GENERAL MANAGER I hope everyone had a happy and safe Thanksgiving holiday! Thank you to all of our members who ordered pies and dinner from your club. The team here had a great Thanksgiving, and is ready for the month of December. We have some great events coming up this month, as you will see in the following pages. One of our favorites, Santa Brunch, is just a few days away! Also don’t forget to sign up for New Year’s Eve at Oxbow, and bring the kids! Chef will have a great menu for the adults, and the kids can party the night away in the ballroom, culminating with a midnight (8:30PM) balloon drop! I would also like to mention what is hopefully a wonderful new tradition at Oxbow. We are partnering with Toys for Tots this holiday season, and are hoping our members will think of this as you do your holiday shopping, and as you come out to the club! I am excited to see what we can donate to this wonderful charity. We are able to take toy donations until December 17 th, so don’t forget to make the day of a child on Christmas! As we look toward 2018, your Oxbow team has put together many great ways to enjoy the club over the rest of the winter months. Please stay tuned for our January – April Event Guide, which will come out in the next couple of weeks. We have many fun events for everyone, including the return of Dueling Pianos, Murals & Mimosas, Chef cooking classes and wine dinners, and much more! I have no doubt this will be the most winter programming we have ever done at Oxbow. Once the temperatures return to their normal below freezing highs, we will also get the skating pond ready for all of our members and kids. For those of you new to the club, we also put up hockey nets and lighting for evening skating. It is a great opportunity to enjoy some time on the ice, without the crowds that can sometimes be at larger venues in town. Weather permitting, we will also groom a cross country and snowshoe trail as well, which will run through the course, and is a great way to get some winter exercise. We have not been able to do this the last couple of years, but hopefully this is the year we get some snow. David will update everyone on where we ended up 2017 on golf course construction later in the newsletter. To sum up, most everything is shaped and ready for seeding. We were delayed by the ring levee not finishing on schedule, but we have tried to complete as much as possible, so that the only things left to do in the spring is to plant seed. We hope to have the north nine holes completely seeded by the end of June, so that we can play our full course in the spring of 2019. I know this has been a long process, but the wait will be worth it once our full new course is complete! In closing, from all of us here at your club, we wish you the happiest of holidays, and we hope to see you all winter long, at YOUR club! Sedi 2


UPCOMING EVENTS Alison Molony Director of Member Engagement & EventS SANTA BRUNCH—My favorite event of the year is almost upon us –Santa Brunch! This truly is a magical event for adults and children alike. Dine at our elegant brunch, create frost-your-own cookies, and meet both Santa AND Mrs. Claus. This year, we are excited to make the event extra special with a visit from the Oak Grove Lutheran School Carolers! GOODBYE, FOR NOW—On or around December 2nd, I will be going on maternity leave until February. In the meantime, please make sure you are using the RSVP@oxbowcc.com email address to register for all Oxbow events. If you have questions, always feel free to contact another member of the Oxbow management staff. They will be happy to assist you! Hollie, our Catering Events Coordinator, will be handling all event booking inquiries in my absence. If you would like to throw your private party at Oxbow, Hollie is your girl! She can be reached at hollie@oxbowcc.com. HAPPY HOLIDAYS—I sincerely wish you all Merry Christmas and Happy New Year! I hope you take time to relax with the ones you love and reflect on everything good that has happened in 2017. As always, I encourage you to include Oxbow in your holiday plans, whether it be attending one of our club events or simply enjoying a nice meal out with your family. I must say, with the added holiday décor and warm fireplace, you can’t beat the clubhouse’s warm and inviting atmosphere!

FOOD & BEVERAGE UPDATE SCOTT MOTSCHENBACHER Executive chef Hello, Oxbow! I hope everyone had a great Thanksgiving. Next up we have Christmas. Christmas to me is kind of a hard topic to talk about, culinarily speaking. Everyone has a different idea on what to serve. Whether it’s prime rib or those weird pickle and pastrami roll-ups, We all do it a little different. I think one thing we can all agree on, it sure is a great time of year. This year at your club we will be offering take-out dinners. If you’d rather drink some egg nog and socialize with your family and friends I will have everything you need for a great dinner. Our baker Suzanne will be baking up some awesome cookies for take-out as well. So, keep an eye out for the menu. I will have it available in the coming days. If you have any special request be sure to let us know! We’ll see you around the club!! For this month’s recipe I want to share one of my favorite holiday side dishes. Au gratin potatoes! Yes, I know it sounds a little silly. Cheesy potatoes??? But they are soo good!

Au gratin potatoes Ingredients:

Cooking procedure:

3 large russet Burbank potatoes (these work the best due to their high starch content) 1 thinly sliced yellow onion 3tblsp unsalted butter 3tblsp AP flour 1/4cup white wine 3cups chicken stock .5cup heavy whipping cream 1tsp nutmeg 1tsp garlic powder 1cup sharp cheddar cheese .5cup shredded gruyere cheese .5cup shredded parmesan cheese

Thinly slice your potatoes into coins and shingle in a baking dish. In a large sauce pan on medium high heat add your butter and onions. Slowly cook these down until they are translucent. Add your flower and stir constantly for 3-5 minutes. De-glaze with your white wine and add your chicken stock and cream. Bring this to a boil and back down to a slight simmer. Slowly add your cheese whilst stirring. Season with the nutmeg and garlic powder. When all of your cheese had completely melted pour over your potatoes. Bake this at 350 degrees for 45 minutes to an hour covered with aluminum foil. At this point uncover the dish and add a little more cheddar to the top and place back in the oven on your broil setting. Let this go for 5-10 minutes or until your cheese is golden brown and delicious. Serve with the rest of your favorite holiday foods!! Enjoy!

Time has flown by with great events, great food, and of course great members. Here are some fun facts from 2017: Our number 1 tap for the year was Bud Light. We served 2,267 Bud Lights! Stella came in second at 1,244 pours and Shiner Bock came in 3rd at 1,051 pours. Our most popular spirit….. Crown Royal at 1,847 drinks! Tito’s Vodka in second at 1,288 drinks! We have sold 1,965 orders of House Made Chicken Strips! Thanks Chef Scott! We have sold 1,190 House Made desserts. We have gone through 10,320 pickle spears. Oxbow Country Club raised just under $50,000 for Ronald McDonald House on our first annual Gala. Mark your calendars on April 21st, 2018 for our 2nd annual Gala to help raise money for Mathew’s Voice Product MVP! And last but not least…… we have gone through 500 lbs. of popcorn kernels and that was only for half the summer!

Want a classic winter drink with a kick? Try this! This one is our new favorite cocktail. It’s a simple mixture; Oxbow hot chocolate and Dorda Double Chocolate Liquor topped with about 5 inches of whipped cream. You can’t go wrong.

Made with RumChata, Banana Bacardi and caramel syrup, this is the perfect martini to make you feel cozy and warm. It’s just like the bananas foster dessert, but even better because it’s made of pure alcohol.

DAVID WOOD SUPERINTENDENT Going into this year I knew there were going to be many changes in our department. This started in January with the hiring of a new Maintenance Mechanic to take care of all the mowers and utility/golf carts in our fleet. In March, our Assistant Superintendent took a Superintendent’s job so that position needed to be filled as well. Along with hiring five new seasonal staff members there was going to be additional training required to get everyone working as a team. This year’s staff had to learn how to maintain a new golf course and work around a golf course construction project that at times became very congested around the shop. On top of dodging a random house being moved down Riverbend Road throughout the summer and fall. I want to say thank you to all our staff. Their energy and dedication to providing a championship golf course for our members and guests is very much appreciated through all these changes. We are monitoring the ice depth on the lake below the clubhouse to again maintain a skating rink. The lights around the rink will be installed and will be on from sunset to 10 p.m. everyday. The hockey nets will be brought over too for any hockey players. We will keep you posted when the lake is safe to be on. The City is again planning a ski trail on the old course when snow depths are adequate. Quick tips for protecting and prolonging the batteries in golf carts: • For winter storage, batteries must be clean, fully charged and disconnected from any source of electrical drain. Fill batteries ½” above the plates with distilled water. • For all vehicles, set the key switch to "OFF". For electric RXV vehicles, make sure the 'Run/Tow' switch is set to the "Run/Storage" position; if left in the "Tow" position, it will drain the batteries. For electric TXT vehicles, the "Run/Tow" switch should be in the "Tow/Maintenance/ Storage" position; if left in the "Run" position it will drain the batteries. For both vehicles the 'Run/Tow' switch is located under the passenger seat. • As with all electric vehicles, batteries must be checked and recharged at a minimum of 30 day intervals or required as needed. You do not need to have your vehicle continuously plugged in and charging over the duration of long term storage. David Wood
