Enjoy unlimited golf on our championship course, as well as full access to our practice facility, pool, and clubhouse. As a golf member, you also have access to all amenities available in the Social Membership category. Amenities are available to your entire family, including children under the age of 24. Membership category determined by age of oldest spouse, if applicable. Introductory memberships run from date of sign up through June 30th, 2018 or 2019, depending on one or two year commitment. New members who join between January 1st and April 1st save 50% on initiation fees. Initiation Fees can be spread out over your first three months of membership.

4 pm—7 pm While you might not be able to golf quite yet this year, that doesn’t mean you can’t get your game ready NOW! Golf professional Eric Wenaas is introducing Oxbow’s Inaugural “Sipn-Grip” this March! Yes, that’s right, he will regrip as you sip—simple as that. We will introduce our brand new mobile club repair station right in the restaurant bar. This is a great opportunity to check out all the new 2017 grips and have your clubs ready to go for the season!

pasta cooking class 6:30 PM $45/Person Learn how to cook from Chef Scott himself! This live cooking class will last approximately an hour and a half to two hours. It will be a hands on class making a pasta dough from scratch, complete with an in-depth cooking demonstration. Each guest will take home all the necessary ingredients to make your own pasta creations at home, including wine pairings. Space is limited. Sign up soon!

Upcoming Events Alison Molony Director of Member Engagement & Events OXBOW BLACK TIE CHARITY GALA - I hope you all have been keeping an eye on your mailbox! We recently sent out an invitation to our Oxbow Black Tie Charity Gala. We couldn’t be more excited about this first-time event! Oxbow is proud to partner with the Ronald McDonald House in Fargo to help raise money for their new house being built. Ronald McDonald is currently over one million dollars away from achieving their goal for this project – every little bit counts! With the continued growth of pediatric medical families in Fargo, the demand for the Ronald McDonald House has continued to grow in recent years. In Fargo alone, the Ronald McDonald House served over three hundred families last year. Forty-nine of these families had to wait at least one day to utilize the facility. For families with critically ill children, the cost to stay at Ronald McDonald House is just fifteen dollars per day, though they do not turn anyone away based on their inability to pay. The new Fargo house is going to have such a positive impact on the families that have to spend far too much time at hospitals in the FM area. Please consider the donation of an item or service to our silent and/or live auctions that evening. All proceeds from the auction, as well as a portion of the ticket price, will go to benefit Ronald McDonald House Charities. As you can see, we are looking for three sponsors to help cover some of the hard costs for the event. As an Albatross Sponsor, you will receive recognition at the event, premium seating for 10, wine for the table, and amuse-bouches for the table. For those of you who don’t know what an amuse-bouche is (I sure didn’t before Chef Scott explained it to me), it is a “gift from the Chef”, or an extra delicious appetizer for your table! This event truly will be unlike any other that we have ever hosted at Oxbow. Chris Hanson from Bob 95FM is on board to emcee that evening, Chef Scott is preparing an awesome menu, and we will dance the night away to music by Post Traumatic Funk Syndrome. I encourage you to gather a group of members (and non-member guests), dress up, and experience this unique event at your club. The first tables have already been sold—I hope to see you there!

FOOD & BEVERAGE UPDATE SCOTT MOTSCHENBACHER Executive chef Hello, Oxbow! March is going to be a busy month around here. Following feedback from the membership, I have tweaked the menu a little bit. I have made a few changes that I am confident are going to enhance the dining experience at Oxbow. On March 14th, I will be hosting the first ever Oxbow cooking class. To ensure that I can give adequate individual instruction, space is very limited. This month’s recipe is based on the cooking class I am hosting: my classic Alfredo recipe. You don’t need to buy the canned product off the shelf any longer. This recipe is easy and delicious. As an added bonus, I’m sure you probably have most of the ingredients in your refrigerator already.

Alfredo Sauce

Procedure: In a non-stick skillet, heat butter and olive oil. Once heated and butter is completely melted, add garlic and pepper. Be sure to stir this occasionally as the garlic likes to stick to the pan. When the garlic is brown and very fragrant, de-glaze with white wine. Let this reduce down a little bit (about 2-3 minutes), then add heavy whipping cream. Bring this to a boil. When the cream has big fat bubbles, add parmesan cheese. Be sure to stir the cheese into the pan and keep stirring until the cheese is fully melted. Pair it with your favorite pasta and enjoy! Once you get this recipe down, you can make other variations of it with items like bleu cheese or pesto!

Ingredients: 2 tbsp unsalted butter 1 tbsp olive oil 1 tbsp fresh cracked black pepper 1 tbsp fresh chopped garlic ½ cup of quality white wine (chardonnay preferably) 1 cup heavy whipping cream ½ cup grated parmesan cheese

Jake hughes ASSISTANT GENERAL MANAGER As the snow starts to melt and we look forward to the new season, I first want to thank those of you who came out for dining and events this winter! We had such a great turn out for Valentine’s Day dinner and Dueling Pianos last month. We have even more events planned in March, including the Sip-N-Grip on March 9th and Cooking Class with Chef Scott on March 14th. For Sip-N-Grip, Assistant Golf Pro Eric will regrip your old worn out grips while you sit back in the restaurant and sip on your favorite beverage. For the pasta cooking class, Chef Scott will take you back in the kitchen and teach you how to make wonderful fresh pasta at home. We are very excited to bring these new events to the Oxbow membership. We will also be getting some new entrées on the restaurant menu, a new cocktail menu, and new banquet menu this month. NEWS FROM THE FAIRWAY David wood Superintendent With the recent warm temperatures, I know everyone is excited to be outside and enjoy the early spring. Please DO NOT take your golf carts out on the golf course. Frost is coming out of the ground and the turf is extremely vulnerable to damage. Taking golf carts off the paths has caused damage to the grass and/or newly seeded areas. The snow fences installed around the greens have been removed so not to accumulate additional snow. Every green on the new nine holes had been fenced in and did collect varying levels of snow to protect the grass. Everything looks good, but we are taking samples out now and monitoring its growth. We are watching the course and will keep everyone informed as to possible opening dates of the range and/or golf holes as soon as conditions allow. The earliest we have opened the course is March 22nd in 2012. I anticipate an early course opening but cannot guarantee it. See you on the course. David Wood
