Sedi Halvorson GENERAL MANAGER I hope everyone had a happy and safe Thanksgiving holiday! Thank you to all of our members who ordered pies and dinner from your club. The team here had a great Thanksgiving, and is ready for the month of December. We have some great events coming up this month, as you will see in the following pages. One of our favorites, Santa Brunch, is just a few days away! Also don’t forget to sign up for New Year’s Eve at Oxbow, and bring the kids! Chef will have a great menu for the adults, and the kids can party the night away in the ballroom, culminating with a midnight (8:30PM) balloon drop! Stag: A huge thank you to all of our members who came out for our annual Stag Night Fundraiser and Auction! We had almost 150 attendees this year, including over 60 guests! We were also able to raise almost $100,000 this year, which will enable the club to build out the simulator area in the Golf Shop, so that we can provide fun for our members through golf leagues, play over 26 top golf courses, and more! It will also enable Corey and the Golf Shop team to better fit you with the best equipment for your game, with fitting capabilities that no other club in the area has. Again, a huge thank you to all who attended, as well as our 2018 Stag Committee! December is a busy month for us here at the club, with many holiday parties and events. We are also working on planning out 2019 for our members. A lot goes in to the planning process to ensure that your club provides the best membership experience possible, including coordination between the different departments here at the club. Our goal is to have as much information regarding the coming season to you, as early as possible. This enables our members to plan their year accordingly, maximizing opportunities at the club for all family members. Be on the lookout for more information in the coming months.

We are working on getting the skating pond ready for all of our members and kids. For those of you new to the club, we also put up hockey nets and lighting for evening skating. It is a great opportunity to enjoy some time on the ice, without the crowds that can sometimes be at larger venues in town. Weather permitting, we will also groom a cross country and snowshoe trail as well, which will run through the course. This is a great way to get some winter exercise! We have not been able to do this the last couple of years, but hopefully this is the year we get some snow.

I want to recognize Oxbow’s own Alison Molony, who was one of 35 young women accepted in to the United Way 35 Under 35 Women’s Leadership Program. This is a huge honor, and a testament to the leader that Alison is. Over 200 apply for acceptance in to this program each year, and Alison is one of those accepted for the 2019 class. The purpose of the United Way 35 Under 35 program is to mobilize the caring power of women, energize and inspire leaders to make a difference, and to deepen leadership opportunities for local young women. The program is designed to provide opportunities to build networks and strengthen connections to improve the quality of life in the Cass-Clay Community. The next time you see Alison around the club, please congratulate her on this honor!

Lastly, we want to recognize our project manager for the golf course construction for the past four years, Gary Killebrew. Gary has been with us since March of 2015, providing guidance and leadership as our representative to the construction company. This project has had more twists and turns over the past four years than any of us could have anticipated, and Gary managed this project for the club throughout, always working his tail off to ensure that the members of Oxbow will have an amazing golf course. I could write an entire newsletter on just Gary and what he has meant to Oxbow and this project. With the construction wrapping up this fall, Gary will be moving on to another project come spring, in another location. We can’t thank Gary enough for all he has done for us.

It is also that time of year when we realize that 2018 is nearly over—and what a year it has been... Starting off last winter, I got the opportunity to work with the members on a few of the member events while Alison was on maternity leave.

When spring finally arrived, so did wedding season! With 21 weddings in 2018, I had the opportunity to work with members on nearly half of the weddings booked this year for either themselves or their children. Oxbow also had the opportunity to host several member wedding showers and anniversary parties, giving us the chance to be a part of many stages of your lives. Throughout the year, I also had the opportunity to watch Oxbow CC’s family grow with numerous baby showers. Children’s birthday parties were a great way to see the Oxbow CC family grow up! Of, course the kids weren’t the only ones celebrating - we hosted a fair share of adult birthday parties as well. Now, here we are at the end of the year, we are rounding things out with holiday parties for many of your families and business. Thank you for celebrating your special moments at Oxbow CC! We all look forward to 2019 and all the exciting memories to be made.

Alison molony Director of membership & events CLUBHOUSE 2ND BIRTHDAY—We celebrated your Clubhouse’s 2nd birthday in early November with a bouncy house, cupcakes, a $2 menu, and a coloring contest! It’s hard to believe we’ve already been in the new Clubhouse two years, isn’t it? Congratulations to the winners of the Birthday Coloring Contest: Bailey Theuninck (daughter of Melissa & Cory Theuninck), Victoria Potter (daughter of Brian & Emily Potter), and Payton Anderson (daughter of Brad & Jamie Anderson). NEW YEAR’S EVE—Celebrate the new year at your Club! We have decided to take a break from the New Year’s Eve Dinner For 2 concept that we have done the past several years. Instead, the normal restaurant menu will be available, as well as a 3-course prix fix special! All restaurant guests will receive a complimentary glass of champagne that evening, complemented by the musical stylings of guitarist/ singer, Michael Pink. We are also offering a Kids Party in the ballroom from 6:30 PM—9 PM, so you don’t even need to find a babysitter! The kiddos will be entertained with an evening of games, music, and a balloon drop to ring in the New Year (at 8:30 PM)! More details can be found on Page 12. Keep in mind that reservations are required on New Year’s Eve!

It has been such a privilege to work at Oxbow and be a part of the immense change that has occurred here in the past several years. Truly, YOU are what makes this club great. I have enjoyed getting to know all of you, watching your kids grow up, and introducing new members to the Oxbow family. I can’t wait to see what 2019 brings as we open the new holes and complete our five-year construction project. That being said...with the start of each calendar year brings new opportunity to enhance your member experience, increase our event programming, and add more value to your membership. JAKE HUGHES ASSISTANT GENERAL MANAGER Wow! Can you believe we have been in our new Clubhouse for two years?! Time has flown by with great events, great food, and of course, great members. Here are some fun facts from 2018: • • • • • • •

Our number 1 tap for the year was Bud Light. We served 2,225 Bud Lights! Our most popular spirit….. Crown Royal at 1,842 drinks! Tito’s Vodka came in second at 1,785 drinks! We have sold 1,725 Burgers! Thanks, Chef Scott! We have sold 1,678 Housemade Desserts, compared to 1,190 last year. We have sold 1,315 Suzi Bars. We have gone through 1,600 lbs of Chicken Strips! And last but not least…… we have gone through 500 lbs. of popcorn kernels! So by popular demand...popcorn will be available year-round from here on out!

Oxbow’s resident Pastry Chef, Suzanne, is taking orders for assorted Christmas Cookies this year! Suzanne will be using her expertise to create beautiful, delicious cookies. scott motschenbacher EXECUTIVE CHEF Hello, Oxbow! November has come to pass already. I hope everyone had a lovely Thanksgiving. Now we start looking forward to Christmas...speaking of Christmas, we are going to try and start a new tradition here at your club. Our resident baker/pastry chef, Suzy, will be doing Christmas cookie platters. This will be much like the pies we offered for Thanksgiving. By ordering your Christmas cookies from Oxbow, this will hopefully be one less stressor for you and your family this time of year. Stay tuned! This month, I will be tweaking the menu a bit. After running it for a month, I can already see where we are lacking. And yes, the meatloaf sandwich will be back! I know I promised a few people that it would be back on the menu. I have failed you all, and for that I apologize. As always, I appreciate any of your feedback or ideas. I want your club to be your first choice in dining out. If there is anything from the old menu that you want, please talk with your server or myself and we will try to get it done. Just because you don’t see it on the menu, doesn’t mean we don’t have the ingredients to make it.

This year marks my third Santa Brunch here at Oxbow. I have learned quite a bit from my first two. Number one is that I cannot get here too early. It is really quite the production for myself and the rest of the staffers of the culinary department. Santa Brunch, for me, starts at 3 AM! I roll out of bed at 3AM, stumble into the shower, and slowly get ready for the day. The worst part of the whole thing is that there are no coffee shops open at 4 AM! I pull up to the back door right around 4AM, come in, and turn on all the equipment. I then brew up a strong pot of coffee and begin prep. After I have prepped the items that take a long time to cook, I then start to set the buffets up. I always start with the hot food line because it is the most time consuming. Setting the buffets up is very much like plating a meal to me. It all has to make sense and there are subtle ways to make some thing pop!

At this point, it is about 6AM and I am wide awake and prepping like crazy. Everything from fruit fabrication to grilling meats and seafood. At 8AM, my staff starts to roll in...each one of them looking like I did at 4 AM. It takes a little convincing to get them in gear. Once they really get moving, we’re off to the races. At 9AM is when I really start to sweat. “This is crunch time people!!! Get that in the oven! Have we started plating desserts yet!? Who is starting up the hollandaise??? Are the chafers lit?? Get those roasts out of the oven and get the sauce started ASAP!!” It is now 10 AM and I am laser-focused. After all, the first seating is in 30 minutes!! At 10:15 AM, the first families start to roll in. Oh boy!!! My mental check list is in full gear. At 10:20 AM, we begin to bring out the cold food (fruit, muffins, pastries, etc.). At 10:25 AM, Jake, Sedi, and all the serving staff are like a well-trained seal team bringing out hot food. And in one large crescendo...the food is out!! At 2 PM myself, Sedi, Jake and the rest of the team all take a step back and smile at each other for pulling off another wonderful Santa brunch. Then it’s our turn to take pictures with Santa and Mrs. Claus!!! Thanks for reading!! I’ll see you and your family at your club!!

In a sauce pan, add your milk, cream, and sugar. Put this on medium heat and slowly bring to a simmer. Do not let it boil because it will make your milk bitter. Pull off the heat and add in your chocolate chips. Whisk until fully incorporated. Finish with the butter. The butter will give it a velvety texture and will help coat your tummy. If you decide to add some peppermint schnapps to this, I won’t tell anyone. Enjoy!!

NEWS FROM THE FAIRWAY

DAVID WOOD SUPERINTENDENT In review of the 2018 golf season, there are several things that are worth writing about. The course opened on April 28th, making it the latest opening in a nonflood year that I have seen. The golf course closed on October 29th in 2017, one of the earliest closing dates that we have had in since 1995. The amount of time from when we closed to reopening was the longest that I have on record for Oxbow. But what surprised me was the condition of the turf grass and how it came through the long winter with only 37� of snowfall for the year. There was no winter injury to the course, while we heard stories of some facilities with extreme damage. There are a few reasons why we over-wintered well: first, the turf went through the winter with minimal ice cover. Second, there is a very small population of poa annua (annual bluegrass) on the course. Poa is more susceptible to low temperature and ice damage than Kentucky bluegrass varieties. This year, we began a program to control the grassy weeds in the native areas. We are using several different herbicides and have seen mixed results. Quackgrass and foxtail barley control in areas was stunted to heavily damaged. Pre-emergent herbicides will be applied in the spring to help with any weed seed in the soil. The treatments will be a multi-year program that will continue until these weeds are eliminated.

Next summer, we will be applying more fertilizers to the natives. It has been my belief to keep all fertility off of the fescues to keep the grass thin for playability. This does work, but it also affects how the fescues perform through the summer. We noticed a lack of seed head production from the plants and its wear tolerance is very poor. Fertilizer will be applied in areas that are considered non-play areas; around tee boxes, out of bounds areas and behind greens. We expect to see a more aesthetically pleasing native area moving forward. I would like to thank Gary Killebrew, Golf Course Project Manager, for his expertise over the last four years. Gary’s attention to detail in the design phase and working with Landscapes Unlimited was extraordinary. His tireless efforts allowed the Grounds Department to focus on maintaining the current golf holes through all the construction. Good luck with your next project, Killer. Oxbow thanks you!
