It’s hard to believe February is here, and we are probably about two months from teeing it up again. We had a great January at the club. THANK YOU to all who came out to join us for member events and dining. February again offers many opportunities to experience some fun and unique events, only offered to our members. TRACKMAN INDOOR GOLF Our Trackman Simulator is complete, and will be available for member usage starting Thursday, February 7th. We are very excited to have this available to our members, both for winter-time fun, and year-round club fittings and lessons. More information can be found in Corey’s article later in your newsletter. I want to thank the Oxbow Stag Committee and all of our members who contributed to this project. It is another great amenity for you to enjoy at your club. SPRING FEVER—MARCH 3RD I want to touch on a new event coming to you in early March so that you can get it on your calendar now. Sunday, March 3rd will be our Spring Fever Event, which is a great way to get your kids signed up for all the fun that awaits them this summer. We will have fun for the whole family, plus all of the Oxbow staff here to go over individual programs such as Junior Golf, Kids Camps, Swimming Lessons, and much more. You can ask any questions that you may have, and get a head start on planning out your summer. We really hope those of you with younger children are able to attend, as this is a perfect way to find out about all the activities available.
Hopefully the worst of the sub-zero weather is behind us, and we will begin to see some warmer temps as we get through February. I hope everyone is enjoying the winter months, or is able to head south somewhere warm for a bit during this time of year. I hope to see you soon, at YOUR club! Sedi PAGE 2

CATERING EVENT COORDINATOR Wedding season is soon around the corner, but before we get there, we’ll pass through Bridal Shower season. Spring is a great time of year when everything is new and fresh (and hopefully, no longer covered in snow). It’s a great time to look forward to new things! For most bridal showers, we see a brunch style because everyone needs a reason to drink champagne in the morning! However, here are a couple other ideas if you need inspiration…. One idea is a throwback to your 5-year-old self. Have a tea party! Encourage hats and gloves just like when you played dress-up once upon a time. Just because tea isn’t your beverage of choice doesn’t mean you can’t put a different beverage in a beautiful tea cup. Tea time doesn’t usually require more than a snack, so it will also help your food budget. Did you know that if you have everyone sign a tea pot in sharpie you can bake it to “set” the signatures? Another idea is to theme the shower after the couples’ honeymoon destination. Are they going to a resort in Mexico? Have a fiesta and serve tacos and margaritas! If the couple is going to Hawaii, a luau is always a reason for celebration. A romantic trip to see the Eiffel Tower must be paired with French macaroons and a great bottle of wine. All the guests could bring something for the bride to pack, like sunscreen or a wine bottle protector sleeve to bring a bottle of wine home as a souvenir.

My personal favorite is to theme the shower after an interest the bride has. If she loves to read, maybe a Harry Potter themed shower is in order, complete with butterbeer. If she’s a baker, maybe a mini wedding cake decorating contest will get the flour flowing. Maybe the Bride likes to get her namaste on with some yoga. Just make sure you have a few poses for Grandma who isn’t a regular on the mat. There is no need to change any plans you already have in place, but adding something that personalizes the event will make your shower shine. PAGE 4

We have recently started a closed Facebook group called “Oxbow Country Club Members”. To join, simply search the group name on Facebook and click on the “Request To Join” button. You must have a Facebook account and be an Oxbow member to join this group. We are excited to put this into use because it will allow us to share more specific information about Oxbow that we can’t otherwise share on our public Facebook page. VALENTINE’S DAY MINI PHOTO SESSIONS—I have received a lot of questions about the Valentine’s Day Mini Photo Sessions that we are hosting on February 10th. We have partnered with Taylor Jane Photography to bring you an exclusive opportunity just for Oxbow members! It’s a WONDERFUL excuse to take high quality photos with your children, your significant other, or even a group of friends! MEIOMI PINOT NOIR Meiomi Pinot Noir is a selection produced by the Wagner Family, using Pinot Noir grapes harvested from three vineyard sites: Sonoma, Monterey, and Santa Barbara. It has a much fruitier and opaque texture than most Pinots found in that region. It’s velvety and smooth, enough to satisfy even a Cabernet drinker. KLINKER BRICK FARRAH SYRAH Klinker Brick Farrah Syrah is full-bodied and juicy, yet really nicely balanced with mild acidity and soft, round tannins on the finish. Black cherry, blueberry, licorice, black pepper, and mocha are some of the flavors that pop out. This big, medium -dry wine pairs well with our hand cut ribeye steaks.

PENFOLDS CLUB TAWNY PORT The first released vintage of Penfolds Club Tawny was 1950. It has become one of Australia’s most loved Tawny. This multi-varietal blend is crafted to ensure quality and consistency is maintained with each release. Ports wines tend to have a higher alcohol by volume (ABV) compared to other wines. The Penfolds has an 18% ABV, so a typical serving is 3oz. The tasting notes on the Penfolds Port are very spicy, with a caramel, cinnamon, and tarry flavor, with a sweet and silky long finish. Port wine is also known as a dessert wine...so, after a great dinner from Chef Scott, enjoy a glass of Port!

Hello, Oxbow!! January is finally behind us and hopefully, that dreadful weather as well. February is a short month, but we plan to pack a lot of fun activities in it. Suzy and I will be teaching a dessert cooking class. We have some fun things planned for that. We are also having our first ever GALentine’s Day dinner. This is a night just for the ladies of Oxbow –stay tuned for the menu! For Valentine’s Day, we will be offering a prix-fixe special in addition to the regular menu. This special will also be available the Friday and Saturday following Valentine’s Day to give you a chance to celebrate at your convenience. Our wine dinner this month is themed “Camp Oxbow”. We did this theme for a private event last year and it was so well-received, we thought we should do it again. This month is also when we have our Character Brunch. If you attended last year, you may have noticed an overweight Batman making omelets. At the risk of my own safety, I cannot reveal his identity. Batman may or may not make an appearance again this year. If he cannot make it, I will find someone to fill his shoes. Maybe fat Spiderman??? In other culinary news…we are changing up the brunch menu. I want to offer a couple of healthier options alongside some of the staples. Looking out your window it may not look like it, but golf season really is not that far away, especially for myself and the rest of the staff. Planning the spring/summer/pool menus starts now. I have a few ideas I am working on, one of which is doing a “Chipotle” style grill in the pool room. This will take quite a bit of convincing, but I think this would be a great addition to our club. Recipe of the Month BY CHEF SCOTT
Mocha Truffles This month, I would like to share my Mocha Truffle recipe. This is an easy recipe that is a nice bite after a well-rounded dinner, or even a nice surprise for that special someone on Valentine’s Day. INGREDIENTS • ½ pound of your favorite chocolate • 7 ounces heavy whipping cream • 1 ounce prepared espresso • ½ teaspoon iodized salt • 4 ounces cocoa powder

PROCEDURE In a heavy-bottomed sauce pan, add your cream, espresso, and salt. Bring this to a simmer. In a large mixing bowl. add your chocolate. Once your cream mixture has come to a simmer, add it to your chocolate. Stir with a whisk until fully-incorporated. Place in your refrigerator and stir every 30 minutes or so. When the mix has gotten to the consistency of clay, you can start to form your truffles. Scoop about a tablespoon worth with a spoon and roll it around in your palms until you have formed a nice little ball. Roll this in the cocoa powder and coat it completely. Enjoy this with a nice after dinner coffee or cocktail!!

NEWS FROM THE FAIRWAY
DAVID WOOD SUPERINTENDENT
A quick update as to what is happening in the Grounds Department: our main focus in February is sharpening all the mowers and making necessary repairs to keep everything running smoothly in the summer months. Oxbow’s Maintenance Mechanic, Bryce Fenske, is concentrating on the long-term care of the mowers and carts. This would include oil changes, greasing bearings, hydraulic issues and all safety equipment on the machines. Bryce will service over 40 mowers and utility vehicles, plus all of our golf carts. Jesse Lunde, Assistant Superintendent, is responsible for cleaning and sharpening all the green, tee, and fairway reel mowers. There are over 80 cutting reels and bed knives that are disassembled, sharpened, and height of cut set before the mower is ready for use. When done properly, the mower will remain sharp throughout the coming golf season. With the amount of snow on the ground, I would like to remind everyone that the use of snowmobiles and ATVs is prohibited on the golf course. Exploring the original golf holes in the winter is an enjoyable walk for a great workout. The peacefulness of this secluded area and the chance to see wildlife is very relaxing.

HOW TO BOOK A TEE TIME We have created a tee sheet on our website and our app named “Simulator Course” that needs to be used to book times for the simulator. You may book tee times seven days in advance. The times are set up for one hour, so if you want two hours, you will need to book (2) one-hour time slots. We ask that you limit your time to the following: • One hour for hitting balls and club fitting • Two hours for a foursome playing nine holes • Three hours for a foursome playing eighteen holes

COREY HERLICKSON (CON) SOCIAL MEMBERS Social Members can use the simulator one time a month and must pay the guest rate per hour (see below) to use it. Social Members do not currently have access to book tee times online or via the app, so if you wish to make a tee time, please call the Golf Shop or email golfshop@oxbowcc.com. TRACKMAN SIMULATOR GUEST RATES • $20/hour for one Guest/Social Member • $5/hour for each additional Guest/Social Member All guests may use the simulator once per month, and must be accompanied by a member.

TRACKMAN SIMULATOR LEAGUE TrackMan Simulator League will utilize a USGA Handicap for a 9-Hole round of golf. Two-Person Teams will compete in Gross and Net Divisions for $10/person which will be awarded back in Golf Shop credit. There is also an optional skins game for $10/person. We will have a schedule of games for each week posted in the Golf Shop and on the webpage, which we create via Golf Genius. We will email out this information when it is all finished. We are very appreciative to the Stag Committee and all of you who helped make this possible.
