I hope everyone had a wonderful Christmas and a happy New Year! It was an extremely busy month here at your club, despite having fewer holiday parties than normal due to COVID restrictions. A huge thank you to all of our members for the great support you give your club in the winter months! We will look to keep the momentum rolling in January, with more great member events and dining experiences to help beat the winter blues.

Director of Membership & Marketing I would like to welcome Aja Nyquist as our new Director of Membership and Marketing at Oxbow Country Club! Aja comes to us from Sunderland Group, where she has been the Director of Marketing since 2013. Aja brings a ton of enthusiasm to the group, and is most excited to meet our members here at Oxbow. Having a professional with Aja’s marketing expertise is something we have needed here at Oxbow, and we are excited to welcome her. You can read more about Aja on Page 6.

2020 has been a roller coaster year for most everyone. We hope Oxbow has been a place of “normal”, even as we have had to adjust a couple things due to COVID. Whether on the course, out at the pool, in the clubhouse, or playing the simulator, we strive to be a place where you feel safe and at home as a member. In 2021, we are looking forward to growing our membership, enhancing our offerings to our members, and working to always improve on what we do. While the club went through its own period of change this year, I know we will stabilize and grow moving forward. We have a great membership, and an extremely dedicated

group of professionals working for you. I am excited for what 2021 has to bring to our club and our members.

Club Closure in January We will be closing the club from Monday, January 4th through Thursday, January 14th. Member dining will reopen on Friday, January 15th at 11 AM. The reason for this closure is so we can deep clean, organize, and perform some preventative maintenance tasks. We opened the new clubhouse in November of 2016, and this is the first time we have closed for this purpose. During the closure, we will perform many cleaning tasks. The entire kitchen will be torn apart, all equipment will be cleaned thoroughly, and walls and floors will be deep cleaned. We will also perform front of house grout cleaning, touch up and repair tables and chairs, completely tear down and clean both bars, clean the carpet, and much more. All of this is important to maintain the club’s assets and ensure we do not have to prematurely replace anything due to improper care. While we do clean every day, most deep cleaning cannot occur while we are open our normal schedule. PLEASE NOTE THAT THE SIMULATOR WILL BE OPEN DURING THIS TIME. Food and Beverage Minimums Due to the club closure, we have decided to roll minimums into one quarterly amount of $270 instead of the monthly $90. Hopefully, this makes it easier to decide when to come to the club, especially with the sometimes unpredictable January weather. Please know that we will still have great events and activities for everyone each month. I would 4

encourage everyone not to wait until the last week of March to come out to the club. The arcade and game room will be open through February (at least), and we will have kids eat free on Wednesday nights through March. Also, for those who may want to take out employees for business meals, they are now 100% deductible thanks to the new stimulus package starting January 1st of 2021. Oxbow is a great place to bring your team for lunch or dinner any time. Ice Rink and Cross-Country Skiing The last two winters up here were difficult, with extremely cold temps and wind. This year has been much better, so I encourage all members to take advantage of the skating rink on the pond, just to the north of the bridge. David and his team maintain it all winter long, and completed the flooding process right before Christmas. The rink is lit in the evening, and there are two hockey goals as well. Also, Zach Schnitzler is grooming our cross-country trails, something that has been difficult to do the last few winters. We hope this is ready to go shortly after the new year. We will send out a notification when it is ready. Thank you, Zach, for volunteering to do this! Here's to a much less eventful 2021 for all of us, and I hope to see you soon at your club! Sedi

for event planning, and am excited to bring that to this position. I am married to my wonderful husband, Ryan, and we welcomed our son, Hawkins Rudy Nyquist, into the world in August 2020. We also have 2 adorable golden retrievers, Zuma and Kramer. I am an avid sports fan (Go Vikings), enjoy traveling, and am a wine enthusiast.

Hi, everyone! My name is Aja Nyquist and I am very excited to be your new Director of Membership and Marketing. I can't wait to meet everyone and to become a member of the Oxbow family, so please introduce yourself if you see me around! I am an NDSU graduate (Go Bison!) and spent the last 8 years with Sunderland Group as their Marketing Director doing everything from social media posts, website design, asset development, and more. I also have a passion

I look forward to getting to know everyone, growing our amazing Oxbow membership program, and having the opportunity to plan, create, and execute great events that the whole family can enjoy. KYLE MILLAR CLUBHOUSE MANAGER

Happy New Year, everyone! I hope you all are doing well and had a happy holiday. December came and went in the blink of an eye, and we finally got the white Christmas we were all hoping for.

We closed out 2020 on a high note with New Year’s Eve. Chef planned some wonderful options for dinner and the kids had a blast in the arcade. I hope you all have a Happy New Year and I will see you in 2021.

It was nice to see so many of you out for the Santa Brunch. It was a big hit! It was very exciting for me because it was my first brunch at the club. It was really fun and intense to see everything that went in to setting it up. We were a little worried with all the restrictions placed on us at that time, but we are very happy with the outcome. All the food was so delicious and plus, SANTA WAS HERE!! Seeing all the kids’ happy and excited faces was a very welcome change to this interesting year. Looking into next month, we are finally getting around to a deep cleaning, which we have all been looking forward to. This will finally give us a chance to organize, move some stuff around, and put a nice shine on the club. We are hoping to have some fun nights planned once our deep cleaning is all finished, too! Another night of Trivia is in the works, as is Kids’ Night. More info to come!

SCOTT MOTSCHENBACHER EXECUTIVE CHEF

Hello, Oxbow! 2020 certainly was a wild year. At your club, however, it was a really great year. Despite the lock down and pandemic, we still had a fantastic golf and pool season. A big thank you to everyone for that. I am certainly looking forward to a new year at the club. We are starting out the new year with a deep clean/organizing event. I am really excited for this. It will give us a chance to take care of some things that fall by the wayside after a busy year. It also gives us a chance to reflect on everything that happened last year. How can we do things better and be more organized? My staff and I appreciate your patience during this closure. In January, we will be bringing back wine dinners! It’s been far too long since we’ve done one of these. It will be held in the ballroom with socially distanced tables. I am still working on the theme for January’s dinner. Be sure that I am going to go all out this time, as we haven’t done one in a while. I am also working on putting together a virtual cooking class. I am working with one of the members on camera set-up to make it 8

the best experience possible. We may try and incorporate a wine tasting with it as well. Here’s the idea: stop by the club and pick up your cooking class kit and we will either do it via Facebook live or on another platform. It will be interactive to give me a chance to answer any questions anyone might have. Because it will be virtual, there will be no limit to participation. If we incorporate a wine tasting, I will employ the help of one of our vendors. Some of you may know them already from our dinners —they are hugely entertaining! Stay tuned for details about that. I want to give someone a serious shout-out. She has been the unseen and unsung heroine of our great club. I only bring this up because I believe this will officially be the last newsletter she will be publishing for us. That is the one and only Alison Molony. I’m sure you all remember her bubbly personality and former role in member engagement at Oxbow. She (while staying at home with her two wonderful daughters) has been helping us out behind the scenes this entire year. A big thank you goes out to her! She doesn’t know it yet… but she will be planning my and Erica’s wedding.

SCOTT MOTSCHENBACHER EXECUTIVE CHEF

Recipe of the Month Chicken Stock INGREDIENTS:  2-4 chicken carcasses  2-3 large carrots, large dice  2 stocks celery, large dice  1 large yellow onion, large dice  2 bay leaves  5 sprigs fresh parsley  3 sprigs fresh thyme  1 tablespoon whole peppercorns  3 garlic cloves  10 quarts water PROCEDURE: In a large stock pot, simply add all ingredients. Bring to a boil and drop to a simmer for 4-6 hours. Strain out all of the veggies and chicken. You can freeze what you won’t use immediately. To add a little extra depth and flavor to the stock, roast the chicken carcasses in a 350 degree oven for 30 minutes prior to adding to the pot. You will be shocked by the difference in flavor from store-bought. Enjoy!!

With the start of the New Year, we are glad to see 2020 in the rearview mirror. We all sacrificed and battled through it. We had a very successful year in golf operations. We saw an increase of over 5,000 rounds played and exceeded the merchandise sales budget by almost $100,000! We want to thank you all for your support of the club during 2020.

well. Here are our new hours: Tuesday— Friday from 11 AM—8 PM, and Saturday— Sunday from 10 AM—6 PM. We suspect the TrackMan to be as busy as it was last spring. With people heading south to avoid the cold, or people trying to get back into golf shape for the start of the golf season, you will definitely want to book a tee time as early as possible. You can begin booking at 8:00 AM seven days in advance of the date you are looking to book. Please use the app or the website to book your tee times. If you cannot use a tee time you scheduled, you are able to cancel tee times on the app via the main menu and “my reservations”. Click on the “x” to the right of the reservation you would like to cancel.

The Golf Shop team would like to welcome Ben Walker as our new Director of Instruction. Ben is a teacher at Liberty Middle School in West Fargo and moved here with his family from Idaho. He is originally from Wahpeton, ND. Ben was hired in August as the 2nd Assistant Golf Professional. Ben indicated he wanted to primarily teach if possible, so we created the position for him. He will be creating all of the player development programming for us moving forward. He’s looking to be here for the next 20 years, and will be an incredible asset for us at Oxbow CC. As we enter the New Year, we have extended our TrackMan hours to include Tuesdays as 10

Hello, everyone! Happy January! I hope that everyone had a great Christmas spent with family. I enjoyed my time with my family. Even though it did look a little different this year, there is so much to be thankful for. I am excited for 2021 and to see what the New Year brings to our club; I am hoping for a very positive year filled with a lot of fun!

I am excited for our 2021 wedding season! Christmas and New Year’s Eve are very popular times for couples to get engaged. If you recently got engaged, or know someone who got engaged, please reach out. I would love to get a tour set up, show off our beautiful event space, and let you know what all Oxbow has to offer for weddings! I hope everyone has a great January. Stay healthy and warm! We will see you all in 2021.

This past December, we hosted holiday parties. They were a blast and the staff did an awesome job of making it a fun and safe environment for all the guests attending. We have a few more holiday parties coming up in January. It is not too late to book a holiday party, so please reach out to me at heather@oxbowcc.com or 701-598-1115. I would love to chat with you about how to create a safe and fun holiday celebration. We still have the arcade up in the ballroom for a couple more months! DAVID WOOD SUPERINTENDENT

Our winter maintenance of the reel mowing equipment begins in January. There are 17 mowers that have a total of 45 cutting units that will be serviced. The mowers will be thoroughly inspected for safety issues and parts that need to be replaced. Hydraulic systems will be checked and repaired to prevent an in-season failure that can damage turf. Each cutting unit will be removed from the mower and cleaned. All the bearings and

seals for the reels will be inspected and replaced as needed before the unit is sharpened. Sharpening each unit can be time consuming from the initial breakdown to reinstalling back onto the mower. If the process is done correctly, the mower will perform through the upcoming season with minimal maintenance. The snow has made the cart paths impassable. Please keep all golf carts, ATVs, and snowmobiles off the golf course during the winter months.

The skating area has been opened on the pond by the putting green. The lights will be on from sunset until 10 PM every night. We hope you have a healthy and happy New Year. David Wood
