Please join us on Thursday, March 14th, as we raise funds to help our longtime members, Jeff and Cindy Fisher. In September of 2018, Jeff was diagnosed with non-Hodgkin’s lymphoma. Since that time, Jeff has been receiving treatment at the Mayo Clinic in Rochester. Each weekend, Cindy drives to Rochester to be with Jeff. Jeff and Cindy have been residents and members of Oxbow since 2006, and have been a great part of our community and club. We are currently accepting silent auction items and goodwill donations. Contact Oxbow management or Bill Short with anything you would like to donate .

GENERAL MANAGER’S MESSAGE

March is finally here, although it is hard to tell by looking outside! We know that warmer temperatures will eventually make their way to Oxbow, and we are busy planning for the outdoor season. In the meantime, we will continue to have great winter member events and activities for you to enjoy, with a few of your favorites in March. Annual Meeting Our Annual Meeting will take place on Wednesday, April 3rd. The annual meeting is a great time to come out and socialize, as well as get a recap of 2018, and look ahead to 2019. We will be offering hors d’oeuvres, as well as hosted beer and wine. Items discussed include finance, membership updates, golf course update, and departmental updates on all that is coming up in 2019. All members are invited to attend. The meeting will start at 7:00PM, with a social hour beforehand. Board of Directors This year, we have two seats up for election. Kevin Harrison and Randy Schneibel will not be seeking reelection to the board. If you are a certificate-holding member, and are interested in possibly running for a seat on the Board of Directors, please reach out to myself or Bill Short. We can give you further information on the commitment required of a director, as well as answer any other questions you may have. Please remember, you must be a certificate-holding member to seek a position on the board.

Membership We have had a great start to membership, even with the cold weather! Please keep referring friends and family to your club. We are excited to keep growing in 2019! Later in this newletter, Alison gives you some great reasons why referring members benefits everyone at Oxbow.

Hello, Oxbow!! February was a fun month for the culinary department. We had our Character Brunch, which was another huge success. We had a pie cooking class that opened a few people’s eyes as to how much time it takes to make pie crust. When people say “easy as pie”, they are liars and are not to be trusted! To cap off the month, we had our “Camp Oxbow” wine dinner. All the events were well-attended and everyone had a blast!! Moving forward in March, I am going to start to put together a list of vegetables that we will grow in our garden. That’s right!! I will be starting Oxbow’s very first garden!! I have been wanting to do this since day one. This garden will help to make the club more self-sustaining. That being said, I am looking for a few volunteers to help with the garden. If you have a green thumb or just want to get out of the house, this might be for you! We will have plenty to do to keep our veggies growing. The garden’s location is still to be determined. If you have any suggestion for what we should grow, let me know! This will be my first attempt with a garden.

In addition my work on the spring/summer menu continues. It gets really hard to find inspiration when I look out the window and see nothing but white. For the month of March, we will have a couple of fun culinary events. First up is our butchery basics class. In this class, I will be teaching how to properly butcher chickens and different cuts of beef. Our wine dinner this month is a vineyard spotlight. We did this same format once last year and it was an absolute hit!! Personally, this is my favorite type of format. It doesn’t limit what we can put on the menu, unlike when we focus on only one type of cuisine. That is about all the news I have from the culinary department. Pretty boring around here this time of year. I am hopeful for warmer weather in our future. I’ll see you around the club!!

Recipe of the Month BY CHEF SCOTT

Pan-Seared Steak For this month’s recipe, I just want to share a pan-seared steak, mostly because there won’t be much in the way of grilling in our near future. This is one recipe that I will be demonstrating at the butchery basics class. INGREDIENTS 1 large ribeye (12-14 ounces) 3 garlic cloves 2 sprigs fresh thyme 3 tablespoons butter 2 tablespoons canola or grapeseed oil Kosher salt and fresh cracked black pepper

PROCEDURE In a heavy bottomed pan (preferably cast iron) on medium-high heat, heat your oil. Bring the oil to the smoke point (this is the point when the oil starts to smoke a little). This is the perfect searing temperature. Season your steak with the kosher salt and black pepper. With a steak this big, use your salt liberally. Very carefully, place your steak in the pan. Sear for 2 minutes and flip to the other side. Add your butter, garlic, and fresh thyme. Your butter will melt and get infused with the garlic and thyme. Once the steak has seared for another 2-3 minutes, place the pan with the steak in it into a 350 degree oven. You will leave this in the oven based on what doneness you are looking for. For instance, if you want a rare steak, you won’t put it in the oven. If you are looking for a medium rare steak, you will go for about 5-7 minutes in the oven. When you have reached your desired temperature, remove the steak from the pan and let it rest for at least 5 minutes. When it is THYME to eat, drizzle some of your garlic and thyme butter over the top. Pair the steak with your favorite sides and beverage. Enjoy!! NEWS FROM THE FAIRWAY

DAVID WOOD SUPERINTENDENT

As we approach the upcoming golf season, we are working on finalizing a few details for a busy 2019 season. Equipment maintenance is almost finished, with all the cutting equipment sharpened and checked over. Supplies are all ordered and ready for delivery. Staff hiring is underway and will continue until all our positions are filled. This coming summer, we will begin operating a new fleet of John Deere mowing equipment that was purchased the fall of 2018. This purchase included fairway mowers, tee/approach mowers, a rough mower, a 300 gallon sprayer, sand bunker rakes, and several utility carts. When the golf course redesign began, we realized that our equipment inventory would not be able to maintain the amount of acres and golf course design that was proposed by the architect. After maintaining the south nine holes for several seasons and learning how these holes differ from the original Oxbow, the equipment package was carefully selected and bid for the Club. This new fleet will be incorporated with a our current inventory of mowers as we take over the grow-in of phase two construction. With turf conditions not being 100% on these new golf holes, we will use some of the older mowers until we have adequate turf cover. I would like to thank the Board for making this commitment to the Grounds Department . We are excited to show the members what this investment can do for Oxbow for many years to come.

The earliest that Oxbow has opened the golf course is March 22nd, 2012. It seems like we won’t be beating that record this year. With some cooperation from Mother Nature, I am hoping for an early April start. See you on the course, David Wood

Welcome to the worst winter in many years! It seems like golf will never happen. Although it has snowed almost every day outside, the TrackMan Simulator is being fully-utilized. It is being utilized so much that we are expanding our hours. We will be open Tuesday – Sunday starting March 5th. The new hours are located on the bottom left corner of this page. If you have been a slacker like most of us, you still have time to get a head start on the golf season, as far as practice is concerned. Spend 15 minutes a day working on making 3-foot, 6-foot, and 9-foot putts, and you will be ahead of the game.

We have Titleist, TaylorMade, Callaway, Ping, and Mizuno fitting carts for your golf club needs. Fittings are scheduled by making an appointment in advance. Please feel free to give us a call or email us at golfshop@oxbowcc.com to set up a fitting. As always, PXG is looking for golfers interested in fittings since they like to do the fittings themselves. If you are interested in a PXG fitting, please make us aware and we will schedule a date and time with them. Our entire Golf Shop team is back for 2019 and we are very excited about helping you in every aspect we can. Stay warm and be patient because spring is on the way! MARCH 2019

In March, we will begin to receive the large majority of our inventory. We have some great apparel coming in from Nike, FootJoy, Donald Ross, Galvin Green, Adidas, and Under Armour. We will be carrying Ecco shoes this year and a larger number of Nike shoes. Nike has some sweet new Jumpman shoes, and we were lucky enough to be allocated 12 pairs.

HELPFUL HINTS FOR EVENT PLANNING

CATERING EVENT COORDINATOR Your wedding day is all about you. You and the love of your life pick out your favorite dress, cake, food, flowers, and music. The day passes in a blur, and when it is all over, you may realize you want to spread your good fortune on to others. Luckily, there are a few different ways to give back that are easier than ever. Some may even get you a charitable tax deduction! If you already have everything you need to start your life together, you could ask for monetary donations to a charity of your choice instead of gifts. The most popular way to give back during your wedding is to make a donation in your guests’ honor as their favor. This is much more meaningful than a trinket that needs to be dusted. Perhaps you would like to give to the animal shelter where you found your furbaby. Or maybe a cancer fund if you’ve lost a loved one. The local United Way is a great way to find reputable local charities that could use your help.

Once the wedding is over, you could contact Hope Blooms, a Fargo-Moorhead charity. Hope Blooms takes your floral arrangements and re-arranges the flowers to distribute them to people who need a bit more color in their life. The arrangements make their way to nursing homes, assisted living facilities, hospitals (where allergies aren’t an issue), and related places like the Ronald McDonald House. The best part is that they stay in the surrounding area, so you know the flowers will be not far from where you got to enjoy their splendor just a day or two before! Another way to give back after your wedding is to donate your dress to one of numerous charitable organizations. One such organization is Brides Across America, which gives the dress to a military bride or emergency worker who is planning a wedding on a shortened timeline due to active service. Others, like Adorned in Grace, sell the dress to raise funds to stop human trafficking around the world. A unique organization, Angel Gowns, takes the dress apart to sew numerous gowns for babies who were lost too soon. No matter how you choose to give back after your big day, the local area will be a better place to live because of the love you share with your spouse. PAGE 17
