GENERAL MANAGER’S MESSAGE

SEDI HALVORSON GENERAL MANAGER

It is so exciting for all of us here to see outdoor activity again! The club takes on a different feel once the season begins and the days start getting longer and warmer. While we had to wait a bit longer than normal to get the golf season started, at least we opened a few days earlier than last year! I hope that it means we will again have a very warm May and rest of the summer! As usual, we have lots of things coming up on the calendar for you, and now we get to add in golf events as well. Please make sure to check out the events calendar in the following pages, as well as info on all of our outstanding member events this month. Additionally, we have all member events through August loaded on to the website and mobile app, with information and how to register, if applicable. Membership As of the end of April, we have had 20 new members and families join our club, and our numbers are ahead of last year at this time! This is only the beginning of membership season, so please keep referring your friends and colleagues to your club. Our goal this year is to have 50 families join us this year, and that happens when our members refer the club to others. With the warmer weather starting to be more consistent, we are seeing a rise in the number of membership inquiries. Please let myself or Alison know if we can contact a prospective new member. Annual Meeting Thank you to all who attended the annual meeting on April 16th. We covered many topics, and had great dialogue. I would also like to congratulate Jim Nyhof and Craig Rise on being voted in to serve on the board of directors.

2019 Golf Season As we get in to golf season, a couple of reminders to all of our golf members. Please make sure you have full sand and seed bottles when you start your round. Typically, we have many ready to go on your cart or by the golf shop. If there are none, please notify the golf shop. We have an amazing golf course. Please assist by filling your fairway and tee divots. Additionally, always repair ball marks on the greens, and try to repair two if you can. We hope that we are only playing nine holes for a couple more weeks, and sometime around the middle of May, have our 18 holes ready for you. David and his team are working extremely hard every day to get the lower holes ready for you. Once we have 18 holes ready to go, we will open up the online tee sheet again.

JAKE HUGHES

ASSISTANT GENERAL MANAGER With the course finally open and the weather getting warmer and warmer, we are excited for the member patio to open for dinning in May. Along with the great additions to the menu, you will see more and more wine selections, some awesome new featured drinks, and a variety of new beer and drink selections for the course. One of the new drink selections is Joia Spirits Sparkling Cosmopolitan. This is a refreshing cocktail will be amazing poolside (May 25th Opening Day!), on the patio, or even on the course. Try one the next time you are at your club!

SCOTT MOTSCHENBACHER EXECUTIVE CHEF

MAY 2019

Hello, Oxbow!! Here we go with another golf season. It seemed as though it would never come. We are less than a month away from the pool opening and that is crazy to me. It seems like time moves a lot faster here at Oxbow. This will be my 3rd golf season and I plan on it being better than any other! I have finally finished up the new menu and am pretty excited about it. I have brought back a bunch of Oxbow favorites and added some new options. One option we added is a beef or chicken teriyaki bowl. I really think this one is going to go over well. It’s a nice light yet filling dish that will be perfect after a round of golf. Another addition is a new steak. I am bringing in a 16oz porterhouse. We have been doing the same steaks for a while now. I thought it was time we shake things up a bit! As always, myself and my staff will do our best to accommodate everyone’s needs. Accommodation is the Oxbow kitchen’s mantra, so don’t ever be afraid to ask. Staffing! This year my staff looks really, really good! Last summer I brought on two interns from the NDSCS culinary program. This year, however, I will not be taking any interns. I’d rather use my labor budget on skilled people. We have a few new faces in the kitchen, along with a bunch of veterans. I am currently interviewing Sous Chef applicants. I have some very solid people coming in for interviews. Some with country club experience even!! That is about all we have from the culinary department. Until next time...I’ll see you around the club!! PAGE 7

FOOD AND BEVERAGE

Recipe of the Month BY CHEF SCOTT For this month’s recipe I want to share the teriyaki recipe we will be using on the new menu. Ingredients: ½ yellow onion minced 3 green onions diced 1 tablespoon red pepper flake 2 tablespoons honey (always use local) 2 tablespoons sesame oil ½ cup water

Teriyaki Sauce 2 garlic cloves minced 1 tablespoon ground ginger ¼ cup packed brown sugar 1 cup soy sauce 1 tablespoon vegetable oil

Procedure: Mix all of this together and bring to a boil. Once it hits a boil, remove from heat and cool. This sauce works great with beef, chicken, pork, and some seafood. For example you can sauté on high heat diced chuck roast with some fresh vegetables. When the beef is about medium-rare add in the teriyaki and reduce down until your beef is fully cooked. The sugars in the sauce will help to adhere to the beef and vegetables. Serve with white rice and enjoy!!

NEWS FROM THE FAIRWAY

DAVID WOOD SUPERINTENDENT

First, I would like to thank everyone who came out in our attempt to protect the north golf holes in April. With three different flood forecasts in a matter of several weeks, we did everything we could on short notice with river levels rising quickly. By the time you read this, all the greens will be cleaned off and the water will be off the fairways. Everything appears to have survived being submerged with minimal silt deposited. Cleanup of the debris has begun, and we hope to have these golf holes open by mid-May. We are extremely happy with the way everything looks on the non-flooded course. The south nine holes have wintered very well and are starting to break dormancy. Once everything has started to grow we will be lowering the mowing height on greens. FIRST MOWING OF NEW 7 GREEN IN 2019

FLOODED 14 FAIRWAY

Phase two golf continued grow-in will begin soon. As conditions start to dry, we will begin seeding into areas that either died or were thin from last year. We have noticed some mortality of the rye grass that germinated last year in various areas, but this was expected. Landscapes Unlimited will be back in mid-May with four staff members to finish the punch list and assist Oxbow with any tasks needed to accelerate the project. Please keep all golf carts off the flooded golf holes until they are open. There are wet areas where the cart can become stuck. See you on the course,

There have been a lot of changes around here lately, some temporary some long term. There are also some changes that are coming sometime this summer that will be permanent. We would like to sort them all out for you: Since we are only playing nine holes until the old holes open, we have created new score cards to properly reflect the fact you are playing the same nine holes twice. We encourage you to play a different set of tees on each nine to give yourself some variety. We have combo tee scorecards available if you take us up on that offer.

We have also gone through the process of having new course ratings and slope ratings created for the 9-hole situation we are in until we open the old holes. They have been activated on both the GHIN App, GHIN.com, and on the golf shop handicap computer. We have deactivated the normal course ratings so less confusion occurs. Once we open the old holes, we will re-activate the old ratings and de-activate the temporary ratings. Let’s hope this is the last time we ever have to do this! We will have the NDGA here sometime in May to figure out the yardages and ratings on the new holes. We are looking forward to this because it allows us to get a finalized scorecard done for you to review. This will aid in your decision of which tees to play when we open the new holes. We have had several people ask about their GPS units and if the new course is on it, if the current configuration on it, etc. What we can tell you is that SkyGolf (Sky Caddie GPS units) came out here last fall to shoot yardages. They are the only company that actually comes to the course for yardages. The other companies have been contacted and informed of the changes that will be occurring this summer. We have asked them all to update the yardages for our new configuration, but not to activate the yardages just yet. As far as if the current layout is on your GPS units, some have it, some don’t. The space in this article does not allow for a more thorough description, so feel free to ask for more information in the golf shop.
