmas and Holiday gifts. If you haven’t spent your Golf Shop credit, please stop in soon. We still have quite a few shirts and pullovers available. Please come out and help us thin out our inventory!

In November, we will begin our TrackMan Cup. This is a nine-hole round of golf played on one golf course. You will have two weeks to play the event. The entry fee is $10.00 and is paid out in Golf Shop credit after the end of the two-week competition. At the end of the year, we take the top five golfers from the first half and the second half for the TrackMan Cup Play-offs. Just book a tee time like normal and tell the Golf Shop team that you are going to play in the TrackMan Cup. If you want to keep your game sharp through the winter, don’t hesitate to contact the golf professionals to set up lessons! 6

NEWS FROM THE FAIRWAY 1975

DAVID WOOD SUPERINTENDENT

With the early cold temperatures and snow in October, we decided to start the golf course closing process. Many tasks need to be done to best prepare the facility to survive the upcoming months and enable us to open in the spring with minimal issues. There are several jobs that are imperative in the fall, including irrigation blow-out and snow mold fungicide applications. We have traditionally scheduled an air compressor rental for the last week of October. Purging the water from the system is important to prevent any pipes from freezing and breaking. This is the same process that you do with your home lawn system, except Oxbow has 1,400 sprinklers and miles of piping underground.

The second main duty that is completed in the fall is the fungicide applications to all critical grassed areas to prevent snow mold. In the past, we were only treating greens and tees, but this year we have added spraying fairways also. The damage seen this past spring on fairways was enough to justify protecting this grass as well. A layer of sand will be spread on top of the greens and poly covers will be put down to cover the green surfaces to protect the plants from crown dehydration. Our concern is that the plants will dry out enough that damage could occur over the winter. Lastly, we are installing snow fences to gather snow on greens and into sand bunkers to prevent sand loss due to wind erosion. See you on the course, David Wood

Hello everyone, Happy November! I can’t believe that snow is already on the ground and it is getting colder. I don’t know if I am ready for it, but I sure do love the winter months because of holiday celebrations and being able to spend time with loved ones.

I know right now more than ever it is extremely important to keep everyone safe and healthy. I would love to help create a celebration that accomplishes just this, while still giving you the opportunity to spend time and celebrate with loved ones. I am excited for a great winter! I hope everyone has a great November and enjoys Thanksgiving with family and friends! Don’t forget to put your orders in for Thanksgiving pies at the club! Stay healthy and warm!

We had some more weddings and events this past month. It was fun to see how everyone decorated and brought fall themes into the ballroom. I love fall décor, so that was fun to see! The wedding season has wrapped up for us here at the club. It was such a joy to work with all the brides and grooms this past wedding season! I am excited to start looking into the 2021 wedding season and start all the detailing with those brides and grooms. We do still have some open dates in 2021. If you or anyone you know recently got engaged, please feel free to reach out and I would love to get a wedding tour set up! Since snow is on the ground and the temperature is going down, that means winter season is here and we are excited to start planning holiday parties at the club! Please reach out to me at 8

Hello Everyone! October was quite an interesting month! I don’t think anyone believed that we would have to shut the course down so abruptly, but this IS North Dakota. Thankfully, we did still see a lot of members out enjoying the course for the majority of the month, even when the temperature started to drop. The wine night on the 28th was a big hit! It was a great opportunity to get out the house for a bit and taste some new wines. Thanks again to everyone who could make it and for voting on all the different wine. We will be using this information to help fill some gaps in the new wine list that should be rolling out soon. If you missed out on this one, don’t worry. We will be looking to do more small events like that throughout the winter. With limited banquet events this winter, we have started brainstorming on some ideas for our banquet space as well. The biggest thing that I am looking forward to is Chef’s new Winter Menu! He has been working on this for the past month and is really excited about it. Member recommendations, classic comfort food, and fun new ideas from Chef are all

packed in this great new menu! We will also be offering up some great new lunch options that I am positive everyone will love, so make sure to stop out during the week and try one. Hope to see you all soon, Kyle

Hello, Oxbow! So, here we are, in the middle of a hybrid model of lock down. I think we can all agree that this whole thing stinks! But we need to make the most of it. I passionately believe positivity drains out the negativity. I will (and I hope you will) keep a positive attitude. Going into winter, it sometimes gets a little tough. Rest assured, we are doing everything we can do to keep you coming to your club. We will be offering a new lunch menu with $7-$10 baskets. Our offerings will be anything from a bacon cheeseburger and fries to a lunch size cobb salad. We will also be rolling out our new dinner menu. This is by far the most aggressive dinner menu we have tried to date. All of our steak options will be prime grade. We will also have fresh seafood sent over night, fresh pastas, and a ton of other options. We will continue offering 3 different family style dinners every week. I learned a lot during our first shut down. These family style meals are tailored 10

to standing up for transportation. Keep an eye on Facebook and your email for weekly updates on these. We recently had our first official wine night. In August, I was asked to take a good hard look at the wine menu. I know a fair amount about wine, and I accepted the challenge. There was a bit of a caveat with it. “How in the world am I going to find time for that???” So, I enlisted some help from the membership. I rallied a small group of people who I knew were truly knowledgeable. We met a few times and decided that we needed to have a “wine night”. A night where we could bring the members together to taste a bunch of wines and rate them. Once we had Kyle here, we were able to execute it. A lot of credit goes to Kyle for his help organizing this event. We hope our new wine menu exceeds everyone’s expectations. A big thank you to everyone who participated!!

RECIPE OF THE MONTH 1975

Recipe of the Month Fried Pickles For this month’s recipe, I want to share what has been the bane of my existence for the last month or so - FRIED PICKLES!! A certain restaurant in town has these on their menu, and they won best appetizer in Fargo. As a chef, I was absolutely furious over the idea of fried pickles winning best appetizer. I put my nose in the air and regarded it as stupidity. But it appears that karma has found me. I was recently asked by an Oxbow member if I could replicate said appetizer. So, I did exactly that. I ripped a recipe from someone else. I swallowed my pride and made fried pickles. They were an immediate hit! It’s such an easy recipe, but I never actually thought to try them myself. To me, it was as simple as chicken strips and BBQ sauce. Needless to say, I have a new found love for fried pickles and the taste of my own foot. Check out the recipe and try it for yourself at home!

Recipe INGREDIENTS  1 pickle spear (I prefer Clausen) cut into   

quarters ½ a slice of Havarti cheese 1 wonton wrapper 5-8oz canola oil

PROCEDURE Heat your oil on medium-high heat or until it reaches 350 degrees. Monitor with a candy thermometer. DO NOT let the temperature go above 400. Lay your wonton wrapper down and add your pickle and cheese. Fry for 2-3 minutes. It’s that simple, folks. Enjoy with ranch and a tasty beverage!!

Gary “MOCS “ Pattison is a long time member of Oxbow Country Club, and performs regularly at The Cellar Comedy Club in Fargo. In March, Gary was voted one of the top five comedians at the 2020 Fargo Comedy Fest. John Narum, a graduate of NDSU, is a talented comedian, motivational speaker, and World Yo-Yo Champion! John recently competed for the title of “Funniest Person in Minneapolis “ at the Acme Comedy Club, where he advanced to the semi-finals.
