I hope everyone had a happy and safe Thanksgiving holiday! Thank you to all of our members who ordered pies and dinner from your club. The team here had a great Thanksgiving, and is ready for the month of December. We have some great events coming up this month, as you will see in the following pages. One of our favorites, Santa Brunch, is just a few days away! We are also beginning to plan New Year’s Eve, and a few other events in December and January. As always, we are looking at ways to have these events, while also abiding by regulations and safety protocols. As I sent out in an email earlier last month, we have decided to postpone

our annual Stag auction and fundraiser due to COVID-19 concerns. We are hoping to have this wonderful event in February or March. We will just have to see how everything progresses. December is a busy month for us here at the club, with many holiday parties and events. We are also working on planning out 2021 for our members. A lot goes in to the planning process to ensure that your club provides the best membership experience possible. At this time, we are looking at spring of 2021 as though it will somewhat return to “normal”, and are planning the calendar that way. We can always revise as necessary, but we want to continue to enhance the programming we offer you as members. Our goal is to have as much information regarding the coming season to you as early as possible. This enables our members to plan their year accordingly, maximizing opportunities at the club for all family members. Be on the lookout for more information in the coming months. Once the temperatures return to their normal below freezing highs, we will also get the skating pond ready for all of our members and kids. For those of you new to the club, we also put up hockey nets and lighting for evening skating. I want to send a special THANK YOU to the Lorz family for donating new hockey nets. It is a great opportunity to enjoy some time on the ice without the crowds that can sometimes be at larger venues in town.

Weather permitting, we will also groom a cross country and snowshoe trail as well. It will run through the course, and be a great way to get some winter exercise. We have not been able to do this the last few years, but hopefully this is the year we get some snow. We will keep you updated as the winter progresses. As many of our golf members are aware, we recently entered into an agreement with ClubCorp, which provides our golfing members with privileges across the country at all ClubCorp owned/managed, and Alliance clubs. We have also had many questions regarding the ClubCorp Signature One Unlimited upgrade opportunity. Please note we will be hosting an informational webinar on Tuesday, December 8th, at 4PM with ClubCorp. During this webinar, ClubCorp representatives will explain the program in further detail, and will answer any and all questions our members have about this great new membership perk. Information on how to join the call will be sent out via email later this week. In the meantime, if you have any questions about ClubCorp ClubBenefits or Signature One Unlimited, please reach out to me at any time.

Lastly, I hope many of you have had the chance to check out our new game room and arcade in the ballroom area. This has been a big hit with both adults and kids alike! We plan on having this available to you at least through February at this point. Our hope is that it provides another

GOLF SHOP UPDATE 1975

Somehow, we all have managed to keep the snow at bay, even though we had plenty of it in late October. We have had many things to be thankful for this year, and a busy golf course and Golf Shop were a couple of reasons.

Don’t forget that we have some holiday offerings in the Golf Shop for you to give to your loved ones. Throughout December, we will be getting new items in our inventory, so stop by and take a look! We have compiled a few stats from the 2020 season: Most Rounds Played:  Women: Lee Ann Townsend - 114  Men: Rich Menze - 137 Most Improved Handicap:  Women: Laura Tallakson (improved 10.6 strokes)  Men: Kyle Campbell (improved 19.3 strokes) If you happen to see these folks out and about, give them a pat on the back for a job well done. Before you head out on your winter vacations, we want to remind you of the new partnerships we have with ClubCorp and Thompson Golf Group. These partnerships allow you to play 6

NEWS FROM THE FAIRWAY 1975

Our focus this month will be on two areas: outside recreation and equipment repairs and maintenance. We will be monitoring the ice thickness on the lake for a skating area. The lights will be installed and be operational from sunset to 10:00pm every night. Hockey nets will again be available for any hockey players. A special thank you to the Lorz family for donating the new hockey nets this year! The City is planning to groom a cross country ski trail around the golf course once there is adequate snow cover. Our goal is to keep the trail on top of the cart paths to minimize any potential damage to the grassed areas. A map of the trail will be provided when it is ready for use. This off-season will be our first in the new maintenance building. During the planning and construction of the building, we made it a priority to have an adequate and functional repair space. There is room for several staff members to work on multiple mowers simultaneously. A wash bay and reel grinding area are also in the same room.

Here are some quick tips for protecting and prolonging the batteries in your golf carts:  For winter storage, batteries must be clean, fully charged and disconnected from any source of electrical drain. Fill batteries ½” above the plates with distilled water.  For all vehicles, set the key switch to "OFF". For electric RXV vehicles, make sure the 'Run/Tow' switch is set to the "Run/Storage" position; if left in the "Tow" position, it will drain the batteries. For electric TXT vehicles, the "Run/Tow" switch should be in the "Tow/ Maintenance/Storage" position. If left in the "Run" position, it will drain the batteries. For both vehicles, the 'Run/ Tow' switch is located under the passenger seat.  Recharge the batteries every month, if possible. If the batteries are in good working order, this should only take 4-6 hours. Do not allow the batteries to freeze uncharged if your cart is being stored in a non-heated area. Hello, everyone! Happy December! I hope that everyone had a great November and had a wonderful Thanksgiving holiday! I love December because that means it’s time for Christmas! This is by far my favorite holiday.

We do still have some open dates in 2021, so if you or anyone you know recently got engaged, please feel free to reach out to me. I am excited for this month, as we are hosting Christmas parties! I love this time of year and helping members put on great holiday celebrations. It is not too late to book a holiday party. I am sure a lot of you have heard and/or seen the exciting news, but we have turned the ballroom into a large arcade! How cool is that!? This has already been a hit for groups that have had previous events out in the ballroom! I am excited for our 2021 wedding season! I am staying very positive and hoping for a great 8

Hello, everyone! I hope you had a great Thanksgiving! November has come and gone and we are now in the full holiday swing. The Clubhouse is looking very festive thanks to a few of our front of house elves. We are excited to celebrate the holidays with you throughout the month of December. Chef Scott’s new menu has been out for a few weeks now and the responses couldn’t be better! If you haven’t had a chance to try some of his new items, I highly recommend it. The Poke Bowl is light and refreshing and the new Prime Beef is exquisite. Our new Lunch Box menu is starting to turn some heads, too. With some old favorites and fun new items, it’s a delicious lunch at a great price. Do yourself a favor and join us for lunch Wednesdays - Fridays from 11 AM - 2 PM. Our new wine list debuted this November! We put a lot of energy into making this list and are quite happy with it, so check it out the next time you visit. While keeping some old favorites, we’ve also brought in some big names that people know and love. We’ve also added a few diamonds in the rough (pun intended) that we know you will love not only for the value, but also the amazing taste. Kids Eat Free Wednesdays has become one of our

biggest weekly attractions! It’s a great way to celebrate making it to hump day and also let the kids run off a little steam, especially with the new Oxbow Arcade up and running! We also will be starting our 25% off select wines special on Thursdays. We will be picking out 4-5 bottles for the special each week. This is an excellent opportunity to try some of our new wines. And don’t forget about our Friday Happy Hour! Knock off a little early, if you can, and join us for some ½ priced draft beers and ½ priced appetizers from 2PM-5PM. Hello, Oxbow! I hope everyone had a safe and happy Thanksgiving. This year, we sent out a record breaking 104 Thanksgiving dinners! We also sent out 85 pies! I would like to thank everyone for your continued support for dine in and carry out patronage. This year has been tough on all industries, especially the food and beverage industry. With your support, we are absolutely thriving!! As many of you may know, we started our new fall/winter menu. So far, it has been a huge success. We also started our Oxbow “lunch box” menu. This is a quick service menu with tons of options. This has also been a great success. The Oxbow lunch box has brought a lot more people to dine with us for lunch. I want to thank the house committee for playing a big part in both menus. COVID has certainly been a big problem in the world. Your Oxbow kitchen has been no exception. I can thankfully say that all my 10

staff has avoided the virus. However, there have been several close calls, which at times has left me with an exceedingly small staff as we await test results. This leads to longer cook time. I want to apologize to everyone that may have had to wait a little longer than normal for their food to arrive. Being a scratch kitchen does not lend itself to quick microwave service. I personally will sacrifice extra cook time to serve the plates that I want to serve. Quality over quantity has been my long-time motto. So, thank you all for your patience!! I firmly believe that December will be a great month for myself and staffing. As your Chef, I strive to always make Oxbow your first choice for dining. I believe the numbers show that. Could we do better? Absolutely, we could! I appreciate all the feedback everyone gives me. It is the only way for me to fix what is wrong or to keep doing what is right. I believe that our biggest asset is the Oxbow staff. During the pandemic, it has certainly been the staff that has continued our success. They not only know your names and your children’s names, but some of them also watch your pets while you are out of town. You do not get that ANYWHERE else. Oxbow will continue to be successful because of the staff and because of you. Thank you all for choosing to be a part of Oxbow! We will constantly work to exceed your expectations! DECEMBER 2020


RECIPE OF THE MONTH 1975

Soft Pretzels

PROCEDURE: In a small bowl, add your yeast and 1 cup of warm water and stir. Allow this to sit for 5 minutes for the yeast to bloom. In a large mixing bowl, add the This month, I want to share my soft pretzel recipe. flour, sugar, and salt. Dip your pretzels in the 1 cup warm water solution and place onto a greased baking pan. 1 tablespoon dry active yeast Bake them at 400 degrees for 8-12 minutes. After 3 tablespoons granulated sugar they come out of the oven, baste them in melted 1 tablespoon salt butter and sprinkle kosher salt over the top. Enjoy ½ cup baking soda these fresh from the oven. These taste great ½ gallon hot water dipped in Beer Cheese Soup, which you can find my recipe for in the September Newsletter! 11
